Blast chiller / freezers have becomean essential feature of the modernprofessional kitchen. By reducing
the temperature of food quickly, theyoffer those responsible for organi-zing work in the kitchen indispen-sable advantages in terms ofhygiene, product flavour andappearance, menu size and theplanning and rationalization ofoperations.
Hygiene

Soft chilling
Suitable for joints having less than20 mm thickness or delicate foods.During thes cycle the chamber airtemperature is not going below 0Cand remains at this level until thetemperature at the core reaches+3C. In case the product do notallow the use of the core probe,
then the chilling cycle must use thetime mode (max 90). At the end ofthe cycle, the program starts thestorage phase and the appliancewill run as a normal refrigerator.
Hard chilling
Suitable for joints having more than20 mm thickness or for dense pro-ducts. In the first phase of the cycle,the refrigerant group runs at 100%.As soon as the chamber air-temperature reaches -15/-25C itremains at this level until thetemperature at the core reachesabout +10C, just to avoid problemsof food surface freezing. In thesecond phase of the cycle, thechamber air-temperature isincreased up to about +0C until the
core temperature reaches +3C.At the end of the cycle the programstarts the storage phase and theappliance will run as a normalrefrigerator.

The insulation is provided by meansof CFC-free high density expandedpolyurethane. The 20 GN 2/1chillers are provided with panels
