Balsamic Braised Beef Casserole

Ingredients: Serves 4 800g Cubed Beef 125ml Balsamic Vinegar 3 Large Carrots 1 Medium Onion 4 Medium Potatoes 400ml Beef Stock 3 Garlic Cloves Minced 2 Bay Leaves 3 Thyme Sprigs
Method:1. Marinate the beef cubes in the balsamic vinegar in the fridge for at least 1 hour - ideally more 2. Preheat the oven to 170/ 325/ gas 3 3. Roughly chop your onion, potatoes and carrots 4. Place all ingredients in casserole dish and mix together before covering and placing in oven 5. Cook for 2-2 1/2 hours until the beef is tender 6. Serve and enjoy!
