A Note from the Executive Director

Traffic Signals at Verdae and Old Sulphur Springs, and Old Sulphur Springs and Salter

Over the last couple of weeks, there have been several serious automobile accidents at these two

intersections. The RAC is interested in working with the appropriate officials to pursue getting traffic lights

installed at these two intersections. To assist with this project, if you have any connections with Greenville

city government officials, county government officials, or city or county department of transportation officials,

please provide a name, contact number and official title to Leah Parisi or I so that we can contact as many

people as possible that could have an impact with this project. We will keep you posted on our progress with

this initiative.

Casual Dining Changes

Please take the time to read this week’s installment of “Spotlight on Dining”. After discussion with and input

from the RAC and Dining Services Committee, we are making changes to the casual dining experience here at

Cascades. Please be patient with the dining service staff as we implement this new program, and give us

feedback via the comment cards on any changes we could make to further enhance your dining experience

here at Cascades.

Pets at Cascades

As indicated in your member guidebook, all pets outside of your cottage or villa must be on a leash, or if

outside in a cottage yard must be contained by an underground fence system. All pet owners need to abide

by the above rules, and make sure that they are cleaning up after their pets when they are outside around the

campus.

As also indicated in your member guidebook, if you have a pet here at cascades, please provide a current

immunization record for your pet so that we can update our files. Please provide this information to xx, our

Asst. Business Office Manager. Thanks in advance for your cooperation and assistance with this project.

About Cards

Creative Card Making Class will be held again on Friday, January 23rd in the Art Room from 1:30 – 3:30pm. For those who have never attended a class, our instructor, xx, brings kits with all the materials we need and helps us create two greeting cards. We had some new people last time who really enjoyed it and plan to come back. We have to limit the size of the class to 15 so be sure to sign up in the RSVP book. We will have a wait list so be sure to put your phone number and if someone cancels, we will call you. Donation of $5.00 to help cover the cost of materials provided. ALSO, If you have any Christmas (or other) cards you don’t want any longer, we can use them to help create cards to sell next year. You can tear off the front so no personal messages are seen. We will have a clear plastic container on the floor in the library for you to put them in. Thank you, xx

Ladies and Gentleman……….Introducing Cascades Verdae’s first ever

Dining Services Employee of the Month

Born xx in the 1800’s or something xx began

serving shortly after the Louisiana Purchase.

He has always had a knack for serving and has

traveled to places like Plymouth Rock,

Georgetown, Bethlehem (where he baby sat)

and Washington where he took care of none

other than Abraham Lincoln and was

questioned often about his whereabouts at

the time of his assassination. xx or xx or whatever his name really is loves the game of golf

and often reminisces of the days of the real wooden clubs. xx has been known to take many of

our specials to his pet puma on the nature trail which in return caused us to run out. He has

also been seen with tea spoons, rocks glasses and bread and butter plates. We never question

him, due to the whole Abraham thing and the fact that he invented the Arnold Palmer….one of

the most popular lunch drinks here at Cascades. xx is also a giver, giving up many of his shifts

to address world issues like, umm, well, you know the cure of swine flu and most of all hunger.

Nobody runs food like this old guy. He trains our staff as he trains Seal Team 6, to be fast and

execute in a professional manner. It’s hard to keep up with him, as he can lap a “Rascal”. Life

wouldn’t be the same without xx here at the Cascades. So when you see xx around proceed

with some joy, a smile, an “atta ol guy” as well as caution. My personal favorite quote from xx

is, “Damn, I wish I lived here too”.

Spotlight on Dining…

Trattoria Dining At Cascades Trattoria is the name given to a more casual dining atmosphere. It is an Italian term but is used worldwide, especially in the more metropolitan areas of North America. A trattoria dining restaurant is a restaurant that serves both moderately-priced food, traditionally served in a Bistro setting, and a couple of selections that are usually a fresh catch or the chefs cut of the day, which is priced accordingly. Table service is also a must and a full bar is always available, focused on its patrons desires.

The demand for this type of dining has grown in popularity here at Cascades. There are many factors that have played into this popular choice of dining. Some factors have to do with the no reservations needed, some like the menu changes, others like the bar being readily available, but most just like the casual atmosphere. Well guess what! You spoke and we have listened!! Starting Monday January 19th at 11am, we will be doing the soft roll out of “The Trattoria” at Cascades. This will combine the casual setting of the Bistro with the elegance you all deserve. The area known as the Bistro will now be for having a cocktail or a cup a coffee. It will be more of a socializing room for you to read the paper or just catch up on the latest news. Dining room “E” (the first dining room) will be our Trattoria. This is where we will be serving the members that adore that casual atmosphere. Our Trattoria will seat more members, serve more members and there will be no reservations required. Fine Dining will still be a huge part of the Cascades Dining Experience. Now the reservations only area will be in the Verdae Room, located in dining rooms A, B, & C. The members reserving a table in the Verdae Room will be greeted by a host, treated to a Chef’s choice of appetizer or feature cocktail, and escorted to their table. There will also be some soft seating for socializing and a full bar. Together we can make changes in dining. It takes a team of dedicated employees and the feedback from you the members. We are looking forward to implementing this popular request of transition and feel confident that this will benefit you and the growth of our membership. So be thinking of where you will dine on January 19th. Will it be enjoying a featured appetizer in the reservations only Verdae Room or will you be relaxing in the Trattoria? Cascades Hikers Enjoy the wonderful world of nature surrounding us in Upstate South Carolina.

Sumter National Forest Jocassee Gorges – Lower Whitewater Falls –Friday January 23rd.

Distance 4 miles. Elevation Gain – 800 feet. Rating – Moderate.

Trails – Bad Creek Access, Foothills Trail, and Lower Whitewater Spur Trail.

Lower Whitewater Falls, 200 feet tall, is a dramatic picture postcard landmark with a viewing

platform. After our hike, we will drive a few miles north to Upper Whitewater Falls and have a

late lunch in the picnic area. Chef xx will be providing gourmet sausages hot off the grill.

Bring Along – Good walking shoes, a hiking stick, trail snacks, and plenty to drink.

Expected Return Time – 4:30 PM.

All Hikers must be physically able to hike the distance and deal with the normal roots and

stones found on woodland trails. If you have concerns with your physical ability to hike,

check with the Wellness Director, xx.

Garden Talk At this point in the winter all gardeners search for anything that will add color, texture, or fragrance to our landscapes. During the spring, summer, and fall, we become so accustomed to tapestries of green and the brilliance of lush plantings of flowers, that when winter comes, we look out on our bare flowerbeds and long for the visions of past seasons. But there are many ways to enhance the winter setting with ornamental grasses, evergreen shrubs and perennials and the small group of plants that actually blossom during the depths of the cold months. We all know to plant pansies and their smaller cousins, the violas, in shades of yellow, blue, white, and multi-colors, and we may think of ornamental kale. But you can also add dianthus in pinks, red, and white that will bloom sporadically. Snapdragons will throw a few blossoms on warm days, saving their main show for spring, and wallflowers will add not only their bright yellow blooms, but also a delightful fragrance. Some groundcovers, such as bright chartreuse ‘Angelique’ and ‘Lemon Drop’ will keep their dazzling foliage all winter, and some evergreen plants with variegated foliage persist during the cold months. One of my favorites, euphorbia, still holds its small, spiky, multi-colored leaves in my sunny garden behind the Silvervale hall to the clubhouse. Also making a bright golden splash in that bed are sweet flag, a grass-like plant that keeps its color all winter and variegated yucca ‘Color Guard’. In shady winter gardens all sorts of ferns will hold their foliage, such as the native Christmas fern which has 15 inch dark green fronds, and also tassel and autumn ferns which are lower-growing and have variegated leaves. Several other shade-lovers for winter interest are ajuga (especially the one called ‘Burgandy Glow’ which has tones of pink and burgundy) and heuchera, a low-grower which has been hybridized to add punches of chartreuse, caramel, and burgundy. One of my favorite books, written by North Carolina plantsmen, Peter Loewer and Larry Mellichamp, is titled The Winter Garden, and it shows a wealth of plants that add interest to the garden when not much is blooming. The main categories for inclusion in this list are texture; pods, fruits and berries; blossoms; fragrance; and evergreen foliage. Just looking at the beautiful photographs makes me want to start all over with a plan for a garden that will feature plants for winter excitement. Of course, it’s unrealistic to expect any garden to look as lush in January as it does in May. It’s also

unnatural. Most gardeners appreciate the spare simplicity of the winter garden, knowing that the bleakness doesn’t signify an end but is instead a promise that spring will come. Until that time, we can peruse our catalogs and plan and dream, grateful for any bud or berry that comes our way. – xx Photographed in the front flowerbeds, pansies and ornamental kale are the workhorses of the winter garden.

Noteworthy: You might have already seen my announcement about the upcoming Water Polo game. It will take place on

Tuesday, Jan.20 tip off takes place at 8:45am. I need folks to sign up, captains please remind your players to do so, I have already

posted the sign up sheet on the pool door.

Pool reserved for WAVES (Memory Care program) this week: Wednesday 2-4:00pm AND

Monday + Thursday 2-4:30 pm

Thanks to all Independent Living members for honoring the pool reservation for these 1 on 1 sessions.

Note on Audiology services: I will bring our audiologist here for hearing screens and hearing aide issues by middle of February.

I will make sure that a flyer gets posted on each bulletin boards at least 2 weeks prior, please keep checking as we get closer to

the date.

Update on Wellness weekly calendar: in an effort to downsize the Current, I am contributing by eliminating Class descriptions

entirely. A copy will be hanging on a bulletin board in the Wellness Ctr. from now on.
