THE HISTORY BEHIND A

MANHATTAN

Whoever it was that created the

Manhattan, the classic potion that

calls for skillfully integrating

American whiskey—was probably

the spirit of choice in the 19th

century, though bourbon is quite

acceptable today—with sweet

vermouth and aromatic bitters,

came up with a drink that is truly

glorious.

One thing we’re pretty sure of is

that the drink had come onto the

libation scene by the 1880s, and we

also know that it was one of the

very first cocktails that called for

vermouth.

There’s a chance that the

Manhattan was invented at the

Manhattan Club in NYC. According

to popular legend, the recipe was

created there for a party thrown in

1874 by Jennie Jerome (AKA Lady

Randolph Churchill), Winston

Churchill’s mother. But no matter

what anyone tells you—Lady

Randolph was in England about to

give birth to Winston at the time

she was supposed to be in NYC.

WINE & FOOD 101

At the end of the day, drink the wine you enjoy. If you‟d like to understand the theory behind we

would be glad to explain.

Step 1: Consider the weight of the wine with the weight of the food. They both need to hold up to each

other. When we talk about the weight of the food, we mean the texture and fat content. A steak is higher in “weight” than chicken. When we talk about the weight of the wine, we mean the texture

on the palate. A great metaphor is the mouth feel milk has on the palate…skim milk is light in weight; whole milk is medium in weight and heavy cream coats the whole mouth and would represent the richest in weight. For example, Pinot Grigio is very light in weight, whereas

Chardonnay with oak is much richer in mouth feel.

Step 2: After matching weights, consider the sauce and notes in the wine. A chicken prepared with a morel

sauce will pair differently than a chicken with a citrus salsa. Old World wines tend to pair best with vegetal, earthy notes and New World wines are able to hold up with fruity, robust flavors. A

BBQ sauce can hold up to Zinfandel from Lodi and it will overwhelm a Primitivo from Sicily.

So many varieties…so little time. It is easy to get stuck and order the standbys like Chardonnay or Pinot Noir but you‟re missing an entire world of wine out there! We‟ve provided you with a cheat sheet of sorts to help you navigate the vast selection of grapes one can savor. This is not

to say you‟re wrong to order what you always have but simply to provide you with a background and food pairings guidelines of grapes you might have missed. Take a chance and

experiment today!

Oh, the places you’ll go…

Dr. Seuss may not have been referring

to wine but it still applies. There are so many exotic places in the world you

may never get a chance to visit so what better way than to enjoy a bottle of wine produced from the soils of these

places!!

Greece Making wine for over 6500 years with

grapes that are surely difficult to pronounce but the climate produces wonderful light and fresh whites and

robust, rich reds!

Lebanon Among the oldest in wine production in the world, they tend to favor French varietals like Cabernet and Merlot.

Musar is a winery you must try!

New Mexico The longest history of wine production

in the United States, today it has over 20 wineries and a climate that supports

big and hearty reds.

Israel There are over hundreds of wineries

from small boutique to large corporate production but Rothschild really put

Israel back on the map for wine consumers.

India The vineyards are planted at high

altitudes along slopes giving them crisp cool air and saturating sunshine. Look

for their Zin!

WHITE

Chardonnay: The grape of white burgundy and Champagne. Possessing a fruity character sometimes like apple, lemon, citrus subsequent barrel-influenced flavors include "oak", "vanilla", and creamy- buttery" notes. Riesling: A grape that loves the cool climate of Germany; Oregon; Washington; Clare Valley in Australia; Alsace in France; and on occasion California. Don‟t assume all Riesling are sweet. You can find beautiful Riesling that are bone-dry with great acidity and minerality as well. Pinot Grigio / Pinot Gris: Originally grown in France and then brought to Italy. Pinot Grigio is the most popular grape grown in northern Italy and certainly in the United States. It doesn‟t take hours of pondering. It is simple, easy quaffing wine. The quality spots are certainly Alto Adige and Alsace. Look to Oregon as well for a refreshing style. Roditis: As the name implies, Roditis is a rosé colored grape that is very popular in Attica, Macedonia, Thessaly and Peloponnese where it is cultivated for the production of AOC Patra wines. Roditis produces elegant, light white wines with citrus flavors and a pleasant aftertaste. Sauvignon Blanc: The region that does it best? Sancerre! The following are other great spots to find this refreshing, citrus driven grape. Try New Zealand, Washington, California, Chile and Greece! Be aware, it will sometimes get a touch of oak which will overshadow some of the citrus notes. Semillion: A widely grown in the Bordeaux region of France and also elsewhere. This grape variety has a distinct fig-like character. In France, Australia and increasingly in California it is often blended with Sauvignon Blanc to cut some of the strong "gooseberry" flavor of the latter grape and create better balance. When infected by the "noble rot" fungi, (Botrytis cineria), it can be used to produce first-class sweet white wines such Chateau d‟Yquem. Viognier: White grape from the Rhone valley that is floral and fruity in taste. It has great viscosity and will tend toward higher alcohol notes because it ripens so slowly. The aromas are like a potpourri jar full of exotic notes that make it a wine to contemplate.

Well, weather plays an important role with grape growing. This simple explanation will

help guide you toward choosing styles that you prefer and perhaps, avoiding those that you don‟t. It will also help you navigate the list for wines in the right “weight” category to pair

with your dinner this evening.

Here‟s a cliff notes version to how climate affects grapes:

Cold High acidity-crisp and refreshing

Low sugar levels because of less sunshine so less ripe fruit flavors and mare tart flavors

Lower alcohol

Less weight

Warm Lower acidity so not the tart notes

Higher sugar levels because of more sunshine so ripe fruit and jammy notes

Higher alcohol because of more sunshine

Higher weight

What does this all mean?

If you like that New Zealand Sauvignon Blanc than stick to regions with cooler climate

because you‟re an acid junky!

If you like that spicy Zinfandel full of dark cocoa and berry notes than stick to warm

climate reds!

RED

Cabernet Franc: One of the five Bordeaux grapes, cabernet Franc differs from Cabernet Sauvignon with its eucalyptus and menthol notes. You can also find notes of asphalt and tar when grown in the New York area. Like its cousin, Cabernet Sauvignon, it works beautifully with a great Sirloin. Cabernet Sauvignon: Small, tough skinned grape that gives those gripping tannins that make it pair so well with steaks. You‟ll find more fruit forward versions from the regions of California and Washington while the pinnacle expression is Bordeaux with notes of pencil lead, leather and coffee. Dolcetto: The red grape, Dolcetto, like the Nebbiolo, is predominately grown in northern Italy. In Piedmont, you will find more Dolcetto and Barbera on the tables during dinnertime than Nebbiolo even though Nebbiolo is the more prized grape. Grenache: Grenache is the second most planted grape in the world and can by Garnacha as well. The most famous region would certainly be the Rhone but Spain is coming up in the last few years crafting this grape into a spicy, rich and fruity style red that works great with their fare. Malbec: We‟ve all noticed the Malbec craze, right? Argentina is taking the wine world by storm with this varietal. It offers a great approachable style that most crowds will enjoy. Merlot: Classic grape widely grown in the Bordeaux region of France but you might want to check out Sonoma, Napa, Washington, Chile, Tuscany, and even Spain. This grape has been stomped on lately, pardon the pun, but it needs our support! There are still many complex and stylistically well crafted Merlot out there and we have found a few for you to savor. Montepulciano: Montepulciano is a name of a city in Tuscany, but is also the name of a grape. It is mostly planted in Abruzzi and Marches. It is soft and supple. It ripens later than Sangiovese and is lower in acidity and tannins.

OLD WORLD

Vs.

NEW WORLD

We use these terms in “wine-speak” but don‟t often stop to explain their

definition. The following are general definitions.

Old World is first and foremost, referring to the region in which the grapes are grown. In the most basic

terms, Old World is Europe. It also is a comment on style. These wines scream of tradition and represent generations of winemaking. They tend to be consistent in their style from vintage to vintage. They are what we call “food wines”

because their gripping tannins work well with food.

New World wines are showy and expressive. They are fruit forward and full of ripe flavors. At times, they are

more difficult to pair with food because they are so robust and strong in flavors (and even higher in alcohol on occasion.)

They tend to please the American palate because they have greater

fruitiness than the Old World counterparts.

Nebbiolo: The Nebbiolo grape has proven to be one of the most difficult grapes to grown the world. It shares this honor with Pinot Noir or Pinot Nero. The name, Nebbiolo, derives from the the Italian word for fog, "nebbia." It is this fog which forced the Nebbiolo to evolve into a thick-skinned grape. These thick skins create the bold and heavy tannins which allow the Nebbiolo to age well. Don‟t be expected full body. Pinot Noir: Pinot Noir‟s best representation is from Burgundy's Côte D‟or region, and has been

for an estimated 2,000 years. When young, a good Pinot Noir exhibits the simpler and fruity characteristics of cherry, plum and raspberries. Pinot prefers cooler temperatures but you will find warm versions result in baked blackberry notes, spiced vanilla and coconut. Sangiovese: The most influential grape grown in central Italy, more specifically in Tuscany. The Sangiovese grape's skins are thick and full of tannins. Sangiovese's most important role in the wine industry is the composition of Chianti DOCG, Italy's most popular wine. This wine contradicts are general beliefs because Tuscany is full of warm sun yet it still holds great acidity. It blends very well with Cabernet, Merlot and/or Syrah. Syrah: Noble red wine grape of the Rhone valley of France, and also known as Shiraz in Australia. The decision on which to call the wine is ultimately a winemaker preference. The Rhone produces Syrah that are full of mushroom, earthy and bell pepper notes. New World regions like Australia, showcase a style that has more spice, heat, and jam jar notes of boysenberry. Temperanillo: The red wine grape used in Spain but also used to make Port in Portugal. You will see a few other wine regions embrace this grape but I would stick to where it‟s made its name…Spain. You‟ll find earthy, seductive and rustic wines sure to please the Old World and New World lover. Xinomavro The predominant grape variety in Macedonia is a native red called Xinomavro, (meaning "acid-black"). The wines made from Xinomavro are

known for their superb aging potential and their rich tannic character. Their complex aromas combine such red fruits as gooseberry with hints of olives, spices and dried tomatoes. These make great steak wines. Zinfandel: A kin to the Primitivo grape in Italy, this grape expresses itself in California with beautiful notes of licorice, raisins, dark plums, spicy black pepper and more.

BOND ESTATE

Sourced from select hillside estates, the Cabernet Sauvignon-based wines of BOND vividly demonstrate the range of Napa Valley's finest terroirs. The red rocky soil of this north facing site originates from high in the Vaca Mountains. St. Eden, which appeared first in the 2001 vintage, reliably shows great focus, an opulent "sweet" center and notes of crème de cassis, dark chocolate, and roasted herbs. Mineral-tinged and broad on the palate, the wine consistently displays fine-grained tannins and a lush concentration.
