INGREDIENTS

• 1kg Macphie Ginger Sensation Cake Mix (or any of the Sensation Mixes)

• 350g Water • 270g Oil

• 120g Cranberries • 80g Orange Peel

• Melted Butter • Sweet Snow®

METHODAdd Ginger Sensation to a mixer and slowly add water and oil on 1st speed and mix for 1 minute • Add cranberries • Scrape down and mix for a further 2 minutes on 2nd speed • Reduce to 1st speed and mix for a final minute • Deposit batter into 18"x 30" tray and bake at 180ºC (350ºF) for 30-35 minutes. • Leave to cool then cut into required sizes and dip into melted butter, drain off excess and roll in Sweet Snow.®

CHOCOLATE ORANGE SLICES

INGREDIENTS

• 1kg Chocolate Orange Sensation Mix • 435g Water

• 250g Oil • 5th Avenue® Chocolate Icing

METHODAdd Chocolate Orange Sensation Mix to a mixer and slowly add water and oil on 1st speed and mix for 1 minute • Scrape down and mix for a further 2 minutes on 2nd speed • Reduce to 1st speed and mix for a final minute • Deposit batter into 18"x 30" tray and bake at 180ºC (350ºF) for 40 minutes • Leave to cool, then decorate with 5th Avenue® Chocolate Icing • Cut into squares and serve.

LEMON & MINCEMEAT TARTS

INGREDIENTS

• 1kg Macphie Shortbread Mix • 360g Softened Butter

• 100g Mincemeat • 1kg Lemon Sensation Cake Mix

• 5th Avenue® Lemon Icing • Sweet Snow®

• Edible Decorations

METHODTo make Shortbread base. Place Macphie Shortbread Mix and softened butter into a mixer • Mix on slow speed until a stiff dough is formed • Pin out and line a 6" round deep foil.To make Lemon Sensation. Place 1kg Lemon Sensations Mix, 350g of water and 270g of oil on slow speed and mix for 1 minute • Scrape down and mix for a further 2 minutes on middle speed • Reduce to slow speed and mix for a final minute • Deposit 100g of Lemon Sensation batter on top of mincemeat • Bake at 185ºC (370ºF) for 35 minutes • When cool, flood with 5th Avenue® Lemon Icing and dust with Sweet Snow® • Finish with festive decorations.

TOFFEE APPLE & CINNAMON SLICES

INGREDIENTS

• 1kg Apple & Cinnamon Sensation Cake Mix

• 350g Water • 270g Oil

• 100g Toffee Pieces • 5th Avenue® Caramel Icing

• Sugar Nibs

METHODAdd Apple & Cinnamon Sensation Mix to a mixer and slowly add water and oil on 1st speed and mix for 1 minute • Add toffee pieces • Scrape down and mix for a further 2 minutes on 2nd speed • Reduce to 1st speed and mix for a final minute • Deposit batter into 18" x 30" tray and bake at 180ºC (350ºF) for 30-35 minutes • Leave to cool, then decorate with 5th Avenue® Caramel Icing and sugar nibs • Cut into slices and serve.

Christmas Cake PopsIngredients

MethodBeat the and glucose syrup together on 3rd speed for 5-8 minutes or until aerated and soft texture. Add the Crispy pieces and Satin Crème Cake Chocolate crumb, blend together on 1st speed until mix comes together. Roll mix into a ball and push on to a stick, then chill or blast freeze. Melt the cake pop coating and decorate as required.

MethodUsing a planetary mixer and beater add 2/3 water, egg and oil to powder. Mix for 1 min on

temperature 180°C/360°F. Baking time 25 – 45 min depending on size. Top with cream cheese and decorate with red smartie for the nose and chopped curly wurly for antlers.

MethodPipe mincemeat in to pastry shell, and pipe Satin Crème Cake Plain Mix on top of Mincemeat. Bake at 210ºc for 15 to 25 mins depending on unit size. When cool dust with Icing Sugar.

MethodUsing a planetary mixer and beater, add butter and water, mix to a dough on slow speed. Scale in to 34g balls. Place cookie balls on a 18x30 tray lined with silicone 3x6. Oven temperature 185°C with low bottom heat. Baking time 12 – 15 minutes. When

MethodUsing a planetary mixer, add eggs to powder & spice. Mix for 2 mins on slow speed & 3 mins medium speed. Add all liquids over 2 mins on slow speed, scrape down. Mix for 3 mins on slow speed. Add Mixed Fruits on slow speed till mixed in. Scale into 7 – 9 inch lined tins. Baking time 70-90 minutes for 7 inch cake.
