Clown Burger and Portabella

The first step is to bake a giant bun. I usually make the giant bun the night or morning before.

Bun Recipe
6 cups all-purpose or unbleached flour*
1/2 cup dry milk (optional)
2 1/2 tablespoons sugar or honey
2 1/2 teaspoons salt
2 tablespoons softened butter, vegetable shortening or oil
5 teaspoons active dry yeast or 2 (1/4-ounce) packets active dry yeast
2 cups very warm water (120F to 130F / 50C to 55C)
1. In a large mixing bowl whisk together 3 1/3 cups of the flour with the next 5 ingredients. Add thewarm water.
2. Beat on low speed of an electric mixer for 1 minute (or wit a spoon by hand), scraping bowlfrequently. Increase speed to medium and beat for 1 minute. Stir in remaining flour.
3. Turn dough onto a lightly floured work surface. Knead dough for 5 minutes then let rest for 5minutes.
4. Again knead dough an additional 5 minutes or until dough feels smooth and elastic.5. Place in a large, well-greased bowl and flip dough to turn greased-side up. Cover and let rise in a
warm place (free of drafts) for 1 hour or until doubled in size.
(Stick your finger in the center, if an indention remains, the dough is ready.)
6. Punch down dough and place on a 16" pizza pan on top of parchment paper.7. Cover, and let rise in a warm place for 45 minutes to 1 hour or until doubled in size.8. Place oven rack in a position that allows the tops of the pans to be centered in the oven. Preheat
oven to 425F (220C).
9. Bake loaf for 20 minutes it should sound hollow when tapped, then cover the top with tin foilthen bake for an additional 20 minutes.
10.Remove from oven and immediately remove giant loaf from pan.11.After cooled for 1-2 hrs you may carefully cut the loaf with a serrated knife thus making it a giant
bun.

Clown Burger Meat
Meat Recipe
2 lbs of lean 95%-97% ground beef or buffalo
1/2 large peeled finely chopped sweet white onion
1 tbs salt
1 tbs of good quality (Watkins) ground black pepper
1/2 of a fresh crushed and drained pineapple
1/4 cup of A-1 "Thick and Hearty" steak sauce
1. Mix the pepper and salt together into the meat with a pair of hairy man hands.2. Add your thick and hearty steak sauce.3. Mix in finely chopped onion.4. Mix in fresh crushed and drained pineapple.5. Shape your meat into a ball and place it between two pieces of wax paper.6. Smash meat wad into a slim patty.7. Place meat patty onto a extremely large (16") thanksgiving turkey serving plate and place
in the freezer for 2 hrs.
(note: do not open freezer or condensation will form and freeze on the wax paper making it nearly
impossible to remove patty from paper or plate)

Portabella Mushroom Gravy
Portabella Mushrooms
Thickening mixture- 1/2 cup of flour browned in a pan then mixed in a bowl with whisked with 1/2 cup
of clown burger juice or water (set this aside for later).
2 large Portabella mushrooms sliced lengthwise
1/2 cup of water
1/4 cup of Colgin mesquite liquid smoke
1. Preheat skillet then add mushrooms.2. Add water and liquid smoke.3. Let this simmer on low for about 20-30 minutes then remove from heat.4. Add brown whisked thickening mixture.5. Gently mix with mushrooms and let sit until desired thickness.6. Add deliciousness to burger.
