ith a live jazz band ushering guests inside and servers presenting champagne at the door, Green House Organic toasted its grand opening as the area’s first upscale organic food restaurant. The evening, held in partnership with the Aventura Marketing Council and Greater North Miami Beach Chamber of Commerce, also served to kick off the 5th annual Sunny Isles Beach Jazz Fest. On a balmy early fall evening, the David & Dow jazz band performed for over 200 attendees who dined on hors d’oeuvres of Green House Organic’s signature dishes, the brainchild of Executive Chef Marcelo Marino. Among the partygoers were members of the Aventura Marketing Council, Greater North Miami Beach Chamber and North Dade Bar Association; as well as city officials. In attendance were Florida State Representative Joe Gibbons; Sunny Isles Beach Mayor Norman S. Edelcup, Vice Mayor Lew Thaler, Comm. Jeanette Gatto and Police Chief Fred Maas; North Miami Beach Mayor George Vallejo, Councilwomen Barbara Kramer and Phyllis Smith; and Aventura Comm. Billy Joel. During the formal ribbon-cutting ceremony, Green House Organic presented a $1,000 check to Joshua’s Heart Foundation, as eleven year-old Joshua Williams accepted the check on behalf of his foundation, which he founded to stomp out hunger worldwide. The evening also included giveaways – a pair of tickets to the Jazz Fest and dinner for two at Green House Organic, and all of the evening’s guests went home with gourmet truffles. Chef Marcelo Marino, who was an Educator and Ambassador at Le Cordon Bleu Miami, focuses on avant-garde cuisine, offering patrons an elegant dinner alternative, with no compromise on healthful eating. In designing his menu, Chef Marino adheres to a purist philosophy in which he seeks to extract the most natural flavor from ingredients using the least amount of fat. All his produce and dairy is organic and/or sustainable. In fact, Farmer Bill from The Chef’s Garden, an Ohio farm that specializes in growing micro-greens and specialty vegetables expressly for chefs nationwide, was one of the evening’s special guests. Green House Organic recently partnered with The Chef’s Garden. Chef Marino noted, “Green House represents a novel way to introduce the community to a healthy and delicious dining experience that raises the bar on what is already out there in the natural foods arena.” Distinctive dishes are an extension of the quality of ingredients used at Green House Organic. Snapper and tuna are never offered. Instead, uncommon entrees include rabbit, swordfish and purple truffle pizza baked in a wood-burning oven. Proteins are complemented by ancient grains like saffron rice pillows and exotic greens such as wasabi leaves, lola rosa and callaloo. All breads and cheeses are homemade and in-house cured and brined meats. Sunday brunch is served all day and designed around champagne, caviar, and quail and ostrich eggs. Finally, wine pairings are recom- mended for every dish. The menu is not the only unique feature of Green House Organic; every table is equipped with its own iPad, with which guests may peruse the menu and learn about nutritional values and the sourcing of ingredients with the touch of a finger. The digital menus are presented in six languages to accommodate the international demographic of the area. To add to the high-tech ethos, large flat-screen TVs project, in real time, the chefs working in the kitchen. Green House Organic is located at 3207 NE 163rd St. in North Miami Beach, at the crossroads of Aventura, Sunny Isles and Bal Harbour. Donna was an alcoholic who refused toacknowledge it. Finally some of her friendsforced her to join AA. She went a few timesand finally admitted that she was an alco-holic. Once she admitted it, it waseasy to face what she should do totry to recover. She knew if she evertasted alcohol she would relapseand the result would become irra-tional. She told anyone she could,that she was completly off thejuice; she was reborn.

Howie was a fatty. He didn’tadmit that he was fat, very fat. Heconsidered himself as someone on the largerside. The ones that didn’t agree he tried toavoid pretty much. He was directed by somefriends to a meeting of “overeaters anony-mous.” After a few meetings, he finallyadmitted that he was a fatty and even takinga sweet chocolate he would gobble manymore than just one. He was compulsive andone would never suffice for him. Once headmitted this, the rest was sort of easy. Hecut out sweets and within a few months hewas slim and as he put it “reborn.”

Somehow these two “reborn” souls meteach other, and found that they liked eachother like kindred spirits. They did havesome problems. Howie never drank so itwas impossible for Donna to rant about adrinking problem. Donna was very slenderand never ate too much food that wasn’t

healthy. One couldn’t talk aboutover eating and the other wassilent on anything alcoholic.Neither one could lecture theother about their former habits,this led to some silent evenings.

Howie decided to see whatDonna had gone through whenshe drank too much. Spent anevening at his home alone and

trying to see if he could get drunk. Donnaat the same time decided to see whatHowie went through with overeating, sothat she could understand what he had gonethrough.

As a result “true love ran smoothly.”Now they have lots to talk about. Howiehas become a thin semi-alcoholic. Donna isa chubby non-drinker. As a result they canspend all their time lecturing each other onthe evils of two subjects that they can relateto. This relationship just has to last.

There is a very basic human responseto threatening situations. It is called theFight or Flight Syndrome. It is a survivalinstinct to protect yourself either by stand-ing and fighting or fleeing and runningaway. It requires an instantaneous decisionand that decision determines the outcome.

As human beings develop andbecome more sophisticated psychological-ly, another option is possible. It is theFloat Syndrome. It is not like fleeing. Youare still in the moment or situation but youare floating through the turbulent waterswithout creating any waves yourself.

This technique is extremely effectivein all relationships. It is effective at homewith family members. It is effective atwork with your boss and with your peers.In fact, it can be used in every situationeven with waiters or salespeople.

How does it work? Instead of con-

fronting someone or taking issue withtheir behavior you suspend your fear,anger, disappointment, hurt and annoy-ance. You are on top of the situation andyou are controlling the situation. You arenot a victim of the situation. You are act-ing and not just reacting. You are buoyant.You float above the situation and do notlet it pull you down. You do not take any-thing to heart.

It is also a great survival techniqueduring the Holidays when families gather.

If you float, you don’t have to addressevery issue. You don’t have to settle oldscores, fight old battles, prove a point ortake a stand. It is a resting position. It isgood for you and good for them. It createsa calm and peaceful mood for all thoseinvolved. Everyone will be grateful andappreciate you for floating.

Keep in mind your options. You havemore power than you realize. Your actionsand reactions will set the tone. You candiffuse the situation. You can make a dif-ference regardless of the situation. You arethe one in control. You make the ultimatedecision and choice.

George Washington, as military leaderof Colonial America, received numerousaccolades from the adoring public duringthe Revolutionary War, but, according tohistorian Ron Chernow, nothing couldmatch the tribute from a Boston womannamed Phillis Wheatley, who sent him aflattering poem in October 1775. In pol-ished poetry she wrote: “Proceed, greatchief, with virtue on thy side, / Thy ev’ryaction let the goddess guide. / A crown, amansion, and a throne that shine, / Withgold unfading, Washington! Be thine.” Theyoung poetess praised America as “the landof freedom’s heaven-defended race!” It wasremarkable because Phyllis, a twenty-two-year-old slave, had been seized in Africa asa child and sold to Bostonian tailor JohnWheatley, “as a personal slave for hiswife.” The Wheatley’s soon recognized thegirl’s gifts, “schooled her in Scriptures andclassics and allowed her to live with thefamily.” In 1773, she published a collection

of verse, “Poems on Various Subjects,Religion and Moral.” “The volume madeher the most celebrated black person inAmerica.” Washington, a large slaveowner, replied cordially to Phillis, despitehis recent reviling of Virginia’s RoyalGovernor “as diabolical for promising free-dom to deflecting slaves to the Britishside.” Washington wrote to Phillis, thank-ing her for the elegant lines she sent him,“As undeserving I may be …of your greatpoetical talents.” Washington invitedPhillis to visit with him, writing, “I shall behappy to see a person whom nature hasbeen so liberal and beneficent in her dis-pensations. I am with great respect yourobed(ient) humble servant.” (Coming froma slave owner)

Washington received Phillis warmly athis headquarters, observing “that he hadnever met any black person on such termsof social equality.” Together with the pow-erful Revolutionary ideals, Washingtonbegan a transformation, “even though hestill had a distance to travel on the slaveissue.” Contrary to many of his peers(including Jefferson), upon his death,Washington provided for freedom andfinancial support for all his slaves, to takeeffect upon Martha’s death. No waiting forher death, Martha freed all of George’sslaves.

So I was reading oneof those consumer-helpcolumns in the newspaperthe other day and thecolumnist was trying toguide a reader through aninsurance dispute over awater leak. The columnist

was witty and helpful and suggested the fol-lowing vigorous plan of action: call the in-surer to discuss the problem, then call somemore, then write a letter, if that fails appealthe decision, and if all hope seems lost, writea strongly worded letter to the insurancecommissioner, the newspaper, the Vaticanand anyone else who will listen to yourprayers. But shockingly he never mentionedperhaps the most powerful option for a frus-trated consumer who has hit the insurancecompany stonewall: call a lawyer.All right, I know what you’re thinking.

Lawyers? Who wants to deal with them?They’ll charge an arm, a leg and 1/3 of yourfirst-born if they can get away with it. Butwhat most people don't' realize is that (inFlorida at least) insurance companies thatwrongly deny a customer’s insurance claimwill often be responsible for paying the cus-

tomer's attorney's fees in addition to theclaim. What this means for the consumer isthat a good, experienced insurance attorneywill take their case at NO CHARGE or on acontingency if the case has merit. So whynot have a lawyer look at it for free?As you can imagine, a recalcitrant insurer

may quickly change its hardline positionwhen faced with the prospect of paying theconsumer's legal fees on top of the claim. Iknow that when I trained insurance compa-nies on how to process claims we didn’t fearthe angry letter. We didn’t fear the angrierletter. We didn’t even fear the appeal. Wefeared paying penalties and fees. So remem-ber, maybe you can chisel through a stonewall. But I like a sledgehammer -- worksbetter every time.

Did you know November 14th is WorldDiabetes Day? It marks the birthday of Fred-erick Banting, who along with Charles Bestmade the discovery of insulin (a life-savingtreatment for diabetics) back in 1922.According to the American Diabetes As-

sociation, almost 26 million people in theUnited States live with diabetes. Another 79million are living with pre-diabetes. It’s adisease that can lead to heart attack, stroke,blindness, loss of limbs, and in many cases-death. My mother lives with and managesdiabetes, so the issue hits close to home.So what do we as a society do to tackle di-

abetes? That was the question asked and an-swered during an educational forum I hadthe pleasure of moderating on World Dia-betes Day (and learned a great deal from)“COMMUNITY HEALTH CENTERS:MIAMI’S SECRET WEAPON IN THEFIGHT AGAINST DIABETES.”As a journalist, I make a point to find,

capture and share stories and events thathave a positive impact on our community.So as I listened to the doctors, American Di-

abetes Association members, patients andhealth center staff discuss the public healthchallenges presented by diabetes, and howbusiness, medical and community partner-ships are helping people, I was more thanimpressed.We gathered at the Jefferson Reaves Sr.

Health Center in Overtown which servesmore than 6,000 people a year in the com-munity and is disproportionately affected bydiabetes. Why this center? The UnitedHealth Foundation has given $1 million tothe center for medical care, the Universityof Miami Miller School of Medicine’s De-partment of Family Medicine and Commu-nity Health provides education and healthservices, and community members and pa-tients receive excellent care and life savinghealth information. That’s what it’s allabout- teamwork for a common good.So on those days when I question my san-
