For the month of August, music resounds on the famous Promenade des Anglais as the city hosts a series of Prom’ Parties. Various stages are positioned between the Negresco and the Théâtre de Verdure. Visitors can choose between “musette” at the Bandstand, jazz in front of the Ne-gresco, French variety opposite the Palais de la Méditerranée or dance at Avenue des Phocéens.

This year, internationally-renowned artists will take spectators on a journey around the world, from Portugese Fado to Nordeste Brazilian percussion, as well as jazz and French rhythm ‘n’ blues.

This year marks the festival’s tenth an-niversary, and it will be celebrated with a special cinema night. For full details and dates check out our concerts section!

Féte de L’Assomption/Assumption Festival

A Christian festival and national holiday held on August 15th. The assumption is the traditional belief that the Virgin Mary, at the end of her life, was physically taken up into heaven, body and soul united. Festivities are held in most villages.

The Riviera Party Boat is an 80-foot Cata-maran sailing boat, and has just hit the Riviera party scene. After experiencing the excitement of Catamaran party boats in the Bahamas’, Mike and Sarah Magan had the great idea of bringing one to us in Nice!

There are two sailings per day, the first from 11am until 4pm, and then 5pm to 10pm. The day kicks off with an open-mast sail along the breathtaking Riviera coastline, as you indulge in a buffet of fresh fruit and icy cold rum punch, rosé wine or beer.

Its August, its hot, and quick swims in the sea just aren’t cutting it. So, its time to ditch the over crowded pebbly beach and head out to sea! It wouldn’t be a Riviera without water sports, and luckily Nice has more than enough to keep you busy. This month, we give you the heads-up on some of the best

water-based activities on the Côte D’Azur, from wild party boats to adrenaline pumping parachuting!

Within seconds, everyone is diving into the refresh-ing Mediterranean Sea – with access via the stairs or by catapulting off the spring nets! With an average water temperature of 25.2 degrees celcius, the swim is invigorating but not freezing.

In the meantime, live band Breathe is cranking out some fun tunes – yes they manage to fit a four-piece band on the boat! The whole expe-rience is quite unique and undeniably some of the most fun you will have this summer.

Tickets cost between 40€ and 65€, and in-

cludes all you can drink plus snacks, onboard entertainment and plenty of time to swim and dance. The boat heads out every second day, but staff will happily pull a trip together at short notice. Stay posted for some late night dance parties as well!

Blue Beach Water Sports offers a great variety of activities to get the adrena-line pumping this August. Located opposite the Negresco Hotel, the staff at Blue Beach are super friendly and help make your day a truly memorable experience.

Forget the waders, rod and reel … Fly Fish-ing on the Riviera is an exhilarating ride over white-capped waves, sending you soaring me-tres high into the air before crashing down to the safety of your inflatable raft. The Fly Fish is towed behind a speedboat that reaches up to 50km per hour … more than enough speed to

get you airborne. If you can see how much fun the Fly Fish looks from afar, then go ahead and jump on one! It’ll cost you 30€ per person for 1-2 people, or 25€ per person for up to 4 peo-ple. The thrilling 10-minute ride will inevitably keep your energy levels up for the rest of the day. Similarly, there’s the tube rides … which is the same concept as the Fly Fish, but you are fit snugly into an inflatable donut and sent whirl-ing around the open sea. The tube costs 25€ per person. The only tip for these two activities is … hold on!

For the more subdued, there are kayaks for hire, offering a relaxed and fun way to see the coast-line from afar. Be sure to wear sunscreen and al-ways stay clear of boats. Kayaking costs as little as 6€ for half an hour, or 10€ for a full hour, and is a great way to escape the busy beaches and capture the cool sea breeze.

For those with a love of water skiing, you’ll be happy to learn that single-board skiing is on of-fer, at a cost of just 25€.

And for a birds-eye view of this spectacular Riviera, you can’t pass-up the parachute ride. Experience the thrill of parachuting behind a speedboat, as you soar 50 meters above the open sea, touching down every so often to wet the toes. Parachuting does not involve as much en-ergy as the other water sports, and can therefore be attempted by pretty much everyone! A duo parachute costs 30€ per person, a solo parachute is 45€. The whole trip covers 2 nautical miles … plenty of time to take in the sites!

Travel HotspotsFamed as the birthplace of Napoléan Bonaparte and Christopher Columbus, Corsica has a long and rich history. It is also an island of immense beauty … with unspoiled landscapes, magnifi-cent mountain scenery and hundreds of perfect sandy beaches stretching over 1,000 kilometres of coastline. Corsica is indeed the perfect holi-day destination and a rare treat in this often over-developed part of the world.

Corsica is the 4th largest island on the Mediter-ranean Sea and has a population of 302,000. With its conservation areas and nature reserves with Heritage Listing status, its International Marine Reserve, and its Regional Nature Reserve, Cor-sica remains, for the most part, a protected Island. And with over 200 crystal clear beaches, Corsica is an oasis for water sports, offering snorkelling, windsurfing, scuba diving and swimming.

It is also rich in culture, crafts and lively tradi-tions. Cuisine plays a major role in Corsican life, and is a wonderful fusion of French and Italian cuisines (as is the language). Cured meats and sheep’s milk cheeses are world famous and fill the bags of eager travellers.

Corsica was an independent Republic between 1755 and 1770, but was secretly purchased by the French in 1764. After a brief civil war between 1768-69, Corsica was incorporated into France and remains so to this day. Still, the proud and fiery Corsican soul stands strong.

Ideally, a week or more should be set aside to travel around the island by car. But if you only have a few days, then you will get much satisfac-tion from visiting a few if not one of these glori-ous towns. Here is a brief explanation of the most popular areas on the island and what you can ex-pect to find:

CALVI:One of the most popular areas with tourists, Calvi offers traditional Corsican culture combined with the comforts of a modern resort area. The main part of the town centres on the citadel - a military outpost in the 15th century. There are a number of places of interest here, but be sure to visit the restored palace of the Genovese Governor and the remains of a house that is rumoured to be the birthplace of Christopher Columbus. The beach stretches 6 km’s along the length of the bay, but is quite narrow and can be crowded in the summer. A wider beach can be found at place de l’Alga, near Revellate point.

BONIFACIO: “The city of cliffs”A truly remarkable medieval town located on the site of a 9th century citadel. Bonifacio is the oldest city in Corsica and can be found at the southern tip of the island. It affords a very Italian feel given its close proximity to Sardinia, and is both elegant and exclusive. Of particular interest is the “Stair-case of the King of Aragon” and should only be attempted if you are feeling energetic. It is a nar-row line of 187 steps at a 45-degree angle with a 100-foot drop to the ocean (protected by railings of course). According to legend, Alfonso V, the king of Aragon, ordered his troops to carve a staircase into the cliff in a single night during the siege of 1420. It is indeed a sight to behold. Entry is 2€. You must also climb the Rastello Steps (Monté Rastello), and then the Saint-Roch Steps (Monté Saint-Roch), which will lead you to the drawbridge of the Porte de Gênes (Genoa Gate) built in 1588. Inside the gateway you can visit the Grand Bastion (fee 2€). Outside the citadel, heading west, stands the Église Ste-Dominique, one of the only gothic buildings in Corsica. Further west at the southern tip, you’ll find the elaborate tombs of a naval cem-etery, windmills dating back to the 12th century, and a spectacular view of the Strait of Bonifacio and Sardinia. Several glorious beaches are also close at hand.

CorsicaBASTIA:This is a Commercial Port town in the northeast. The main town was founded in 1378, and Victor Hugo lived here as a child. The Old Port is wonder-fully atmospheric, and the buildings that surround the marina have a certain faded charm. There are markets every Tuesday to Sunday offering Corsi-can gastronomic specialties. Highlights include the Museum of Ethnography in the 14th century Governor’s Palace, tracing the history of Bastia and Corsica from its pre-Roman origins to its role in the 2nd World War.

AJACCIO:This is the capital of Corsica and the birthplace of Napoléan Bonaparte. You can visit the house where he was born, which is now the National Bonaparte Museum; also the caves where he played, the stat-ues of Napoléan and the streets and places named in his honour. The Fesch Museum houses a highly re-garded collection of Italian Renaissance paintings, which were the original collection of Napoleon’s uncle. There are fantastic beaches just outside the old town, together with a nice walk offering spec-tacular views from Monte Salario.

PORTO:Located on the western side of the island below Calvi, Porto is a region of such beauty and interest it has been designated a UNESCO World heritage site. There are a number of spectacular beaches, a 16th century watchtower, and a popular Marina and aquarium.

PORTO-VECCHIO:Known as the “St-Tropez” of Corsica, Porto Vec-chio is a very popular place with tourists and can be found on the southeastern coast of Corsica. It’s beaches are renowned, especially the Palombaggi beach. The town itself is bustling with vibrant res-taurants, café’s and bars, designer boutiques and a well-equipped marina attracting international yachts. There are several pre-historic sites inland including those at Tappa and Sotta.

ILE ROUSSE:Translated, Ile Rousse means the “Red island” and was an active town by 1000 BC. It is found on the northwest coast about 20 kilometres northeast of Calvi. It is a relatively quiet and small town, with crystal clear waters, daily markets and a plaza with quality restaurants and energetic ambiance.

GETTING THERE:By Plane - Flights from Nice to Ajaccio, Bastia, Calvi and Figari with Air France. By Boat – SNCM (sncm.fr) and Corsica Ferries (corsica-ferries.co.uk). Tickets cost as little as 20€ return for a day trip.

Note: at the time of going to print, some wildfires were burn-ing throughout the island. Be sure to cheque with your local tour-ism office or booking centre to receive an update on the bushfire situation before travelling.

WHAT TO TAKE:A French phrase book can be use-ful as English is not widely spo-ken on the island.

WHERE TO STAY:There are many hotels on the is-land, but be aware that they can be fully booked in summer. Pre-planning is a must.

GETTING AROUND:Take a car on the ferry, or hire a car or bikes on the island. Bus-ses are available as are some train services.

Restaurant Reviews:Kookaburra, Un Amour de café & By Sushi

The country itself may be over 15,000 ki-lometres away, but Australian cuisine has made it to the shores of the French Rivi-era ... in true Aussie style. Sincere, friend-ly hospitality is coupled with a unique “down-under” menu, and one of the best selections of Australian wines and beers available on this side of the globe.

The Kookaburra can be found on the eastern end of Nice Port, with it’s spectacular sea views and luxury yachts, sweeping moun-tains and colourful heritage buildings. The restaurant’s large terrace offers a refresh-ing sea breeze and warm summer sun. The Kookaburra is a leisurely 15-minute stroll from the old town and along the Promenade des Anglais.

Now that the scene has been set, it is time for the food. The menu has been created by Australian chef Tania Tanti and incorporates authentic “bush tucker” with a fusion of Mediterranean and Asian cuisine. The meals are famously large, so be sure to go there hungry. Entrée’s include a marinated octopus salad (made in-house), damper bread (a tradi-tional dense, crusty loaf) served with a trio of flavoured butters, Cajun chicken focaccia (a meal more than an entrée), prawn and mango salad, and a warm house salad of onion, ba-con, grilled aubergine and feta.

The main dishes are bold and immortal-ize indigenous Australian produce. There’s the kangaroo filet drizzled with a blueberry jus and served with sweet potato mash, and citrus emu salad with grapefruit and pesto toasts. For those who do not know, kangaroo is a very healthy alternative to beef.

Seafood features heavily on the menu with fish n’ chips Aussie style (shark), salt and pepper squid and a seafood platter with a se-lection of shark, calamari, scallops, prawns

and plump New Zealand mussels. The New Zealand lamb is deliciously tender and deliv-ered in a honey/mustard glaze with Murray River salted potatoes. If you are not familiar with Australian cuisine and are having trouble choosing, I suggest the Aussie Bush Tucker plate, with a bit of everything - emu, kangaroo, lamb and shark.

There’s also kangaroo, emu, chicken and house-made beef burgers, served with grilled aubergine or courgette; horseradish cream, Ca-jun mayonnaise or house-made mango chut-ney.

Daily specials often take on an Asian theme - a reflection of Australia’s realisation in the late 1970’s that it was actually Asia’s door-step they were on and not England’s. Over-all, the Kookaburra’s is the kind of menu that has made Australia a modern culinary force. It is brash, big-flavoured, fresh and natural.

As difficult as it may be, try to leave room for the chef’s signature kahlua & caramel cheesecake or traditional pavlova (meringue) with cream and fresh fruits.

Finally, the Australian wines have been hand picked by the country’s famous wine critic James Halliday. Aussie beer is a must-try, with VB on tap, a range of Coopers beers, Toohey’s, Hahn and Crown Lager.

So with Australian cuisine now at the fore-front of global dining, this is a great oppor-tunity to discover a menu that salutes the produce of “Down Under”.

Un Amour De Café

When wandering around the streets of the Old Town of an evening, it is always diffi-cult to decide which restaurant to choose. Do you go for the busiest, the cheapest, the most traditional? Or do you opt for the unassuming little internet café that offers, on this day, only one menu option in an en-vironment of mismatched chairs, Eastern European bird cages and scented candles? Well, we chose the latter. And the result? An evening that surprised, impressed and convinced us to return.

Located in a refreshingly quiet street off the busy rue de la Prefecture, Un Amour de Café, known to locals as the old internet café, is now in the hands of Franck Ruault … former Man-aging Director of some of Paris’ most famous restaurant/bars – Man Ray, Zebra Square and Bain Douches. He then ran Le Maori in Nice, before taking over this café six weeks ago. So why, after working in such renowned es-tablishments in Paris, did he decide to open a small café/restaurant in Nice? “To create a kind of Zen for people”, says Franck, “where they come and don’t want to leave. Primar-ily” he adds, “pleasing people with good food makes me happy.”

And pleased we were. Presented to us this evening was the “Friend’s Dinner”, fitting given the intimate surroundings in which we were sitting. Our meal included a choice be-tween Camembert and cinnamon bread for entrée, or mozzarella, tomato and kiwi fruit salad. For mains, there was the penne pasta with cherry tomatoes, parmesan cheese and prosciutto or a traditional Thai green curry with rice. The meals sounded simple but tasty, and we both opted for the salad for entrée. It is remarkable how the kiwi fruit elevated this traditional French entrée to a whole new level. Of course, the quality ingredients and creative presentation were also appreciated. I had the pasta main, and again my expectations were exceeded. Fresh parmesan cheese was melted throughout the whole dish, and it was com-plimented by sweet cherry tomatoes and deli-ciously smoked parma ham, finished with the perfect amount of cracked black pepper. Each mouthful was a treat. The Thai green curry was obviously prepared using authentic ingredients and served in the traditional manner with bam-boo shoots and tender chicken. It was the first time we had tasted a true Thai curry in Nice. For dessert, we had the pancakes with carame-

lised banana, served with vanilla ice cream and raspberry jam. The fluffy pancakes mixed with the sweet, cinnamon glazed banana were sim-ply a delight.

Throughout our meal, we were often ap-proached by the chef and asked if we were happy with our dishes. It is a friendly, genuine desire to please that is rarely found in busy sum-mer restaurants. And it made us feel as though we were more guests in his home kitchen than paying customers at his restaurant.

The three course menu, available only on Thursdays, is 20€. On Monday, Tuesday, Fri-day and Saturday a full menu is on offer, and includes the Un Amour “super” burger, with double house-made beef patties, fresh mayon-naise, BBQ sauce, mozzarella and a special ingredient … maple syrup! For quick lunches, there are bruschetta’s and a club sandwich. And for those Sunday morning hangovers, you simply must try the brunch. For just 10.50€ you get a hot drink, fresh fruit cocktail, a small fry-up, and pancakes for dessert!

There are two wine varieties to choose from: a Côte de Provence Château de l’Escarelle rang-ing from 3.50€ to 4.50€ a glass, and around 22€ a bottle; and also delicious Corsican wine, Ile de beaute Tendance, with a choice of Char-donnay, Merlot or Rosé.

To top it all off, you are surrounded by the cap-tivating photography of Natalia Mlodzikows-ka. In the end, Franck Ruault manages to fulfil his desire that as a customer, you really don’t want to leave. And when you have to, you’ll be plotting your next date of return!

I remember the first time I saw the price of sushi in Nice, I think I stopped breathing for a little while. It was disappointing to see that people who wanted to eat healthy had to fork out a fortune for the privilege. Then, By Sushi hit the scene, and voila … that little Japanese delight was back on the menu!

With more than 120 different varieties of sushi available, By Sushi has already established it-self as a major player in the Japanese restaurant scene. Couple that with a comprehensive web-site and online ordering … and By Sushi appears to have thought of everything.

So how different can By Sushi really be? Well, there are the traditional dishes including Sushi (rice topped with fish), Maki (nori rolls wrapped around rice and other fillings), Sashimi (sliced raw fish) and Temaki (cone-like nori rolls). Then there is a wonderful array of colourful Maki … where nori (seaweed) paper is replaced with ei-ther cabbage, egg, salmon or a rainbow of soya sheets. The Maki Printemps selection is impres-sive in presentation, texture and flavour.

There’s also a French influence to the By Sushi menu, with tartare of salmon or tuna filled nori (4€ for 2 pieces). Even the desserts are unique … Maki sensations are comprised of a sweet crépe wrapped around creamed rice and filled with ei-ther chocolate or red fruits (5€ for 4 pieces).

You can expect to pay 3.50€ for 2 pieces of

salmon sushi; around 4€ for 6 pieces of Maki; 11.50€ for 12-14 pieces of sashimi; and around 5€ for 6 pieces of colourful maki. Menu options are available, for example the By California menu gives you six tuna rolls, six salmon and six prawn rolls, with salad or soup for 12.50€. Similarly, 18 pieces of Maki will set you back just 11.50€.

Return customers online are rewarded with fidelity points that can be transferred to dis-counts or accumulated for gifts. Their web-site - bysushi.fr - is in French, but is easy to navigate.

Feature ArticleIs the Global Financial crisis as destructive as we thought it would be? Or is it a “Millennium Bug” scenario, where our fears surpass reality? And what will come of the great G20 summit in London and the promise to reform the financial system? Well it appears Europe is on the path to recovery, and France could be leading the way.

While the impact of a financial crisis includes a drop in tourism and real estate, credit reduction and an overall “freeze” on spend-ing, there is some good news to come out of France recently.

Unemployment actually shrank in June – the first reversal in ris-ing joblessness since April 2008. Meanwhile, France enjoyed the largest rise in consumer spending since January. Sales of manufactured goods rose 1.4% month-on-month. According to analysts, the shopping spree is a sign that the second largest economy in the euro zone is moving closer to recovery.

And it appears the rich are resisting the recession, with French luxury goods group Hermes reporting an increase in revenue of 12% in the second quarter. Overall, sales were up 5% in France.

And there’s good news across the borders of France as well, with both Germany and Italy reporting signs of economic recovery and a rise in consumer confidence.

French carmaker Renault has reported a 16.5% decrease in sales in the first half of the year, but the company appears far better positioned than those in the United States. Unfortunately, that means little to a group of angry French workers at a bankrupt car-parts company, who have threatened to blow up their factory if they do not receive compensation for being laid off. The work-ers said they’ll detonate gas canisters if they aren’t paid 30,000€ each by the company’s biggest clients, Peugeot and Renault. We are unable to report whether the group actually followed through on their threat, as this article went to print before the workers’ deadline was reached.

As many businesses in Nice will tell you, tourist numbers are significantly down on last year. Fewer families are eating out, and we are seeing more “credit crunch menu’s” and low priced meal deals. Fortunately, a tax reduction of 14.1% for restaurants has helped reduce the cost of eating out and eased the burden on service providers.

So as Europe edges towards a healthier economy, what are world leaders doing to ensure this never happens again? Well the G20 summit in London has promised reform of the financial system. Heads of state and government representing 85% of global GDP agreed on the principal that no products, person or place would

again avoid supervision or regulation. While most of Europe has ac-cepted the conditions, countries like Luxembourg, Belgium, Switzer-land and Liechtenstein have acknowledged the principal but are yet to put the right systems in place.

Most importantly, today’s debts are tomorrow’s taxes, and France’s Economy Minister Christine Lagarde is warning that the financial cri-sis will be felt for many months and years to come. In fact, some ana-lysts say it could be 2020 before the world fully recovers.

H1N1 pandemic – The World Health Organisation reports that the number of human cases of pandemic (H1N1) 2009 is still in-creasing substantially in many countries, even in those that have already been affected for some time. In a July briefing, WHO said that the 2009 influenza pandemic has spread internation-ally with unprecedented speed. In past pandemics, flu viruses have needed more than 6 months to spread as widely as the new H1N1 virus has spread in less than 6 weeks. The majority of cases are still occurring in younger people with a median age of 12 to 17 years. Some reports suggest that persons requiring hospitalization and patients with fatal illness may be slightly older. Risk factors include existing cardiovascular disease, re-spiratory disease, diabetes, cancer and asthma. Signs of H1N1 are flu-like and include high fever, cough, headache, muscle and joint pain, sore throat and runny nose, and sometimes vomiting and diarrhoea. Countries have even stopped confirming cases through laboratory testing, as this is putting too much strain on the system. Instead, they presume that 80% of all flu cases are of the H1N1 strain. A vaccine is expected to be released globally in August, following early trials in Australia.

In keeping with La Perle’s glamor-ous persona, Thursdays are dedi-cated to the title “Shoot me I’m Famous”. A professional photog-rapher is assigned the task of tak-ing pictures of singles or groups against the backdrop of old school 80’s and 90’s music. Musée PicassoChateau Grimaldi became “Picasso Museum” on 27 December 1966. Picasso stayed there from mid-Sep-tember to mid-November 1946 where he produced a great deal of work and donated 23 paintings and 44 drawings to the town of Antibes. From 1952 on-wards, many donations and purchases, including do-nations from Jacqueline Picasso in 1991, have greatly enriched the Picasso collection in the museum.

St-Tropez – Assumption Day celebrations, Saturday 15th. Starts at 4pm with a helicopter and other demonstrations, followed by a fireworks display at the citadel.

Valbonne –Festival of St Roch, Friday 14th – Sunday 16th. Celebrating the town’s traditions and patron saint, with a costumed procession, blessing of the animals, live music and entertainment.

Vallauris – Festival St-Sauveur, Thursday 6th – Monday 11th. Five days of festivities celebrating the local saint with a costumed procession from the Eglise Ste-Anne starting at 8.30pm and ending

with the blessing and burning of a pine tree.Pottery Festival, Sunday 9th. Local potters and ceramicists get together for a demonstration of

Villefranche-sur-Mer - Sale Day, Friday 14th. An all day market selling vinyl records, CD’s and DVD’s. From 9am-8pm at the Esplanade de l’Octroi.

Liberation of Villefrance-sur-Mer, Saturday 29th. Marking the 65th anniversary of the 1944 liberation of the town. Starts at 3.30pm with a procession of soldiers in uniform and military ve-

INGREDIENTS(Serves 4 people)

2 chicken breasts (poulet)2 cups of assorted of wild mushrooms½ cup red wine½ cup crème fraiche 50 grams butterOlive oil4 leeks (cut in half, sliced and washed thoroughly)200 grams French beans (haricot vert)2 spring onionsCracked black pepper & salt2 cloves garlic, diced½ bunch flat leaf parsley chopped

Pan-fried chicken breasts topped with a wild mushroom ragout, served with braised leeks and French beans.

Make the most of the delicious wild mushrooms that are in season this month. You can find some fantastic varieties at the markets. Leeks are also sweet and full of flavour this time of the year, as are green beans. This

is an easy dish to assemble, but is full of flavour!

METHODPan-fry the chicken breasts until golden in colour and finish off in the oven. This will take approximately 10 minutes on 180 degrees Celsius, depending on the thick-ness of the chicken.

Remove any dirt from the mushrooms by wiping them with paper towel. Thinly slice the mushrooms and sauté in a little olive in a pan with the garlic for approximately 4-5 minutes. Add the red wine and reduce the mixture by half. Meanwhile, in another saucepan, melt the butter and sauté leeks and beans until both are tender. Season with salt & pepper.

Finally, add crème fraiche to the mushroom mixture and cook for a further 4-5 minutes until sauce thickens. Season with salt and pepper and finish with the finely chopped parsley.

PLUM CRUMBLE

INGREDIENTS(Serves 2 people)

12 Red plums4 cl whiskey160 grams butter1 tbs brown sugar200 grams plain flour 4 tbs caster sugar

METHODHalve the plums and remove the pip. In a saucepan, melt 40 grams of butter and sauté the plums for approximately 5 minutes. Then add the whiskey to the pan and flambé on a high heat; this will take around 3-4 minutes. Add the Brown sugar and simmer for a further 3-4 minutes. Set aside and let cool.

In a bowl, rub the remaining butter, flour and sugar to-gether to form a breadcrumb like consistency. Spoon the plum mixture into an ovenproof dish, sprinkle with the flour mixture and place in a pre-heated moderate oven for 30 minutes or until the top is golden.
