This issue we ventured up onto theBlackall Ranges to Maleny to visit SpicersClovelly Estate and Spicers Tamarind. Thesetwo properties are the epitome of romanticgetaways - both with a totally different feel.I think that is why we found ourselvesrunning into a few of the same people atboth estates! Their close proximity allowsfor easily arranged shared nights andrestaurants.

We also showcase the latest interiordesign concepts and beautiful properties,as well as the arts, theatre and readingoptions.

All in all - a fabulous edition to read overthe summery months.

As Christmas is just a couple of monthsaway, let me be the first to say "MerryChristmas and Happy New Year". I justwanted to be sure that I didn't forget in thehectic build-up to the festive season.

A SOFTER SIDE OF A FASHION GURU...

Most people are probably unaware to Alex Perry's commitmentto the AEIOU Foundation, probably because he isn't marriedand doesn't have any children of his own yet.

But, that hasn't stopped him working tirelessly to be of assistance tothe children who have won his heart.

Alex Perry turned up the heat recently at an exquisite gala dinner forchildren’s charity AEIOU Foundation at the Marine Village in SanctuaryCove, when he unveiled his sultry, sexy Cuban Princess Collection. Notonly was it the first time the event had been hosted on the Gold Coast,it was also the first time the man himself had visited Sanctuary Cove.And he loved it!

Hosted by Chloe Maxwell, who founded 4ASD Kids with husband MatRogers after their own son was diagnosed with Autism Spectrum

Disorder (ASD), guests at the Alex Perry Gala were delighted with theopportunity to engage with Perry and gain a unique insight into theman renowned as Australia’s ‘King of Couture’.

“I first started working with AEIOU in 2005, and in that time, theFoundation has had a direct impact on the lives of hundreds of children.When I first visited the main school it really struck a chord with me andit’s incredible to see how quickly it has grown.”

“I truly believe this Foundation provides the necessary support,treatment and benefit to those who need it the most.”

The exclusive event attracted around 300 of S.E. Queensland’s mostinfluential business, media and social identities who together raisedmore $40,000 on the night.

AEIOU Foundation CEO Alan Smith said the funds would help closethe funding gap the Foundation experiences for every child in theprogram and would also help build a purpose built centre on the GoldCoast.

“Alex has been an extraordinary supporter of AEIOU Foundation sinceour inception in 2005 and this event has a cult following in Brisbane” Mr

Smith said.“AEIOU Foundation launched its program in Carrara late last year,

ahead of plans to construct a purpose built centre on the Gold Coastin 2012. This event will helped raise capital funding for that project.”

“The difficult thing here is that the program takes two full years tocomplete, but the window for this kind of intensive therapy is onlyavailable to children aged two and a half to five years of age. We needto construct our new centre to make sure no family misses out. To dothat, community awareness and support is vital,” Mr Smith said.

Children with autism achieve incredible milestones, the kind thatmany of us take for granted, which makes them even more importantto celebrate.

AEIOU Foundation is Queensland-based and one of the country’slargest providers of full time early intervention for children diagnosedwith autism aged two and a half to five years. AEIOU currently supportsmore than 200 hundred families from nine centres throughoutQueensland. For more information visit aeiou.org.au.

Dominique Rizzo’s effervescence and joie devivre are infectious - traits obviously inheritedfrom her parents, especially father Vincenzo,who left his family including a sister andthree brothers in Sicily to explore Australiaand escape the army. He settled in Brisbaneand like many migrants gravitated to

Cloudland where he met his Aussie wife Robyn.“Before Rosalie, we moved around a lot as mum and dad

renovated houses,” reminisces Dominique who has two brothers,Adam and Christian and went to All Hallows in the Valley, whereshe loved languages, history and excelled at art theatre anddrama. “I also did home economics and my mother says I broughthome many a delicacy although I only recall a butter cake and acasserole. I also remember making a macramé owl on a stick inneedlework. Thank goodness we’ve progressed.”

Although a late bloomer career-wise,Dominique’s memories of cooking arewhen she was about three on her firstholiday to Sicily, running amok on Zio(uncle) Fifo’s farm: “It was wonderful.Chasing pigs, chickens and goats, pickingvegetables, plump lemons, oranges andgrapes hanging from vines like jewels,collecting freshly laid eggs, playing forhours with my cousins, collecting pipisand clams and diving for sea urchins atanother uncle’s place - experiencing a lifenever seen before.”

Every visit thereafter, the Sicilian cultureand language were instilled more andmore in Dominique’s psyche and at 18 shefelt a sense of belonging - a feeling ofhome. “I am in love with the food, slowerpace of life, shopping fresh from themarkets, a siesta and late night dining. I love Sicily because itdoesn’t try to be any thing else. It’s a land of the people with fullflavoured and simple foods that combined with the hand of alocal signora could reign against the most skilled French chefs.”

An interest in cooking began by watching her Sicilian Nonna(grandmother) and Zias (aunts) cooking, an uncle grillingsausages he’d just made or rolling meatballs, and at home withher mother baking cakes and biscuits, licking the bowl, beaters,spoon and spatula, lending a hand from aged 7 by baking cakesfor her sweet-toothed father plus creating gourmet sandwichesfor school lunch.

At 21 she began her apprenticeship at the highly regardedbefore-its-time Mondo Organics under Brenda Fawdon who laterbecame her business partner. It was more than a restaurant withcooking classes, organic Saturday markets, catering and makingvalue-added products with everything either certified organic,biodynamic or in conversion. She eventually left to establish a

food education company Pure Food Cooking, which involvesrecipe writing, website content for food companies, presenter atfood-related events, product promotion, styling, cooking classes,judging, product development and catering.

It was her father however who had the greatest influence. “Heloved throwing together a beautiful simple pasta dish, explaining

each and every detail of his dishes using Italian and Sicilianwords, which I had to repeat over and over. To this day I lovecooking with him however, like most of us who try and replicatethe wonderful tastes of our mothers, fathers and nonnas, I cannever get the sauce just like his.

“Family meals even today are full of talking, some tears,laughing and always with loads of food, eating too mucheggplant parmigianna, having leftovers and birthdays andmilestones celebrated. Often tables were pulled together andeven if there was not much in the house, mum always seemed topull together a great meal.”

When the word was out that Network 10’s Ready Steady Cookwas looking for more female chefs, Brisbane’s Alistair McLeodmentioned Dominique to the producers. She passed the auditionin flying colours although burnt the crusted fish dish. “It was infront of camera but I proceeded to scratch it off while saying that

here was a great example of what you cando if it happens at home. It worked, theyloved it and me because I never shut upwhile I cook.

“In seven years on the show I’vecooked with celebs, mainly from Australia,news readers, sports people, comedians,musicians and more. Some of the morememorable moments have been chickenbeing cut-up on camera to revealrawness, forgetting an ingredient whenasked what I was cooking, more burnings,dropping plates, tripping over, laughingso much my nose was running thensnorting, working with contestants whocouldn’t cook and of course funny thingsand naughty words that never got to air.”

Dominique is also often seen on TheCircle and The 7pm Project, and heard on

national radio but her latest claim to fame is My Taste of Sicily,(Lantern) in which she invites the reader and the cook toexperience the Sicilian palette of colours and flavours that giveseemingly endless choices on the palate: “The sheer joy of Siciliancooking - soul food cooking – is that – it is what it is, without thefuss, foams and frozen powders. It is the honest, delicious food ofa beautiful land and its people.”

At home on the north side of Brisbane, birds wake her everymorning as the sun filters into the bedroom, there are parkseverywhere and a great coffee shop, her salvation, is at the end ofa run. “It is a sanctuary for me and my cats Muffin and Coco.

“I hang out with my mum, live next door to my brother, lovehaving his chooks roaming in my yard and everyone to my placealthough with the yard being slightly Jurassic at the moment, Ihave put the barbecues on hold as we were losing my niece andnephew amongst the weeds.

“In an ideal world I’d like to spend five months in Sicily/Italy

and five months in Australia and the remainder on my SicilianFood and Wine Tours. Let’s not forget my charity work, living thedream of work/life balance, writing a pilot for a food communityshow, see products I’m working on become successful and oh, awonderful man to share my life with would be fabulous as well”.

POTTSVILLE’S BRITTANI NICHOLL IS THE PICTUREOF PERFECT HEALTH. THE 20-YEAR-OLD SURFER

KEEPS FIT BY CHASING WAVES ALONG THEAUSTRALIAN COASTLINE AND AIMS TO JOIN THE

WORLD PRO SURFING CIRCUIT.

But appearances can be deceptive. This bubbly blonde liveswith the debilitating bowel disease, Crohn’s disease - and hasbattled the illness since she was diagnosed at the age of seven.She has since required surgery to manage the condition,including having a temporary ileostomy bag.

But, rather than letting the condition hold her back, Brittani’sbouts of ill health have just made her even more determined tosucceed with surfing, leading a normal life, and now, in raisingawareness of the illness.

Brittani is a poster child for those coming to terms with adiagnosis of Crohn's or colitis. She isn't letting it get in the wayof her surfing lifestyle and life ambitions. Her planned schedulefor the rest of this year includes; the National Titles in PortMacquarie; Arugam Bay, Sri Lanka; and then Pantin, Spain andSan Miguel, Portugal.

Brittani also recently appeared on a national televisioncampaign highlighting the needs of the chronically ill. As theface of Crohn’s & Colitis Australia’s Can’t Wait campaign, Brittaniis raising awareness of the incurable bowel diseases whichcause diarrhoea, fatigue, weight loss, and often require surgeryfor the 61,000 Australians living with the conditions.

Appearing alongside Brittani in the TV advertisement isformer Big Brother contestant Pete Timbs, who also has Crohn’sdisease.

Brittani said she was happy to promote the Can’t Waitmessage and encourage people to talk about illnesses usuallydeemed “too embarrassing” to discuss.

“I really wanted to do this to create awareness so people canactually help make a difference to our lives. I hope it really openspeoples’ eyes,” she said.

The campaign follows on from a survey by national charityCrohn’s & Colitis Australia (CCA) that found 41 per cent ofrespondents requiring urgent access to a toilet were told byretailers to go elsewhere, even when the nearest public toilets

were a long distance, and often locked. A further 61 per cent haddifficulty accessing facilities. The worst offenders were petrolstations, cafes and retail shopping strips. More than half of thepeople denied access were turned away after explaining theirillness, and producing a card outlining their need for urgentaccess to a toilet.

Brittani, who earlier this year returned from competing inFrance and Portugal, said she hoped the Can’t Wait campaignwould generate “empathy” and help to destigmatise the illnessby encouraging people to talk openly about the conditions.

The surfing community has supported her cause, with formerworld champion surfer Layne Beachely inviting Brittani to takepart in the Commonwealth Bank Beachley Classic in May,captaining a celebrity team comprising Home & Away’s DavidJones-Roberts, musical theatre star Rob Mills and former Testcricketer Stuart MacGill.

The number of Australians diagnosed with Crohn’s disease orcolitis, collectively known as inflammatory bowel disease (IBD), isexpected to rise by 23 per cent by 2020. The conditions cost thenation $2.7 billion every year, and are more prevalent thanepilepsy, multiple sclerosis and rheumatoid arthritis.

CCA chief executive Francesca Manglaviti said the toiletaccess survey results were disappointing, and showed retailersneeded to be better educated about the needs of people livingwith Crohn’s and colitis.

“We really need retailers to be more compassionate when itcomes to people with illnesses such as Crohn’s and colitis to geturgent access to toilets,” Ms Manglaviti said. “Retailers and theiremployees need to understand that people living with thisdisease can’t wait. When they need to go, they need to goimmediately.”

CCA issues members with a Can’t Wait card that can beshown to retailers, identifying them as someone with Crohn’s orcolitis, requesting the holder be given access to toilet facilities.CCA can provide retailers with window stickers showing that theCan’t Wait card is welcomed at their venue.

Former Kiwis and these days quintessentialQueenslanders PJ McMillan and Philip Johnson workedtogether for several years at Philip’s Ecco Bistro, which

won many awards but none grander than the GourmetTraveller Award in 1997 for the Best Australian Restaurant. PJ(Peter John) was the head chef.

After creating Arc Bistro and Bar in New Farm and winningnumerous awards, running the kitchens for the redevelopedStory Bridge Hotel, his moniker reappeared in 2006 with thepurchase of Harveys deli in the Valley’s James Street. It wassoon transformed, has been twice revitalised and recentlytotally renovated whilst retaining his much loved seasonalbistro fare.

The long-time local favourite space with all-day tradinghours, has a down-to-earth charm and leafy outdoor gardenarea with a new long black bean-timber bar and a glass-enclosed air-conditioned area for dining and events. “It isintended not as a cafe or bistro but more of a dining room witha friendly pop-in-anytime bar, morish snacks, great coffee overbreakfast or a place to ponder over lunch and dinner menus,”says PJ who lives nearby in Paddington and loves spendingas much time as possible with wife Samantha, Duncan 8,Rebecca 3, and Henry 1, adding Harveys offerssomething for everyone - real food prepared withimagination and respect, totally uncluttered bytrends or fads.

“I love breakfasts especially on weekends, as we

see so many families of mixed generations. The all-timefavourite is the savoury mince tortilla spiced with cumin,coriander, carroway, chipotle chillis, fennel, garlic, topped withavocado, sour cream and a poached egg, although the ricotta-buttermilk pikelets with caramelised banana and honeycombbutter are a close second.”

The missing link in the Brisbane dining scene has long beenlunch. I found the perfect way to experience the philosophy ofthe chefs was to order the six course Tasting Menu, whichgives diners the opportunity to sample many of the chef'ssignature dishes. This menu showcases the tastes of trueJapanese cuisine prepared with minimal intrusion by the chef- offering true flavours, tastes and textures - and is presentedas works of art on a plate. I also chose to have the optionalwine matches, so that each course was presented with aperfectly matched wine or sake, perfectly tailored by BarManager Jack Henderson.

My dishes included an appetiser and entree of fresh oysterwith lime sauce, soft shell crab karage with shiso salsa andseared Wagyu with citrus soy sauce. chili and grated radishserved with a Pelorus by Cloudy Bay Sparkling; followed bytuna, salmon and snapper sashimi with shallot, sesame seedsand garlic vinaigrette presented with a 2009 MitchellWatervale Riesling. Then followed a fresh crabmeat croquetteand scampi spring roll accompanied by a 2008 Giant StepsSexton Chardonnay. Following was the prawn tempura sushiroll, fish tempura roll and seared salmon belly sushi drizzledwith mayonnaise, sea salt and avocado matched with aEchigo Toji No Sato Sake... for the main I chose the NSW duckbreast teriyaki with orange sauce perfectly matched by one ofmy favourite pinots, the 2009 Mt Difficulty Pinot Noir. By nowI was getting a little bit full but managed to force myself totaste the Matcha Tiramisu, a classic Italian dessert with aJapanese twist - Green tea powder gives this dessert a uniquetwist and the accompanying Choya Umeshu plum winehelped.

My lucky partner for the day chose his own dishes from themenu, for a 'starter a finely sliced Hiramasa Kingfish drizzledwith yuzu dressing and tiny squares of fresh orange and microherbs... delicious! was the comment. He then chose an entreeof plump sauteed Hokkaido scallops with sweet, creamy misomayonnaise; then for the main chose one of the signaturedishes, Black Cod Saikyo Yaki grilled New Zealand black codpre-marinated with a traditional saikyo miso sauce for at leasttwo days (and equally as good as Nobu).. you will need toallow 20 minutes for this dish but it is well worth the wait.

And in case you were wondering, yes my partner did havea glass of wine (but just one, he is the designated driver), a

glass of 2008 Giant Steps Sexton Chardonnay and it matched his courses perfectly.Cocktail parties and special event functions are extremely popular at Sono

because of their unique approach, entertainment and exciting food options.Guests also enjoy the theatrics of an authentic teppan-yaki experience to highlighta fabulous party atmosphere.

Raised in the deep, cool, remote and purest coastal waters inthe world at New Zealand’s Marlborough Sounds in theSouth Island, Regal King Salmon is a naturally rich sourceof long chain omega-3s which gives a luscious, elegant

texture and rich buttery flavour plus has important heart healthbenefits. It can be beneficial for the joints which great news foradults as well as a healthy mind for all life’s stages, includingyoung children’s development of the brain and eyes. It’s anexcellent source of high-quality protein containing most of theessential amino acids; is a natural source of vitamins A, B12 and D,as well as niacin and thiamin; and is low in sodium, which is linkedto a reduced risk of hypertension.

Although the salmon will keep in a fridge (at less than 4°C) forthree to four days perfectly well, it is best eaten as fresh as possible.

If frozen in a sealed freezer bag, salmon will last up to sixmonths in the freezer. You should always defrost seafood in thefridge. Salmon is ready to eat when the flesh turns opaque. It isquite safe to serve salmon rare and it can also be eaten raw.Salmon cooks very quickly and should flake easily when testedwith a fork.

For oven baking place the salmon in a baking dish that hasbeen greased or lined with foil. Brush the fish with oil, lemon juiceor a mixture of both. Bake at 180°C, allowing eight to 10 minutesfor 2cm thick fillets. A good rule of thumb is to measure the wholefish at its thickest part and cook it for 10 minutes per 2cmthickness (approximately 45 minutes for an average 2kg fish).

When poaching avoid using thin fillets. Simmer in liquidflavoured with slices of lemon and parsley for four to six minutesensuring there is enough liquid to cover the salmon. Poach wholesalmon for six to eight minutes per 200g. Poached, the flavourimproves if it is served the next day at room temperature.

For the BBQ, cooking time will depend on the temperature. If itcan be controlled, a medium-high heat should be used. Brush thesalmon with oil and the season.

For whole salmon, season the fish and brush with oil or lemonjuice. Place slices of lemon and parsley in cavity and wrap in foil.Measure the whole fish at its thickest part and cook, following the

instructions for either over baking or BBQing, for 10 minutes per2cm. Little wonder Regal King Salmon is preferred by many of thetop restaurants in Australia.

250g Regal King Salmon top loin skin and blood line removed 100g fresh or frozen peas fresh horseradish 50 ml vegetable stock 25ml extra virgin olive oil I lemon zested Mixed baby herbs (baby watercress, mustard cress and purple basil) Japanese skewer 25g caviar 50g sea salt 50 sugars Black volcanic salt to garnish

Pea puree If using fresh peas blanch in boiling salted water for 4 minutes

or 1 minute if using frozen. Plunge immediately in iced water tocool down quite quickly to stop the cooking process. Place peas ina food blender with vegetable stock and olive oil and blend tillquite smooth. Pass puree through a fine mesh sieve then seasonwith salt and add lemon zest. Refrigerate till needed.

Salmon Mix sea salt and sugar together and rub all over salmon and set

aside for ten minutes. Once time is up rinse fish and pat dry. Slicefish across ways and place skewer thought he middle of the fish soit resembles a salmon paddle pop.

Place salmon paddle pops on serving platter, place pea puree ina piping bag and pipe onto salmon. Continue with a few pearls ofcaviar on pea puree top with mixed baby herbs and grate freshhorseradish sprinkle with black salt and serve.

The Who’s Who of the wine industry stepped out recently for the Coonawarra Barrel Series 14 Auctionand Dinner, held at Katnook Estate Coonawarra. There certainly was a buzz around this year’s Barrel Serieswines, which was evidenced by a larger than ever turn out at the Barrel Series tasting prior to the auctionand dinner. When tasting the Coonawarra Barrel Series 14 wines in June 2011, Nick Ryan national winewriter stated: “This may well be the strongest line up of Coonawarra Barrel Series wines we have seen inyears. Gray has graciously offered to share hisinsights on the results and offers thefollowing assessment.

"In the current uncertain market, tohave all six properties sell at auction was agood result. We were expecting a muchbetter result as all properties had beentransformed significantly and renovatedto a very high standard." he said

But, as market confidence has slippedin the last six months due to the state ofthe national and global economy, whichhas led to a lot of potential buyers sittingon the fence. It's often easier for them tomake no decision - than to buy or sellproperty at the moment. Adding topeople’s indecision is the mixeddiscussion about whether interest ratesare likely to rise or fall

Potential purchasers should be awarethat selling property by auction is not justabout that night, it's about pre and postauction negotiations. A lot of property atthe moment is being sold pre auction - asagents know it's an uncertain market andwill happily take a good offer before.

"The properties that sold at a loss onthe night of the program - in reality, theauctioneer would normally have used avendor bid or passed the property in and

then negotiatedafterwards,resulting in ahigher result. "

"As a TV show,it was better toget a result on thenight. Of course,many propertiessell within days ofthe auction nightand at a muchhigher price - asdemonstrated in The Block, where thesecond property sold that same night -and the third and fourth sold within fourdays at a profit.” he continued

"Some people will not go to a televisedauction even though there was a largelevel of interest in the properties. Biddingat an auction is like public speaking andmost people fear it more than death. Tobe put on the spot in front of such a largeaudience and on national TV would be anightmare to a lot of people, and so theywill not turn up or bid under anycircumstances.

The contestants had to spend a 20%budget to keep everyone on the sameplaying field. In reality, some propertiesmight have been better off spending less- as there gets a point where you start toover capitalise."

"Due to time constraints they also hadto hire in and pay for tradesmen, wherethey would normally have done the workthemselves - effectively for free, so theywouldn't have spent so much cash

"Buying, renovating and flipping, isdifferent to doing a buy and hold – thecontestants had to do things properly, for

example, replacingsewage systems andgetting guarantees inplace. If they wereselling they wouldn’tnecessarily improvethings that didn’t needimmediate attention, ordidn’t need to be fixedimmediately.

Auction day arrived,with the Top 6 holding

their collective breath as the auctions gotunderway. First up was The WeatherboardHouse, with Mel and the rest of the GreenTeam watching anxiously. The poor state ofthe property market was immediatelyapparent, with bidding getting off to aworryingly slow start. With the price creepingup steadily, however, The Weatherboardmanaged to reach $575,000, a profit of$1145. Next up was The Shop, with Augustpained to see his pride and joy fail to make aprofit as the hammer fell at $700,000. Peterand Natalia were given equally little tocelebrate, with The Half-Done House goingfor $770,000 and The Sixties Suburban for$730,000, some way short of their respectiveprofit points. Thankfully it was a differentstory for Luke and The Inner-City Terrace,which enjoyed by far the best action of thenight up to then by selling for $925,000 – atidy $25,732 profit. The stage was set for abattle of David and Goliath, with the onlyhouse that could topple the competition’sbiggest being its smallest. Incredibly The FibroCottage exceeded expectations, reaching$440,000 and a profit of $68,012, winningMichael the crown of Australia’s bestrenovator and $100,000 in prize money.

It all began at a young age of 17, growing a passion forfurniture & home-wares, design and creativity. By the time Ireached 18 I was buying, merchandising & developing stores. Q: Village; what does it represent and how did you comeup with the name?

Village represents, people & cultures from all over the world,it's about working with families and villages, traditional methodsin craftsmanship, originality and working with suppliers thatsupport the world we live in by producing furniture fromreclaimed woods. It's all about the generations ahead of us. It'sabout quality, Beauty & being in love with the products thatsurround you in your home. It's a Village: a place of home orcommunity and that is exactly what Village represents.

Q: What styles do you focus on that make Village sounique to your customers?

Our style is definitely unique, It allows you to create your own,be confident to step outside of the usual structured design.We focus allot on natural products, earthy urban designs,luxurious soft furnishings embracing eclectic looks beingempowered by things you love around you, developing astyle that really works for you and your personality ratherthen following a specific trend.

Q: Where do you look for inspiration on theproducts you manufacture and source?

I turn mostly to nature, the earth and all the creativitythat lies within it. Traveling throughout parts of theworld through markets and villages, colours of spicesand the earths fields, seeing some of the mostamazing architecture and developments created byman. It's urges and fills such a desire to come homeand share those experiences through

merchandising in the store, It gives me the courage andinspiration on the direction of where i am heading with Village,Each visit over sea's endorses the next collections, our evolvingstyle or new trend.

Globally, when I travel to meet with manufacturers overseas Iam inspired to bring there beauty home, to share theseexperiences with my staff and customers, I really feel inspired byeuropean designs but mostly inspired by amazing artisans that Ifind in other countries, These are the moments I am trulyinspired. This is what keeps us so unique, keeping ahead of thepack means we are continuously evolving and making each visitto the store a new experience.

Q: The most rewarding part of owning Village?Meeting people and sharing their experiences, Having a solid

team that believe in the product and brand as much as I do. It'salways rewarding learning from our customer that Village isunique and one of their favourite shopping destinations by far!That is what is most regarding about creating this brandknowing that I have broken through to customers and touchedon a emotion in their lives.

Q: Anything we have to look forward to, what does thefuture hold?

Unveiled at the Geneva Motor Show in March 1961,Jaguar’s E-Type caused a sensation. Capable ofachieving 150mph, but costing a fraction of the priceof rivals with similar performance, it was the affordablesupercar and became an instant icon – remaining onsale for 14 years.

This year marks the 50th anniversary of theJaguar E-Type, arguably one of the mostfamous and desirable cars in automotivehistory.

In addition, the apartment had to sleep 10 plus people! Nomean feat indeed. With the owners possessing five kids underthe age of six, the owners wanted to create a haven where thefamily could be together or could escape each other. In this

way, a second lounge and a large deck were crucial. They alsowanted to have space for friends in addition, so the ability to havetwo families holidaying together comfortably was a must.

After two years of planning, during which the original design ofthe apartment was tweaked and beautifully twisted, the unit nowboasts a great deal more space, a slick design, an interior of cleanlines, splashes of oceanic blues against a palette of fresh white,and modern stylish, yet functional, furniture.

A tour of the apartment offers a private entrance to thepenthouse via an inclinator, taking you straight into an open planliving dining area together with a beautiful large white kitchenand a huge terrace and sun deck spacious enough for a table often and, more importantly, with breathtaking panoramic viewsover Laguna Bay.

The lounge is tastefully decorated with muted tones and

brushes of colour – a yellow vase – a lovely contrast to the whitewalls, cushions of blues and greens; the perfect modern beachvibe. The kitchen features an expansive Caesar stone bench andMiele appliances throughout, whilst the bursts of colour continuewith a striking lithograph of lifesavers - the variety!

Heading up to the next level takes you to a main bedroomwith ensuite, a second children's room with twin beds and atrundle, plus a separate bathroom. The finishings are luxurious,with gorgeous touches in each room such as woven baskets,gorgeous lighting, and beautiful linens.

Heading up to the third level which features the masterbedroom and the first thing you notice is the panoramic views ofthe beach – step outside to your own private balcony and it trulyis an adults retreat. The ensuite is expansive and comes completewith double basin whilst the shower offers views to the ocean.

Continue on to the fourth level - the top floor and there is thechildren's bunk room, featuring five beds, complete with ensuiteand a bathroom that doubles up as the laundry as well. Its alsobeen thoughtfully designed with a back door leading out to the

gardens and ponds.On the evening that we dined, I sampled a very

exciting Thai Chili Martini which ensured mytastebuds were eager to dive into the menu whichtempted with dishes promising spices and exoticflavours..

I wasn't disappointed. We started with aMalaysian prawn soup with hokkien noodles, freshginger, bean sprouts, shallots, sweet soy and sesameoil. Then a spicy pork cooked in a sour orange currypaste served with vietnamese mint, crispy noodlesand shallots served with crisp vegetables that wereused as edible spoons. Yum.

We followed with the restaurant's signature dish- the whole crispy-fried standing fish with a threeflavoured sauce, fired basil an ground roasted rice,this dish created by Paul Blain has been a favouriteof many a restaurant over the ears on the SunshineCoast, but this is the original!. A rich Mussaman curryof slow braised beef with sweet potato, whiteradish, peanuts, pickled ginger and crispy shallotswas our other main and equally as impressive.

We had great fun discussing our respectivedishes with another couple who were equallyimpressed with their menu choices. The casualambience creates a warm air of friendship amongstdiners. It's amazing how convivial you becomewhen being satiated by brilliant dishes.

Boopy is getting on in years now, sowill continue to live on the property, sleeping in thecool gardens around the ponds by day, and goinghome with staff at night.

Guests will find the retreat is a great base forexploring the Sunshine Coast Hinterland - if theycan tear themselves away from the tranquility andcomforts afforded by the villas. I couldn't!

“There was a time when taking a peton holidays required months of researchto find a place that would accept petsand provide a safe and welcomingenvironment. Now, you can findhundreds of options on the Internet, witheverything from five-star, inner-citygetaways to beautiful homes in premiumbeach locations. The great thing is thatproperty owners really seem to bethinking about the needs of pets as wellas people, so taking apet on a holiday hasnever been easier,”

says Susie Willis from the PIAS.Sophie Stefanetti of Brisbane is one of the

many pet owners who always takes intoconsideration her furry friend when planningher trips, great or small. “Pesto is a greatcompanion to travel with, we recently visitedfriends interstate. Whether we are going to thebeach or further from home, there’s no way I’dleave him behind,” says Sophie.

Like people, pets appreciate a bit of timeout,” says Susie.

The Petcare Information and AdvisoryService suggest the following tips forholidaying with pets.

1. Use the Internet to find pet-friendly accommodation. I t iseasy to review a number of different properties in the area youwish to visit. Always check that the accommodation is suited tothe requirements of your pet - e.g. it is securely fenced or allowspets to be inside.

2. Find a vet in the area you will be visiting before your holiday,so there is no last minute panic if your pet does need veterinary

assistance while you are away. Also, check out areas that are off-leash or cafes that welcome pets.

3. Make sure your pet’s vaccinations are up to date and that youhave treatments for any conditions that may be a risk in the areayou are going to. During summer, ticks are common in many partsof Australia and are a real risk to your pet.

4. Check that your pet’s identifying tags are secure and that theycarry a phone number where you can be easily reached while youare on holidays.

5. If you are flying with your pet, always book your pet in beforethe flight and ensure he or she is in a secure crate. Arrive at theairport at least one hour before the flight. Discuss any specialneeds your pet may have with your vet well before travel time.

6. Even if it is a short car trip, you need to be aware of the roadrules about travelling with pets in vehicles. The rules vary fromState to State - so check with your local road authority or police as

well as those for any areas you may be travellingto or through. It is better if your pet travelseither in a carrier or a separate and secure areaof the vehicle.

7. Pets tend to prefer routine, so on the dayof departure, time your activities so your petcan rest in the car at its normal sleeping time.Cats are often more nervous about car ridesthan dogs - but a cat will be more likely to curlup for a sleep if it is in a carrier that it is familiarwith.

8. When you arrive at your holidaydestination you will need to keep both dogsand cats secure for the first few days. For a dogthis means only letting it outside to a secureback yard or on a leash. Cats will need to bekept inside for at least the first week and

probably for the duration of your holiday.9. Take your pet’s familiar bedding and toys as well as

everything you will need for the perfect pet-holiday: bowls, usualfood, kitty litter or dog poo bags, leashes, towels, special treats, andbasic first aid for your pet.

Remember that National Parks do not allow pets (even whenkept in the car) so observe the rules if visiting a National Park.

Summer of tennis...There’s an exciting array of new players and

plans for next year's Brisbane International.

Kids Zone will return in 2012 with fun tennisactivities, the rock climbing wall, face painting,colouring competitions, prizes and MLC Tennis HotShots and the inaugural Brisbane InternationalPrimary School Challenge will take place with thefinalists playing during the January event.

Monday 2 January will also be Kids Tennis Day in2012 with children aged between 3 and16admitted free to the Queensland Tennis Centre.

Queensland Sport Minister Phil Reeves said “tohave the world's best tennis stars playing in thetournament in 2012 - when just last year the tenniscentre was heavily impacted by floods - sends astrong message that Queensland is back inbusiness and reinforces our status as a topsporting destination. Queensland really is thechampion’s state and the events state as well.”

Art to hang ten Peter Walker is used to making waves but his

latest feat was an exhibition, One True Religion at

Brisbane’s Artisan Gallery.

The one-time Sydney grommet, now associateprofessor at the Rhode Island School of Designnear New York, painstakingly crafted a dozenbeautiful timber surfboards. Ranging in lengthfrom 1.5m to 2.8m and with various fincombinations, the boards feature artistic designsby surfing heavyweights such as Mambo designerand surfing champion Gerry Wedd and Quiksilver'sdirector of research and design Phil Hayes.

Walker explained a Chinese wood known as‘coffin timber’ which is as light but much strongerthan balsa, was used for the boards. "They are all ofa hollow construction with a framework, skin ofwood and laminated rails. Finished in fibreglass, theboards draw on designs dating back to the 1920sand are combined with contemporary design.

"For decoration, I've collaborated with otherartists to pick up on various aspects of Australiansurfing and coastal culture. People interested insurfing history and surfing culture collect boardslike these for both reasons - as artworks and touse."

Walker’s interest in surfing took a back seatwhen he moved to Tasmania to study furnituredesign. Now an accomplished designer andcraftsman, Walker divides his time betweenAustralia and the United States which is where hemet legendary board maker Dale Belze, igniting hispassion for surfboard design.

“Forms have changed, the way people surf haschanged, technology’s changed,” he says “andthese boards are a bit of a hybrid mix but they’redefinitely rooted in the old school.

“They are completely different to surfing on afoam board. They’ve got more weight, so they feeldifferent in the water and under your foot, plusthey behave differently. They’ve definitely got moreglide and momentum.”

“I guess I’m trying to contribute to the evolutionof surfboard design and culture, but mainly I’mhaving fun.”

The exhibition was opened by the legendarysurfing photographer John Witzig.

Alice still rocks...31 years on... it was a nightmareALICE COOPERROCKED BRISBANE...The Brisbane Convention and Exhibition Centre was thescene of one of the best concerts this year, when AliceCooper brought his No More Mr Nice Guy tour to Brisbane recently.Even before reaching our shores, Alice Cooper had played tosell-out audiences in Nth & Sth America and Europe and isstill receiving rave reviews from both fans and mediaworldwide. His highly anticipated return to Australia coincided with therelease of his new album, Welcome 2 My Nightmare, outthrough Sony Music now. The album was produced bylongtime collaborator Bob Ezrin, who also produced theoriginal Welcome To My Nightmare album in 1975, and

features a host of special guests (including the three othersurviving members of the original band, “Nightmare”guitarists Steve Hunter and Dick Wagner, Alice’s touring band,Vince Gill, Rob Zombie, and, most shockingly, Ke$ha) as Alicerevisits his legendary nightmares.For anyone who missed this show, let's hope that he comesback again soon. This show was a sensory spectacle,reminiscent of his older shows - huge sound, smoke, mirrors,props - even the obligatory Boa Constrictor - and a stellarband featuring Australian guitarist Orianthi Panagaris thatwas perfect backing for the man who introduced horrorimagery to rock ‘n roll, and whose stagecraft andshowmanship have permanently transformed the genre. As someone who was at the original 1975 Welcome To MyNightmare concert at Wembley Stadium, I can tell you thatthis was almost like reliving my youth. Fabulous fun!! Can'twait to buy the album.
