Ingredients:

• 2ramenpackages

• 116ozpackageExtraFirmTofu

• 1bagfrozenstirfryvegetables

• SoySauce

• SesameOil

• PeanutSauce

Prep:Draintofuandsliceorcubeintobite sized-ish pieces. Place in bowl,

add 1 ramen flavoring packet, soy

sauce,andagoodshakeofsesameoil

tomarinate.Lettofumarinatefor1to

2hours.Cook: Boilramennoodlesasper package instructions, and throw

the 2nd seasoning packet into the

cupboardforlateruse.Meanwhile,toss

theveggiesintoapanandstir-fryuntil

cooked. Add tofuwith enough of the

marinadetokeepitfromsticking.Stir

gently,untiltofuisheated.Addramen

noodles,mixtheminwell,allowthem

toabsorbmostoftheremainingliquid

inthepan.Tossitontoacoupleplates

(will feed 2-4 people, depending on

appetite), season to taste with more

sesame oil, top with peanut sauce.
