RECIPE OF THE MONTH

Zucchini Parmesan Crisps - 500gm. zucchini or squash (about 2 medium-

sized)

1/4 cup shredded parmesan

1/4 cup Panko breadcrumbs

1 tablespoon olive oil

1/4 teaspoon kosher salt

Freshly ground pepper, to taste

Preheat oven to 400 degrees. Line two baking

sheets with foil and spray lightly with vegetable

spray.

Slice zucchini or squash into 1/4 inch-thick

rounds. Toss rounds with oil, coating well.

In a wide bowl or plate, combine breadcrumbs,

parmesan, salt and pepper.

Place rounds in parmesan-breadcrumb mixture,

coating both sides of each round, pressing to

adhere. The mixture will not completely cover

each round, but provides a light coating on each

side. Place rounds in a single layer on baking

sheets.

Sprinkle any remaining

breadcrumb mixture over

the rounds. Bake for about

22 to 27 minutes, until

golden brown. (There is

no need to flip them

during baking –they crisp

up on both sides as is.)

Country Girls Tips ! WHAT A LITTLE GEM THE CUCUMBER IS.

• Cucumbers contain most of the vitamins

you need daily, vitamins B1, B2, B3, B5, B6,

Folic Acid, Vitamin C, Calcium, Iron, Magnesium,

Phosphorus, Potassium and Zinc.

• Feeling tired in the afternoon?Put down the

caffeinated soft drink and pick up a

Cucumber. They are a good source of B

Vitamins and Carbohydrates that can provide that

quick pick-me-up that can last for hours.

• Bathroom mirror fogging up after a shower?

Try rubbing a cucumber slice along the mirror,

it will stop the fog and provide a soothing,

spa-like fragrance.

• Are grubs and slugs ruining your planting beds?

Place a few slices in a small pie tin and your garden

will be free of pests all season long. The chemicals

in the cucumber react with the aluminium to give

off a scent that make them flee the area.

• Looking for a fast and easy way to remove

cellulite before going out or to the pool?

Try rubbing a slice or t wo of cucumbers

along your problem area for a few minutes,

the phytochemicals in the cucumber cause the

collagen in your skin to tighten, firming up the

outer layer and reducing the visibility of cellulite.

Works great on wrinkles, too!

• Want to avoid a hangover or a terrible headache?

Eat a few cucumber slices before going to bed and

wake up refreshed and headache free. Cucumbers

contain enough sugar, B vitamins and electrolytes

to replenish essential nutrients the body lost, keeping

everything in equilibrium, avoiding both a hangover

and headache!!

• Looking for a 'green' way to clean your taps, sinks

or stainless steel? Take a slice of cucumber and rub

it on the surface you want to clean. Not only will it

remove years of tarnish and bring back the Shine, but

is won't leave streaks and won't harm your fingers or

fingernails while you clean.

• Have an important meeting or job interview and

you realize that you don't have enough time to

polish your shoes? Rub a freshly cut cucumber over

the shoe, its chemicals will provide a quick and

durable shine that looks great but also repels water.

• Out of WD 40 and need to fix a squeaky hinge?

Take a Cucumber slice and rub it along the

problematic hinge, and the squeak is gone!

• Stressed out and don't have time for

massage, facial or visit to the spa? Cut up an entire

Cucumber and place it in a boiling pot of water,

The chemicals and nutrients from the cucumber

with react with the boiling water and be released in

the steam, creating a soothing, relaxing aroma that

has been shown the reduce stress in new mothers and

uni students during final exams.

• Using a Pen and made a mistake?

Take the outside of the Cucumber and

slowly use it to erase the pen Writing.

Also works great on crayons and markers That

the kids have used to decorate the Walls!!

More support for drought affected farmers in NSW Farmers battling drought in New South Wales can now apply for an increased rebate for installing water infrastructure to supply their animals with emergency water needs. Australian Government Minister for Agriculture, Barnaby Joyce, and NSW Minister for Primary Industries, Katrina Hodgkinson, have signed an agreement to increase funding for the Emergency Water Infrastructure Rebate. “For farmers doing it tough in NSW this agreement means the maximum claimed under this scheme has now risen from $30,000 to $50,000,” Minister Joyce said. “The rebate can cover up to 75 per cent of the cost of purchase, delivery and installation costs of water infrastructure for emergency animal welfare needs—it will make a big difference to primary producers. “The rebate can be used for the purchase and installation of water infrastructure including pipes, tanks, bores, troughs, pumps and delivery and installation costs. “Farmers who have already received the rebate are now eligible for an additional rebate. The additional rebate from the Australian Government will be automatically paid to all approved applications.” NSW Minister for Primary Industries, Katrina Hodgkinson said Commonwealth support for this program, which the NSW Government first introduced for primary producers in North West NSW in November, is welcome. “Drought has severely impacted many primary producers in NSW and it is pleasing the Commonwealth Government has now come forward with a comprehensive range of support measures which complement those implemented by the NSW Government,” Ms Hodgkinson said. “If farmers have any concerns they should contact the NSW Rural Assistance Authority for more information and advice on their eligibility. “Twenty-seven local government areas – and the far west Unincorporated Area – are now eligible for emergency assistance in NSW, which includes the Emergency Water Infrastructure Rebate.” To apply, contact the New South Wales Rural Assistance Authority on 02 6391 3000.

Joke for the day Sean is the vicar of the Church of England near the border of northern and southern Ireland and Patrick is the priest of the Catholic church across the road One day they are seen erecting a sign together which reads: “THE END IS NEAR TURN YOURSELF AROUND NOW BEFORE IT IS TOO LATE” As a car speeds past them, a driver leans out the window and yells, “Why don’t you leave people alone, you religious nutters, we don’t need your lectures!” From around the curve they hear the screech of tyres and a big splash. Shaking his head, Father Patrick says “Dats da tird one dis mornin”. Father Sean agrees, then adds, “Do ya tink maybe da sign should just say, BRIDGE CLOSED”?
