Colet, Vatua! Extra Brut Cava 2014An organic Spanish sparkling that uses a blend of traditional and imported varieties to create a deli-cious, refreshing wine. With plenty of fresh apple with notes of lychee and rosewater it makes both a great aperitif and partner for a variety of dishes..Digby, Brut NVEnglish Sparkling wine gained the industry’s recog-nition for the style of sparkling. Made from barrel aged Chardonnay, Pinot Noir and Meunier, the wine has a great array of fresh fruit, razor-sharp lean-ness and developing toasty and brioche aromas.

St. Laurent ‘Pet Nat’, Cruse Wine Co. 2015A sparkling red from an Austrian grape made in Cali: sounds crazy doesn’t it? But for the adventurous the strawberry/cherry fruit, zippy acidity and low alco-hol make for a great aperitif.

Champagne Dosnon Recolte Noir, NVThis is a Blanc de Noirs made using only Pinot Noir; which is then fermented in oak. The vinous, miner-al-driven style perfectly captures the terroir of Cotes de Bar’s limestone soils

Artéis & Co Brut. 2002 From an all-time great vintage, aged 11 years before disgorgement this is a Champagne of real complexi-ty and depth. Fresh fruit upfront blends with dried fruit and brioche on the palate.

Artéis & Co Rosé. 2007 With a delicate salmon pink hue & a nose with hints of blood orange and red fruits this is a rosé Cham-pagne with delicacy and finesse. Six years aging in bottle helps maintain a zesty freshness.

Champagne Dosnon, Alliae Champagne, FranceDosnon’s top cuvee is 50/50 Pinot Noir & Chardonnay & only 500 bottles are produced a year. Fermentation in oak and extended aging give this Champagne in-credible depth & complexity.

Tire Bouchon Vin de France, Domaine D’Ourea. 2015 . This pocket-rocket of a wine from the young, hand-some and above all talented (some people get all the luck) Adrien Roustan delivers big fruit flavours and great finesse at a superb price.

Páramos de Nicasia, Toro 2014From the high plains of Toro next to the River Duero this is a deep, rich, dark fruited wine which will stand up brilliantly to richer dishes.

Cabernet Sauvignon, Brea Wine Co. 2014Made by Chris Brockway this is a more restrained take on Cali Cabernet. There’s still plenty of ripe cassis fruit but it always feels refreshing and nev-er tips over into being jammy and drying.

Rioja ‘Xerico’, Tentenublo WinesFrom parcels of land which have been farmed by Rob-erto’s family for four generations this Rioja has bags of rich, perfumed fruit.

Don PX Gran Reserva, Toro Albalá. 1987Made from grapes that have been allowed to dry to raisins on the vine this PX is the perfect rich dessert wine to pair with chocolate and dark fruit dishes.

Dow’s Late Bottled Vintage 2011This style of port is produced from one single vine-yard. It is said that was born by a mistake when a vintage port was kept for too long and wasn’t suita-ble for its category.

Dow’s Vintage Port 2000Port is a fine value and marries delicious red fruit flavors with dark cocoa power and a slightly spicy, vibrant finish. It is made from a single year’s har-vest and then aged for four years in oak casks.

Dow’s Vintage Port 1985Probably one of the best vintages of the 80’s which has a wonderfully ripeness of texture, with smooth tannins a well-defined, yet mellow core of inky black fruits.
