Each department of the retreat committee seemed to function as a solid station, yet seemed to as a whole. We, of course, knew of the tribulations during the retreat, however the quilting patrons knew nothing but joy, happiness and fun! I hope our guild members had a pleasant experience also. Again we thank Judy Rockwell and Carlene Reid for their diligence, dedication and hard work. Were we not glad for our wonderful Jill Finley? She is such a delightful lady! Her "trunk show" was so entertaining and enlightening with all her personal experiences. She certainly puts "life" into her quilts. I am sure those who were able to take her classes learned many wonderful tips to put into their personal quilting. I hope all Guild beginners' and intermediates are signed up for the Cedar Chest Beginners' Class. Turn your money into Kim McCallister. Classes will start Feb. 21st at 10:00am. You might want to bring a lunch. We have the Senior Center all day. Let me say, as a Guild, we sure know how to put on an "event" ...... a Super-Duper event!!! Each

Mexican Theme

“Chicken Enchiladas” 350 9x13 greased pan

Salsa

1 (4 oz.) can diced tomatoes with chilies, drained

¼ c. chopped green onions

1 jalapeno, seeded, deveined, & finely chopped

½ c. finely chopped cilantro leaves

1 lime, juiced

Pinch of salt

Enchiladas

1 rotisserie chicken, meat removed and shredded

2 c. grated cheddar cheese

1 c sour cream

½ small onion, finely chopped

Salt and pepper to taste

6 (8-inch) flour tortillas

* Combine salsa ingredients and set aside at room

temp until ready to cook enchiladas

*Combine shredded chicken, ½ cheese, sour

cream, onion, salt & pepper. Mix well.

*Spoon 1 c chicken mixture to center of each

tortilla, roll, close & place, seam down in 9x13

pans.

*Pour salsa over tortillas, cover & bake 40mins.

*Remove cover, add remaining cheese, and

bake 5-8 mins. Ole!!
