The traditional methodology using aluminum foil or parchment paper is called cartoccio in Italy, en papillote in France and foil pouch in the United States. Thanks to cooking under pressure without the need of any special equipment, dishes are cooked in their own juices and are ready in almost half the time without mess and absolutely no smoke. It preserves all the natural flavors of the individual ingredients without loss of minerals, vitamins or weight. Food can be cooked without salt and excessive condiments leading to a much healthier cuisine.
