Specific varieties grown in specific areasThe guiding principal behind the development of this range is the ever more rigorous selection of specific fruit varieties grown on specific soils. In the same way as wine growers choose their grape varieties, we choose specific varieties of fruit, we obtain a limited quantity of the fruit from very small areas.
Specific cultivation methodsTo reinforce the organoleptic qualities of these fruits, we work closely with the fruit farmers regarding the cultivation methods used. Consequently, fruit trees undergo very hard pruning to ensure the quality of the remaining fruits. Our technical specifications are just as rigorous, limiting the use of pesticides.
Products in our “Vintage” - grands Crus - range may not always be available from year to year precisely because of these specifications, so much more demanding than for our other fruit purées.

As variedades e as areas de cultivoO princípio basilar do desenvolvimento desta gama é uma seleção ainda mais rigorosa de determinadas variedades de frutas cultivadas em terrenos muito específicos. Assim, tal como se faz na produção vinícola, selecionamos todos os anos uma gama reduzida de frutas, da qual nos abastecemos, em quantidades limitadas, em regioes delimitadas.
Métodos de cultura específicosPara reforçar os aspetos organolépticos destas frutas, trabalhamos com os produtores relativamente aos métodos de cultivo. Assim, as árvores são sujeitas a uma poda específica assegurando a qualidade da fruta restante. As nossas especificaçoes técnicas são rigorosas a fim de reduzir o uso de pesticidas.
Os produtos «grands Crus» nem sempre estão disponíveis de um ano para outro, devido as suas condiçoes de cultivo menos extensivas do que para as outras frutas.

Las variedades y la tierraLa línea principal de desarrollo de esta gama de productos reposa en una selección muy rigurosa de determinadas variedades de frutas que crecen en terrenos específicos. De la misma forma que un vinicultor realiza la selección de variedades de uvas, nosotros seleccionamos cada año una gama reducida de frutas, de la que nos aprovisionamos en cantidades limitadas en terrenos asimismo limitados.
Los métodos de cultivoPara reforzar los aspectos organolépticos de estas frutas, trabajamos conjuntamente con los productores las normas de cultivo. Así, los árboles sufren una tala particular para asegurar la mejor calidad del resto. El siguiente paso fue determinar la reducción de la utilización de fertilizantes y pesticidas en nuestras especificaciones técnicas.
Los "grand Crus" no están siempre disponibles, varían de un año a otro segun las condiciones de cultivo que son mucho más exigentes que para las demás frutas.

To offer homogenous products throughout the year, we bring together different varieties of fruit to create our purées. In the « Seasonal Flavours » range, we have taken the art of blending a step further, introducing new textures and original flavours by the blending of fruits with other types of ingredients such as spices. To achieve the subtle balance for the palate that we require from these recipes is a delicate art and one in which we are master craftsmen.
For the autumn and winter we have gone in search of the sort of authentic flavours our grandmothers liked to cook. Para poder oferecer produtos homogéneos ao longo de todo o ano, associámos diferentes variedades para criar os nossos purés. Na gama dos « Sabores Sazonais », levamos a nossa arte mais além na descoberta de novas texturas e sabores originais pela mistura de frutas com outros tipos de ingredientes, nomeadamente especiarias. O subtil equilíbrio requerido nas receitas é uma arte delicada na qual somos mestres.
Para o outono e inverno procuramos aqueles sabores autênticos que as nossas avos gostavam de cozinhar. Dessa tradição nasceram espantosos produtos, caracterizados pela sua frescura e sabor, com uma especial conotação familiar ao passado. Para a primavera e verão tentamos fazer algo diferente. Terminado o inverno, a natureza renasce e, com ela, todos os nossos sentidos. Para poder ofrecerle productos homogéneos a lo largo de todo el año, combinamos diversas variedades para crear nuestros purés de frutas. Dentro de la gama de "Sabores del Tiempo" impulsamos nuestros conocimientos artesanales para descubrir texturas y gustos nuevos, mezclando frutas con otros tipos de ingredientes, sobre todo especias. El sutil equilibrio de las recetas supone un momento delicado, en el que hemos conseguido adquirir una reconocida maestría.
Para el otoño y el invierno, hemos buscado los sabores auténticos que a nuestras abuelas les gustaba tanto cocinar. All our nuts come from farms, specially chosen for the quality of their produce. The nuts are first shelled, then steam blanched before being pressed. This process ensures that the quality of the fruit remains intact, particularly its nutritional characteristics.
As the taste of the hazelnut is not very strong, we lightly roast our hazelnuts before processing.
The creaminess of the natural puree we obtain means that it can be used in a thousand and one ways (patisserie, ice creams, sweets, ganache creams, sauces and stuffings).

Fruit’Elite "Frutos Secos" Puré Um processo de fabrico desenvolvido por nós para o coco
Todos os nossos cocos provém de quintas especialmente escolhidos pela sua qualidade de produção. Em primeiro lugar, descascar os cocos e depois branqueá-los a vapor antes de serem prensados. Este processo permite que a qualidade do produto permaneça intacta e em particular as suas qualidades nutritivas.
Não sendo o sabor da avelã muito acentuado, esta foi ligeiramente torrada antes de ser transformada.
A textura cremosa do puré natural obtido deste modo permite utilizar o produto de todas as formas (preparaçoes de pastelaria, cremes glacés, bombons, ganaches, molhos, recheios).

Tras la selección de los frutos secos, escogidos sobre un terreno específico procedemos a quitarles las cáscaras y los sometemos a un procedimiento de limpieza al vapor antes de prensarlos. Este proceso permite, entre otras cosas, que los frutos mantengan sus cualidades y características nutritivas.
Como el gusto de las avellanas no es demasiado fuerte, las hemos tostado ligeramente antes de procesarlas.
La cremosa untuosidad del puré así obtenido permite utilizar el producto en todo tipo de platos culinarios (preparación de pasteles, helados, dulces, ganaches, salsas, rellenos, etc.).

Method: Soak the gelatine. Heat 20% of the Fruit’Purée with the sugar and add the gelatine. gently stir the rest of the Fruit’Purée. Then stir in the whipped cream.Special for dried fruit: soak the gelatine. bring the milk and the sugar to the boil. Remove from the heat and add the gelatine, then add the Fruit'Purée and carefully stir in the whipped cream.
Method for the meringue: water (60 g), sugar (300 g) egg whites (150 g). Heat the sugar and the water to 121°C/250°F and pour on to the whipped egg whites. Proceso del merengue: agua (60 g), azúcar (300 g), claras de huevo (15 g). Cocinar el azúcar y el agua a 121° C y verter sobre las claras de huevo batidas. Seguir batiendo con la batidora hasta que el merengue se monte. Proceso: dejar la gelatina en remojo. Calentar el 20% de Fruit'Purée con el azúcar. Añadir la gelatina y luego el resto de Fruit'Purée. Añadir la nata y el merengue mezclando suavemente. Processo do merengue : água (60 g), açucar (300 g), claras de ovos (15 g). Cozer o açucar e a água a 121°C e despejar sobre as claras batidas em castelo. Continuar a bater na misturadora até o merengue ficar firme. Processo : Demolhar a gelatina. Aquecer 20% de Fruit'Purée com o açucar. Adicionar a gelatina e depois o Fruit'Purée restante. Adicionar as natas e depois o merengue, misturando delicadamente.

Adicionar a gelatina demolhada em água fria e depois a segunda parte do puré (1). Deixar arrefecer até à temperatura ambiente. Adicionar a manteiga e emulsionar. Para frutos secos: Começar por fazer ferver o leite. Em seguida a receita é a mesma. Adicionar o puré.

Marsh mallows
Take the first quantities of Fruit'Purée (1) and invert sugar (1) and the sugar and cook at 110°C/230°F. Soak the gelatin in cold water and dissolve it in the second quantity of Fruit'Purée (2). Whisk the second quantity of invert sugar (2) in a mixer. Add the syrup at 110°C/230°F and the the gelatin/fruit'purée mixture. Continue whisking until the mixture has cooled to room temperature. Pour into a mold coated with either potato starch or icing sugar. Leave overnight and then cut into pieces.
For nut marshmallows: Heat the water (1) with the sugar and invert sugar to 100°C/230°F. Soak the gelatin and then dissolve it in the water (2). Whisk the second quantity of invert sugar with the Dried nut purée in a mixer, then add the syrup and the gelatin. Continue whisking until the mixture has cooled to room temperature. Pour into a mold coated with potato starch or icing sugar. Leave overnight and then cut into pieces.

Para frutos secos: cocinar el agua (1), el azucar y la trimolina a 110°C. Escurrir la gelatina previamente remojada y disolverla en agua (2). Mezclar la trimolina con Fruit'Elite Frutos Secos con batidora y luego añadir el jarabe y la gelatina. Dejar enfriarse a temperatura ambiente en la batidora. Verter en un molde cuadrado con fécula de patata o azucar glaseado. Dejar reposar una noche y cortar.
Cozer o puré de fruta (1) com o açucar e a trimoline (1) a 110ºC. Demolhar a gelatina em água fria e misturá-la com a segunda parte do puré de fruta (2). Na cuba da batedeira, misturar com as varas a segunda parte da trimoline (2). Adicionar o xarope a 110ºC e a gelatina misturada com o puré de fruta. Deixar arrefecer até ficar à temperatura ambiente na batedeira. Colocar numa forma com a fécula de batata e o açucar em pó. Deixar repousar uma noite e depois cortar.Para frutos secos : Cozer a água (1) com o açucar e a trimoline a 110°C. Escorrer a gelatina previamente demolhada e dissolvê-la na água (2). Misturar a trimoline com o Fruit'Elite Frutos Secos na batedeira e depois juntar o xarope e a gelatina. Deixar arrefecer até ficar à temperatura ambiente na batedeira. Colocar numa forma com a fécula de batata e o açucar em pó. Deixar repousar uma noite e depois cortar.

Light meringues without eggPrepare the gelaine : Mix 100 g of 200 bloom gelatin with 500 g of cold water. Leave to soak for 1-2 hours, until completely dissolved. Set aside in the regrigerator.
Heat 20% of the purée with the sugar. Add the soaked gelatin once all the sugar has dissolved. Add the remaining purée and mix thoroughly. Set aside in the refrigerator until the mixture has set. Place in a food mixer fitted with the whisk attachment and work the mixture for 35-40 minutes, until smooth and light. Pipe or transfer to a frame and freeze. Cut with a knife or shape cutter depending on your required use. you can also pipe into a silicon mold for use as an insert.

Preparar la masa de gelatina: mezclar 100 g de gelatina 200 blooms con 500 g de agua fría. Dejar inflar durante 1 a 2 horas, hasta su completa disolución. Reservar en frío.
Preparar a massa de gelatina: misturar 100 g de gelatina de 200 bloom com 500 g de água fria. Deixar inchar 1 a 2 horas, até a dissolução completa. Reservar no frio.Calentar el 20% del puré con el azucar; una vez disuelto, añadir la masa de gelatina.Añadir el resto del puré y mezclar. Reservar en frío hasta la completa gelificación del conjunto. Mezclar con la batidora de varillas durante 35 a 40 minutos. La textura debe ser ligera y homogénea. Escalfar directamente o verter en un molde, congelar.Cortar con cuchillo o con lel porta-piezas, segun su uso. Es posible escalfarlo en molde de silicona para utilizarlo como inserción.Aquecer 20% do puré com o açucar, depois de dissolvido juntar a massa de gelatina. Acrescentar o puré restante, misturar. Reservar no frio até a gelificação completa do aparelho. Misturar o aparelho na batedeira de varas durante 35 a 40 minutos. A textura deve ficar leve e homogénea.Enformar diretamente ou verter em tabuleiro, congelar.Cortar com uma faca ou cortador de biscoitos conforme a utilização. Possibilidade de enformar em forma de silicone para utilização em aplicaçoes.

Another resounding success for the 2017 Casse-Croûte des Chefs! A blazing sun and the watchful eye of Angelo Musa presided over Capfruit’s emblematic Casse-Croûte des Chefs. After a guided tour of the factory and a fun voyage of discovery of fruits through the five senses, the guests assembled in the fruit orchards to partake of a delicious lunch that was thoroughly enjoyed by one and all. Save the date! Next year’s event will be held on 20th June!

Otra bella jornada para la Casse Croûte de Chefs 2017.Con el padrinazgo de Angelo Musa y bajo un sol deslumbrante, se celebró este evento ineludible de Capfruit, el Casse Croûte de Chefs, en muy buen ambiente.Tras la visita a la fábrica y un recorrido para descubrir las frutas con los 5 sentidos, los invitados pudieron disfrutar de un almuerzo en buena compañía, entre los vergeles.Anímese a disfrutar la edicion del año que viene, el miércolesi 20 de junio.
