Banana Lentil Muffins Perfect on-the-go breakfast, kid-friendly & packed with fiber and protein. Servings: 12 Muffins or 36 Mini- muffins Ingredients: 1 cup cooked lentils (red, yellow, or green) 3/4 cup mashed banana 1/4 cup applesauce 1 egg 1/4 c maple syrup or honey 1 tsp vanilla 2/3 c oats 2/3 c white whole wheat flour 1 tsp baking soda 1 tsp cinnamon 1/2 cup chocolate chips or nuts, or dried fruit Directions: 1 Preheat oven to 375 degrees. 2 Add cooked lentils and applesauce to a food processor and process until smooth. 3 Add mashed banana, egg, sweetener and vanilla and process again. 4 Add oats, flour, baking soda, and cinnamon and process until just mixed.
