Hot air tray drier (Drying)
Fully matured husked nuts are baked in an oven at 175 C for 15-30 minutesosmotic dehydration by soaking in juice solution (beet root /carrot juice with sugar syrup) for one hourThe color and sugar treated coconut slices were dried at different temperatures viz., 60C, 70C and 80C for 4-6 h.
The hot air tray drier was used for drying the coconut slices. The higher drying temperature (80C) took only 3 h to dry the chips The lower temperature (60C) required 5 h drying time for the complete removal of moisture. Samples were stored in laminated aluminium pouches /LLDPE containers at ambient temperature (~27C) during the storage period.
