IT ALL BEGAN WITH A TRUEPASSION...Ever since late 2010, the founders of Sababay Winery had beenpartnering with local Balinese farmers to introduce international viticulturestandards, thereby improving the qualities of grapes for winemaking,as well as increasing family income for struggling local farmers. OurSababay winery is located in Gianyar, within close proximity of thevineyards and utilizes the most enhanced winemaking techniques andorganic processes to transform Bali’s traditional grapes into naturallydelicious and well-balanced red, rose and white wines.

Sababay quality wines are produced in a tropical climate near theequator, allowing the grapes to grow all year round, compared to anannual harvest in the world's more temperate climates. Thus, “OldWorld” wines from Europe and “New World” wines from the Americas,Australia and South Africa, are now making room for the “New Latitude”wines, like Sababay Wines, from Indonesia.

Our winery meticulously selects its fruits from the best vineyards inthe renowned grape farming area of Gerogak-Seririt-Banjar on thenorth coast of Bali. Dry sunny weather, rich latero-volcanic soil and anabundance of fresh water cascading down from the volcanoes aremore than ideal conditions for harvesting grapes in Bali and also afruitful alternative to farmers north of the island. We have also establisheda research station high on the slopes of Mount Agung to test grapesgrowing in the New Latitude at such a high altitude.

Strangely to me, Khaima is the kind of name that willalways ring a bell. It simply translates to “Tent” inMoroccan. Best of Bali has covered almost everythingfrom French, Italian all the way to Oriental and Indonesian.We have however, yet to have an air of Morocco. Khaimaprovided the perfect opportunity for it. Situated in JalanOberoi, right in the heart of Seminyak, the restaurantitself has been around for almost 11 years. The pastyear however, Khaima has seen changes to it’s menu,and architecture, bringing a whole new world into thescene. Prior to its recent changes, Khaima caters purelyMoroccan cuisines. With the overwhelming urban andvintage hype enveloping Seminyak, owner DrissTabakkalt knows how important it is to keep up andfollow suit with the rest of Khaima’s competitors. Andrevamped they were. For a year now, this restauranthas boasted a new menu that includes Asian, Indonesian,Western and yet still staying true to it’s Moroccan roots.The concept is to have each and everyone passing byto have their own opinion of the chic eatery. An intriguingstructure that wows it’s beholders.

Frankly, it would rather be absurd for one to not bedrawn to Khaima. Upon walking in, you get the ideathat the place is spacious, yet bustling with high-enddiners. The second notion that comes into my mind, isthat almost everything in Khaima is open. It’s Kitchenis open and let’s not forget it’s highly distinctive structurewhich is actually, contrary to popular beliefs, made ofwood; Kayu Glam to be specific. The structure has been

designed such that diners are able to see the onlookerswalking down the busy street but the not the other wayaround. Rows of bookshelves stood tall by the side ofthe dining room, complimenting the sophisticated moodestablished in Khaima. Books reminiscent of AncientIndonesia fill the vintage shelves. It’s full Moroccanconcept prior to this, is understandably depleted to alarge extent, but you can still feel an air of orient meetinga modern, urban approach. All in all, I was heavilycounting on Khaima not being one of those “Style OverSubstance” restaurant.

Thankfully the food was anything but a letdown. Wehad the Chicken Pastilla for starters. I had no idea thedish was going to have several flavours meshed intoone. I couldn’t quite discern the sweetness of the icingat first, as I dug straight into the meat. The soft andpulpy taste of the meat is a complement to the perfectlybaked pastry. By the time the icing finally came around,I was overall pleased to say the least. It was a nice twistto what is an already stunning delivery. Then came themain course, a hefty Mixed Mechoui Couscous. Forthose of you unfamiliar with this North African dish,Couscous is a Semolina, usually served with meat andvegetables. The portion speaks for itself, making surethat diners are utterly satisfied. As mentioned beforeyour Couscous is served alongside some downrighttantalizing skewers of chicken, lamb, keft and merguez.The skewers of meat, gave a nice addition to thecouscous and the vegetables are an important part of

the whole meal, as it gives the significant moist neededin the within the couscous. For dessert, again we hadpastilla, but this time, solely sweet. The icing on top hitall the right notes again, utilizing almond as one of it’score ingredients. As I scour through Khaima’s menu, Icouldn’t help but notice all the North-African food I’vealways wanted to try. There are things like Gazelle horns,an almond paste-filled pastry, the Albondigas and theMini Pita Pockets. If you are less into Moroccan andmore into something closer to the island, there are ahuge and I mean massive collection of Asian andIndonesian cuisines reflected in the menu. The SalmonTerriyaki and Chicken Betutu are only several of theaforementioned items.

Excellent food, strategic location, sizzling atmosphereand to top it all off, they all come at stunningly affordableprices. When passing through Oberoi, it’s a sin not tonotice this chic creation. Every Friday and Saturdaynight, Khaima entertains you it’s guests with highlyimpressive belly dancers, making your Arabic experiencecomplete. This restaurant will momentarily take youaway from Bali, but at the same time, still feel right athome, in the island. Khaima is open for both lunch anddinner from 11 am up to 1 am.

WEDDING CEREMONYConrad Bali offers four options for wedding venues. At the center of exchanging vows is Infinity, a beachfront weddingchapel and one of Bali’s most iconic places for matrimonial services. Infinity is architecturally stunning with a ceilingheight of 12 meters and floor-to-ceiling ocean-facing glass wall with seating for up to 60 guests.

Three other wedding venues offer unique Balinese-style pavilions ideal for ceremonies. The Water Garden afloat in alotus pond, provides a tranquil setting for up to 150 guests, Floating Garden seats up to 140 guests and the Beach“Bale” offers a traditional open-sided gazebo. Wedding packages include music, fresh flower decoration and bridalbouquet, signature wedding toast, and complimentary two nights stay for the couple.

WEDDING CELEBRATIONFor glamorous affairs of up to 240 guests, the resort’s Ballroom, which opens to a garden courtyard and supportedby several function rooms, is uncompromised in sophistication. Combining its outdoor Floating Garden, Infinity Gardenand Ocean Garden, the property supports the desires of discerning couples, from modest to lavish receptions.

The cornerstone of successful wedding receptions is the variety and taste of the cuisine.
