  • Maison ChampyBeaune 1er Cru « Aux Cras » 2015 AOP Beaune 1er CruThe Beaune appellation is the most extensive AOC of Côte d'Or : The red wines are spread over an area of 362 ha including 227 ha inPremiers Crus. According to the replacement of the vines, to the north of the town, the wines are often more intense and morepowerful, whereas these are rather soft and round. The climate "Aux Cras" is located on the left flank of the Montagne de Beaune.250m above sea level and East-South East exposure. The terroir of this Premier Cru is therefore ideally located on the well-presentedslopes of the heights of Beaune. Our House has 0.45 ha of this climate.

    Its limestone base brings body and roundness to the wine, the light soil and stony has a high silica content and promotes thephotosynthesis of the vine to give wines as deep as fine. This wine is distinguished by its depth and intensity.Vintage2015 is a vintage apart in Burgundy. Marked by an exceptionally warm and beautiful summer, August rainshave allowed the vine to progress exceptionally well in the sugar content of the grapes. The wines of the year2015 are distinguished from the usual Burgundy style with more power and aromas on the palate.

    TastingColor : Beautiful intense garnet color with violet reflections.

    Nose : Delicate and floral nose (violets, roses) with notes of fruit between blackcurrant and blueberry bud.

    Mouth : The mouth has a beautiful minerality, elegant and slightly spicy notes. A saline finish, slightly drying.Well-balanced, rich and elegant wine with great aging potential.

    Wine pairings : It will be the perfect partner for a duck breast with blackcurrant sauce, a venison hazelnutwith cranberries, a beef stew with grapes, a quail stuffed with foie gras ... or a nice cheese platter.

Established since the Middle Ages,north of the Côte de Beaune, this very hilly vineyard covers the hillsides of Aloxe-Corton and Savigny-lès-Beaune. It is the diversity ofits soils and its exhibitions that gives each of its wines a strong identity. The basement of the plot "En Caradeux" is composed of marland flint limestone that develop the minerality, signature of the whites of this beautiful village. The area of production in white is 53ha, including 7 Premiers Crus on 17.60 ha: En Caradeux, Sous Frétille, Clos Berthet, Clos du Village, Quarters, Morand, and PernandVillage.The climate “En Caradeux" expresses all the complexity and nobility of the great Chardonnays Burgundy.     Nose : . Beautiful richness and aromatic complexity. The nose opens with notes of citrus (grapefruit) andwhite flesh (peach) on a mineral background. The aromas of white flowers (acacia) and sweet spices (anise,nutmeg) complete the bouquet with elegance.

    Mouth : The mouth is tender and fresh. Beautiful harmony between fat and acidity. Long finish on theminerality.

  • Tasting notesLike most vintages, this 2015 will win to wait 3-4 years in the cellar beforebeing opened but the most impatient will find today a dark dress withruby reflections. The nose is dominated by a black ripe fruit, notes ofblackcurrant, crushed black combine with spicy touches or juniper berryand bean brings breed and typicity. The mouth, all in power displays aremarkable fineness of the tannins that are present but silky. The samenotes of ripe fruit and are emphasized by aromas of toasted dry fruit andtoasty aromas. A powerful wine in a velvet sheath!

    The 2015 harvest in Châteauneuf-du-Pape2015 is a very nice vintage in Châteauneuf, not necessarily very full bodied and very rich. A vintage as Ogier likesthem, with fruit, freshness a beautiful brightness, precision. It was important to be very present in the vineyardsand the vineyard has to be in perfect condition at the end of August to allow the harvest to support the weatherof September 2015 and to ripen this harvest healthyThe aromatic and phenolic maturities were good, but the heat period of the summer caused an accumulation ofpotassium in the berries that mechanically caused an increase in pH. So weak acidities, beautiful tannins andfruity flavors without having a high alcohol content. So 2015 is a vintage where every terroir of CH9 hasexpressed itself very well without having an exuberant side but more precision and balance.

    The 40 hectares vineyard is composed of the following grape varieties: 30% Grenache noir, 30% Cinsault, 30% Syrah, 5%Cabernet-Sauvignon, 2% Rolle et 3% Ugni blanc. The Estate's wines have been officially certified organic wines since 2016. Themajority of the wines have the Côtes-de-Provence Sainte-Victoire protected designation which allow a maximal production of50 hectolitres/ha (vs 55 hectolitres/ha for the Côtes-de-Provence wines)

    Winemaking

    The creation of 946 rosé requires a precise winemaking based on a fine and delicate assembly of three bases of wine. - A winefrom the heavier parts of the juice (lees) previously stored at low temperature (4°C), and then filtered. This base gives to thewine roundness in the mouth. - Another base comes from the alcoholic fermentation in half muid (500l) of new Austrian wood(Stockinger) which gives complexity. The last base comes from the fermentation between 14°C and 16°C in concrete tank toreveal aromas..

    Light pink with light peach reflections.

    Intense nose on citrus fruits (grapefruit), passion fruits, yellow fruits (peach, apricot), almond and acacia flowers.

    Acidulate mouth, fresh with a lot of structure. Very long on the palate, smooth with great aromatic complexity andsilky, fine tannins.

    Food pairings : Tartare of halibut with youzou, beef rib of aquitaine / Galicia Txogitxu with pink Himalayan salt,Carpaccio of Lobster with sea urchin cream, Dessert with Rove's bush : roasted strawberries with red wine and sageand Rove's bush.

    When nosing its copper-coloured meniscus, you instantly detect the rancio aroma.

    Then a number of soft, rich aromas start to come through, ranging from green walnut, to candiedand bitter orange, and sweet spices such as cardamom.

    On the palate, you notice a flamboyant vivacity and perfect structure, putting the taste buds in aconstant state of alert.

    The alcohol is never overpowering. With this wine, you can enjoy a quiet moment of meditation,preferably paired with a Partagas or another Cuban cigar. “I like to enjoy it with a good book oreven with a Crepe Suzette, made according to the definitive recipe by Auguste Escoffier”,Emmanuel Cazes confides.
