This is Canada’s first sustainable brewery. It is a locally owned and operated company in British Columbia. They draw power from a 110 ft wind turbine for the most advanced, energy efficient brewing process available. Water conservation is very important to them and they use far less than a normal brewery.

Abbey Beer - produced by commercial breweries who take advantage of the positive associations of the Trappist breweries by imitating the styles and names of Trappist beers, and either brew under l icense from an existing abbey, or brand their beers with the name of an abbey ruin or some other religious connection, such as a local saint.

Ale - uses warm fermentation and quickly ferments resulting in a sweet, full bodied and fruity taste. Esters can be produced during the brewing process creating a complex flavor profile often resembling those of cloves, apple, pear, pineapple, grass, hay, banana, plum or prune.

Blonde - also called Golden ales range in color from that of straw to golden blonde. They are clear, crisp and dry, with low to medium bitterness and aroma from hops, and some sweetness from malt. Fruitiness from esters may be perceived but do not dominate the flavor or aroma. A lighter body from higher carbonation may be noticed.

Cider - a fermented beverage made from apple juice.

India Pale Ale - IPA’s were originally brewed by adding extra hops to the brewing process. Since hops acted as a preservative they helped keep beer fresh on the long voyages from Britain to India.

Lager - is a type of beer that is brewed and stored at low temperatures, with the brewing process taking longer than ales.

Lambic - very distinct style of beer brewed only in the Pajottenland region of Belgium. Today it is mainly consumed after re-fermentation resulting in Geuze or Kriek. Fermentation of fruit is also common with Lambic style.

Fruit Beer - fruits have been used as an adjunct or flavoring for centuries. Modern breweries may add only flavored extracts to the finished product, rather than actually fermenting the fruit.

Heller Bock - The Heller Bock is primarily a malty beer from the German brewing tradition with l ittle hop character - neither bitter nor aromatic - though the style typically has a little more hops than the standard Bock. The color is golden to l ight brown or amber. They should normally pour with a substantial white head.

Pi lsner - a type of Lager which takes its name from the city of Pilsen, in the Czech Republic where it was developed and the original Pilsner Urquell is produced today.

Saison - Fruity esters dominate the aroma. Clarity is good with a large foamy head on top. The addition of several spices and herbs create a complex fruity or citrusy flavor. Light to medium bodied with very high carbonation. Alcohol level is medium to high.

Stout - stout is a dark beer made using roasted malt or barely, hops, water and yeast. Stouts were traditionally the generic term for the strongest or stoutest porters, typically 7%-8%, produced by a brewery.

Trappist Beer - is a beer brewed under the control of the Trappist Monks. There are only 7 trappist brewery’s in the world (6 in Belgium, 1 in the Netherlands). Only these 7 breweries are authorized to brand their beers with the Authentic Trappist Product logo.

Vienna Lager - Your typical macrobrewed Dark Lager, caramelly notes, these beers wil l not typically resemble other dark lager styles so much as they do the lighter styles, due to low amounts of hops, malt and body.

Weisse/Hef feweisse - refers to several different types of wheat beer. The term “Heffeweizen” refers to wheat beer in its traditional, unfiltered form.

Wheat Beer - is brewed with a large proportion of wheat. Typically they are top fermented ales. Weisse is direct translation of “wheat”, while Wit means white, also mainly brewed with wheat.
