SWEET PARIS (MINI EDITION)A LOVE AFFAIR WITH PARISIAN PASTRIES,

CHOCOLATES AND DESSERTS

Michael Paul

Michael Paul is based in London and is an internationally renowned lifestyle photographer in the field of food, interiors and still life. His work appears regularly in prestigious magazines such as Gourmet, Martha Stewart Living, Delicious, Vogue Living, and The Sunday Times Style.

30 Sweet Paris

started his own business, Pierre Hermé Paris, with a boutique in Tokyo. His first Paris shop opened in 2002 in the rue Bonaparte, where, in the daily queue outside, you are likely to rub shoulders with fashion models, film directors, dot.com entrepreneurs, rock stars, oil magnates, aristocrats and be-minked, bejewelled Rus-sian heiresses, all clamouring for his chocolate bonbons, perfect pastries or brimming boxes of macarons. It is all too easy to forget a million-dollar contract that includes a clause about your waistline when faced with the temp-tations that wait within the hallowed walls of Maison Pierre Hermé.

A classic enticement is his divine caramel macaron with a buttery fleur de sel caramel cream, resulting in the most perfect sensory sensation. His fashionable fa-vourite remains the ‘Ispahan’, a large rose macaron bis-cuit filled with fresh raspberries and rose petal cream flavoured with lychee. If this was the last thing I tasted on this earth I’d die a happy man. Chocoholics should try his Plaisirs Sucrés, a harmonious symphony that com-bines dacquoise biscuit, crunchy hazelnuts, thin wafers of milk chocolate ganache and milk chocolate Chan-tilly. Naturally his perfectly blended speciality choco-late bonbons are in a class of their own; the Croquants au Praliné are modern-day masterpieces of texture and taste, as are the Assortiment de Chocolats au Macaron.

A household name in France, Pierre Hermé has a number of stylish boutiques in Paris in his distinctive colours; the main ones remain at rue Bonaparte in Saint-Germain–des-Prés near the église Saint-Sulpice, and out in the petit-bourgeois 15th arrondissement on the lengthy rue de Vaugirard.

Pierre Herméu

T he legendary Pierre Hermé is indisputably the most creative and gifted pastry chef in all of Paris – a true artist in every sense. He deserves

more than the mention he gets here not because he was the youngest man ever to be named France’s Pastry Chef of the Year, or because he has been awarded the Chevalier de la Légion d’Honneur, the highest civilian decoration in France, but because he is an out-and-out genius. Over the years the man has had many monikers bestowed by the press. The ‘Picasso of Pastry’, ‘An Architect of Emotions’ or the ‘Dior of Desserts’ are just a few of the flattering metaphors that have extolled his talents.

Probably most famous for his delectable macarons, he is also a master chocolatier-cum-confiseur and the architect of his own contemporary pastry creations and desserts, all renowned for their joyous and sometimes bizarre flavour marriages, which have become his signa-ture. His skills lie in combining a cacophony of flavours and aromas that no one has associated before. Who would think of marrying asparagus and hazelnut oil in a macaron? But he also understands better than anyone that complementary textures are just as important as combining flattering flavours.

Monsieur Hermé began his illustrious career at the age of fourteen as apprentice to the legendary Gaston Lenôtre, the founding father of contemporary patis-serie, whom he claims is his greatest mentor. At 24, he became the head pastry chef at Fauchon, where he remained for eleven years. Then, as vice-president at Ladurée, he had carte blanche to create all their products – pâtisserie, viennoisserie and chocolate – and develop a chain of luxury pastry shops. In 1998, he

Behind Closed Doors is a collection of inspiring photographs of creative people’s homes, taken by them.

Through his varied contacts in the magazine and arts worlds, Rob Meyers sent a batch of disposable cameras out to a whole variety of artists, musicians, photographers and bloggers and asked if they would take pictures of their favourite parts of their home. The only rule: they had to photograph the contents of their fridge. Much to his surprise, many people sent back a full camera. The result is a unique, intimate insight into the homes (and fridges) of some of the world’s most interesting people. Wander around the house of Courtney Love, Martha Stewart, Jeremy Scott, Daphne Guinness, Gilbert & George, Tavi Gevinson and more. Get an insight into how they live, the parts of their home that best define them, and what they like to eat for supper.

A colourful and dynamic exploration of Melbourne’s street art scene.

Street art is a visual conversation between many voices; an open-air exhibition space that is constantly changing through the work of many people acting alone and yet together. It can be colourful, raw, controversial or witty.

Melbourne has long been renowned for its dynamic street art scene that covers everything from stencils, paste-ups and yarn bombing to sprayed, rolled and brushed paintings that appear overnight on city streets. And because of its transient nature, street art is best recorded through photographs. Street Art is a witness and a celebration of street art photographed around Melbourne over the last eight years.

KNOTS AND RIGS

Steve Cooper & Chris Palatsides

A former investigative journalist, Steve Cooper left newspapers to pursue his passion for fishing, and these days spends five months of the year on the water overseas. Steve writes regular newspaper columns and has written more than 20 books. Chris Palatsides is a freelance illustrator. His fishing-based illustrations have featured prominently in numerous national fishing magazines and he is the current illustrator for Fishing World magazine.

LEISURE & THE OUTDOORS51

KNOTSAnother group of knots which deserve special attention are boating knots. Every weekend thousands of small boats are launched from boat ramps into rivers, lakes, bays and even the ocean. Keen anglers take their boating seriously, however too few give enough thought to the knots they employ. What is the good of finding fish and dropping the anchor only to have a knot on the anchor come undone? Or how about coming in to a mooring jetty after a day on the water and having your knot slip while you are walking up the ramp to collect your car and boat trailer? It happens. So, we have also included some knots that will come in handy on those days when you are using your boat.

The golden rule of knot tying is to avoid haste: take your time, and think about what you are doing. When a number of knots are used in a rig, and those knots are tied in haste, then you increase the chance of knot failure. This is exacerbated when tying complicated knots that require a higher degree of concentration.

Knots break when they slip, and knots slip when they are tied incorrectly. This is often the result of too many turns, or a failure to pull the knot securely. Putting too many turns around the standing line is a common problem. What happens is that the more turns there are, the harder it is to draw the knot down securely. On a dry line, a knot that isn’t lubricated will resist being pulled snug. The solution is to lubricate the line with saliva. When this is done, the line will draw down more easily, and snug up tight.

This is a simpler version of the Balloon rig whereby instead of attaching the balloon with thread, the flared mouthpiece section of the balloon is pushed through one of the eyes of the swivel. Water pressure is enough to release the balloon, just make sure not to push the actual knot from the balloon through the swivel as it may lock and not release when taken.

Hook size will be determined by the size of the bait.

Blackfish (luderick) are finicky feeders, and setting the float correctly is about trial and error, with the weight governed by conditions and float size. Float attitude in the water is all important: the rig requires enough weight to sink the float and hold it in the vertical position, while pulling enough of the float under the surface so that minimal effort is required by the fish to pull it completely under. At the same time, a small amount of indicator must remain above water to indicate a bite.

A story of commitment, drive and the ingredients needed to succeed.

Antonio Carluccio is a larger-than-life character who, over his 50-year career, has inspired thousands of people with his no-fuss Italian cooking and passion for good food and wine. But behind the famous name is a man whose life has been full of unexpected twists and turns, joy and sadness, love and loss.

Born on the Amalfi Coast in the south of Italy in 1937, Antonio’s taste buds were first awakened by his Mamma’s delicious home cooking. Here he recounts the early years, including his first experience cooking simple suppers on a two-ring stove, to his unplanned meteoric rise to fame as the founder of one of the UK’s most prominent restaurant brands, prolific author and successful television presenter.

Despite his success, Antonio has never forgotten his humble beginnings or the women, who next to food, have been the biggest influence on his life. Dotted throughout the text are the recipes that have formed the touchstones of his life.

An expansive tale of history, war and intrigue which brings to light a most unusual and remarkable life.

Little did anyone know that Arthur Phillip, the first governor of Australia, was actually a master spy in the employ of the English government. This biography details his life story and how he became an international spy.

As a boy, Arthur became a member of the Royal Navy and soon climbed up the rankings to become an officer involved in great sea battles. He left the navy and fought for the Portuguese king against the Spanish, and the accolades he received from this became a turning point in his career. Along the way he was employed by the English government as a spy and travelled far and wide on secret missions. By the 1780s, Arthur Phillip moved in powerful circles that saw him appointed to lead the remarkable social experiment of the Enlightenment that was the First Fleet.

Patrick Lindsay explores the source of the Anzac legend that emerged from the Gallipoli Campaign of the First World War.

In The Spirit of Gallipoli Patrick Lindsay places the Gallipoli campaign in context, telling the story through the eyes of those who were there. He delves into the remarkable spirit which sustained the Anzacs as they clung to the ridges in their baptism of fire, half a world from their homelands, and digs deep into the bedrock of the Australian character.

Patrick writes for those who would never wade through a fully-fledged history book but who want to understand the extraordinary spirit that emerged from a doomed campaign. The Spirit of Gallipoli is a must-read for all those who want to understand what the Anzac spirit is and where it was forged.

people who had lived for a long time in this provincial backwater and for the most part were ‘influenced by its meanness and spitefulness’. How lonely she must have been after the stimulating and interesting life she had led in Brussels with her brothers and their literary friends. She was to suffer even more, when, after the death of her husband from a violent apoplectic attack, the gossip was such that the local justice of the peace prepared a damning report to the public prosecutor, condemning her morals, and accusing her of having let Robineau-Duclos die without making any effort to help him. The report was based on no solid evidence, however, and there were no further consequences. It certainly helps to explain Sido’s subsequent aloofness from the other villagers and the closed and separate world she created for her second husband and children.

There were two children from Sido’s first marriage, Juliette who was born in 1860 and Achille in 1863.

Sido’s second husband, and the father of our Colette, was Jules-Joseph Colette. Like Sido he was not a local. He had arrived in Saint-Sauveur in 1860. Jules-Joseph had been born in Toulon, in the south of France in 1826, and was destined for a career in the army, after graduating from the prestigious Saint-Cyr training academy. He joined the Zouaves and this handsome, brave young soldier served in Algeria, Turkey and Africa. He was quickly promoted to the rank of Captain. His military career was abruptly cut short when he was badly wounded in Melegnano in northern Italy. His left leg had to be amputated, he was pensioned out of the army and offered a sinecure as tax collector in Saint-Sauveur.

It did not take this cultivated and gallant newcomer long to attract the attention and affection of Sido. Village gossip was soon abuzz and it was rumoured that Achille, Sido’s second child, was in fact fathered, not by Robineau-Duclos, but by the Captain. The truth of this rumour will never be known, but certainly Achille was very close to his mother and to Jules-Joseph Colette and much closer in looks and temperament to his younger sister and brother than to his older sister, Juliette.

Robineau-Duclos died in 1865 and after the appropriate period of mourning, Sido was free to marry Jules-Joseph, defying the gossip and calumny that circulated freely amongst the citizens of Saint-Sauveur. These same citizens, in passing judgement on Sido, ignored the fact that Robineau-Duclos had continued to maintain a mistress, his former maid, throughout his marriage and that, from this liaison there was another son.

Best Times Ever explains why almost everything is far better than it used to be - it is an optimistic answer to those who say that everything is getting worse in our day and age.

With conflicts around the globe, rampant environmental damage, economic struggles, poverty and the ongoing threat of terrorism, the world isn’t perfect right now. But is everything really going to hell in a handbasket? Should we really be feeling so miserable?

Best Times Ever briefly assesses 100 of our favourite things to complain about, and explains why, believe it or not, things aren’t as bad as they used to be. In fact, we’re actually improving! From the serious (the number of people dying in wars is 2,000 a year; in the 1950s, it was 65,000 a year) to the frivolous (Vertigo had bad reviews in 1957, was considered a cinema classic by 1987, and was recently voted the greatest movie ever made - so even movies get better), this is an optimistic answer to those who say that everything is getting worse. There is room for improvement, but we’re heading in the right direction! Humorous, light reading, but peppered with useful information and trivia and an all round uplifiting message.

Never Say Die is the memoir of Stuart O’Grady, one of Australia’s best-loved cyclists who has had a long and successful career as a professional road cyclist.

Stuart O’Grady’s cycling career started in track cycling when he won silver and bronze medals at the 1992 and 1996 Summer Olympics. After moving to road cycling, Stuart began competing in the Tour de France, wearing the yellow jersey in the 1998 race for three days and then for five days in 2001. He also won Cyclist of the Year and Male Road Cyclist for his country.

But O’Grady’s successful cycling career has not been without its crashes and close calls - in 2000, he pulled out of the Tour de France after breaking his collarbone in three places with 85 kilometres to the finish, yet he still finished the stage. In 2007, O’Grady abandoned on stage eight of the Tour de France after crashing on a descent, fracturing eight ribs, his right shoulder blade, right collar bone and three vertebrae, and puncturing his right lung. O’Grady crashed 30 km into the 2009 Milan – San Remo, suffering similarly devastating injuries. It’s these close calls which have given O’Grady the title of Mr Indestructible!
