    versary. And while we have made great strides over

    ted by the personal stories I have heard o individuals

    have been inspired and transormed by our

    long brown hair, and a genuinely gentle and kind

    personality. For years, however, Virgil worked on a Tyson

    slaughterhouse kill oor in Grannis, Arkansas. He worked

    long hours snapping thousands o terrifed and rantic

    birds into metal shackles sending them down the line

    to have their throats slit by a spinning blade. During his

    time at the Tyson slaughterhouse, Virgil witnessed extreme

    cruelty including workers sticking ice bombs inside live

    birds, ripping their heads o, stomping on them, and

    breaking their bones.

    Over time, Virgil grew so disturbed and troubled by the

    abuse he saw and participated in that nightmares began

    to haunt him prompting Virgil to quit his job at the

    Tyson plant, leaving behind his riends and paycheck.

    Virgils frsthand experiences eventually motivated him

    to become an outspoken, vegan animal rights activist. He

    began to blog about the horrors he had witnessed in the

    poultry industry conducting interviews with the news

    media, and hosting workshops at conerences.

    Meeting Virgil strengthened and reafrmed my belie

    that each o us has the potential to extend our circle o

    compassion to include armed animals no matter how

    deeply involved or engrained our past behavior is in their

    abuse or exploitation.

    Certainly, i a man who has slaughtered thousands o

    animals can put down his knie, sympathize with their

    suering, and take meaningul action to end it, cant

    anyone make that journey?

    In a movement where the abused and victimized cannot

    speak up on their own behal, drat legislation, hold town

    hall meetings, or plead with the attacker to please dont

    hurt me, our actions, or inactions, are a matter o

    lie and death.

    And while some people, like Virgil, will have their own

    compassionate epiphany, most o the world needs some

    gentle encouragement something, or someone, to jolt

    them awake and help redirect them down a more just

    and kind path.

    A study recently published in the British Journal o Nutrition

    showed that nearly 200 subjects ollowing a strict raw ood

    diet had low levels o this particular antioxidant compared to

    others available in ruits and vegetables. That being said, I

    eel like proper nutrition requires a synergistic eect o whole

    oods. Focusing on one particular antioxidant or vitamin in one

    particular ood is a bit silly, i you are eating a variety o oods.

    The studies that have been conducted on subjects ollowing a raw

    ood diet have results similar to those o people ollowing a whole

    ood, plant-based diet, which utilizes cooked oods. Results include

    lower cholesterol levels, decreased weight, and decreased risk o

    chronic disease like cancer and diabetes. A well-balanced vegan

    diet should naturally include raw ruits and vegetables as major

    components o ones nutritional intake. A daily salad o greens and

    brightly colored veggies is a powerhouse o fber, vitamins, minerals

    and antioxidants. For those devoted to a raw liestyle, I would

    encourage you to make sure you have a regular source o vitamin B12

    like every other vegan should. Meanwhile, I will continue to enjoy my

    baked quinoa-stued peppers while daydreaming o raw cheesecake

    rom my avorite vegan bakery.

    Boulder, CO. At the time, I did not give it much thought and

    ugged it o as a hippy ad. Boy was I wrong! Ten years

    er, my local bookstore abounds with a plethora o books about

    raw ood liestyle, and restaurants are specializing in the

    sine.

    ve not been heated past 115-120 degrees Fahrenheit. Thats right

    o roasted Brussels sprouts allowed! Many raw oodists consume

    ariety o ruits, vegetables, nuts, avocado, and sprouted grains/

    umes though there are variations o the diet, including those

    o primarily consume ruit or sprouts or juice. Advocates o this

    t believe oods are more nutritious in their raw state, and claim

    nefts include increased energy, improved digestion and skin

    ndition, weight loss, and decreased risk o disease.

    d even create harmul byproducts, like deep-rying. Vitamin C

    d many o the B-vitamins are water soluble and susceptible to

    struction when cooked. Yet, certain nutrients become more

    ilable to our bodies ater being cooked, like lycopene, an

    ioxidant ound primarily in tomatoes. The reason lycopene is

    re bioavailable is that the cooking process breaks down the

    ular wall o the plant and allows our bodies to absorb more o

    antioxidant.

    Place a large stockpot over medium heat. Sprinkle the bottom with apinch o salt and heat or 1 minute. Add the oil and heat or 30 seconds,being careul not to let it smoke. This will create a nonstick eect.

    Add the asparagus, celery, and onion and saut or 6 to 10 minutes,until the celery is just sot. Add the stock and bay lea, bring to a boil,then reduce the heat and simmer or 30 minutes.     John, an undercover Mercy For Animals investigator,

    documented this barbaric abuse while working at Willet Dairy in

    Locke, New York. Willet is the states largest actory dairy arm,

    conining over 7,000 cows. For ive weeks during the winter o

    2009, John posed as just another employee, all the while secretly

    ilming the arms activities with a camera concealed on his body.

    The images he captured on ilm are a ar and tragic cry rom the

    dairy industrys happy cow commercials.

    Evidence gathered during the investigation revealed:

    Cows confined indoors in herds so densely packed or stalls sosmall that they could barely move

    Workers kicking, punching and electric-shocking cows and calves

    Newborn calves dragged away from their mothers, causing

    emotional distress to both mother and cal
