Beef is what’s for dinner for theEvanson family of Watervilleby David M. Johnson

“Eat Beef, the West wasn’twon on salad,” best sumsup the feelings of Watervillefarmer Steve Evanson whenit comes to his beef cows andbeef operation. This bumpersticker is proudly displayed onone of Steve’s vehicles and isa conviction held dearly by him.

Steve believes he isproducing a healthy productand is a strong proponentto shop and do businesslocally so other local farmers, especially beef farmers, continue to survive and ourishin today’s economy. But thisbeef producer was not alwaysin beef, as he started out withraising hogs and milking cows.

“I started farming in 1980with my father-in-law, GeorgeWood, rst as a hired hand, milking cows and assistingwith a farrow to nishing hogoperation,” re ected Steveon his past experience with

beginning farming. After a fewyears, this now 57-year-oldfarmer and his wife, Sheryl, bought on halves with thelivestock and from his father-in-law purchased machinery.Evanson gradually grew hisoperation and by 2001 wasmilking 140 Holstein cows in a58-stanchion barn.

Deeply ensconced in milking, what brought about the switchto beef? “It was either buildinga parlor and free stall barn orget out of dairy completely,”answered Steve. So, decidingon not expanding the dairyoperation, the move to raisingbeef cattle was almost a naturalchange in direction. ThisAllamakee County farmer wasalways around cattle and heknew he wanted to remain withcattle; it just would not be dairycows. “Watching newbornseach spring is a great feelingto have on the farm,” observedSteve.

Chuck, a 1977 Postvillegraduate, married Kim(Schultz), a 1978 graduate, in1983. Chuck had attended aspecial course for farm kids atISU and Kim went to Kirkwoodfor oraculture. She owned the

The Deerings bought somebeef cows the same year theywere married. Some pasturecame up for rent, and Chuckdecided to branch out on hisown while still working for hisdad and cousin on their farm.He and Kim bought the farmwhere Tanner lives in the1990s.

success of their herd has been that they look for maternal traitsrather than terminal traits within their breeding selection process.

In addition to their family dairy farming operation, the Steve andPaula Enyart family of Postville also runs a custom eld work

business that not only helps out area farmers but also aids thefamily nances. That custom work started nearly two decades

ago with custom silage bagging, and has expanded over the past17 years to also include forage harvesting, combining, applyinganhydrous and other such tasks, such as the custom mowing

pictured above. The custom work business is mainly handled bySteve and his son, Alex, with other sons, Adam and Avery, alongwith wife and mother, Paula, helping bolster the dairy operation

to make that custom line of eld work possible.

less amount of time to satisfyeach individual customer’sfarming operation needs andwants.

The Enyarts’ custombusiness has observed thatmost farmers understandthe need to be a little exiblewhen the dairy farm calls forattention, but that does notaffect the quality of servicethat is provided. This custombusiness did not start overnight, but has been in business for 17years. It started with customsilage bagging that expandedinto not only bagging but forageharvesting, combining andapplying anhydrous for the co-op in Postville. Due to chargingby the hour, the Enyarts do notreally know how many acresthey chop from year to yearbut they do have some idea

how many acres they take careof with their other businessresponsibilities. They custommow close to 2,000 acres ofhay and applied about 1,800acres of anhydrous just lastyear. These three areas havebeen the biggest need for their

services.Between the two businesses

the bottom line has not suffered. The year-to-year involvementhas brought the experience, wisdom and discipline to makethe right monetary decisionsthat bring about the balance andaffordability that each businessdesires. Sometimes that newequipment or improvementmight have to wait, but thesefarmers feel that their focusmust be on the entire operationand not just segments if a pro tis to be made at the end of theyear. There is the desire toown more land but due to theinstability of commodity prices -something farmers really haveno control over - it is dif cult toexpand in acres and to makethe needed renovations orpurchase of newer equipment.

Steve has always beeninvolved in farming, and with thenumber of people involved herealizes that the managementof two diverse businessesis necessary if he wants tocontinue that involvement. Heand his family acknowledge

ng how things will workown the road as thingsss, the Enyarts know

you give it a chancethings usually happen.

They recommend farming asan occupation and career, eventhough they believe a lot ofpatience and hard work is in theequation to make that careersuccessful; they feel it is worthit when done right.

There were times that Steveharbored doubts, but due to his

lifelong involvement with hiscattle and land, he has cometo the realization that “thereis a point in your life that it allcomes naturally” and it is theright thing to do. For this farmfamily, it appears that theirchoice in life has been the rightdecision.

The dairy cattle on the Enyart familyfarm in rural Postville are fed twicea day. All of the cattle are fed with a

Patz vertical TMR mixer.

is like running a sportsfranchise. You have differentlevels of minor leagues (babycalves, unbred heifers). Thenyou get the bred cows atabout 13 months if things goright. Finally, at 22-24 months, the cow hits the big leagues(milking). There are differentobstacles along the way, butthen you get to see all the workfrom that point start to paysome bills,” he said.

ABOUT THEIR HERD

Adam milks with his father,Keith, and his uncle, Leo, whohave been milking their entirelives. They have a HerringboneDouble 10 parlor by Germania. The cows are milked from theside, rather than from betweentheir back legs. There are alsoarm take-offs, so the units are

supported during milking. The herd of 150 Jerseys ismilked twice a day, and theirmilk is sold to Organic Valley,a farmer-owned cooperativebased in La Farge, WI.

The Schulte familytransitioned to organic in 1996

and the barn was retroftted

from tie stalls to the parlor in1997. The original barn, builtin 1981, had 64 tie stalls andutilized Surge buckets and apipeline.

The milkers are dried up 55days before they calve.
