Direcons:Over medium-high heat, sauté mushrooms in 2

tablespoons buer, season with Kosher salt, pepper

and½cupsherry.Removepanandsetaside.

Sauté onions and garlic in two tablespoons buer,

season with Kosher salt and pepper. Add beef to

onions, add brandy, sherry and stock. Cook for 20minutes and add tomato paste. Add roux, then sour

cream.

Add a splash more brandy at the end, and s:r in
