Turkey RundelGaelic for "by a clear running stream" this dish exemplifies a brilliant combination of ingredients, infusing scallops with turkey in a light and succulent dish. We wrapped the stuffed turkey in chicken skins, as we could easily obtain them from any butcher shop by letting them know in advance how many we needed. They impart a rich juicy flavour, otherwise lacking in the lean turkey escalope and give it a finished look.

6 - 5 oz turkey escalopesChicken skins to wrap

15 spinach leaves

1/2 lb bay scallops2 egg whites1/2 tsp salt

1/4 tsp pepper1-2 oz brandy or wine

Salt and pepper to tasteCranberries for garnish

In a blender put the bay scallops, egg whites and salt and blend until smooth. Place the chicken skins fat side up on a clean cutting board. Gently flatten the turkey escalopes, about 5 oz each, between two sheets of saran wrap using the flat side of a knife. Place on top of the chicken skins. Lightly season the turkey with a little salt and pepper. Run fresh spinach leaves under hot water until soft and pliable. Lay these on top of the turkey escalope. Spoon a layer of the scallop mousse on top of the spinach and roll up. Bake at 350 degrees F seam side down for about 20-30 minutes and the skin is golden brown. Deglaze the pan with a little brandy or wine and allow to reduce until it reaches sauce consistency. Adjust the seasoning with a little salt and pepper. Add a little sugar to a sautee pan and add the cranberries. Cook until they are soft but still hold their shape. Add to the sauce.

WOW! Not since 1934 has so much excitement been generated in Wasaga Beach over aircraft. The Lions Clubs of Wasaga Beach and Tiny Township, together with the Town of Wasaga Beach, are bringing - Wings over Wasaga - (WoW), a world class air show, to the longest fresh water beach in the world. On Tuesday, December 9th, it was announced at the International Council of Air Shows (ICAS) in Las Vegas, that the Canadian Snowbirds and the CF-18 Demonstration team would perform at the Wings over Wasaga Air Show - July 3-5, 2015. The air show will also feature civilian performers and at this time, Carol Pilon, a Wingwalker, and local native Brent Handy in his Pitts Special. Negotiations are ongoing to bring the Canadian Forces parachute team to the show. WoW is a free, charity driven, air show but there will be limited seating available for purchase in the Presidents' Area which will provide a greater show experience. Our website, wingsoverwasaga.com, will be live soon and filled with information on the air show. As this show will bring thousands of visitors to Wasaga Beach, and South Georgian Bay, not only from the local area, but from all over the province and beyond, it will provide great sponsorship opportunities. Snowmobile Safety“Part 1”

Snowmobiling is a sport and like all sports there are rules and policies that govern and impact that sport. Three critical policies are; 1) the Criminal Code of Canada, 2) the Motorized Snow Vehicle Act of Ontario R.S.O. 1990 (MSVA) and 3) your local municipal bylaws that apply to the operation of this motor vehicle. As with the operation of all motor and non-motor vehicles common sense should be present and generally when it is not riders get hurt and sometimes killed.The MSVA is Provincial Legislation that applies to the Province of Ontario and gives municipalities in Ontario approval to enact bylaws that impact the operation of motor snow vehicles or more usually called snowmobiles in that jurisdiction.We find that the general knowledge of snowmobile enthusiasts in regards to laws that control their sport vary greatly and as such I would like to dispel some myths that are out there:

Myth #1:Snowmobile operators can drink and drive and nothing can happen to them.Fact #1:Snowmobile operators who drink and drive face the same penalties under the Criminal Code of Canada for Impaired Operation, Excess 80 mgs. and Refusing to Provide a Breath Sample as would any driver of an automobile. That is if they don't have a collision first!Myth #2:Snowmobile operators can travel at any speed they want.Fact #2:Section 14(1) of the MSVA states a maximum speed limit for snow vehicles travelling on highway property where automobile's maximum speed is 50 km/hr or any public park is 20 km/hr.This section also states a maximum speed limit for snow vehicles travelling on highway property where automobile's maximum speed is greater than 50 km/hr or on trails is 50 km/hr.Myth #3:It's OK to drive a snow vehicle on the roadway when it is covered with snow.Fact #3:Section 5 and 8 of the MSVA prohibits the driving of snow vehicles on roadways, that is the portion of a road which is usually travelled by an automobile. The exception is a snow vehicle crossing a roadway at a 90 degree angle.Myth #4:Trail Patrol Officers from your local Snowmobile Club have no authorities.Fact #4:Members of your local Snowmobile club who are designated as Trail Wardens have the authority to lay trespass charges as outlined under the Trespass To Property Act. Trail Wardens are there to ensure the safe and enjoyable use of our snowmobile trails.Myth #5:S.T.O.P. Officers, who are they?Fact #5: S.T.O.P. Officers are highly training volunteers who are sworn in as Special Constables and Provincial Offense Officers to enforce the Motorized Snow Vehicle Act. They assist local police agencies to ensure the safe and enjoyable use of our snowmobile trails..

Beach Corner Celebrating 2 Years

Thanks to Beach BoosterSince Beach Corner inception in November 2012, over 100 interviews took place on beach BOOSTER radio from local artists and organizers to worldwide exclusive artists via Skype from Sweden, Japan, California and Montreal. The abundance of talented people I have met in this community and abroad truly incredible. Having lived in Wasaga Beach for the past 12-years, I am drawn by the community spirit that exists in our town. As I look back at 2014 some of the most memorable events were hosting the Bean 2 Tween Fashion Show in May, producing the Wasaga Beach Short Film Festival Red Carpet Gala Awards where I sit on the committee as Co-chair as well as co-hosting the Wasaga Beach Santa Claus Parade with Catherine Thompson from 97.7 the Beach. I had wonderful guests on the show this year but I was most thrilled when I had the chance to interview Priscilla Presley and Christopher Amaruoso at the 20th Annual Collingwood Elvis Festival press conference held in July. It felt as though Elvis was in the room. Some of our local talent such as Damian Spaulding from Spaulding School of Music, he never ceases to amaze me with his Spaulding Method of l e a r n i n g m u s i c b y e a r. O u r b e a u t i f u l singer/songwriter Rebecca Stephens had this to say about her experience on Beach Corner:" Dianna Chycki is very talented at what she does! In our past interviews on Beach Corner, she has always made me feel very comfortable and asks interesting questions. She isn't afraid to laugh and have a good time; this is exactly the kind of person artists want when being interviewed.” Impressive Skype interview with Gino Vannelli, multi-Grammy Award winner, it was an honour to have him as my guest. I had the pleasure of meeting him at the Blues Festival at Blue Mountain. One of my highlights over the past two years was my exclusive Canadian Skype interview with Japanese international rock star, Sugizo, guitarist and violinist from X Japan, Luna Sea, Juno Reactor. Sugizo recently performed to a sold out crowd at Madison Square Garden in New York City with X Japan. The band is planning a worldwide tour hope Toronto will be on the list.At this time, I would like to take this opportunity to thank both, Joe Bickerstaff and Bill Frieday for giving me the opportunity to host my weekly radio show along with my featured column. I am grateful for their continued support over the years and allowing me to go beyond my boundaries at times. A special thanks to Rick Sieon, Beach Booster Promotion, for designing my beautiful new poster, Rick's work is exceptional and I feel truly blessed to be surrounded with such a great team. With November and December providing a few snowy days early this year, we look forward to a winter where we can welcome visitors to Wasaga Beach with all that our town can offer from hospitality at our local restaurants, motels and gas stations to our network of groomed trails and of course our World Famous beach!Wasaga Beach has a long history of welcoming sledders and at one time was known as The Snowmobile Capital of Ontario. Most major manufacturers of snowmobiles of the day, had dealers and service facilities here including, Yamaha, Ski-doo, Kawasaki, Chaparral, Rupp, Arctic Cat and John Deere.

The Wasaga Snowmobile Club has always provided us with some of the best groomed trails in the country and these trails can serve as a conduit to bring snowmobiles to Wasaga Beach from communities far and wide. Good highways and roads mean that snowmobiles can be trailered here and once unloaded in The Beach can serve as the only means of transportation required while staying in town. At one time, the river froze solid every winter and was used for holding many winter events including our Winter Jamboree and the Whipper Billy Watson Snowarma. The river running through town also provided a main artery for snowmobile travel through town and at one time was lined with great hotels with live entertainment and dining rooms all welcoming sledders. Exciting Radar Runs and races were organized in town and kept our winter visitors happy.

I grew up in a small town in Northern Ontario and as the song goes, where everyone knew your name. It was a very vibrant community where the May long weekend was truly a community celebration and the Labour Day weekend was a fireworks event that no one would miss. You really had no need to leave town. There were numerous local businesses that supplied everything from shoes to clothes to appliances to furniture, banking, groceries, and services and then some. There was a smelter plant located directly in town that was the main source of employment, where my father and his father had worked. Our local baseball and hockey teams were not only a sense of community pride they created a sense of identity for our small town. We even had a local concert marching band that my father once played in and so did I. The Day the Music DiedOne fine day the Company announced that the smelter plant was to shut down and give way to an expanded operation some 25 kilometers away. There was cause for many concerns but one comforting factor was that all the employees that worked at this operation would find work at the other Company operations throughout surrounding towns. This was believed to be the solution for our small town. The Company stepped up to the plate yet there was no signs of what our town businesses, citizens and town leaders had in mind for the future of our town. It was taken care of.Many years later when I visit my home town I see a bedroom community with no businesses to speak of, a rundown town and old former business buildings sadly cladded to accommodate low rent accommodations for people that are struggling to make it. The town even lost its name after an amalgamation with surrounding communities to deal with a low tax base and increasing costs.All remaining kids in this town leave to find jobs in other parts of the province and country. It is hard to recognize any of the family names anymore. Most people and families that I grew up with have moved on.People that still live in the town wonder what happened. The transformation from a bustling town to a place just to live did not just happen overnight. It happened gradually with no one waking up at night saying; “We have a problem and we need to fix it.” The solution was left to the Company.This is what happens when a sense of common purpose is lost. This is what happens when people do not transcend their personal situations and come together as a unified community to create a plan to take charge of their future. People need to challenge the principles and rules that were put in place in another time and make them relevant in order to enable a community to re-invent itself and succeed. Working towards a shared vision with a sense of common purpose should dictate how we work together and help each other to get to where we want to go.It’s not just the new Wasaga Beach Town Council that is on the hook to create a new future for Wasaga Beach, it’s the responsibility of each citizen, each town employee, each business leader, and each service club leader to take responsibility to create common purpose. The Company, our tourism business has shut down and moved to other communities. We all need to ask how we can as individuals support the efforts to keep this town a vibrant community. It was a cold morning, but many of Wasaga Beach United Church members turned out to watch Mike Terhart of MJT Crane Service lift a beautiful White Cross to its resting place high atop their new Church Building. The new building on Zoo Park Road won't be ready until February with dedication planned for April when many of their “snowbird” members return from the south. Now just before Christmas the new Church Building is a stunning sight all lit up at night.

A couple were Christmas shopping. The shopping center was packed , and as the wife walked through one of the malls she was surprised when she looked around to find that her husband was nowhere to be seen. She was quite upset because they had a lot to do and she became so worried that she called him on her mobile phone to ask him where he was.In a quiet voice he said, "Do you remember the jewelers we went into about five years ago where you fell in love with that diamond necklace that we couldn't afford, and I told you that I would get it for you one day?"The wife choked up and started to cry and said, "Yes, I do remember that shop."He replied, "Well, I'm in the bar next door."
