38 Local Legend

Welcome : So that’s it then, all over for another year. The build up to the Christmas celebration is always completely insane and the aftermath is a different kind of insania. Seen by many as the bleakest month on the calendar, January’s reputation is tarnished to say the least. But really its not that bad. It’s a good time for some quiet time, some reflection, not having to go too far other than the local shops and gearing up to get back to some sort of normality and not wearing a onesie until 4pm every day. Unfortunately society frowns upon it. Life does go on though and no matter what you did or didn’t get for Christmas, the shop shutters are up and you can swap that rare thing your granny got you and spend the cash on whatever you like. Or of course spend your Christmas money. Times have been extraordinarily tough this Christmas for traders in East Belfast due to the unrest. We have been talking to local businesses and the financial hit will have repercussions well into 2013. And those repercussions trickle down to us which trickles through to other businesses whose services we use. So why don’t you kick January’s grey reputation to the kerb and spend that Christmas money close to home whether it be on a nice meal or on another sumptuous onesie. Either way, a nice treat in January never did anyone any harm. Plus remember the next month is February which includes the big loved up treat that is Valentines Day. So to be honest you’re probably better spending it on yourself now before you have to spend it on someone else! But before cupid shoots that arrow right through the aorta, show some love for East Belfast, there are many out there who need it.

Artistic and creative secondary school pupils across Northern Ireland are being encouraged to get their hands on industrial, electri-cal, commercial and domestic waste products and turn them into pieces of fashion art as the 2013 Junk Kou-ture Recycled Fashion competition in association with the European Recycling Platform (ERP) is launched. Created in 2010 by entrepreneurs Elizabeth O’Donnell and Troy Ar-mour, the Junk Kouture competition has seen thousands of teenagers’ work submitted over the past two years, with some spectacular and awe-inspiring pieces gracing the competi-tion’s regional and national catwalks. Sponsored by ERP, the only pan-European compliance scheme for electronic waste and battery recycling, Junk Kouture is the leading fashion and art competition for secondary school students across Ireland and has a reputation, among many, as being the most creative. The competition is open to all second level students. The competition closes for entries on 31st January 2013. NI Students Get Set For A ‘Rubbish’ Competition

Over 1,200 people took to the streets of east Belfast last month as Ballyhackamore village celebrated its an-nual Christmas lights switch on by Lord Mayor of Belfast, Alderman Gavin Robinson and the annual fair. Children from some of the local schools’ choirs (Strandtown and St Joseph’s) attended as well as Santa Claus himself. Brenda Shankey, Chair of Ballyhackamore Business Association said, ‘The Christmas lights switch on and fair is a lovely event, but an important one too.  Supporting local retailers is vital to their survival and to our economy during these difficult times.’ In the lead up to the event, Ballyhackamore Business Association had been working in conjunction with East Belfast Mission to provide hampers filled with food for less fortunate families which were then made into Christ-mas hampers. Brenda added, ‘Christmas is a happy time for many, but it can also be a very difficult time for those families who aren’t as fortunate as others. It’s important to recognise that and do what we can to try to make Christmas

a happier occasion for all. A big thank you to all involved in making the event a huge success including Wandsworth Community Centre, East Belfast Mission and Belfast City Council for their continued support.’ Lord Mayor of Belfast, Alderman Gavin Robinson said, ‘It’s brilliant to be here on my home turf of east Belfast to switch on the Christmas lights and to be part of the wonderful community spirit.  Belfast City Council is delighted to be working with Ballyhackamore Business Association in delivering such a fantas-tic event which encourages people to support their local traders and be part of the wider community. The level of warmth and friendliness that you find in your local shops is hard to beat!”

Lord Mayor of Belfast, Alderman Gavin Robinson has officially opened a £1.7 million international arrivals lounge at George Best Belfast City Airport. The private investment significantly enhances capacity of the arrivals areas and provides statutory agencies with improved facili-ties to process international passengers when Aer Lingus begin flights to and from Palma, Malaga and Faro in March 2013. Lord Mayor of Belfast, Alderman Gavin Robinson said, ‘Belfast City Airport is

an important economic gateway, not only for the city of Belfast but for the wider region. In acknowledging the important role tourism plays in our city’s future, I welcome this latest in-vestment by the owners of the airport. Chief Executive of Belfast City Airport, Brian Ambrose, said, ‘Next year will mark the airport’s 30th anniversary and with our long term partners flybe and manx2, and new arrivals in British Airways and Aer Lingus, 2013 looks set to be an incredible year. The new arrivals facilities are the latest considerable outlay by our owners who have invested £15 million in the improving airport infrastructure over the last 4 years. We now serve 26 destinations with 17 daily flights to London and are now the sole link to London Heathrow from Belfast. We now have an airport that we hope exceeds the expecta-tions of our passengers.’

Grosvenor Grammar School recently welcomed double Paralym-pic Gold Medallist Michael McKillop to the school as part of its launch of the nationwide ‘Inspire >Aspire’ Poster Campaign 2013. The event saw a range of representatives from throughout the U.K. visit the School, where the competition, which provides the opportunity for children aged 11-18 to produce a written/drawn creative poster based on Olympic/Paralympic Values, received its official launch. Grosvenor itself has been participating in the competition for the past five years, and last year achieved nota-ble success, with four pupils being selected to attend the National Finals at The Parliament Buildings, Stormont in June. All involved in the programme were extremely grateful to Mr McKillop, who secured Gold in the 800 and 1500 metres in the T37 classification at this summer’s London Games, for making the effort to attend. Get winter ready with help from the Consumer Council - The Consumer Council is calling on all consumers to consider what steps they need to take to be winter ready. Antoinette McKeown, Chief Executive of the Consumer Council explains ‘Once again we are advising consumers to be as prepared as possible in the event of severe weather occurring. Our handy ‘Weather the Winter’ leaflet gives consumers tips on what they should do to help protect against frozen or burst pipes, a power cut or disrupted transport services. Simple actions such as checking your oil regularly, ensuring your pre payment meter is topped up with sufficient credit, insulating your pipes and tanks and knowing where your stop tap/value is and how to turn it off will help mini-mise any potential problems. Free copies of our ‘Weather the Winter’ leaflet will be available at local libraries, Citizens Advice Bureaus, independent advice centres and constituency offices and can be downloaded at www.consumercouncil.org.uk/publications or call 0800 121 6022.’

Bloom: News

Back in October of 2010, film maker George Clarke of Yellow Fever Pro-ductions created a Youtube video that very quickly became the most media covered and talked about video online. Chaplin’s Time Traveller  is an Internet urban legend surrounding footage from the premiere of the 1928 silent film The Circus  written and directed by Charlie Chaplin. Available on the 2004  DVD as a spe-cial feature, a pedestrian woman can

be seen walking in the background while holding what appears to be an electronic device close to her ear. The woman went seemingly unnoticed until October 19th, 2010, when George uploaded a blog to his YouTube channel  arguing that this woman was a time traveler who was holding up a cellphone to her ear. At present, this video has more than 6.4 million views. ‘I compiled a blog post,’ says George, ‘noting that the video had received more than 4 million views and 40,000 comments in the 12 days it had been online. I also received more than 70,000 additional emails with theories and requests. Some of these theories suggested that she had a toothache and was holding an ice pack to her face, that the footage was doctored or that she was a government agent who held some sort of advanced technology. On YouTube, there are approximately 600 videos featuring various explanations, specula-tions or parodies of my original video.’ With this new documentary, George’s aim is to talk with, interview, meet and film the most interesting, and theoretical people who have been in touch with him over the past two years including great scientific minds like Stephen Hawk-ing. ‘Obviously, as an independent production we are going to need a great lot of support in making this work. And whether you’re a fan of the mystery or not, your help and support can make it work! Even if you can’t donate, just telling the world about our mission can give us an extra push into getting this done, and done right. Once our project is completed, our hope is to hold the premiere of the documentary in Mann’s Chinese Theatre in Hollywood - the sacred spot of Chaplins Time Traveller!’ You can find out the full story and how to donate at www.indiegogo.com/helpmefind

EBCDA along with the Wise Men of the East Network will once again be support-ing the evening men’s clinic at Holywood Arches Health Centre with health promo-

tion information on 16 January 2013. Men are less likely to engage in preventative

health checks, to make infrequent use of health services and usually present late

with their problems which can mean reduced treatment options. However, in the past 24 months 190 men have made

use of the evening clinic which is a modest beginning. The clinic is taken by District

Nurses and is aimed at men who have not had contact with their GP in the past

12 months. The service offers men a 30 minute plus health assessment check up

for their blood pressure, weight, blood sugar check, cholesterol check and an op-portunity to discuss other general health

issues. As well as men being referred by their GP men can also refer themselves to

the clinic by leaving their details on an an-swering machine 028 9056 3307 and they will be contacted about an appointment.

The N I Dyslexia Centre in East Belfast was established in 1998. We spoke to them to get some insight into the work and services they can provide: ‘What is Dyslexia? Dyslexia is a language learning difficulty which affects much more than reading. Learners may have difficulties with spelling, writing skills, recall-

ing sequences like times tables, and phone numbers or instructions. Maths and organizational skills may be problematic. There is often a puzzling difference between their ability and the work they produce. They are often wrongly labelled as ‘stupid’ or ‘lazy’, become frustrated and lose their self-esteem and motivation. Our society loses so much if their many creative talents and skills are not recognised and developed. How can we help? The answer is thorough as-sessment and sympathetic teaching matched to a student’s way of learning. All Centre tutors are professionally qualified and have extensive experience in teaching learners of all ages with dyslexia. We provide assessment, individual tuition, Parents’ Courses, training to schools and organisations and OCR Level 5 and Level 7 Diplomas for teachers.’ Some comments on the cen-tres Parents’ Courses include: “Very worthwhile, interesting and valuable.” “Would recommend to anyone, has given me confidence in working with my child.” The next course begins on 30th January and runs for five Thursday evenings from 7 to 10 pm. NEWVERSIONS Insight Into The NI Dyslexia Centre

Artemis recently celebrated its 200,000th user and showcased the community services it helps facilitate across Belfast, using its unique social enterprise model, at an inspiring event supported by Simon Hamilton MLA in Parliament Buildings, Stormont. Operating in five schools in Belfast with over 200 community partners, Artemis offers communities state-of-the art facilities at affordable prices. It’s the first social enterprise in the UK that gives its financial surpluses back to the community in the form of educational, leisure and cultural activities, focusing on areas of deprivation. Peter Dornan, social enterprise manager at Artemis said: ‘Increasing the use of the schools’ facilities avoids them sitting empty in the evening, at weekends and during school holidays. Opening up public facilities for community use provides people with affordable places and spaces to enjoy activities from dance classes and adult learning, to football and cookery courses. And this concept is not only relevant to schools. It can be applied to other public buildings like leisure centres, libraries and empty shops.’ Community groups who attended the ‘Showcasing Social Enterprise in Schools’ event included Grosvenor Fencing Club, Annad-ale Hockey Club, Monday Night Painters, Precision Fitness Training and Boys’ Model Evening Classes who provide adult learning, as well as Artemis’ key partners – Amey and Belfast Educa-tion and Library Board , senior politicians, policy-makers, business leaders and social economy leaders. Health, Fitness & WellbeingWith the new year upon us, resolutions are the big promises we make to our-selves. But statistic show that most people give up by the 9th of Januar, so we spoke to some local experts who have plenty of advice and motivationsto help you see it through when it comes to keeping fit and healthy.

Stretch into the New Year with Claire Ferry - ‘Ever wanted to try yoga but not sure what’s involved? There are so many classes on offer from Astanga (powerful, flowing poses) and Bikram (hot yoga) to Hatha, which is a catch-all term. Thankfully, they all have something in common. Yoga is often translated from Sanskrit as ‘union’ - the bringing together of the mind, body and soul through physical postures and breath, ultimately leading to meditation and quieting of the mind. I teach Iyengar yoga, which promotes strength and flexibility through poses that empha-sise safe alignment, stretching, attentive breathing and relaxation. Classes start with simple poses, moving towards more advanced ones, and end with relaxation and breathing techniques. The classes can be hard work but you leave the class feeling lighter, calmer and with a sense of wellbeing. As well as celebrity endorsement (everyone from Ryan Giggs to Madonna) there is increasing evidence showing the benefits of yoga. A large trial from York University proved yoga is effective for low back pain, and a recent symposium in London brought together research on the benefits of yoga for mental health. How you benefit from yoga will be up to you and your circumstances as they change. Whether you are looking for relaxation, greater suppleness and strength, solutions for chronic aches and pains, or just a chance to ‘be’ every now and again, yoga can be for you.’ Classes start on 7 January at 31a Ravenhill Park, the Crescent Arts Cen-tre, Queens PEC and the new Skainos Building on the Newtownards Rd. Check www.clairefer-ryyoga.net or call 07743 841415 for more information.

Slimming World Consultants are well known for being the most dedicated when it comes to real help and support through one of the most difficult things anyone ever has to do in their lives. Sally Moore runs the Holywood Slimming World Group and following on from running that successful group in Holywood CFC Community Hall every Thursday evening, she has decided to dedicate more of her time to Slimming World and open another group in Ballyhackamore (in Bloomfield Collegiate School) on a Tuesday evening. Sally said, ‘I just love this job. Seeing firsthand how someone can change from having no confidence whatsoever, being embarrassed about their size and shape to someone who looks and feels great, brings its own rewards on a daily basis.’ In 2012 Sally helped members lose an incredible 4,184 lbs (almost 300 stone). Some members, by losing weight and making healthier eating choices, have had significant improvements to their health too. One of her members, Sophie Hill, who was crowned Young Slimmer of the Year in the group has learned healthy habits that will stay with her for life so worrying about her weight can be a thing of the past. Obesity in young people is such a huge problem with teenagers being diagnosed with conditions usually associated with much older people, like high blood pressure, high cholesterol and type 2 diabetes. ‘Sophie’s success has inspired other young people by showing them that slimming clubs like Slimming World are for people of all ages and there’s no better time to take control of their weight than right now. I am sure I could write a book with many more success stories! This year I also had the privi-lege of attending the Slimming World Oscars and met Margaret Miles-Bramwell, the founder of Slimming World. I was blown away at how such a down to earth ordinary lady had a dream one day and 43 three years later is living that dream, which is the largest and most advanced slimming organisation in the UK, and I am delighted to share in that dream and play my part in reaching out to make a difference to others.’ You can contact Sally on 07738 713436.

When asked what they learned, Phyllis said ‘I just think differently about food,’ and Jacqueline explained, ‘I love and feel amazing using the Herbal-ife products.’ The Challenge tutors educate about various components of a healthy, active lifestyle, focusing on nutrition, hydration and exercise. There is also a FREE “FitClub” session after each class for those who want to boost metabolism and burn some extra calories, something for all lev-els. The class has become a great community social event where participants come to get weighed and measured, get educated, get motivated, share their experiences and have fun learning about how to lose weight, get healthy and KEEP IF OFF!’ If you would like to join the up and coming Challenge in Dee Street Community Centre starting at 6.15pm on Tuesday 8 January con-tact Gulnaz on 07966769551 or Ryan on 07541185537.

The Secret Day Spa, 30 Belmont Road, Belfast. Tel: 028 9067 1914.

Good News! One of the most reoccurring trends at Fashion Week is an almost makeup free mug. Tons of designers sent their girls down the catwalk fresh-faced, foundation and blush replaced with glossy eyeshadow and barely-there lip stains. Good news if you are 16 with perfect skin tone! But don’t despair as great make up & a good daily beauty regime can make anyone look & feel great.

Welcome to The Secret Day Spa beauty page.

Health & Beauty

The first and foremost step in your daily facial care routine is cleansing. Removing the day’s dirt, grease, sweat and air pollution from your skin will help prevent damage and  infection which might leads to acne. Use Dermalogica pre cleanse to remove make up & special cleansing gel to remove the day’s dirt & grime.

This can be done daily or maybe twice a week depending on what your skin has been through all

week & what products you are using. We all lose skin cells, it’s part of being human. Skin cells die,

but, some of the dead skin cells need help and this is where exfoliation comes in. The act of exfoliation

is abrasion on the skin so you need to be careful and make sure that you do not cause damage to the

healthy skin.

Moisturising is probably the most important part of your daily facial skin care routine. Everyone should moisturize

no matter what your skin type. Be sure to choose the correct moisturiser for your skin type. Most brands will

have a wide range, such as dry, sensitive, oily and prob-lematic. Dermalogica face mapping is a good way to find

out what your skin type is and in most good salons it is free. (check out our website shop.thesecretdayspa.co.uk

for an online face mapping).

Concealer: Start with a concealer to cover any blemishes or dark circles. Thin red veins can also be covered using the right concealer. Setting Powder: Sheer setting powder is your best defence against shine. It creates a flawless, matte finish. Use before your foundation, dusting over where you have most shine, usually your T-Zone.Foundation: For a beautiful and natural effect, you should choose your foundation ac-cording to your natural skin tone. The colour shouldn’t be too dark, so that it doesn’t look obvious next to the shade of your neck. For an immaculate look, choose a foundation that is slightly lighter than your skin tone and apply to the rounded parts of your face: cheeks, bridge of the nose, chin and forehead.

This wasn’t the case up until the late 1950’s when the trains from the Belfast and County Down Railway passed overhead on the Belfast to Comber railway line. This well known landmark was constructed in 1849 and it carried over it passengers to various destinations in County Down such as Comber, Newcastle and Downpatrick. There were many train stations in East Belfast including Neills Hill, Knock and Bloomfield where people recall standing on the railway bridge which passed over the track at Bloomfield station and feeling the steam on their faces as the trains passed underneath on their way to Donaghadee to connect with the mail packet ship to Portpatrick in Scotland There were many shops in this area as recalled by W McK Hutton in his article “The Wee Shops Around the Arches” in one of our previous journals and this is how he recalls one of these: “At the corner of Grampian Avenue there was a building on the left which had the title “The Cosy Corner” above the shop window however as far as I was concerned this was something of a misnomer because to me it always seemed to be a hive of activity. It was a thriving newsagency owned by an English man called Newson who had a waxed military style moustache, an extremely nasal voice and usually wore a cap. He was very businesslike but pleasant and he and his English wife with her shingled grey hair always seemed to be lugging huge parcels of newspapers around any time I called. As a schoolboy I used to purchase my copy of “Magnet” there each week and continued to do so until it went out of print at the beginning of the Second World War. The premises were completely destroyed in the Blitz of 1941.” The Belfast and County Down Railway operated for ninety nine years and eleven months with the last train passing over it in 1950 and it was decided in 1957 that the Holywood Arches were to be demolished. The decks from the two bridges were eventually removed although they remained visible for many years and caused a traffic bottleneck, particularly on the Upper Newtownards Road as they protruded outwards and today no visible trace of the Holywood Arches remains.

How many people using public transport today say to the driver “Let me off at the Holywood Arches please” know why the area is known

by that name as today there isn’t an arch in sight!

“Just Let Me Off At The Arches Please...”

However, as time progresses this level of immunity declines leaving them open to a range of infectious diseases. Vaccinations are therefore required to stimulate the young animal’s immune system to produce its own protective antibodies against these condi-tions. Veterinary surgeons generally recom-mend beginning a course of vaccinations at approximately 8 weeks of age with a second injection being administered 2-4 weeks later giving your pet protection for its first year of life. Regular booster vaccinations will also be required during your pet’s life.Worming and Flea controlAt any one time it is estimated that 1 in 10 dogs and 1 in 5 cats have a flea infestation. Under ideal conditions 1 flea will develop into 1,000 in 21 days. There are now a wide range of products available that have a pro-longed action, are safe for the pet, safe for the environment and safe for in contact children. Shampoos only treat at the time, as soon as they are rinsed off they stop working. But a new generation of ‘spot on’ preparations have a wide parasite control with a prolonged action – many of them not only control fleas, but mites, lice, roundworms, hookworms and lungworms. With regards to worms, regular treatment is the only way to stay parasite free. Worms can be controlled by following a few simple rules: worm your pet regularly, clean up faeces and try to prevent your dog from eating slugs and snails.InsuranceMany people ask if it’s worth getting their animal insured. The simple answer is YES. Every year, on average, 1 in 3 animals suffers illness or injury, so unexpected veterinary bills can arise at any time. The ability of every veterinary surgeon to offer the best care and manage long term or life threaten-

Preparing for a new Pet at homeTom Fitzsimons of local veterinary clinic Garden Lodge gives us his advice on welcoming a new furry friend safely into your home.

ing ailments has improved greatly. It can be costly and we frequently see clients agonising regarding their pets treatment. With ap-propriate insurance you can ensure that your pet can get the best of care without heart wrenching financial decisions becoming a limiting factor. NeuteringSome owners think that we vets are obsessed with their animal’s nether regions, but there’s a good reason for this. Having your animal neutered will remove their ability to breed and add to the already burgeoning ani-mal population here. No matter how homely your cuddly pet may be, when they detect a female, nature takes over. Secondly, and in my opinion, most importantly having your male or female pet neutered greatly reduces the likelihood of serious or life threatening illnesses such as testicular or ovarian cancer from developing. MicrochippingHaving your animal microchipped will at least mean that they have a reliable and permanent means of identification that is readily readable and instantly accessible to all veterinary professionals. The proce-dure involves implanting a tiny microchip about the size of a grain of rice between the shoulder blades. The microchip carries a 15 digit code, which is unique to your animal. This code, together with information about your pet and your contact details are stored on a central database. This means that should your pet go missing, when found, the chip can be read easily using a scanner and you can be speedily reunited.

Rose Harissa Pork with Quinoa & Dates

Take One PotThe beauty of cooking in one pot is that it involves minimal fuss. All the recipes in Georgina Fuggle’s book can be created in just one single vessel – the roasting tin, the casserole, the deep frying pan and the baking dish, so no specialist equipment is required. For when you don’t want to spend too much time in the kitchen, you can make a speedy suppers, slow-cooked meals, vegetarian friendly dishes or a variety of side dishes. The recipes cater to cooks of all levels of expertise and include tips on how to get ahead, recipe variations and serving ideas. Whether you’re cooking a family meal or a quick supper, Take One Pot delivers satisfying and comforting food.

Simple recipes to cook in one pot.

Add the quinoa, dates, tomatoes and just 300ml of the hot stock. Give everything a good muddle, season well and simmer for 10 minutes. Stir through the remaining stock and half the parsley once the 10 minutes are up.Place the pork fillet on top of your quinoa mixture and place the pot in the oven for 20 minutes, until the quinoa is plump and the pork is cooked through. Remove from the oven and allow the dish to sit for 5–7 minutes so the pork can rest and ‘come to’.Sprinkle generously with the rest of the parsley, and serve the pork sliced on a bed of quinoa.

‘Years ago I spent a month winding around the railways of Spain, stopping where the guidebooks spoke of traditional plazas, museums and fine Spanish cuisine.

‘There’s a fine line between cooking pork fillet too much (when the meat will be as dry as a bone) or too little, when it’ll be too pink – and too pink pork isn’t good for anybody. I’ve cooked this recipe, in which the pork fillet is covered and nestled among quinoa, stock and juicy dates, many times so there should be no danger of tough meat. It’s a beautiful recipe, a slightly different take on a tagine. My husband said it was ‘damn good’, which I think is a thumbs up.’

1 tablespoon olive oil300–400g pork tenderloin1 medium onion, peeled and roughly chopped1½ tbsp rose harissa paste100g quinoa80g dried dates, pitted and roughly chopped3 large, ripe tomatoes chopped400ml hot chicken stock4 tablespoons roughly chopped flat-leaf parsleySea salt and freshly ground black pepperServes 2-3

Preheat the oven to 180°C/gas mark 4.Heat the oil in the base of a shallow, ovenproof pot over a high heat. Season your meat and, using tongs, sear the pork on all sides until beautifully golden. Remove from the pot and set aside to rest.Add a drop more oil to the pot if needed and fry the onion for a few minutes until translucent, then stir through the harissa.

Spanish Chicken with Chorizo & Garlic

My memory holds Seville in particular esteem. It must have been to do with the heavily laden orange trees and a supper eaten while watching university students pour out of the library at the most ungodly of hours. I remember eating something similar to this dish and have tried to re-create it, as closely as scribbled notes written by candlelight will allow. Ole!’

1 tablespoon olive oil6 large free-range chicken thighs, with bones and skin200g chorizo, cut 1–2cm chunks1 onion cut into thin wedges2 medium leeks, chopped into 2–3cm pieces1 teaspoon Spanish smoked paprika (unsmoked is fine, too)A pinch of dried saffron2 whole heads of garlic, cut in half horizontally unpeeled4 sprigs of thyme200ml sweet white wine250ml hot chicken stock2 x 400g tins organic butter beans, drained and rinsedSea salt and ground black pepperServes 6

Spanish Chicken with Chorizo & Garlic

Heat the olive oil in a large flameproof casserole until smoking hot. Fry the chicken legs on both sides until they are crisp and golden, then transfer to a waiting plate. Keep the heat on high and add the chorizo chunks to the pot. Fry for a minute on each side and remove from the casserole with a slotted spoon so as to leave their oil behind.Add the onion and leeks and fry in the delicious chorizo oil. Reduce the heat, cover and soften the vegetables for 3–4 minutes, but check that they don’t catch on the bottom of the pot.Add the smoked paprika, saffron, garlic halves, thyme, wine and chicken stock to the pot along with the chicken and chorizo. Season well, cover and simmer over a medium heat for 30 minutes. Let the pot do the work; yours is almost done.Stir in the butter beans and cook for a further 10 minutes before serving with a baked potato or two.

‘Fish pie is the edible equivalent of a robust bear hug but oh my, making the traditional dish is a little more time consuming. However, this one-pot fish pie has had a makeover. It relies on a few minor tweaks and tricks making it absolutely scrumptious, ready within the hour and with minimal washing up.’

chunks2 tablespoons plain flour1 red onion, peeled and very finely sliced2 carrots (approx. 200g), peeled and coarsely grated150g frozen peas (no need to pre-cook them)500ml good-quality, shop-bought white sauce, or homemade if you have the timeA good clump of dill, roughly choppedGrated zest of 1 lemon150g filo pastry50g butter, meltedSea salt and freshly ground black pepper

Preheat the oven to 180°C/gas mark 4. Lightly grease a 1.5–2-litre ovenproof dish with a little olive oil.Put the fish chunks in a large bowl and sprinkle over the plain flour. Gently toss so each piece of fish is lightly coated. Add the vegetables, white sauce, dill (reserving a little for the garnish) and lemon zest. Gently combine so that the sauce is spread

throughout the mixture. Season and transfer to the ovenproof dish.Brush one side of the filo pastry sheets with butter and then scrunch up, leaving the buttered side facing upwards. Place on top of the fish mixture. There is no need to be too neat; the more abstract, the more beautiful, in my opinion. Give a good twist of black pepper, a sprinkling of salt and a little dusting of the reserved dill.Bake in the oven for 30–35 minutes, until the pastry is golden on top and the sauce is bubbling below. Remove from the oven and allow the fish to continue cooking for 5 minutes or so before serving.

The reserve is located just 10 minutes from Belfast city centre in the heart of the industrial zone of

Belfast Harbour Estate. In 1912, the Titanic sailed down Victoria Channel in front of the reserve as it left Belfast on its fatal voyage. Ships, planes and cranes frame the skyline, but the reserve itself is a haven for wildlife, and is an internationally important site for birds. The RSPB manage the lagoon to create ideal conditions for wading birds and ducks in autumn and winter, and for breeding terns in summer. The Window on Wildlife offers stunning views across the lagoon and unparalleled close-up views of wild birds like godwits, terns, redshank, and lapwing. Two outdoor hides are always open, offering alternative views across the lagoon. RSPB staff and volunteers can answer any questions you have or help you use the binoculars and telescopes provided by RSPB. There are also lots of special events for families and children throughout the year and two Konik ponies have just arrived at the reserve to help out with a spot of gardening! This breed has its origins in Poland and has been selected due to their hardy and robust form and their specialist adaptations to feeding on wetland vegetation. These horses are used on many other conservation projects throughout the UK including other RSPB reserves such as Loch of Strathbeg. It is hoped their grazing of vegetation will prohibit the regeneration of willow scrub and help maintain the habitat to suit nesting and feeding waders. Chris Sturgeon RSPB Belfast Harbour Warden said, ‘We want to make the reserve an even better place for people and get the word out about what a special place this is. We hope that over the next year we can improve the facilities for visitors, making Belfast’s Window on Wildlife a place we can all be proud of.’

The fantastic RSPB Belfast Harbour Reserve is the only site in Northern Ireland where visitors can see unparalleled views of wild, globally threatened birds thriving in the midst of heavy industry. And it’s right on your doorstep.

Where the Wild Things Are

• See large numbers of wildfowl that come to the reserve to spend the winter: teals, wigeons and shelducks.• Look out for smaller birds like siskins and lesser redpolls in the trees.• Stay snug and warm in the observation room while you watch the action on the lagoon.

‘I have worked in numerous coffee shops,’ says Neal. ‘I think the thing I like the most about this line of work is getting to talk to customers all day and of course making different types of coffee. I had been thinking about opening a coffee house for about four years but wanted to gain enough experience before I took the big leap. As both my Dad and Granda John were into antiques, I wanted to open somewhere with a vintage style and when I came across the coffee house I just knew it would be the perfect setting for it.’The house in question is an old victorian property and the antiques that have been placed around the interior have added to the unique, vintage look it already had. It took two months of hard work, with lots of kind help from friends and various family members but eventually Neal got it open. So with the premises and interior sorted, next came the all important menus. ‘I decided early on with regards to the food that I wanted to keep it simple but do it with good quality produce. My chef Brenda makes a homemade special and soup every morning. Some of her best so far have been cottage pie, pork and leek sausages with homemade champ and chicken and broccoli bake. Her soups are to die for as well. Our most popular item has definitely been our Ulster fry, all the produce is of the best quality and is done in such a way so not to be greasy. We also have fresh scones, traybakes, cakes and desserts if you want to treat yourself! We use Robert Roberts coffee and they really are a great company to work with. The coffee is great and the way they have trained me and the staff has given me lots of new ideas and we will be starting to have lots more speciality coffees in the coming months.’

Neal Lindores left school after his GCSE’s. His first job working with a coffee machine was in a playtime activity cafe and he got such a passion for it, it led him on a journey to own his own place, The Linodores Coffee House.

‘I studied art at the University of Ulster,’ says Justin. After leaving University I first started selling my paintings with Charles Gilmore Fine Art when he had the gallery in Holywood. My style is known as ‘Synthesism’ or in other words taking a part real, part imaginative view on my subject matter. From French themed figurative work to local landscapes, rural life and town scenes, people and places all develop different characteristics and it is often a romantic ideal or a rural scene of a lifestyle from yesteryear that features in my paintings, soft and vibrant in colour and content.’ Evidently Justin’s extraordinary painting style requires an incredible amount of patience and concentration. The technique involves underlaying colours on canvas until the final smooth and aesthetically fine paint finish can be achieved. Crucially, Justin only uses the finest quality oil paints which is vital to ensure the colours will remain beautiful and durable for many years. Justin spent several years living and working in the rural West of Ireland in a small town called Clifden. But now he’s back living back in Northern Ireland and inspiration comes from daily life, as he explains. ‘Local scenes often capture my imagination, normally I look for a scene that will form a good composition and my ‘Bushmills’ painting is a good example of recent work. I used old photographs and a visit with my own camera to create the actual scene. The countless hours I spent in the university life drawing classes helped me create all the many different characters that exist in my paintings.’ It’s these scenes of rural life and rhythmical, architectural landscapes inspired by his time in Connemara and further afield that have cemented Justin’s place as one of the most unique artists to emerge from Northern Ireland for many years. Now Justin has issued fantastic reproduction prints of his work. Having just gone on sale a few weeks ago, it is a unique opportunity to invest into an equally unique and talented artist whose intricate and time consuming work can now be seen in all its glory. Such is the clarity and richness of colour, Justin’s work will confound and inspire the senses in equal measure.

Justin Vaughan’s distinctive style of paintings are easily recognisable. His work has been exhibited mainly in Belfast but also in private collections around the globe. Now he has issued wonderful, high quality reproduction prints.

‘I was always good with my hands,’ says Sam. ‘I was brought up on a farm so we had to learn how to repair everything from an early age. We would do our own welding, make our own things. If something was broken and you couldn’t get it, you made it. Eventually I had the chance to manage a shop like this first of all. I had to get some training for that initially for the vacuum cleaners but I picked it up straight away and have always enjoyed it. I’m a specialist in vacuums and it’s mostly a repair service. Anything that’s not going, I can fix it! I can get through six vacuums a day sometimes and I can make new hoses for you too if it’s broken or split. I also offer a washing machine, tumble dryer and cooker repair service.’ With modern retail the way it is, it is very easy for certain generations to be squeezed out, but it’s shops like AMC that the local community has relied on and continue to rely on. ‘The older people in the area need a shop like this handy to them and it’s at a reasonable price. For the older people it’s a great service. And they’re very good to me, they’re always leaving buns in for me. I don’t even need a lunch! I also sell light bulbs of all types, electrical gadgets, some hardware, tools, paintbrushes, DIY stuff. If I don’t have it Ill try and get it for you. I have the same clientele going back over the 20 years but new ones come in all the time. Its all word of mouth.’ Sam has certainly seen some changes over the years and business has changed considerably, as he explains. ‘I’ve seen the road out there change so much. Business is only about a third of what it was 20 years ago. The younger people especially might not come in as much because they just throw broken things in the bin and buy a new one. They wouldn’t think about getting something repaired. It’s when they get married and have a family and that then they start coming in for repairs and it’s starts from there.’ Speed is very important for Sam’s work and he always explains in detail to the customer what he’s doing and why. ‘Sometimes I fix while you wait so people can see exactly what I’m doing. You don’t get that in other shops, some don’t like you seeing what they’re doing. It’s good to be honest and upfront. Some people come in and just have a yarn, tell me their problems. The older people can relate to me because I used to drive the trolley buses many years ago and someone once even brought a photo of one of the old buses for me. I have a good rapport with people. In supermarkets and big stores you don’t get that. It’s in and out and that’s it, no time for a chat. But I’d like to wish all my customers a very Happy New Year and I hope to see you all along with some new faces in 2013.’
