Vines: 100% Sangiovese

Bouquet: red fruits like cherry, spices that develop during the evolution in the bottle a tone of liquorice and tobacco
Flavour: trembling and juicy tannins with intensive and persistent taste; never excessive in its expression, but always balanced, complex and elegant

In the area once inhabited by the Etruscans, where woods and Mediterranean scrub branch off as far as the eye can see and
where the vineyards paint gentle hills, Fattoria Casabianca stretches over for more than 650 hectares.
The vineyards extend over 66 hectares within the estate. Different grape varieties are grown there: Sangiovese stands out against all the others species of vines, representing the
most authentic expression of the region. The other vines which find their natural habitat at Fattoria Casabianca are Canaiolo,
Colorino, Cabernet Sauvignon, Merlot and Vermentino.
There are two cellars, one for the fermentation, equipped with the most advanced technology, and one for the ageing, where 250 French oak barriques are placed in a room that has been
used for making wine for centuries.
Innovation and care for the land: these are the passwords that have been urging us to invest in the vineyards and wine cellars for years, in order to obtain wines which are the most natural
ones possible, fully enhancing their terroir.
Vines: 80% Sangiovese, 20% Merlot, Cabernet Sauvignon, Canaiolo and Colorino
Vinification: Traditional, in stainless steel tanks at controlled temperature below 29 °C
Ageing: in barriques, not new, for a couple of months, and in bottle for 2 more months
Colour: ruby red
Bouquet: intensely fruity aromas of cherry and small berries
Flavour: supple taste with medium structure and good body
Ideal temperature: 18-20 °C
Matches: first courses and red meat-based dishes

Vines: 85% Sangiovese, 5% Merlot, 5% Canaiolo, 5% Colorino
Vinification: traditionally in wooden barrels of 40 hl and in tanks of stainless steel at a controlled temperature under 29 °C
Ageing: in French barriques for about 6 months and refinement in bottles for about 5 months
Colour: ruby red
Bouquet: characteristic, intense, the vanilla of the wood is good balanced with the fruits and the taste of wine
Flavour: round, with a good structure, very good balance of softness and tannin
Ideal temperature: 18-20 °C
Matches: red meat, game, mature cheese

Vines: 50% Cabernet Sauvignon and 50% Sangiovese
Vinification: traditional in stainless steel tanks with temperature control at 25 °C
Colour: ruby red
Bouquet: Strongly characterized by rose and raspberry, very fruity, ending with the scent of cherry and wildstrawberry
Flavour: pleasantly fresh, with nice tannins and a long aftertaste
Ideal temperature: 18-20 °C
Matches: first courses and meat-based dishes. Also suitable for tomato-based fish dishes

Vines: 100% Vermentino
Vinification: soft pressing of the grapes, static clarification of the must and fermentation at a controlled temperature
Colour: pale straw yellow with green nuances
Bouquet: intense, fruity with hints of cedar and white fruit
Flavour: fine, a good structure, sapid and balanced, very persistent
Ideal temperature: 10-12 °C
Matches: seafood, especially crustaceans, white meat and light first courses
TOSCANAIGT
Vermentino
Vines: 60% Sangiovese, 40% Merlot
Vinification: soft pressing of the grapes, separation of skins and seeds, fermentation at a controlled temperature of 18 °C
Colour: very intensive rosé with violet reflections
Bouquet: fine, very elegant with notes of fruits and a scent of red currants
Flavour: fragrant and sapid with a good balance of softness and acidity
Ideal temperature: 10-12 °C
Matches: light first courses, white meat, salami and cold pork meats, green cheese

Vinification: manual and selective harvest, then further selection before and after destemming the grapes in the winery. Fermentation in stainless steel tanks
Ageing: in second-passage French oak barriques for about 12 months, then refinement in bottle for about 6 months
Colour: deep ruby red
Bouquet: intense floral and red fruits notes , pleasantly blended with delicate spicy nuances
Flavour: great balance and elegance. The important structure, the natural freshness and the refined tannic texture make it delightful and very persistent
Ideal temperature: 18-20 °C
