    2 tablespoons Dijon-style mustard

    3 whole-wheat English muns, split and lightly toasted

    6 1/2-ounce slices low-at cracked black pepper ham, chopped

    2 tablespoons minced green onion (scallion) tops

    3 ounces low-at sharp cheddar cheese, shredded

    direCtions

    In a small bowl, combine apple butter and mustard.

    Spread 1 tablespoon mixture on each mun hal. In another

    small bowl, combine ham, onion, and cheese. Spread each mun

    hal with this mixture. Broil until topping is bubbly. (Both mixtures may

    be prepared in advance and stored separately or a quick breakast.)

    1 ripe tomato, quartered (or 8 cherry tomatoes)

    1 small cucumber, washed and thinly sliced

    direCtions

    Drain chicken. Add chopped celery and mayonnaise.Mix lightly to keep the chicken chunky. Arrange lettuce in a

    shallow serving bowl. Put chicken salad in the middle and

    crumble blue cheese over it. Arrange tomatoes and cucumber

    slices around the plate. Cover with plastic wrap and

    rerigerate until ready to serve. Serves our.

    A windowsill, patio, balcony, or doorstep canprovide sucient space or a productive con-tainer garden. Problems with soil-borne diseases,nematodes, or poor soil can also be overcomeby switching to container gardening.

    Grow vegetables that take up little space, suchas carrots, radishes, and lettuce, or crops thatbear ruits over a period o time, such as tomatoesand peppers, or best use o space and containers.Dwar or miniature varieties oten mature andbear ruit earlier, but most do not produce as

    well overall as standard varieties. With increasinginterest in container gardening, plant breedersand seed companies are working on vegetablesspecically bred or container culture. Thesevarieties are not necessarily miniature or dwarand may produce as well as standard types icared or properly.

    The amount o sunlight your container gardenreceives determines what crops can be grown.Generally, root crops and lea crops can tolerate

    partial shade, but vegetables grown or theirruits generally need at least ve hours o ull,direct sunlight each day and perorm best with8 to 10 hours. Available light can be increased

    somewhat by providing refective materialsaround the plants (aluminum oil, white-paintedsuraces, marble chips, etc.).

    Preventing ObesityfActs AboUt PReventionObesity is a chronic disease aecting increasingnumbers o children and adolescents as well asadults. Obesity rates among children in the UShave doubled since 1980 and have tripled oradolescents. About 17 percent o children agedtwo to 19 are considered overweight comparedto over 66 percent o adults who are consideredoverweight or obese.

    Earlier onset o type 2 diabetes, cardiovasculardisease, and obesity-related depression in childrenand adolescents is being seen by healthcare pro-essionals. The longer a person is obese, the moresignicant obesity-related risk actors become.Given the chronic diseases and conditions associ-ated with obesity and the act that obesity is di-cult to treat, prevention is extremely important.

    A primary reason that prevention o obesity isso vital in children is because the likelihood ochildhood obesity persisting into adulthood is

    thought to increase as the child ages.

    infAntsBreasted babies are 20 percent less likely todevelop diabetes and are less likely to becomeoverweight. Thereore, the longer babies arebreasted, the less likely they are to becomeoverweight as they grow older.

    chilDRen AnD ADolescentsYoung people generally become overweight orobese because they do not get enough physicalactivity in combination with poor eating habits.Genetics and liestyle also contribute to a childsweight status.

    Choose whole grain oods such as brown rice

    and whole wheat bread. Avoid highly processedoods made with rened white sugar, four, andsaturated at.

    Weigh and measure ood in order to be ableto gain an understanding o portion sizes. Forexample, a 3-ounce serving o meat is the sizeo a deck o cards. Avoid supersized menu items.

    Balance the ood checkbook. Taking in morecalories than are expended or energy will resultin weight gain. Regularly monitor weight.

    Avoid oods that are high in energy density,or that have a lot o calories in a small amounto ood. For example, a large cheeseburger witha large order o ries may have almost 1,000 cal-ories and 30 or more grams o at. By orderinga grilled chicken sandwich or a plain hamburgerand a small salad with low-at dressing, you canavoid hundreds o calories and eliminate much

    W W ArPartnership or Healthier Kids (PHK) is one o

    several community health-improvement initia-tives o the Community Health Division o Inova.PHK has two main school-based programs: an Ac-cess to Care program and aPrevention program.

    The A car program is designed toidentiy uninsured children and connect themto an appropriate and aordable source oquality healthcare services.

    The Pr program objectives are to

    provide a variety o health education programsdesigned to increase the knowledge and improveskills to make healthy choices in the areas onutrition and physical activity.

    Working in collaboration with Alexandria,Fairax and Loudoun Public schools, PHK Accessto Care program has successully connected morethan 35,000 children to a source o healthcareservices since 1998. More than 90,000 children,parents and educators have participated inPHK Prevention activities since 1997.

    PHK believes that every child deserves to attendschool, healthy and ready to learn.
