herbs aNd spices: Sage

Sage is a strong herb with silvery green leaves. it is in the same family as mint. Fresh leaves tend to have a more pungent and mildly bitter flavor than dried leaves. Sage originated in the Mediterranean and grows throughout europe and north america.

NutRItIONSage is a source of calcium, potassium, magnesium, zinc, vitamins C, and B. it is said to have some antiseptic and antibiotic properties and may reduce anxiety. Sage is safe in the doses usually used in cooking. however, medicinal doses of sage should not be given to young children and pregnant or breastfeeding women.

SELECtION aND StORagESage is easy to find fresh and

dried at most grocery stores. Store dried sage leaves in an airtight container in a cool, dark place. this will help them last much longer.

PREPaRatIONFresh sage leaves should be removed from their stems before use. Sage is often used in fall dishes. it goes well with foods such as turkey, chicken, butternut squash, and pasta.

FuN FaCtS Sage has been used in cooking and medicine for hundreds and possibly thousands of years.

one folk tradition used to say that eating a small bit of sage each day during May can lead to immortality.

1 butternut squash, about 2 cups cubed 1 carrot, peeled1 celery rib, chopped1 small onion, chopped2 garlic cloves, halved4 sage leaves6 cups fat-free chicken or vegetable broth1/2 cup 1% milkSalt and black pepper, to taste

peel the squash and remove the seeds. Cut into medium-sized cubes. in a large heavy pot, combine the squash, carrots, celery, onion, garlic, sage and broth and bring to a boil. Cover and simmer on low heat for about 40 minutes until squash is tender. Discard the sage and puree the soup using a blender or immersion blender. add milk and adjust the salt and pepper to taste and serve. Makes 8 servings for 3-5 year olds at lunch/dinner.

HEaLtHy MaSHED POtatOES4 medium potatoes, sliced 1 large head cauliflower, chopped Fresh or dried rosemary1 15-ounce can cannellini beans, rinsed and drained 3/4 teaspoon garlic powderSalt and black pepper, to taste1/2 cup low-fat milk

put the sliced potatoes and chopped cauliflower in a large pot full of boiling water. add a couple sprigs fresh (or a few shakes dried) rosemary. Boil until soft. Drain the potatoes and cauliflower. Let them cool for a few minutes. in a large bowl, use a blender, immersion blender, or mash by hand to blend together the potatoes, cauliflower, and beans. add the garlic powder, a few more shakes of dried rosemary, salt and pepper to taste, and milk, if desired. Mix and enjoy! Serve warm. Makes 24 servings for 3-5 year olds at lunch/dinner.

HEaLtHIER gREEN BEaN CaSSEROLE1 medium onion, finely chopped 1 teaspoon garlic, chopped8 ounces mushrooms4 cups frozen green beans 1 cup plain low-fat greek yogurt1 teaspoon cornstarch1 teaspoon salt1/2 teaspoon pepper1 tablespoon minced dried onion1/2 cup grated parmesan cheese1/2 cup bread crumbs

preheat oven to 350 degrees. Spray a large baking dish with cooking spray, and set aside. Cook the onions, garlic, and mushrooms in 1/2 cup water, stirring occasionally until the water is completely evaporated. remove onions and mushrooms from pan and place in a medium bowl. thaw the green beans in the microwave for 5-10 min. add green beans to the bowl with the mushrooms and onions. Let cool to room temperature before adding sauce mixture. in a small bowl, mix the greek yogurt, corn starch, salt, and pepper to make the sauce. add sauce to the green beans, and toss until everything is well coated in the sauce. add everything to the prepared baking dish. Mix the dried onion, cheese, and bread crumbs in a small bowl, and sprinkle evenly over the top. Bake uncovered for 35-40 min or until topping is golden brown. Serve warm. Makes 18 servings for 3-5 year olds at lunch/dinner.

Spread softened cream cheese on one slice of bread and cranberry sauce on the other slice. add the turkey, lettuce, and tomato to complete the sandwich. if you would like, you can also add sprouts, cucumbers, or red onion. Slice the sandwich in half. Makes 2 servings for 3-5 year olds at lunch/dinner.

20 skewers, divided40 grapes*5 ounces cheddar cheese, cut in about 40 small cubes*1/2 red apple, cored and cut into 4 slices1/2 orange, cut into 4 slices1 large pumpkin1 pear2 raisins*1/2 red pepper, cored and cut into 2 slices

First, make the turkey’s feathers by alternating 4 grapes and 4 cheese cubes on 10 of the skewers. then, stick skewers into the sliced apples and oranges. arrange the large and small “feathers” by sticking the cheese and grape, orange, and apple skewers into the pumpkin.

use the last two skewers to attach the pear to the pumpkin as the head. add 2 raisins as eyes, a small piece of cheese as the beak, and the red pepper slices as the feet. Serve each child 2 cheese and grape skewers. Makes 5 servings for 3-5 year olds at snack.

Forgetfulness, fidgeting, hyperactivity, and difficulty sitting still are normal behaviors for children of all ages, but they also could be signs of attention deficit disorder (aDhD).

aDhD is a disorder that affects many school-aged children. Children with this disorder often have trouble focusing, settling down, and following directions.

tHERE aRE tHREE tyPES OF aDHD:

HyPERaCtIVE/IMPuLSIVE:the child tends to act hyper and impulsive, but can pay attention and follow directions without difficulty.

Common Symptoms: excessively talks Fidgets and has difficulty sitting still Climbs and runs at inappropriate times unable to play quietly interrupts others

INattENtIVE:the child is not overly active and does not disrupt activities, but has difficulty paying attention to details and following instructions. this type of aDhD is often less noticeable.

Common Symptoms: easily distracted has trouble paying attention ignores people Does not follow directions avoids activities that require long periods of thinking Loses things

COMBINatION: the most common form of aDhD includes all three types; hyperactive, impulsive, and inattentive.

MytHS aBOut aDHDthere have been many debates avout the diagnosis of aDhD and how it affects the child who suffers from it. here are a few common myths and their explanation.

Myth #1: all children with aDHD are hyper.Some children may suffer from hyperactivity, but many others have difficulty paying attention without acting hyper. Children who suffer from inattentive aDhD may act absent-minded or indifferent toward activities.

Myth #2: Children with aDHD can never pay attention.in many situations, children with aDhD are able to concentrate on activities that they enjoy or that interest them. they may have trouble focusing on activities they find uninteresting or repetitive.

Myth #3: Children grow out of aDHD.aDhD often extends into adolescence and adulthood.

Myth #4: aDHD only affects boys.Boys and girls are equally likely to have aDhD. however boys tend to be diagnosed more frequently.

Myth #5: Children with aDHD could control their behavior if they wanted to.Children who suffer from this disorder may be doing their best to behave, but they are often still unable to concentrate or sit still. it may appear as though they are being disobedient, but that does not mean that they are able to control their behavior in that moment.

Healthier Beverages in Child Care

Many consider the importance of providing healthy foods for children to eat, but paying

attention to what they drink is just as important!

INFaNtS (0-11 MONtHS)Breast milk and iron-fortified infant formula have all the water healthy babies need to grow and thrive. other drinks are not needed and may even be harmful. they can quickly fill babies’ small stomachs and prevent them from being hungry for other foods. it is important to wait until babies turn 1 year old before giving them cow’s milk. Cow’s milk has proteins that are hard for babies’ stomachs to breakdown.

SerVeBreast milk and iron-fortified infant formula, or a combination of both

aVoiDwater, juice, sugary drinks, and cow’s milk before 1 year of age

CHILDREN (1 yEaR aND OLDER)Milk and water are the best drinks for young children and adults alike. Limit drinks with lots of sugar like sodas, flavored milk, and fruit drinks. even drinking too much juice can be harmful. Juice is one of the top sources of calories in toddlers. Juice has been linked to unhealthy weight gain. Serve fruit instead of juice whenever possible. the food program no longer reimburses for infant formula after a child turns 12 months old, but there is a 1 month grace period. Breast milk is still accepted as an alternative to fluid milk after 12 months.

SerVe

Milk: provide fat-free (skim) or low-fat (1%) milk to children 2 and older.

Water: offer water to children throughout the day, particularly during active play and the warmer months.

Juice: it is suggested to serve 4-6 ounces of 100% juice no more than once per day.

aVoiD Sugary drinks like soda, sports drinks, flavored milk, and fruit drinks that are less than 100% juice.

tIPS add herbs, sliced fruits, or even vegetables to add flavor to plain water. great options include slices of watermelon, cucumber, strawberries, lemons, or oranges.

if children are having trouble switching from whole milk to 1% or fat-free milk, transition gradually. alternatively, try mixing whole milk with fat-free milk. gradually increase the amount of fat-free milk over time until the child adjusts.

Directions1. Draw or cut out an ear of corn out of the construction paper. use yellow for the center and green for the two outer leaves. now glue or staple those three pieces together to form the corn on the cob. 2. put a layer of glue all over the yellow construction paper piece and have the child lay the cereal on top of the glue, until it’s completely covered.3. Set aside to let it dry completely.

q tHINk POSItIVEtake a moment to think about some of your favorite parts of the day. take turns having each child choose three of the best things about their day.

w PLay a gaMEhave each of the children sit in a circle. Select one child to begin by saying, “i am grateful for (fill in the blank)”. Move around the circle and instruct each child to come up with something that has not already been mentioned. each person has five seconds to think of something. it could be a family member, their favorite food, or even a stuffed animal!

e CREatE a tHaNkFuLNESS JaRget a large jar and allow the children to decorate it with stickers or clippings of photos and construction paper. place the jar in a place where the children can access it and place a notepad and pen next to it. Leave the jar our the week before thanksgiving and have children and parents write down things that they are thankful for. after the week, choose a day to read each item in the jar.

Most people have experienced a runny nose, cough, or congestion. the challenge is determining if these symptoms are from a cold or an allergy. unfortunately, it is often difficult to distinguish between the two. here is some information that may help.

CoLDSColds are an infectious disease caused by a variety of viruses and germs. when one of these viruses invades the body, the immune system attacks it. Some of the symptoms of this are a runny nose, congestion, and/or coughing.

a cold can be caused by as many as 200 differentviruses, most of which are contagious. the cold can be shared simply by an infected person sneezing or coughing, then shaking hands with a healthy person. Colds symptoms usually last about 2 weeks. Curing a cold is impossible. antibiotics are ineffective against most of the viruses that cause a cold. althoughthere is no cure, the following suggestions may help ease some of the symptoms:

try to get as much rest and relaxation as possible. it is important to rest so the immune system can fight off the viruses. Drink plenty of fluids and keep hydrated. Being dehydrated when you have a cold can intensify the symptoms and make you feel worse.

aLLergieSallergies are caused by an overactive immune system and can trigger coughing, wheezing, and itching. For an unknown reason, the body mistakes harmless substances such as dust for germs and attacks them. the body releases chemicals called histamines, just as it does when fighting a cold. this can cause swelling in nasal passages, a runny nose, coughing, and sneezing. unlike colds, allergies are not contagious. treating allergies can be simple, the following suggestions may help:

Most allergies are managed with prescriptions or over-the-counter medicines. Dehumidifiers may help if the filter is kept clean. using a different laundry detergent can diminish the symptoms if perfume triggers your allergies.

every person reacts differently to allergies and should always consult with a healthcare provider about testing and treatment.

although there are some differences, cold and allergysymptoms overlap in significant ways. the most important difference is that colds will run their course in 14 days or less. if symptoms persist longer than 2 weeks, see a healthcare provider. this may be a sign of another problem, possibly something more serious. the chart below lists the most common symptoms. this chart should only be used as a reference.

Who Should Be gluten-free? Sorting out Fact From Fiction

MOSt gRaINS HaVE gLutENfalSegluten is a protein that is found in wheat, rye, and barley. grains such as brown rice, oats*, corn, wild rice, quinoa, and buckwheat do not have gluten.

gOINg gLutEN-FREE COuLD BENEFIt EVERyONE’S HEaLtHfalSethere is no evidence that going gluten free will benefit people who do not have a diagnosis of Celiac Disease or non-Celiac gluten sensitivity. Many grains with gluten such as whole wheat bread provide nutrients that are important for child growth and development. however, most people can benefit from eating fewer desserts made out of grains like cakes and cookies.
