    Tucked away in the middle of the historic Filipponi Ranch, PerBacco Cellars is a hidden gem in the San Luis Obispo wine country.

    Per Bacco is the product of a passion of premium wines held by two

    individuals: Craig Shannon, owner and winemaker, is a third genera-

    tion vineyard manager while Marco Rizzo, owner, also owns Caf

    Roma, an Italian restaurant in San Luis Obispo. Their love for quality

    wine without pretention is made obvious upon visiting the cellar. Per

    Bacco is a destination worthy of the modest ride out to the Filipponi

    Ranch.

    The tasting room is located inside the cellar which makes for a

    uniquely authentic wine tasting experience. Often, winemaker Craig is

    working on future releases just a few feet from the tasting bar. Daily

    from 11 a.m to 5 p.m., a selection of Per Bacco wines are presentedand guests may choose up to five of these wines to taste. Included are

    samplings of Chardonnay and Pinot Noir; both are made from

    premium grapes sourced from vineyards in the Edna Valley region.

    The 2008 Edna Valley Chardonnay is a beautiful example of a Cali-

    fornia Chardonnay with rich notes of tropical fruit and dense texture.

    The San Francisco Chronicle awarded this wine with a silver medal.

    Per Bacco sources Pinot Noir from Laetitia Vineyards in the cool

    coastal Arroyo Grande valley. These grapes were used in Per Baccos

    2007 Arroyo Grande Pinot Noir which was awarded a double gold

    from the San Francisco Chronicle. The fruit from Laetitia Vineyards

    also produces Per Baccos flagship wine, the Dionysus Pinot N

    Craig selects barrels that stand out among the entire lot and bottles

    wine separately under the Dionysus label. The wine is surprisinbold while, at the same time, exceptionally balanced and is extrem

    limited with only around 85 cases produced. From time to time

    Baccos limited release wines are available at outstanding discou

    for $70 per case! Everyday red wines are also frequently availa

    Rosetto red wine is an interesting blend of 80% Pinot Noir and 2

    Syrah. The wine is bright and acidic, perfect for any Italian insp

    meal.

    After wine tasting, guests are encouraged to enjoy the sc

    grounds surrounding the cellar. Two majestic Sycamore trees to

    over picnic tables, a bocce ball court and horse shoes. The charm

    area is ideal for enjoying an afternoon picnic, and it is a relaxing afor guests and wine club members to enjoy Per Bacco wines. W

    club members are fondly referred to as La Famiglia and are welc

    to visit the cellar for complimentary wine tasting. Marco shares fam

    recipes with La Famiglia and performs mozzarella making dem

    strations at wine club pick up parties.

    Thanksgiving dinner poses an interesting dilemma for thewine-pairing enthusiast. Do the broad variety of flavors from the

    multitude of side dishes like potatoes, vegetables, stuffing, gravy

    and cranberries make it impossible to pick one wine that comple-

    ments everything, or do they just offer more opportunities to get

    at least one of them to match perfectly?

    In my opinion, Thanksgiving dinner is not the occasion to

    serve a wine of great finesse or nuance. So, forget about that great

    vintage Bordeaux or delicate Pinot Noir. Too many of the side

    dishes, not to mention a flavorful roasted turkey, will just over-

    power these types of wines. My approach to choosing wine for

    Thanksgiving is to go for the big red wine. Whats more, I like to

    stick with an American wine to go along with this all-American

    holiday.

    Heres where big red Zinfandels and Syrahs come to the rescue.

    After smothering your plate with big food, you need a big wine to

    follow up. The Zinfandel grape, commonly regarded as Americas

    grape, has many interesting, powerful, flavors that come through

    regardless of how eclectic your meal is. Think of dark berries,

    spices and black pepper when considering Zinfandel.One word of caution when consuming big red Zinfandels or

    Syrahs: alcohol content in these wines is often equally big, some

    times as high as 18%, compared to typical wines having 13%-14

    The reason is partly out of necessity. The bigger the flavors

    become, the more the wine has to be balanced, weight-wise, in

    your mouth, with other components, like alcohol, tannin and

    acidity.

    If you would like to also offer a white wine with Thanksgivin

    dinner, I suggest a dry Riesling for its versatility in pairing with

    many dishes and its ability to cleanse the palate with refreshing

    acidity. Riesling is made in both a dry and semi-sweet style, and

    this is not always stated on the label. Be sure to check with you

    wine retailer when selecting it.

    In 1979, Hoy Buell started Greenheart Farms. Today, its one of

    Californias leading vegetable plug transplant producers and one of the

    largest nurseries in the nation. Growing a wide variety of flowers,cyclamen, poinsettias, roses, herbs and vegetable transplants for

    farmers and wholesalers, wine grape plants were a natural addition.

    By 1998, Hoy was growing and grafting hundreds of acres of wine

    grape plants for local growers. However, Hoys personal love of wine

    gave rise to planting his own vines in 1999 and by 2003, Hearthstone

    Vineyard produced its first vintage.

    Hearthstone Vineyards is located in the Adelaida region on the west

    side of Paso Robles wine country. The Adelaida hills are on the east

    side of the Santa Lucia Mountains, which provide a 3000-foot wall

    between the ocean and the vineyard. The region experiences notable

    diurnal temperature swings during the ripening season of July, August

    and September. A typical day will vary 45 degrees between day andnight temperatures. The slightly higher elevation, rugged and rocky

    limestone hillside and dynamic weather conditions contribute to the

    uniqueness of the area and produce quality wines.

    The distinctiveness of the Adelaida region is why a lot of varietals

    can grow in the area. According to Hoy, diversity is more inter-

    esting and he encourages this diversity by growing 20 different vari-

    eties of grapes and various clones of each grape. Varietals include

    Zinfandel, Syrah, Grenache, Mourvedre, Cabernet Sauvignon,

    Cabernet Franc, Malbec, Tempranillo, Pinot Noir, Sangiovese,

    Brunello, Viognier and Rousanne. The variety of grapes allows for a

    broad range of wines and styles.

    A boutique operation, Hearthstone wines are made by a passion

    team that is dedicated to sustainable farming and hands-on prod

    tion. Owner Hoy Buell is a Cal Poly graduate and a career horticul

    alist whose expertise about planting and growing enable the grapegrow to their highest quality. Hoy is joined by winemaker Paul Ay

    who, with 20 years of experience making wines, makes sure that

    wines represent the high quality fruit coming from the vineyard.

    The exceptional quality of Hearthstone wines is reflected in

    number of awards they have won at competitions around the coun

    in the past year. At the 2011 San Francisco International W

    Competition, the 2008 Pinot Noir took home a gold medal. The 20

    Pearl (Roussane, Viognier) won gold medals at both the 2011 SDiego International Wine Competition and the 2010 Critics Challe

    International Wine Competition. The 2007 Lodestone (Syr

    Grenache, Mourvedre) won gold at the 2010 Critics Challenge and

    2007 Profundo (Sangiovese, Cabernet Sauvignon, Cabernet Fra

    Syrah) won gold from the 2011 San Francisco Chronicle W

    Competition. These are just a few of the awards the wines h

    received.

    Hoys passion for the environment and sustainable farming has

    to his involvement in several major reclamation projects around

    what it takes to run an operation that remains viable in the economy

    while also finding balance in the interaction with the environment,

    Hoys projects all seek to support and align with the natural systems

    of the earth. He is responsible for growing 2.5 million pine trees to

    replant deforested Louisiana and 2,600 acres of saltgrass for the

    Owens lake restoration project in Sierra Nevada. Currently Hoy is a

    part of the Colorado River re-vegetation project where he is helping

    to propagate, transplant and reestablish native plants to eight thou-

    sand acres of their natural habitat. Recently, Greenheart Farms

    became certified sustainable, making the vegetable transplant nursery

    the first sustainable one in the US.

    Hearthstones name is derived from the word hearth, meaning heator a fireplace, and which symbolizes the home and feelings of warmth

    and love. And this is what Hearthstone, with its Gaelic image of

    smoke on the label, represents. The rustic tasting room is casual and

    inviting. The staff is friendly and knowledgeable. Stop by for a taste

    Hearthstone Vineyard offers a number of wine club dinners,

    blending events and other events throughout the year. As a member

    events, as well as receive a variety of special reserve wines that are

    limited in production and only available to wine club members.Stop by the tasting room to taste the newest releases from Hearth-

    stone Vineyards. These limited-production wines will only be avail-

    able in the tasting room and include the 2009 Reserve Cabernet

    Sauvignon (100 cases), the 2008 Brunello [a Sangiovese clone] (50

    cases) and the 2008 Syrah (33 cases).

    Over the past 30 years Ken Volk has been awarded many different

    titles: Winemaker of the Year, Outstanding Citizen, Agriculturalist ofthe Year and Wine Industry Person of the Year. But if there were one

    word that could truly encapsulate Volks career in the wine industry

    it would be visionary.Volk grew up working in his familys gardens and orchards and

    often envisioned his own future doing something similar, so it was

    no surprise when he decided to pursue a degree in Fruit Science atCal Poly State University in San Luis Obispo. His path diverged after

    he made his first wine with Gamay grapes, a baseball bat and a trashcan. It wasnt long before Volk was taking enology classes at the U.C.

    Davis extension program as well as technical classes at the wine lab

    in St. Helena and the now defunct Napa School of Cellaring. Hishome winemaking eventually took over his garage at his home in

    Cayucos.

    When Volk started Wild Horse Winery with his family in the early

    1980s there were far fewer wineries, since the Central Coast was notyet taken seriously as a fine wine-producing region. But Volk recog-nized the regions potential and over the next twenty-two years he

    grew production from 600 to 150,000 cases, becoming a brand

    synonymous with quality Central Coast wine. In 2003, Ken soldWild Horse to Peak Wines, a division of Jim Beam Brands.

    Volk has always had a passion for reinvention and the desire tocontinually learn and try new things, so in 2004 he retired from

    Wild Horse Winery and purchased the original Byron Winery and

    Vineyard in Santa Maria, and renamed the property Kenneth VolkVineyards. With his new venture, Volk knew he wanted to keep his

    case production lower and focus on producing world-class wines

    including Pinot Noir, Chardonnay, Cabernet Sauvignon and Mer

    The flagship wine of Kenneth Volk Vineyards is the Santa MCuve for both Pinot Noir and Chardonnay, which are single-vari

    wines that are a blend from many of the top vineyards of the Sa

    Maria Valley appellation.We capitalize on the diverse microclimates in the Central Co

    working with some of the best vineyard sites of Santa Barbara, SLuis Obispo and San Benito counties. We scope out different lo

    tions that are most suitable for a specific variety rather than tryin

    source everything from one appellation. I enjoy being able to sptime in so many unique vineyard sites, said Volk.

    But with well over three thousand cultivars of Vitis Vinifera (

    wine grapes) used for regional wine production all over the woVolk has also built his eponymous winery on under-appreciated

    hard-to-pronounce grape varietals, which he calls his HeirloWines. This collection includes such wines as Negrette, Caber

    Pfeffer, Verdelho, Touriga Nacional, Blaufrnkisch, Malvasia Bian

    Albario and Aglianico. Although many of these grapes have lac

    promotion in what Volk calls the mass-marketed chocolate, vanand strawberry wine standards, Volk saw this as a niche to be ato make interesting and memorable wines that dont often mak

    into the consciousness of the average wine drinker.

    We take an advocacy position on these [grape] varieties as tcould face extinction in our current market. Its a challenge but

    fun and educational for us. In some ways its sort of like cro

    training, and gives us insight into making better wines in generaEvery year Volk tries to do something hes never done before, a

    of Eurasia, near the Caspian Sea where many of the worlds Vinifera

    grapes originated, and many of which have yet to be categorized.

    Along with his vision for working with obscure as well as tradi-

    tional varietals, Volk has also had opportunity to see how technolog-

    ical developments have affected the process of winemaking.

    Listening to this life-long learner speak of these developments, its

    obvious that Volks initial interest in fruit science still looms large.

    With our increasing understanding of the genetics of wine

    grapes, were now able to understand how and why different grapes

    tend toward certain growing conditions, said Volk. Simple

    sequence DNA has also become relatively affordable for under-

    standing the genetic background of grapes and where different winegrapes originated. Were able to get away from opinions and stories

    to really understand the truth behind each grape.

    As chair of the Wine and Viticulture Advisory Council at Cal Poly

    San Luis Obispo, the third largest viticulture program in the

    country, Volk is invested in creating a center for excellence and

    increasing the opportunities offered by this program for future

    generations of wine industry enthusiasts. He also recently opened a

    satellite tasting room for Kenneth Volk Vineyards in Paso Robles in

    May 2010, sharing the facility with Lone Madrone wines and Fat

    Cat Farms, offering visitors an additional location to experience

    Kenneth Volk Vineyards unparalleled wines. Theres no telling in

    which direction Volks zeal will take him next, but its a path thatscertain to offer new and fascinating ways to enjoy wine for enthusi-

    asts of all levels.

    This family-owned brewery started by Jim and Jaime Dietenhoferof Los Olivos, has been life-long dream in the making. Harnessing

    Like the inspiration behind achieving a dream, every grapevine

    begins with years of nurture before it produces clusters worthy enough

    to be used to craft quality wines. For Robert L. Hall, the inspiration

    behind his dream began nearly 40 years ago and became a realityresulting in the Robert Hall Winery of today.

    The ability to develop an idea into a success has never been

    anything new for Robert Hall. A true entrepreneur, his ventures

    include construction, bowling centers, travel agencies, restaurants and

    champion horse breeding. A Minnesota native, Robert resided in

    Arizona before finding his home and fulfilling his dream in Paso

    Robles.

    During a family trip to France in the late 70s, Robert was capti-

    vated with the Rhne Valleys style of winemaking. He then ventured

    west to explore each of Californias wine appellations in order to find

    the best growing conditions for producing premium wine grapes. He

    acquired the Home Ranch in 1995 and soon after, the Terrace and

    Bench vineyards were added, completing the Hall Ranch estate. Robert

    soon became a ground breaking Rhne variety grower for the Paso

    Robles region.

    Roberts focus began with a balances soil that will produce clusters

    of high quality each and every season on the 400 acres that comprise

    The Hall Ranch. The quality of each bottle of wine is a direct reflec-

    tion of the care given in the growing and nurturing of the vines.

    Roberts hands-on approach to his wine growing, making and tasting

    leaves each customer with a memorable experience of the winery and

    of him personally.

    Roberts dream of a full production winery quickly came into v

    in 2002 with the construction of his production facilities. These fa

    ities include his custom crush pad consisting of two butcher premanufactured in France as well as 55 stainless steel tanks use

    fermenting the wine throughout the year.

    With the collaboration of his long-time Winemaker Don Br

    Robert Hall Winery has consistently produced award-winn

    sustainable wines. In 2008, Robert Hall Winery achieved Certi

    Sustainability in Practice (SIP) standards which entailed an indep

    dent third-party audit of the vineyard and winery practices by indu

    Alvarelho, Souzo and Tinta Co. This smooth-style dessert wine

    pairs well with dark chocolate and blue cheese. In addition, the

    Orange Muscat that is a crisp and refreshing fruit forward dessert wine

    that pairing wonderfully with all fruits throughout the seasons as well

    as other light desserts and cheeses.

    Maybe the most evoking element of Robert Hall Winery are the

    19,000 square feet of underground caverns used to store 132-gallon

    oak barrels at a natural, and optimal wine storage temperature of 55-

    65 degrees year round. Above the caverns one can find the tasting

    room and hospitality building.

    The welcoming embrace of the tasting room begins with a knowl-

    edgeable staff that not only serves wine but provides guided tours of

    the entire facility from the vines to the bottle. The center of the

    10,000-square-foot tasting room holds the tasting bar made up of a

    gold granite top that compliments the colors of the ceiling and its

    massive wooden beams used to hold up the ceiling. The gorgeous

    panoramic view of the tasting room overlooks the garden terrace andamphitheater that are used for private events and concerts. The hospi-

    tality center is designed to host seminars, private parties, weddings

    and corporate events.

    Robert, a true steward of the land, can often be found working in

    the vineyard or in the tasting room greeting visitors. You are welcome

    Carina Cellars was launched as a vision between winemaker Joey

    Tensley and businessman David Hardee. It was a meeting that might

    seem out of place given that the two men come from opposite places.

    Tensley grew up in Bakersfield and worked as assistant winemaker at

    both Babcock and Beckmen wineries, before landing at Carina.Hardee, by contrast, was involved in law and he charted out Carina

    Cellars as a simple extension of his meticulous planning used as an

    attorney. In a start-up operation, you try to eliminate as many poten-

    tial obstacles as you can, he says referring to what wines he wanted

    to make. The Rhne varieties were a logical choice over the oft-planted

    Pinot Noir and Chardonnay, but Syrah is their main focus. Syrah is

    very hip and the cool thing about it is that it adapts well to various

    growing conditions, Tensley says.

    Carina Cellars has made a name with Syrah but they also produce

    a signature blend, Iconoclast, merging Napa Valley Cabernet Sauvi-

    gnon with Santa Barbara Syrah. We recently released our 2009

    wines, says Shaun Grimmitt. Our Clairvoyant is a 50 percent Syrah,35 percent Grenache and 15 percent Mourvdre. This is a classic

    French-style Rhne blend that mimics the great wines that come out

    of France and shows our personal touch in producing something

    similar. We are also showcasing our 2009 Zinfandel. Its an elegant Zin

    that doesnt obscure Zinfandels awesome nuances, he notes.

    They have expanded to two tasting bars inside their comfortable

    tasting room to handle the influx of people on busy weekends. There

    are small gift items as well; books, clothing and wine accessories. Their

    tasting room also features rotating art which hugs the rustic walls.

    Their latest art exhibition is Reflections, running currently through

    December 31st, by Royanna Robertson and Mike Krone. Reflections is

    a collection of works by a brother and a sister, in watercolor and

    each seeing the same subject, and in turn painting it in their own s

    and yet each painting is a reflection of the other. Carina Cellars

    participate in Autumn on the Trail on November 5th from 1 to 4 p

    a passport event covering a dozen wineries showcasing the Santa YValley.

    Located right in downtown Los Olivos, Carina Cellars is one of

    best and most consistent wineries. Fine wine is like fine art,

    subjective. There is no definitive right or wrong pairing, just perso

    Thomas Hill Organics, and its one to which owners Joe andDebbie Thomas are deeply committed, as they serve the PasoRobles community through both their farm and bistro.

    Joe and Debbie met at the Santa Barbara County VintnersFestival, and at the time Joe was teaching art at Santa ClaraUniversity and Debbie was a key accounts sales manager forAdidas in Los Angeles. They married and were quick to realizetheir shared love of good food and good wine. They dreamed ofone day moving to wine country, and in 2004 they purchased the

    perfect home in the eastern hills of Paso Robles and began tomake that dream into a reality. Thus Thomas Hill Farms wasborn as they planted every last spot of the 10-acre property with900 fruit and nut trees, a small vineyard of Italian varietals, andan assortment of raised bed lettuces, herbs and garlic, andseasonal row crops like tomates. Everything is grown organicallyand farm tours are given by Joe by appointment only.

    As the land began to produce, Joe and Debbie developed aCommunity Supported Agriculture (CSA) program, wheremembers of the community can sign up for a T-Hill Basket that

    includes an assortment of produce straight from their farmyou. The program begins around May and runs through OctobBut even with this program, Joe and Debbie found themselwith a surplus of fruits and veggies, and were quick to reathat there were no other farm-to-table restaurants in town. So

    January 2009, they opened Thomas Hill Organics in downtoPaso Robles.

    Chef Julie Simon was quick to join the team, and with Parisian upbringing and California-honed culinary skills, brings a fresh and unexpected explosion of flavor combinatito the cuisine. The menu changes weekly depending on

    season and their wine list heralds an amazing line-up of locaproduced wine. You may choose to enjoy your meal in their inmate indoor dining room, or outside on their beautiful outdpatio.     Cal Poly Wine and Viticulture Program to Benefit; Limited Tickets AvailablePaso Garagiste today announced that forty of Californias most

    cutting-edge artisan garagiste* winemakers are now set to pour at

    the first annual Paso Garagiste Festival: Celebrating the Artisan Wine-

    maker to be held November 11-12 at Paso Robles Windfall Farms. Alimited number of tickets for the festival, which will raise funds for the

    Cal Poly Wine and Viticulture Program, are now on sale to the public

    We knew that there was a powerful artisan wine movement with

    deep roots in Paso Robles that simply needed the right vehicle to bring

    it to light, says Paso Garagiste Co-founder, and longtime Paso resi-

    dent and garagiste, Stewart McLennan. The Paso Garagiste Festival is

    that vehicle and, since we announced it just a few weeks ago, the

    response from wine enthusiasts, the wine industry and, importantly,

    the artisan wine community, has been overwhelming. For the first

    time, wine consumers will have the opportunity to taste, all under oneroof, some of the regions if not the countrys best and hardest-to-

    find artisan winemakers.

    features high-quality, cutting-edge, small production wineries that

    produce fewer than 1,200 cases a year. Among the forty winemakers

    scheduled to pour are Aaron Wines, Alta Colina, Caliza Winery,

    Jalama Wines, J Dusi Wines, JK Wine Company, Stanger Vineyards,

    Symbiosis Wines, Storm Wines, Tercero Wines and Vines on the

    Marycrest.

    Paso Garagiste also announced key additions to the festival line-up,

    including seminars from top winemakers; a winemaker after party,

    featuring entertainment from country singer Stephen Rowe, and livebroadcasting from the event by The Krush 92.5.

    Because festival attendance is strictly limited and benefits from the

    intimate setting of Windfall Farms stunning Stallion Barn, festival-

    goers will have a greater opportunity to get to know the garagiste

    winemakers and their wines than is customary at larger wine festivals.

    As crush began at Halter Ranch Vineyard, an extended team

    took its place at the brand new, state-of-the-art winery. In fact

    2011 marks the start of a new era for Halter Ranch, with theappointment of Kevin Sass as Winemaker and Skylar Stuck as

    General Manager.

    Kevin Sass has a decade of winemaking experience and ha

    worked closely with many Paso Robles vineyards, including

    Halter Ranch. He is particularly eager to showcase the potentia

    of the superb Halter Ranch estate fruit. Since 2002, we have

    been making wine in an old airplane hangar. Weve been

    hamstrung by our limited space and have had to cap ou

    production at roughly 8,000 cases, while our vineyards could

    readily provide fruit for 30,000 cases. With this harvest, Sass

    continues, we will sell less fruit to our neighbors and begin

    building the Halter Ranch identity.Skylar Stuck joined Halter Ranch in January 2011 and over-

    sees all day-to-day operations. With 20 years experience in the

    wine industry, Stuck is looking forward to this first vintage

    crafted in the new winery. I am very excited to be part of the

    on-going qualitative developments at Halter Ranch, where we

    are committed to sustainable farming and share a philosophy o

    enlightened environmental stewardship.
