Bacon & Egg Breakfast Tacos Yield - 40 breakfast tacos, or 20 servings

(5 Meals for 4 People)

Ingredients

• 40 Flour Tortillas • 40 Eggs • 4 lb. bacon • 2 lb. cheese block, shredded • salt, pepper, garlic powder, to taste• Optional topping - salsa

Directions

1. Preheat oven to 350. Line 2-3 rimmed cookie sheets with foil and add the bacon slices to the cookie sheets. Bake for 20-25 minutes, or until bacon is cooked to your preferred crispy level. {How to Cook Bacon in the Oven.}

2. In a large bowl or two, beat the 40 eggs. Cook the eggs in 2 large skillets or saucepans, on medium low heat until scrambled and fully cooked.. Season with salt, pepper and garlic powder. Depending on the size of your skillets and saucepans, it might take 2 rounds to scramble all the eggs.

3. Shred the cheese block if you didn’t purchase shredded cheese.

4. Lay the tortillas out on the counter and add 1 slice of bacon, thin line of scrambled eggs & a pinchful of shredded cheese. Optional: spread a thin line of salsa into the taco for an extra pop of flavor. Add 2 breakfast tacos to each of the labeled quart size baggies, then roll to remove as much air as possible, seal and freeze. Repeat until all 40 tacos are packaged up.

5. To Thaw: Place the desired number of tacos in the fridge the night before to thaw, and then reheat in the microwave. You can also wrap the frozen tacos in foil and reheat in the oven at 350 for about 20 minutes.

Vegetarian Option: Saute diced potatoes and use in place of the bacon to make Potato, Egg & Cheese Breakfast Tacos.

Dairy Free Modification: Omit cheese and include salsa for added flavor.

Sausage, Egg & Cheese Breakfast SandwichYield - 24 breakfast sandwiches

(6 Meals for 4 People)

Ingredients

• 24 English muffins • 24 eggs • 24 sausage patties • 24 slices cheese • salt & pepper, to taste• Optional - spicy brown mustard

Directions

1. Preheat the oven to 350. Grease 2 - 12 cup muffin tin pans with non-stick cooking spray. Crack 1 egg into the 24 wells and season each with a pinch of salt and pepper. Bake for 15-20 minutes or until yolk has cooked through. Remove the baked eggs from the pan to let cool. {How to Bake Eggs in the Oven.}

2. In a large skillet, saute all 24 sausage patties. Depending on the size of your skillet, you might need to 2-3 rounds of sauteing to cook all the sausage. Once cooked, set on a plate with napkins or paper towels to drain and cool.

3. To each English muffin, add 1 slice of cheese, 1 sausage patty, 1 baked egg. Optional: spread spicy brown mustard on the English muffins for an extra pop of flavor. Add 4 breakfast sandwiches to each of the labeled quart size baggies, then remove as much air as possible, seal and freeze. Repeat until all 24 sandwiches are packaged up.

Make Ahead Smoothie Packs Yield - 31 Smoothie Packs

4 - 8 oz. servings in each pack

Ingredients for each bag

• 2 yogurt (or milk) cubes• 1 banana, quartered • 1/2 cup frozen mango chunks• 6-8 frozen strawberries, depending on size• Handful baby spinach leaves, optional

Directions

1. Freeze the yogurt or milk in ice cube trays about an hour before you plan on assembling the bags. You will need 62 cubes of yogurt or milk for all the bags.

2. To Freeze: Add 2 yogurt (or milk) cubes, 1 quartered banana, 1/2 cup frozen mango, and 6-8 frozen strawberries (depending on size) to each of the labeled quart size baggies. I suggest cutting the bananas into quarters because it will make it easier for the frozen fruit to fit into the blender if the bananas are in chunks.

3. If you wish to add spinach to your smoothie packs, you’ll need to add it in last.

4. Remove as much air as you can, seal and freeze.

To Blend with Spinach: Add the frozen spinach leaves & 2 cups of lukewarm water to the blender and pulse until smooth. Add the remaining frozen fruit and puree.

To Blend without Spinach: Add the frozen fruit to the blender with 2 cups of lukewarm water and puree.

Dairy Free Modification: Use coconut milk or rice milk when make the cubes for the packs.

Ingredients for each bag

1. Add all the ingredients above to a quart size baggie. Remove air and seal, then store in a cool, dry place.

2. When ready to make the batter, mix in 4 eggs, 2 tsp vanilla, 1 cup melted butter or oil, 6 medium ripe bananas, mashed, or 4 cups shredded zucchini. Whisk until batter forms and pour into 2 greased 9x5 loaf pans. Bake at 350 for 50-60 minutes, or until cooked through in the middle.

To Freeze: Let the banana bread loaf cool completely on the counter or in the fridge. Place the loaf whole or sliced into the plastic freezer baggie or container.

Make Ahead Muffin MixYield - 8 Bags, 12 muffins per bag

Ingredients for each bag

• 1 cup flour • ⅓ cup sugar• 1 tsp baking powder• ½ tsp baking soda• 1 tsp cinnamon• ½ tsp salt

Directions

1. Add all the ingredients above to a quart size baggie. Remove air and seal, then store in a cool, dry place.

2. When ready to make the batter, mix in 2 eggs, 3 Tbsp oil & 1 cup mashed or grated fruit or vegetable. Whisk until batter forms and pour into 12 greased muffin tins. Bake at 350 for 22-24 minutes, or until cooked through in the middle.

Suggested fruit or veggie mix-ins: Banana, Zucchini, Sweet Potato, Butternut Squash, Carrots or well drained crushed pineapple.

• 3 cups quick cooking oats• 2/3 cup brown sugar• 1/4 cup flour• 1 tsp cinnamon • 1 tsp ground ginger• 2 tsp baking powder• 1 tsp salt

Directions

1. Add all the ingredients above to a quart size baggie. Remove air and seal, then store in a cool, dry place.

2. When ready to make the batter, mix in 2 eggs, 1 tsp vanilla, 2 cups milk and ¼ cup oil. Whisk until batter forms and pour into greased 9x13-inch baking dish. Bake at 350 for 25-30 minutes, or until cooked through in the middle.

Optional Mix-In Ideas: 2 cups diced fresh peaches, 12 oz. cinnamon chips & 1 cup white chocolate chips, 2 cups chocolate chips, 2 cups mashed banana, 2 cups strawberries

To Freeze: Let the baked oatmeal cool completely on the counter or in the fridge. Once cooled, cut into individual serving size squares and place into sandwich baggies or a few pieces into a quart or gallon size freezer baggie.

Packaging Details & Notes All of the different breakfast goodies and make ahead mixes can be stored in the quart size freezer baggies. I’ve made suggestions for packaging up the bags based on 4 people. For the tacos, that’s 2 tacos per bag and there are enough for 5 meals for 4 people, having 2 tacos each. (You could also just send 2 tacos with your husband to eat on his way to work, or at work, like I sometimes do!)

For the breakfast sandwiches, you can get 4 sandwiches into a quart size baggie, enough for 4 people to have for breakfast. Feel free to change up the amounts per package to work for your family, for example you could add all the sandwiches to single serving sandwich size baggies if you won’t be making 4 at a time.

The “Need When You Make Them” IngredientsPlease note on the shopping list that I’ve not included the eggs and milk (as well as the bananas and zucchini) that you would use when preparing the make ahead mix batters. I have included the shelf stable vanilla and oil to the shopping list, so you will already have those on hand.

Assembly ProcessPlease note the difference between the 2 shopping list pages. We have created 2 separate shopping lists for you to use. The first shopping list page is for those who would like to prepare all the breakfast meals at once.

The second shopping list page is if you’d like to break down the list by meals and prepare a little at a time to get your freezer and pantry stocked. With that list, you can also ‘mix and match’ and make different groups based on your sched-ule and budget.

For instance, you can make the breakfast sandwiches and smoothie packs after a big shopping trip. Then the next time you’re at Costco, you can get the ingredients for the breakfast tacos and make ahead mixes and get those into the freezer and pantry.

Breaking it up into a few trips and assemblies might make it feel less overwhelming, if you don’t prefer to make every-thing all at once.

Storing the Make Ahead Baking MixesI’ve always stored make ahead baking mixes in ziploc baggies. I go through them quickly enough that they aren’t sitting in my pantry forever. I also like how If you are not a fan of using plastic baggies, you can also store your mixes in quart size mason jars with lids, or other storage containers, if you have enough. The 25 lb. bag of flour will make 43 make ahead mixes, according to this plan.

One Final NotePlease read through all the instructions before beginning to end.

We’ve done our best to clearly explain each process and I created all these breakfast meals based on these instructions. If you are a visual person, then turn on my videos while working on your own and we’ll work through it together in your kitchen!

Assembly PrepNote: These are the recommended Assembly Prep directions if you are planning on making all of the breakfast meals at once. If you are planning on making them separately, you can follow the directions for that particular breakfast on the corresponding recipe page.

Labels - We’ve included a page of printable labels for each recipe type. Feel free to print as many of each page that you need for labels.

Yogurt Cubes for Smoothies. Pour yogurt into ice cube trays. Allow at least 1 hour to freeze.

Bacon for Tacos. Preheat oven to 350. Line 2-3 rimmed cookie sheets with foil and add the bacon slices to the cookie sheets. Bake for 20-25 minutes, or until bacon is cooked to your preferred crispy level. {How to Cook Bacon in the Oven.}

Scrambled Eggs for Tacos. In 2 large skillets or saucepans, scramble 40 eggs on medium low heat. Season with salt, pepper and garlic powder. Depending on the size of your skillets and saucepans, it might take 2 rounds to scramble all the eggs. {How to Make Perfect Scrambled Eggs.}

Sausage Patties for Sandwiches. In a large skillet, saute all 24 sausage patties. Once cooked, set on a plate with napkin or paper towels to drain and cool.

Bake the Eggs for Sandwiches. Once the bacon is finished you can bake the eggs for the sandwiches. Grease 2 - 12 muffin tin pans with non-stick cooking spray. Preheat the oven to 350. Crack 1 egg into the 24 wells and season each with a pinch of salt and pepper. Bake for 15-20 minutes or until yolk has cooked through. Remove the baked eggs from the pan to let cool before assembling the sandwiches. {How to Bake Eggs in the Oven.}

Shred the Cheese. Using a cheese grater, shred the cheese block.

Lay the tortillas out on the counter and add 1 slice of bacon, thin line of scrambled eggs & a pinchful of shredded cheese. Add 2 breakfast tacos to each of the labeled quart size baggies, then roll to remove as much air as possible, seal and freeze.

If you wish to add salsa to your breakfast tacos, I recommend that you do that after you reheat them, so the liquid from the salsa doesn’t make the tortillas soggy as they thaw and reheat

If the scrambled eggs and bacon are still hot, let them cool before packaging.

Assemble the Make Ahead Smoothie Packs.

Break each banana into quarters before adding it to the baggie, to help it fit easily into the blender when it’s time to make the smoothie. Add 1 banana, quartered, 1/2 cup frozen mango, 6-8 frozen strawberries (depending on size) and 2 yogurt cubes to each of the labeled quart size baggies. Roll to remove as much air as possible, seal and freeze.

If you are adding spinach to your smoothies, you will want to add that at the top of the bag because you will blend it with the water before adding the other ingredients. Details for making smoothie with spinach on the recipe page.

Assemble the Make Ahead Mixes.

For the pancake mix, add 2 ½ cups flour, 3 Tbsp sugar, 2 tsp baking powder, 1 tsp baking soda, 1 tsp cinnamon and ½ tsp salt to each of the 15 labeled quart size baggies.

For the waffles mix, add 1 ½ cups flour, ¼ cup sugar, 1 Tbsp baking powder, 1 tsp baking soda, 1 tsp cinnamon and ½ tsp salt to each of the 6 labeled quart size baggies.

For the muffin mix, add 1 cup flour, ⅓ cup sugar, 1 tsp baking powder, ½ tsp baking soda, 1 tsp cinnamon and ½ tsp salt to each of the 8 labeled quart size baggies.

For the banana bread mix, add 3 cups flour, 1½ cups sugar, 1 tsp baking powder, 1 tsp baking soda and 1 tsp salt to each of the 6 labeled quart size baggies.
