1924 is a mixed milk blue that is made in the tradition of Roquefort but outside of the PDO that was established in 1925. This full flavored blue is made with a blend of the best sheep and cow’s milk the cheesemaker can get his hands on, and carefully aged to develop a dense, buttery paste with intense blue veining. An homage to Grand Pére, 1924 helps us discover a traditional recipe that has been appreciated for generations.

Agour’s Irati DairyPieo Etxeleku is a second generation Basque cheesemaker with deep roots in the Basque Country. Striking a balance between a strong respect for tradition and his almost endless energy for innovation, Peio and his team at Agour produce world class Ossau Iraty as well as a range of original cheeses. The Irati Dairy is their newest cheese making facility and it's a great example of the combination of tradition and innovation that drives the folks at Agour.

Perched on the edge of the Pyrenees, overlooking the Ossau Valley, this small dairy combines ideas that are both old fashioned and cutting edge. The remote location was selected to be near a group of approximately 20 small farmers who live and work in the mountains, as their families have for generations. Using small vats and production techniques largely powered by human hands, the small team of Agour cheesemakers have some of the best raw materials and innovative tools at their disposal.

Arpea is one of the first new cheeses to come out of the Irati Dairy. A small format cheese made with 100% sheep’s milk and a washed rind, the wheels are aged at the dairy for 2 weeks before being packed to travel. The paste is smooth and creamy with small eyes throughout. Lactic and vegetal when young, Arpea develops a nutty complexity as it ages.
