OUR LOCATION

McLaren Vale is a long established premium Australian Wine

Region boasting international recognition and a rich winemaking

heritage. Located on the stunning South Australian coastline the

region benefits from a Mediterranean climate of warm sunny days

and cooling sea breezes. This proximity to the coast produces full

bodied fruit driven wines that are elegant yet sophisticated and

compliment the world’s finest cuisines. Thriving for well over 130

years Shiraz is by far the most important variety accounting for

about 50% of the total crush. Some of Australia’s most famous

and legendary Shiraz, such as Penfolds Grange and Wolf Blass are

produced from grapes grown in McLaren Vale.

At Lavina, we believe in the perfection of fruit as the foundation

and cornerstone of great wine. Our fruit is sourced from select

premium growers in McLaren Vale where site selection,

elevation, soil structure, canopy balance and crop load are of

priority and taken into utmost consideration. Our premium

grapes are produced from 100% Bio-dynamically grown vines

that are meticulously managed by expert viticulturists.

By eliminating the use of herbicides and pesticides, the soil

micro flora and fauna thrive in abundance which increases the

natural flavour profile of the fruit. The fruit from our Bio

Dynamic vineyards form the backbone and underlying

structure for our super premium wines. As a result our wines

show incredibly complex and layered tannin structure, which

allows us to create wines that will cellar for decades to come.

WINeMAKINGOUR STATE OF THE ART FRENCH VAUCHER BEQUET SORTING TABLE REMOVES ALL STALKS, PETIOLES AND DAMAGED GRAPES LEAVING ONLY PERFECT BERRIES.

Page 9: Company Brochure

Before crushing each bunch, the handpicked fruit is individually

sorted through by a state of the art French Vaucher Beguet Mistral

mechanized sorting table which removes all contamination such

as raisins, leaves, stalks, petioles and damaged berries that would

usually end up in the ferment. The perfect berries are then cold

soaked in open fermenters for one week allowing natural

fermentation to begin, before being over seeded with a French

yeast strain. Fermentation is completed after two weeks with the

wine delicately basket pressed straight to French oak barrels

ensuring no harsh or bitter tannins are extracted from skins or

seeds. Great attention is paid to oak selection from different

forests and cooperages to enhance the dimensions and flavour

composition of our wines. Our wine is carefully matured and aged

in French oak in temperature controlled cellars for over 2 years

before bottling.
