A healthydiet: Spinachis back onthe menuNOW that people arelooking for a healthy dietspinach is back on themenu and there is stilltime to enjoy a home-grown crop.

Spinach contains highlevels of beta-carotineand lutein which can pro-tect against age-relatedeye disease.

It’s also a good sourceof dietary fibre as well asvitamins A and C.

There are two varietiesof spinach — winter andsummer — both of whichgrow well in temperateclimates.

Winter spinach is sownin early to mid-autumnfor use during the wintermonths.

It makes a good follow-on crop to some of theyear’s earlier sowings.

With winter yields inmind, choose an open sitewith some shelter fromcold winds and rake in ageneral fertiliser at 70gper square metre.

Sow the seeds in drills2cm to 3cm deep andabout 30cm apart.

Thin the seedlings tostand 23cm apart.

If the soil is dry at the

time of sowing, water thedrills well beforehand.

Once established thereshould be no wateringproblem as the normalrainfall will be enough.

Although the plants arehardy they give a betterand cleaner crop if someprotection can be given,ideally with cloches dur-ing the winter months.

Picking can begin assoon as the leaves arelarge enough.

Cut the largest leavesoff close to the stem, tak-ing a few from eachplant.

Leaf production in thewinter months is slowerthan summer, so take theleaves sparingly.

In early spring a dress-ing of nitrochalk at 35gper square metre willhelp the plants along, byincreasing production ofleafy growth which inturn will help to give youearlier spinach pickings.

For most there is nothing better than a Sunday roastwith all the trimmings.

Lamb Boulangere offers a different and deliciousway to roast a leg of lamb — the perfect winterwarmer.

Ingredients (serves six):� 1.5kg leg of lamb� 3g butter� 1tbsp olive oil� 500g onions, sliced� 1kg potatoes, peeled and thinly sliced� salt and black pepper� 2 cloves garlic, thinly sliced� 1 beef stock cube� 250ml hot water� parsley

Method

Heat the butter and oil in a frying pan. Add theonions and cook gently until softened and just start-ing to colour.

Place the potato slices in the bottom of a roastingpan.

Spoon the onions over them. Season with salt andfreshly ground black pepper.

Make small incisions around the bone and under the

skin of the leg of lamb and insert the garlic slices.Place the lamb on a rack over the potatoes and

onions. Season it with plenty of salt and freshlyground pepper.

Dissolve the beef stock cube in the cup of hot waterand pour over the potatoes and onions.

Roast the lamb in a hot oven (220C) for the first 20minutes and then lower the oven temperature to mod-erate (180C) and cook for another hour.

The lamb may be cut in thick slices, arranged on thebed of potatoes and onions, sprinkled with choppedparsley and served in the dish it was cooked in.
