WINE COUNTRY THIS MONTH

The oldest profession in California is not what you think: it’s most

probably cattle ranching. And the partners of Alta Maria Vineyards,

Paul Wilkins and James Ontiveros, have a long history in the ranches

and farmlands of this part of California.

The Ontiveros family first came into California in 1781 with the

Rivera expedition. Although their original land grants were in

Southern California, they drove thousands of heads of cattle into the

Santa Mara Valley, finally settling there on the Rancho Tepusquet Land

Grant of 1837.

Today, much of the duo’s grapes come from that very same land. As

a couple of kids in college, both studying crop and fruit science at Cal

Poly San Luis Obispo, they bonded over an unlikely interest in

wine. Paul’s family background in farming and James’ history of cattle

ranching put them firmly in position to build on their knowledge of 

the land and growing things on the land, to arrive at a new calling:wine production.

For both men, wine grew into obsession and obsession became

career: James as a viticulturist and Paul as a winemaker. Working hard

and making sacrifices was not new to either, and they both became

veterans in their fields, even at a young age. Finally they moved away,

lost touch, and many years passed.

But the land in the Santa Maria Valley had a pull on the two

men; the sense of heritage and nostalgia drew them back

together. As the two friends re-connected on a vineyard on a hill

in that valley, they decided to make the wine that was waiting

for them all along: Alta Maria Vineyards.

The artwork for Alta Maria Vineyards features hand-hewn iron n

used by homesteaders in Santa Maria before the Industrial Revoluintroduced mass-produced, machine-cut nails. Despite its lowly fu

tion, each nail is unique from the next according to the condition

which it was made and the expertise of the craftsman. This craftsm

ship is what Paul and James strive for in all their wines. In additio

the Alta Maria wines, the pair also makes Autonom wine, focusing

Rhone varietals and Native9, which is purely Pinot Noir. The wines

made in small lots with a nod to both Old World sensibilities and N

 World stylistic freedom.

 With vine-growing and farming in their blood, Alta Maria w

reflect the pair’s shared affinity for all things homespun and honest

the authenticity of the Santa Maria Valley and a gratitude to the genations of California farmers and ranchers before us, farming the v

same land 150 years ago.

 All Alta Maria wines can be tasted at the newly opened tasting ro

located on Grand Avenue in Los Olivos. Though Paul and James h

been making and distributing wine for years, they didn’t open a tas

room until late last year, with some fresh offerings on the curr

tasting list. It’s open daily from 11 a.m. to 5 p.m. and is located at 2

Costa de Oro is a Spanish term meaning “gold coast” which

pretty much sums up the California Central Coast. But it is also

the name of a winery in Santa Maria. Costa de Oro Winery makes

wine from their aptly named 30-acre Gold Coast Vineyard but

also sources some fruit from places like Paso Robles. The vine-

yard carries on the Burk family farming tradition, and prior to

grapes being planted, they started out growing greenhouse toma-

toes and kiwis, broccoli, cauliflower, cilantro, corn, spinach and

what the agricultural region is perhaps best known for – straw-

berries!

Gary Burk is the mind behind the winery, though he came to

wine and winemaking later in life and didn’t have his sights set

on the family farming business at all. After graduating from Cal

Poly-San Luis Obispo with a degree in business, he landed amusic industry job in Los Angeles working as a royalty accoun-

tant for a major record label. His client list was impressive

including Bob Seger, Heart and Ike Turner, but Burk really

wanted to be making music, not counting numbers. So he left

his job and played folk, blues and rock throughout the early

1990s at a variety of well known venues in Los Angeles

including the Palomino and the Whisky-a-Go-Go. But a chance

meeting with iconic winemaker Jim Clendenen changed every-

thing and soon Burk found an equal passion in wine and

returned to the family roots, so to speak, though this time

farming grapes, not strawberries. Burk committed fulltime

winemaking in 2002 and his approach to winemaking sha

similarities with his approach to music. “I go with gut feeli

with wine as much as I would a guitar solo,” he says. “You’ve

to be able to sense when to play softly and when to rip and re

go for it.” Similarly the winery started slowly, building a repu

tion on small lots and solid wines which reflect the Gold Co

they are grown in.

The wines offered at Costa de Oro include award winn

from competitions in San Francisco, Orange County and

Central Coast, not to mention high praise from venerable w

publications like Wine Enthusiast Magazine and Wine Specta

“In the tasting room, we have added wines that are either exc

sive to the wine club or in very small quantities for the bar,” s

Burk. Currently you can find two versions of Chardonnay, f

iterations of Pinot Noir, Pinot Grigio and Cabernet SauvignHe has grown to about 6,500 cases and also private labels a f

wines for notable restaurants in Hawaii including Roy’s Rest

rants.

The Costa de Oro tasting room, which opened in 2006,

on the site of the Gold Coast strawberry stand where you c

pick up gift items and wine. The views from the glass windo

look directly out to the fertile fields of Santa Maria. The tast

room is comfortable and relaxed with its wood-toned colo

wood beams on the ceiling and comfy chairs to relax in, not

mention plenty of sunlight. The staff is known to be friendly

helpful. Tasting fees are $10, or you can purchase individual

glasses of wine. Either way make certain you get a cheese plate

to go with your wines, which are available from $5 to $12

containing a variety of cheeses. To make matters even better,Costa de Oro offers live music every Friday evening with their

Wine Down Fridays. Each Friday night from 5 to 8 p.m. you’re

likely to hear folk music, blues, acoustic guitar solos or a little

rock from Grammy winning musicians. “My wife and I are musi-

cians as well and music is near and dear to us,” Burk says.

“Music and wine are both universal languages, they speak to

people on an emotional level – no translation necessary.” And

every once in a while, if the vibe is right, Burk and his Strato-

caster will join guests on stage to jam. This is an ideal stop

when traveling on Highway 101 as you pass through Santa

Maria, halfway between Santa Barbara and San Luis Obispo, a

chance to sample wines, enjoy live music and soak up the Gold

Coast.

Of all the wines Gary makes he has a fondness for Pinot Noirs.

“We are very excited about our Pinots,” Gary says. “They are the

best line-up of Pinot we have released to date.” So get your groove

on and check out the exceptional wines of Costa de Oro. The

 A short jaunt off the 101 freeway and onto the 1,900-acre property

of Laetitia Winery and you’ll feel as though you’ve been transported to

a sprawling French wine estate, but it’s the unparalleled ocean views

that won’t let you forget you’re on California’s Central Coast.

Located in Arroyo Grande, Laetitia Estate Vineyards were originallyplanted in 1982 as Maison Deutz, a label created by French viticultur-

alists who were quick to realize that the growing conditions in Arroyo

Grande were quite comparable to Epernay, France. Nearly 20 years

later Selim Zilkha purchased the winery, and using his background in

wind power and sustainable energy, he moved Laetitia Winery to

This family-owned brewery started by Jim and Jaime Dietenhofer

of Los Olivos, has been life-long dream in the making. Harnessing

their Bavarian heritage the Dietenhofer’s wanted to create a craftbrewery in the Santa Ynez Valley that focused on creating the highestquality beer and help add to a growing hop culture in the Central

Coast.

Utilizing the skill sets from award-winning head brewer A.J. Stolland his brew team, Figueroa Mountain Brewing has been able to

By Allison LeinePaso Robles Inn Steakhouse has been a favorite place for locals and

visitors for more than 50 years, but their history dates even furtherback.

Sitting on top of natural sulfur springs, the El Paso de Robles Hotelwas opened in 1891. Built in the Victorian style, the hotel stood as afortress in the small town of Paso Robles and was the destination of theday. But, the golden era of the El Paso de Robles Hotel and Hot Springscame to an end after a major fire in 1940 burned down everythingexcept the Grand Ballroom.

The Paso Robles Inn was reopened in 1942 as a modern bungalow-style hotel with surrounding gardens. While the inn was rich in Pasohistory, it did not maintain its landmark status until the Martin familybought the property in 1999 and restored it to its original beauty,including the original Grand Ballroom. Despite losing one building inthe 2003 earthquake, the property currently offers 30 deluxe spa hotelrooms and six two-bedroom suites, all with mineral spring tubs in therooms.

 With an outdoor patio and fire-pit tables overlooking the gardens,Paso Robles Inn Steakhouse, which was remodeled last fall, is a classicsteakhouse with a modern twist. Offering a diverse menu, the restau-rant has access to great resources, including seafood, produce from theSanta Maria Valley and other artisan products. The chefs regularly go

to the farmers’ market to buy ingredients for the recently revised famfriendly menu which offers more options for the budget-conscivisitor. New San Francisco enue for Grand Tasting and Epicuria

On January 28, The Grand Zinfandel Tasting (held during the

21st Annual Zinfandel Advocates & Producers Festival in San

Francisco) will take on a fresh personality with a new home – thecarpeted, stylish expanse of The Concourse at 8th and Brannan –

a vibrant SoMa neighborhood easily accessible by public trans-

portation. The move to the spacious Concourse will allow winery

stations to be spread out on different levels, enabling friendly,

interactive conversations between winemakers and attendees.

Epicuria, ZAP’s Zinfandel and food pairing extravaganza, will

also relocate to The Concourse in 2012. “The Concourse is conve-

niently located in downtown San Francisco, offering not only the

ease of public transportation and lots of cabs, but also ample

parking. The Concourse is ideally suited to the scope and purpose

of this magnificent annual event,” says Rebecca Robinson, Execu-

tive Director of ZAP. “The change from the two warehouses at FortMason in past years to bringing all the Zinfandel winemakers and

avid fans under one roof is wonderful,” she adds. “We all agree –

the energy and quality experience will be amazing.”

 Also new in 2012 are coordinated tasting – events during the

days before the Festival at Beverages & More, K & L Wines, Ferry

Plaza Wine Merchants, Piedmont Grocery, Napa Valley Winery

Exchange and The Press Club.

The 2012 Zinfandel Festival encompasses four compelling

events in San Francisco from January 26, through January 28.

GRAND ZINFANDEL TASTING on Saturday is the largest

and most enthusiastically received single varietal tasting in theworld, with over 200 wineries pouring more than 600 different

Zinfandels. The new venue at The Concourse allows ZAP to offer

more workshops than ever before on a range of topics such as the

differences in the regions where Zinfandel is grown and different

approaches to Zinfandel winemaking. ZinTracks, an innovative

quick-reference tasting guide, will offer lists of wines by appella-

tion, barrel samples, old vines, price point, vintage, vineyard

designates and farming practices – as well as a few fun and whim-

sical “tracks,” such as winemakers’ pets. This allows each attendee

to personalize their tasting experience and leave the Tasting

having made numerous discoveries about the uniqueness of 

Zinfandel.EPICURIA is the new name for the extremely popular

Thursday evening Zinfandel and food pairing event, which will

also take place at The Concourse. This is an intimate way to

explore the magic of matching food and Zinfandel, whether it’s

Swan Oyster Depot’s shrimp cocktail or lamb lollipops from Ruth’s

Chris Steak House. Epicuria is a way to meet and converse with

50 Zinfandel vintners and 50 San Francisco Bay Area chefs and

restaurateurs who’ve worked together to offer very specific food-

wine matches. ”There is no better way to experience the wide

range of Zinfandel styles and the broad scope of food that

Zinfandel can be paired with in a more intimate setting,” explRobert Biale, President, Zinfandel Advocates & Produc

Epicuria also includes The ZinKitchen, where chefs will dem

strate how to prepare their dishes and explain why it synchron

so well with Zinfandel. The ZinKitchen chefs include Chef M

Dommen and Sommelier Tonya Pitts from One Market Restaur

and Chef David Taylor and Sommelier Shelley Lindgren from A

FLIGHTS is a seminar and tasting during which a pane

Zinfandel experts will taste along with participants and exp

the superior quality, terroirs and distinctive characteristics of

varietal. For 2012 Flights will take place at the Westin St. Fran

Hotel in San Francisco’s Union Square.

WINEMAKERS DINNER is the lively benefit auction

winemaker dinner with a Las Vegas theme. Winemakers from

renowned wineries pour their Zinfandels for guests durin

reception followed by a live auction of one-of-a-kind Zinfan

related items ranging from special VIP winery experiences

travel, unique Zinfandel-themed art works and rare and l

format bottles. At dinner, guests are seated with the winemak

and enjoy the opportunity to converse, ask questions and inte

with those responsible for making the world’s finest Zinfand

Proceeds benefit ZAP programming, education and Herit

Projects, including UC Davis, Sonoma State University and C

Zinfandel’s critically important role in the world of fine wine.

While the Zinfandel grape originated in Europe, the Zinfandel

name is truly American—the earliest documented use of the name

was when a Boston nursery owner advertised Zinfandel for sale in1832. Zinfandel was introduced to California during the Gold

Rush at some point between 1852 and 1857 and became widely

planted because it thrived so well in the state’s climate and soil.

Today, Zinfandel is the third leading wine grape variety in Cali-

fornia, with nearly 50,000 acres planted, according to the 2010

California Grape Acreage Report.

  As The Association of Zinfandel Advocates and Producers

(ZAP) celebrates its 20th anniversary in 2011, ZAP looks back

upon a profound legacy while anticipating a revealing future for

Zinfandel. Together with historians, growers, producers,

If you are a regular in the Hunt Cellars

tasting room located just off of Highway 46

West on Oakdale Road in Paso Robles,

chances are you have enjoyed music while

you sipped your wine. Owner/winemaker,

David Hunt, pursued a music career in his

younger days prior to becoming an elec-

tronics entrepreneur and real estate devel-

oper. Since opening the tasting room in 1999,

David has been playing different styles of 

music and observed the way its mood affects

people’s attitudes. At the end of each of the

quarterly winemaker dinners he performs a

solo concert for guests.

  Whether the wine inspires his music or

music inspires his wine, clearly the two go

hand in hand. A glimpse at the tasting room’s

wine list indicates the ties to his music back-

ground. The wines have whimsical names

such as the Chardonnay “Moonlight Sonata”,

Sangiovese “Rhapsody”, Merlot “Unforget-

table” and Cabernet “CabOvation”. With

consistent accolades, the wines have given

David something to sing about.

 And sing about the wines he does in his

“Rhapsody in Red” CD. The CD contains

songs written and composed by David Hunt.He co-produced the CD with contemporary

jazz guitarist Nils. Nils’ Jumpstart song was

rated the most played smooth jazz song by

Billboard Magazine. Along with David on

piano and lyrics, Nils on guitar, the CD also

features the talents of onetime Ambrosia

drummer Burleigh Drummond, backing

vocalist Clydene Jackson, and dramatic

orchestral arrangements by Philippe Saisse.

The collection of songs is inspired by the two

things that David is most passionate about –

his family and wine.

The CD begins with “Hilltop Serenade,” a

classical influenced rocker about what wine-

makers call the “angel’s share” inspired by

Syrah, and ends with “Bon Vivant”, an opti-

mistic song named after one of David’s

cabernet sauvignon. Along with several other

songs named after his unique wines, the CD

contains several songs about this family and

key moments in his life. “Destiny”, for

example, is a song he wrote the night before

his daughter Destiny was born. He gives

credit for the inspiration to record this CD to

his children who told him “If you don’t do it

now, you are never going to do it”. The CD,

dedicated to his wife and three children, can

be found in the Hunt Cellars tasting room.

 While visiting the tasting room be sure to

taste the 2007 “Bon Vivant” Cabernet Sauvi-

gnon, a wine that recently received a 93-point

rating. The Cabernet has a lovely nose of 

currants, blackberries, cherries and toasty

vanilla. With balanced tannins, dark fruit,

and supple mouthfeel this is an easy-drinking

wine. The tasting room staff will be happy to

play the “Bon Vivant” song for you while you

taste.

 Always striving to create something new,

David has produced his first Pinot Noir. The

fruit sourced from Santa Barbara County has

been transformed into a very smooth, elegant

Pinot that is rich with flavors. Having just

been released, the wine has already receive

96-point rating from Food & Beverage Wo

The wine is being positioned as a Caber

drinkers’ Pinot Noir due to the struct

color, body and texture. If you are lucky, t

Paso Wine Centre is the Central Coast’s premier wine shop and

tasting lounge located in a new contemporary building on Park Streetdirectly next door to McClintock’s.

The focus here is on premium wines originating from Paso Robles.

The PWC features 48 wines available by the taste, glass or any one

ounce increment through a state-of-the-art Enomatic wine pouring

system. The Enomatic system gives the consumer complete control to

try a variety of wines at the push of a button. A pre-paid debt-like card

is used to activate the machines and deduct value as different wines

are tasted.

The Paso Wine Centre is a modern tasting lounge grounded by the

earthiness of custom-made community slab tasting tables and

wonderful artwork showcasing some of the vineyards of Paso. The

tables are the work of new owner Kevin Rankin, who took over thePWC in June of 2010. He wanted to connect the modern design of the

space with natural wood, one of his passions. So with the help of some

new friends, he was able to obtain 100-year-old oak slabs from Halter

Ranch and a space outside of Denner to create the tables.

Charles and Joyce Poalillo have been making delectable small-lot

wines since 1992. Their estate vineyard on Willow Creek Road is

famous for its head-trained, dry-farmed Zinfandel. In 2010, Charles

and Joyce’s daughter, Susan, and her husband Dave, built a new

winemaking facility and tasting room at their home on Viney

Drive. The whole family is involved in the wine business today

Hearthstone Vineyard & Winery produces 100% estate-grown

wine from their 40-acre vineyard. Owner, Hoy Buell, a Cal Poly grad-

uate and horticulturist for 32 years, planted the vineyard back in 1999.

With his past experience in growing a wide variety of plants, it is no

surprise that he planted a very diverse vineyard. The Hearthstone

Vineyard is home to 20 different varieties of grapes with up to seven

different clones of each. Over the years he has continued to fine tune

the vineyard, sometimes grafting vines, with the goal of producing the

best fruit the land can deliver.

Hoy brought in winemaker Paul Ayers to take the wide range of premium fruit to produce exceptional wines. Working together they

determine the perfect time to harvest the fruit. Each lot is hand-

picked, sorted and fermented in small lots. Unlike many wineries that

will process a mix of clones together, each lot processed at the winery

is a single clone of a single varietal. That means typically just two tons

of grapes at a time and Paul will have up to 25 lots of wine to work

with at any given time. By working in small batches Paul is able to

retain the subtle variation of flavors that each clone possesses.

  According to Paul, “Quality is the focus at Hearthstone and by

working with small lots I am able to extract the best qualities from the

fruit and age it to deliver wines with a nice level of oak integration. Iam always looking to improve the quality of the wines through the use

of different yeasts which accentuate flavors and occasionally I will use

native ‘field yeast’ to ferment the grapes.” With more than 20 years of 

experience making wine in the Paso Robles area, Paul has the ability

to manage the winemaking process from vineyard to bottle. “Paul’s

ability to detect slight variations and prevent problems from growing

is crucial to our success, and is a result from his weekly testing,

topping, and of course tasting. Paul’s attention to the wines maximizes

the potential of the superior fruit coming from the field.” Hoy n

Tucked away in the middle of the historic

Filipponi Ranch, Per Bacco Cellars is a hidden

gem in the San Luis Obispo wine country. Per

Bacco is the product of a passion of premium

wines held by two individuals: Craig Shannon,

owner and winemaker, is a third generation

vineyard manager while Marco Rizzo, owner,also owns Café Roma, an Italian restaurant in

San Luis Obispo. Their love for quality wine

without pretention is made obvious upon

visiting the cellar. Per Bacco is a destination

worthy of the modest ride out to the Filipponi

Ranch.

The tasting room is located inside the cellar

which makes for a uniquely authentic wine

tasting experience. Often, winemaker Craig is

working on future releases just a few feet from

Cellars, a 1500-case winery, the budding project of Steve Zotovich and nephew, Ryan Zotovich. Their partnership in Zotovich Cellars is new, but tshared passion for well-crafted wine and winemaking is not. In 2004, St

one of the great Crus in California Pinot Noir and Chardon

production. The winery’s Nielsen Vineyard has been at the epicen

of experimental, cutting-edge viticulture since its inception as

oldest planted commercial vineyard in Santa Barbara in 1964. Vitic

harvesting techniques have been tailored to help each vineyard block

Williams, has an extensive knowledge of the

local wine country and has a knack for

picking out under the radar wines before

anyone else has heard of them. Everything

here is “palate-picked” meaning that we try

every wine that we carry and are not influ-

enced by the latest trends or scores. In fact,

you will not a see a score for any wines

anywhere on site.

you’re encouraged to try wines you’ve never

heard of from producers you didn’t know

sample your typical Cabernets and Chardon-

sparkling wines from artisan producers along

the Central Coast, as well as from around the

world, there is always something for

everyone. Enjoy one of the themed flights or

a beer flight instead, or just kick back with a

cold one! The only thing better than wine and

beer is having some “little bites” to go along

recognized as a “Preserve America” community has celebrated its

100th anniversary with a series of special events and activities

including a visit from His Royal Highness, Prince Consort Henrik of 

Denmark. The concluding Centennial event –Solvang’s “Second

Century Celebration” will be held on Friday, January 6, at the Hotel

Corque, 400 Alisal Road in Solvang.

The public is invited to join with civic leaders, residents and visi-

tors starting at 5:30 p.m. for a wine reception offered by Lucas &

Lewellen Vineyards and Toccata Wines. At 6:45 p.m., guests will beseated for a three-course plated gourmet dinner created by Root

246 Chef Bradley Ogden. The theme of the evening is “Live the Past

Through the Present” and the post-dinner program will feature

representatives of local families who will share memories and histo-

ries of their lives in Solvang during the past 100 years as well as

dreams for the second century. Families are encouraged to buy

tables and decorate them with pictures, props and to wear tradi-

tional costumes. (The hotel ballroom will open at 10 a.m. on event

day to facilitate family table creativity.) Prizes will be awarded for

every family that participates.

 According to event coordinator Linda Johansen, “Beginning with

Centennial Fest on January 7, 2011, and throughout this incredible

year, we have been so proud to celebrate our Danish-American

heritage. This final event honors all the families that have helped to

Tasting Room on Stearns Wharf. Located at the gateway to the Central

Coast wine region, the light-filled, spacious upstairs tasting room has

a distinct contemporary feel, with an expansive tasting bar. The

inviting setting features an artisan crafted table, seats and benches

constructed by the Conway brothers out of transformed French oak

wine barrels. Visitors can enjoy a glass of wine out on the venue’s

deck, which reveals a panoramic view of the Pacific Ocean, Santa

Barbara Harbor, Channel Islands and Riviera, with a glimpse of 

passing sea lions and pelicans.
