My friend loves what she calls my lemon “jalopy.” Of course, it’s not really called “jalopy,” nor is it technically gelato; instead it’s frozen yogurt—a mixture of yogurt, fresh lemon juice and sugar. It’s refreshing, tangy, creamy and absolutely addictive, as are the fi ve frozen yogurts in our “Skinny Dipping” story on page 16. Making frozen yogurt is worlds easier than making ice cream. Cook-cab -u-lar-yIsraeli couscous (KOOS-koos) has a history that speaks to both politics and

palate. In the years immediately following the creation of modern Israel, the infant state was flooded with immigrants whose native diets depended on rice—a rare commodity in that emerging, food-strapped nation. David Ben-Gurion, Israel’s first prime minister, challenged a leading food manufacturer to develop a wheat-based substitute. The company answered with a rice-shaped pasta, similar to orzo.

Nicknamed “Ben-Gurion’s rice,” the pasta was immensely popular. Eventually, it took the rounded shape you’ll find in supermarkets today. In Israel, its name, ptitim afuyim, translates as “baked flakes.” In the United States, you’ll find it marketed as “Israeli couscous,” “Jerusalem couscous” or “pearl couscous.”

Israeli couscous is a completely flour-based pasta, made of hard-wheat flour, shaped into spheres, then oven-toasted. Pearls are roughly the size of a peppercorn and cook in about 5 minutes.

Enthusiasts love its slightly toasty flavor and tapioca-like mouth feel. In Israel, it’s a popular children’s dish flavored with tomato paste, but it lends itself to many grown-up dishes, like the Mediterranean Couscous Salad on page 12.

Make a quick stovetop casserole by sautéing onions and garlic, then adding dry Israeli couscous with a little broth, tossing in olives, artichoke hearts, cherry tomatoes and feta cheese. Unlike traditional couscous, it won’t clump together in salads. It makes an eye-catching base for a platter of fish or lamb. And die-hard fans have it for breakfast, simmered in milk or juice along with a cinnamon stick. —Jo Marshall

Tuscan-Rubbed Salmon

2 teaspoons Italian seasoning 1 teaspoon sweet paprika ½ teaspoon ground coriander ½ teaspoon ground fennel 1 ¼ teaspoons ground black pepper ¾ teaspoon salt ¼ teaspoon garlic powder 4 (6-ounce) salmon fillets 4 teaspoons extra-virgin olive oil

1. Prepare grill.2. Combine all ingredients except salmon and olive oil in a bowl.3. Brush each salmon fi llet with about 1 teaspoon oil.4. Press spice mixture on skinless side of salmon. Let stand 15 minutes.5. Place salmon skin side up on grill grate. Cover grill. Cook over high heat about 3 minutes. Flip and cook, skin side down, 5 more minutes or until done but still red in the center. The grilling time depends on the heat of your grill and the thickness of the fi llet.6. Serve with Orange-Fennel Relish. Serves 4.

almon is most definitely the perfect fish for the grill. Its meaty texture keeps it intact; its healthy oils keep it moist in the face of the grill’s searing heat; and its full flavors hold up to the intensity of the char—not to mention, its fresh red hues are super inviting. It’s also widely available and economical. I like to coat it with a flavorful rub and serve with a cooling relish. Here are some tips for grilling it. S

Orange-Fennel RelishUse a whole chopped orange. Cut off as much of the peel and white pith as possible. 1 cup chopped, peeled orange 1 cup chopped fennel bulb 2 plum tomatoes, seeded and chopped 3 tablespoons finely diced red onion ¼ cup pitted kalamata olives, cut into halves 1 tablespoon minced parsley 1 tablespoon extra-virgin olive oil 2 tablespoons lemon juice ¼ teaspoon black pepper1. Combine orange, fennel, tomatoes, onion, olives and parsley. Combine oil, lemon juice and pepper, whisking well. Add to orange mixture, tossing gently. Let stand several hours before serving.Makes 2½ cups. Serves 5.Per (1/2-cup) serving: 70 calories, 4g fat, 0mg chol., 1g prot., 9g carbs., 2g fi ber, 100mg sodium.

Grilled Salmon

Oil it up. While fattier fish, like salmon, stick less to the grill, the fact is that all fish have a tendency to stick to the grate. To prevent this, dry the salmon well with a paper towel and coat the fillet with a small amount of oil just before grilling.

Clean it up. If the grates are not pristinely clean—you guessed it—the salmon could still stick or fall apart. Scrape the grates until nothing is left on them. Then, rapidly brush a lightly dampened cotton (not nylon-based) rag over the grates to remove all the debris that was loosened by the brush.

Heat it up. A really hot grill prevents sticking and creates delicious char marks quickly so the salmon does not overcook. You can always lower

the heat later on in the cooking process if necessary.

Cook it up. As salmon fillets cook quickly over high heat, it’s easy to overcook them. Watch the doneness closely. They’re best when the center is still a touch medium rare and dark pink.

Peach-Raspberry CobblerCrust: 1 ½ cups all-purpose flour ½ cup ground pecans 1 ½ tablespoons granulated sugar 3 tablespoons cold unsalted butter, cut into small pieces 3 tablespoons vegetable shortening 2 to 3 tablespoons ice waterFilling: 4 cups sliced, peeled peaches 1 ½ cups raspberries ⅔ cup brown sugar ¼ cup cornstarch ¼ teaspoon salt 1 tablespoon lemon juice 1 egg beaten with 1 tablespoon water 2 teaspoons turbinado sugar1. To prepare crust, place fl our, pecans and sugar in a food processor. Pulse to combine. Add butter and shortening; pulse until crumbly. Add water and stir until dough holds together. Form into a ball; wrap in plastic and refrigerate 45 minutes. 2. Preheat oven to 425F. 3. Roll dough on fl oured surface into a 10-inch circle. Cut into 10 strips.4. To prepare fi lling, combine peaches and raspberries. Add brown sugar, cornstarch, salt and lemon juice; mix gently. Spoon fi lling into a greased 1½ -quart baking dish. Arrange dough strips in a lattice pattern over fi lling. Brush with beaten egg and sprinkle with sugar. Bake 15 minutes. Reduce temperature to 350F and bake 30 minutes, or until golden brown. Let cool on wire rack. Serves 8.Per serving: 330 calories, 14g fat, 10mg chol., 4g prot., 51g carbs., 2g fi ber, 75mg sodium.

Grilled Chicken SaladLeftover grilled chicken works well in this tasty, travel-worthy salad. Italian seasoning is an herb blend that includes dried basil, oregano, rosemary, thyme, sage, marjoram and savory.

Chicken: 2 tablespoons olive oil 1 tablespoon balsamic vinegar 2 garlic cloves, minced ¼ teaspoon salt Coarsely ground black pepper ½ teaspoon onion powder 1 teaspoon Italian seasoning 1 ½ pounds chicken tenders

Salad: 1 cup diced celery ¼ cup diced red onion ½ cup dried cherries ½ cup light mayonnaise 1 tablespoon Creole mustard, such as Zatarain’s 1 tablespoon chopped chives ¼ teaspoon salt Coarsely ground black pepper

1. To prepare chicken, combine all ingredients, except chicken, in a large bowl. Stir well. Add chicken and stir to coat evenly. Cover and refrigerate 1 hour to overnight.2. Prepare grill.3. Remove chicken from marinade. Discard marinade. Cook chicken over direct heat about 3 minutes on each side, until thoroughly cooked.4. To prepare salad, combine all ingredients. Add cooked chicken. There are over 30 types of human papillomavirus (HPV) that will affect an estimated 75% to 80% of males and females in their lifetime. For most, HPV clears on its own. But, for 30 women a day in the US (about 11,000 women a year), certain types of HPV lead to cervical cancer.

Other types of HPV can cause genital warts in both males and females. It is estimated that each minute in the US, there is a new case of genital warts.

GARDASIL is the only HPV vaccine that helps protect against 4 types of HPV. In girls and young women ages 9 to 26, GARDASIL helps protect against 2 types of HPV that cause about 75% of cervical cancer cases, and 2 more types that cause 90% of genital warts cases. In boys and young men ages 9 to 26, GARDASIL helps protect against 90% of genital warts cases.

GARDASIL may not fully protect everyone. GARDASIL does not prevent all types of cervical cancer, so it’s important for women to continue routine cervical cancer screenings. GARDASIL does not treat cervical cancer or genital warts. GARDASIL is given as 3 injections over 6 months.

Read this information with care before getting GARDASIL.1 You (the person getting GARDASIL) will need 3 doses of the vaccine. It is important to read this leaflet when you get each dose. This leaflet does not take the place of talking with your health care provider about GARDASIL.

What is GARDASIL?GARDASIL is a vaccine (injection/shot) that is used for girls and women 9 through 26 years of age to help protect against the following diseases caused by Human Papillomavirus (HPV): • Cervical cancer • Vulvar and vaginal cancers • Genital warts • Abnormal and precancerous cervical, vaginal,

and vulvar lesions The diseases listed above have many causes,

and GARDASIL only protects against diseases caused by certain kinds of HPV (called Type 6, Type 11, Type 16, and Type 18). Most of the time, these 4 types of HPV are responsible for the diseases listed above.

GARDASIL cannot protect you from a disease that is caused by other types of HPV, other viruses, or bacteria.

How is GARDASIL given?GARDASIL is a shot that is usually given in the arm muscle.

You will need 3 shots given on the following schedule: • Dose 1: at a date you and your health care provider

choose. • Dose 2: 2 months after Dose 1. • Dose 3: 6 months after Dose 1.

Fainting can happen after getting GARDASIL. Sometimes people who faint can fall and hurt themselves. Banana Split S’Mores

6 bananas, in the skin ½ cup chocolate chips ½ cup mini marshmallows 6 large graham crackers

1. Set or light your grill to medium heat, or build a small campfi re. 2. Make a long slit in each banana from end to end, through the skin and down to, but not through, the skin on the other side. Gently push in on either end to open the banana. Divide chocolate chips and mini marshmallows among bananas, pressing with your fi ngers to fi t as much as possible. (It’s OK if the banana smushes a bit). 3. Wrap each banana in aluminum foil and place on the center of grill or around perimeter of fi re. Cook 5 minutes, or until chips and marshmallows are melted and banana is warm. Serve immediately with graham crackers for dipping. Serves 6.

Pick-Up Sticks’m not much of a camper, but I love cooking over an outside fire. So instead of heading out into the woods to do my cooking, I bring the campfire cookout to my backyard.

An open fire isn’t a great option for my family. My sister and I live together and between us, have eight kids, ranging in age from 2 to 11. So I build my “campfire” in a charcoal grill, using both

charcoal and wood so the kids get a real campfire experience. (You could also use a gas grill, which provides plenty of heat but no fire.)

These recipes require a small amount of kitchen prep, but all are cooked completely over the fire—something the kids will love to help with, from finding their own perfect stick to sprinkling sweet cinnamon sugar on their “snakes.” You may never go camping again.

Snakes on a Stick If the kids get tired of holding the “snakes” over the fi re, you can just brown them over the fi re quickly and then fi nish cooking over a cooler part of the grill. (If you have a gas grill, the top rack is a good place for this.) Also try other seasonings on the snakes, such as Cajun seasonings, garlic salt and red pepper fl akes.

2 (11-ounce) packages refrigerated bread stick dough 4 tablespoons melted butter, divided ½ cup grated Parmigiano Reggiano cheese Cinnamon sugar (1 tablespoon sugar and ½ teaspoon cinnamon)

1. Set or light your grill to medium-high heat, or build a small campfi re. 2. Divide dough into 24 pieces. Roll each piece into a thin rope about 10 inches long. Brush pieces with 2 tablespoons melted butter. Wrap each “snake” around a stick at least 24 inches long, leaving at least 16 inches at the end for holding. Pinch the ends of dough onto sticks or pierce the end of rope and then wrap around stick.3. Hold sticks over heat and cook, turning occasionally, until golden brown and fi rm, about 10 minutes. Brush with remaining 2 tablespoons butter and sprinkle half the snakes with Parmigiano Reggiano cheese and half with cinnamon sugar. Return to fi re until topping is melted and browned, about 2 minutes longer. Serve immediately. Yield: 24 “snakes.”

Skinny DippingFruity frozen yogurts are packed with fl avor. Just stir, freeze and scoop.

ere are five refreshing frozen yogurts that are full of flavor, not fat. They’re easy to make, too. Unlike homemade ice cream, which requires a custard that must be chilled, frozen yogurts are a cinch to make. Simply whisk the yogurt, sugar and fruit together, and freeze. All you need is an ice cream maker. (We like the electric models that come with canisters to keep in the freezer.) Pour the

yogurt mixture in, and the machine does the work. We first combined the sugar and fruit and let the mixture stand for about 30 minutes, then mixed in the yogurt, but that’s not absolutely necessary.

HThese frozen yogurts are best eaten just out of the ice cream freezer when they’re soft and creamy.

1. MIX all ingredients together in a bowl. 2. FREEZE in an ice cream freezer following manufacturer’s instructions.3. SERVE immediately or transfer to a freezer container and freeze.

Read this information before you start taking SINGULAIR®. Also, read the leafl et you get each time you refi ll SINGULAIR, since there may be new information in the leafl et since the last time you saw it. This leafl et does not take the place of talking with your doctor about your medical condition and/or your treatment.

What is SINGULAIR*?

• SINGULAIR is a medicine called a leukotriene receptor antagonist. It works by blocking substances in the body called leukotrienes. Blocking leukotrienes improves asthma and allergic rhinitis. SINGULAIR is not a steroid. Studies have shown that SINGULAIR does not affect the growth rate of children. (See the end of this leafl et for more information about asthma and allergic rhinitis.)

SINGULAIR is prescribed for the treatment of asthma, the prevention of exercise-induced asthma, and allergic rhinitis:

1. Asthma.SINGULAIR should be used for the long-term management of asthma in adults and children ages 12 months and older.

Do not take SINGULAIR for the immediate relief of an asthma attack. If you get an asthma attack, you should follow the instructions your doctor gave you for treating asthma attacks.

2. Prevention of exercise-induced asthma.SINGULAIR is used for the prevention of exercise-induced asthma in patients 15 years of age and older.

3. Allergic Rhinitis.SINGULAIR is used to help control the symptoms of allergic rhinitis (sneezing, stuffy nose, runny nose, itching of the nose). SINGULAIR is used to treat seasonal allergic rhinitis (outdoor allergies that happen part of the year) in adults and children ages 2 years and older, and perennial allergic rhinitis (indoor allergies that happen all year) in adults and children ages 6 months and older.

Who should not take SINGULAIR?

Do not take SINGULAIR if you are allergic to SINGULAIR or any of its ingredients.

The active ingredient in SINGULAIR is montelukast sodium.

See the end of this leafl et for a list of all the ingredients in SINGULAIR.

What should I tell my doctor before I start taking SINGULAIR?

Tell your doctor about: • Pregnancy: If you are pregnant or plan to become pregnant,

SINGULAIR may not be right for you. • Breast-feeding: If you are breast-feeding, SINGULAIR may

be passed in your milk to your baby. You should consult your doctor before taking SINGULAIR if you are breast-feeding or intend to breast-feed.

• Medical Problems or Allergies: Talk about any medical problems or allergies you have now or had in the past.

• Other Medicines: Tell your doctor about all the medicines you take, including prescription and non-prescription medicines, and herbal supplements. Some medicines may affect how SINGULAIR works, or SINGULAIR may affect how your other medicines work.

How should I take SINGULAIR?

For adults and children 12 months of age and older with asthma:

• Take SINGULAIR once a day in the evening. • Take SINGULAIR every day for as long as your doctor

prescribes it, even if you have no asthma symptoms. • You may take SINGULAIR with food or without food. • If your asthma symptoms get worse, or if you need to

increase the use of your inhaled rescue medicine for asthma attacks, call your doctor right away.

• Do not take SINGULAIR for the immediate relief of an asthma attack. If you get an asthma attack, you should follow the instructions your doctor gave you for treating asthma attacks.

• Always have your inhaled rescue medicine for asthma attacks with you.

• Do not stop taking or lower the dose of your other asthma medicines unless your doctor tells you to.

For patients 15 years of age and older for the prevention of exercise-induced asthma:

• Take SINGULAIR at least 2 hours before exercise. • Always have your inhaled rescue medicine for asthma

attacks with you. • If you are taking SINGULAIR daily for chronic asthma or

allergic rhinitis, do not take an additional dose to prevent exercise-induced asthma. Speak to your doctor about your treatment of exercise-induced asthma.

• Do not take an additional dose of SINGULAIR within 24 hours of a previous dose.

For adults and children 2 years of age and older with seasonal allergic rhinitis, or for adults and children 6 months of age and older with perennial allergic rhinitis:

• Take SINGULAIR once a day, at about the same time each day.

• Take SINGULAIR every day for as long as your doctor prescribes it.

• You may take SINGULAIR with food or without food.

How should I give SINGULAIR oral granules to my child?

Do not open the packet until ready to use.

SINGULAIR 4-mg oral granules can be given: • directly in the mouth; • dissolved in 1 teaspoonful (5 mL) of cold or room

temperature baby formula or breast milk; • mixed with a spoonful of one of the following soft foods

at cold or room temperature: applesauce, mashed carrots, rice, or ice cream.

Be sure that the entire dose is mixed with the food, baby formula, or breast milk and that the child is given the entire spoonful of the food, baby formula, or breast milk mixture right away (within 15 minutes).

IMPORTANT: Never store any oral granules mixed with food, baby formula, or breast milk for use at a later time. Throw away any unused portion.

Do not put SINGULAIR oral granules in any liquid drink other than baby formula or breast milk. However, your child may drink liquids after swallowing the SINGULAIR oral granules.

What is the dose of SINGULAIR?

For asthma—Take once daily in the evening: • One 10-mg tablet for adults and adolescents 15 years of age

and older, • One 5-mg chewable tablet for children 6 to 14 years

of age, • One 4-mg chewable tablet or one packet of 4-mg oral

granules for children 2 to 5 years of age, or • One packet of 4-mg oral granules for children 12 to

23 months of age.

For exercise-induced asthma—Take at least 2 hours before exercise, but not more than once daily:

• One 10-mg tablet for adults and adolescents 15 years of age and older

For allergic rhinitis—Take once daily at about the same time each day:

• One 10-mg tablet for adults and adolescents 15 years of age and older,

• One 5-mg chewable tablet for children 6 to 14 years of age,

• One 4-mg chewable tablet for children 2 to 5 years of age, or • One packet of 4-mg oral granules for children 2 to 5 years

of age with seasonal allergic rhinitis, or for children 6 months to 5 years of age with perennial allergic rhinitis.

What should I avoid while taking SINGULAIR?

If you have asthma and if your asthma is made worse by aspirin, continue to avoid aspirin or other medicines called non-steroidal anti-infl ammatory drugs while taking SINGULAIR.

What are the possible side effects of SINGULAIR?

The side effects of SINGULAIR are usually mild, and generally did not cause patients to stop taking their medicine. The side effects in patients treated with SINGULAIR were similar in type and frequency to side effects in patients who were given a placebo (a pill containing no medicine).

The most common side effects with SINGULAIR include: • stomach pain • stomach or intestinal upset • heartburn • tiredness • fever • stuffy nose • cough • fl u • upper respiratory infection • dizziness • headache • rash

Less common side effects that have happened with SINGULAIR include: • increased bleeding tendency • allergic reactions [including swelling of the face, lips,

tongue, and/or throat (which may cause trouble breathing or swallowing), hives and itching]

• drowsiness, pins and needles/numbness, seizures (convulsions or fi ts)

• palpitations • nose bleed • diarrhea, indigestion, infl ammation of the pancreas, nausea,

vomiting • hepatitis • bruising • joint pain, muscle aches and muscle cramps • swelling

Behavior and mood-related changes have been reported: agitation including aggressive behavior or hostility, bad/vivid dreams, depression, feeling anxious, hallucinations (seeing things that are not there), irritability, restlessness, sleep walking, suicidal thoughts and actions (including suicide), tremor, trouble sleeping. Tell your doctor if you experience behavior or mood-related changes while taking SINGULAIR.

Rarely, asthmatic patients taking SINGULAIR have experienced a condition that includes certain symptoms that do not go away or that get worse. These occur usually, but not always, in patients who were taking steroid pills by mouth for asthma and those steroids were being slowly lowered or stopped. Although SINGULAIR has not been shown to cause this condition, you must tell your doctor right away if you get one or more of these symptoms: • a feeling of pins and needles or numbness of arms or legs • a fl u-like illness • rash • severe infl ammation (pain and swelling) of the sinuses

(sinusitis)

General Information about the safe and effective use of SINGULAIR

Medicines are sometimes prescribed for conditions that are not mentioned in patient information leafl ets. Do not use SINGULAIR for a condition for which it was not prescribed. Do not give SINGULAIR to other people even if they have the same symptoms you have. It may harm them. Keep SINGULAIR and all medicines out of the reach of children.

Store SINGULAIR at 25˚C (77˚F). Protect from moisture and light. Store in original package.

What are the ingredients in SINGULAIR?

Active ingredient: montelukast sodium

SINGULAIR chewable tablets contain aspartame, a source of phenylalanine.Phenylketonurics: SINGULAIR 4-mg and 5-mg chewable tablets contain 0.674 and 0.842 mg phenylalanine, respectively.

Inactive ingredients: • 4-mg oral granules: mannitol, hydroxypropyl cellulose, and

magnesium stearate. • 4-mg and 5-mg chewable tablets: mannitol, microcrystalline

cellulose, hydroxypropyl cellulose, red ferric oxide, croscarmellose sodium, cherry fl avor, aspartame, and magnesium stearate.

• 10-mg tablet: microcrystalline cellulose, lactose monohydrate, croscarmellose sodium, hydroxypropyl cellulose, magnesium stearate, hydroxypropyl methylcellulose, titanium dioxide, red ferric oxide, yellow ferric oxide, and carnauba wax.

White Beans with Sun-Dried Tomato VinaigretteThis recipe was inspired by one from Joyce Goldstein’s Mediterranean Fresh (W. W. Norton, 2008). To make it a main dish salad, add shrimp or sliced beef and toss it all together. When I have fresh cherry tomatoes in my garden, I toss them in as well. The salad is equally brilliant cold or room temperature, on a picnic or poolside.

Vinaigrette: ¼ cup extra-virgin olive oil 2 tablespoons sun-dried tomato-infused oil (from jar of sun-dried tomatoes) 1 tablespoon red wine vinegar ¼ cup chopped sun-dried tomatoes ¼ teaspoon kosher salt Coarsely ground black pepper

Beans: 2 (16-ounce) cans cannellini or great northern beans, rinsed and drained ⅓ cup diced red onion 2 garlic cloves, minced 6 basil leaves, chopped 1 ounce grated manchego or Romano cheese

1. To prepare vinaigrette, whisk together all ingredients in small bowl.2. To prepare beans, place beans in a large bowl. Pour vinaigrette over beans. Let stand at least an hour. Add onion, garlic, basil and cheese just before serving. Makes 3 ½ cups. Serves 6.

Summer SaladSteaks on the grill are great, but it’s the sides I get most excited about, like this white bean salad, lush with fresh basil from my garden. Add a steak with a sweet basting sauce, and it’s dinner.

Maple-Pepper Steaks

½ cup maple syrup ¼ cup olive oil 1 tablespoon coarsely ground black pepper 1 tablespoon chopped fresh thyme 4 garlic cloves, peeled ½ teaspoon kosher salt 4 (6-ounce) beef tenderloin steaks (1 ½-inches thick)

1. Combine all ingredients (except beef) in blender; process until well blended. Combine beef with half the sauce; let stand 30 minutes to 4 hours. Remove beef from marinade, discarding marinade. Cook beef in grill pan or on grill, basting with remaining sauce. Serves 4.Per serving: 220 calories, 12g fat, 75mg chol., 28g prot., 14g carbs., 0g fi ber, 220mg sodium.
