Processing of agricultural produce and their post-harvestmanagement is an emerging area in present scenario. India has now attained the stage where apart from enhanced production of food crops, emphasis is being laid on processing and value addition. Therefore, creation of a food chain starting from the farm gate to retail outlets is need of the hour. Converting new materials into finished or a semi-fnished product not only leads to reduction of post harvest losses but also adds financial or nutritional value to the crop and assures food safety. India could well become the food basket of the world, through proper awareness about food processing, technical innovation and infrastructure for agriculture sector. With this aim the summer school is organized to impart the modern scientific knowledge and training in the field of processing and value addition of agricultural produce to scientists and teachers to update their skills and to further disseminate the knowledge.
