David “Dawg” Grisman, a frequent collaborator with the Jerry Garcia, and John Sebastian of “Loving Spoonful” fame will play together at the Westhampton Beach Performing Arts Center Saturday. Grisman sat down with Indy Editor Rick Murphy to talk about his musical career and Rick’s lack thereof.

RM: Both you and Jerry Garcia came from musical households. Was there some kind of bond between you because maybe you were both a little further along in music theory and history than some of the rock stars of the era?

DG: We both had a love for Bluegrass music and Bill Monroe.

RM: Let’s talk about John for a while. I didn’t realize you two crossed paths so long ago. Just tell the readers a little about those days if you would and your album with Sebastian.

DG: I first met John at New York University in 1963 when the Greenwich Village folk revival was in its heyday. Our first recording together was as members of the Even Dozen Jug Band, which featured Maria Muldaur, Stefan Grossman, and others.

We then sort of lost track of each

After this mutually enjoyable evening of spontaneous music, it became obvious that we should collaborate on a project and the result was “Satisfied” - a great collection of acoustic duets featuring traditional folk tunes and classy instrumentals.

RM: Who are some of the more diverse musicians you’ve played with that maybe the general public doesn’t know about?

DG: Besides my collaborations with Garcia and Stephane Grappelli, I love working with the great guitarists Martin Taylor from Scotland or Frank Vignola from New York.

I am also doing some select duo dates with my dear friend Del McCoury.

RM: The mandolin is of course widely used in bluegrass and country. You seem to have the ability to get more out of yours. I particularly like when you keep rhythm and throw in fill leads almost simultaneously. I guess it’s fair to ask how much time you put in practicing and did it come easy?

DG: Nothing comes easy, but I love to play the mandolin and I love all kinds of music.

RM: They say Jerry could remember endless verses of obscure songs. “Jenny Jenkins,” which you two performed, is one that comes to mind. Are you like that? Do you have any idea how many songs you know?

DG: Not really, but most of the time if I have heard it before I kind of remember what to do.

RM: It’s often been repeated that Vassar Clements, when asked about his band mates in Old and In The Way, answered, “Them boys smoke a lot of dope.” I know some of you boys surely did, but did Vassar really say that?

DG: Not as far as I remember. He did say that working with OITW was the most fun he had ever had on stage.

RM: I’ve seen your movie, of course, and you seem to have a normal household. You’ve managed to stay out of the tabloids, avoided scandals and jail, and live a relatively normal family life. Is that true and if so how do you – and did you – stay grounded?

DG: I think most of those people are entertainers, I don’t see that happening with dedicated musicians.

RM: Growing up in a repressive environment I always believed I would always be open to all forms of music. The truth is I don’t like some of the new stuff I hear, so maybe I’m just like my father. How about you? Anything out there appeal to you?

DG: I believe there are only two types of music: good and bad.

Breast Cancer AwarenessOctober is National Breast Cancer

Awareness Month. Southampton Hospital and the Coalition for Women’s Cancers at the hospital have planned a number of events to increase awareness and raise funds to support local breast cancer survivors.

Through all of October at Sabrosa Mexican Grill in Water Mill, the total bill amount for the 100th customer of each day will be donated. Deborah Thompson Day Spa in Montauk will donate 10 percent from all treatments during the month of October. The sale from 100 percent of pink ribbon bagels at Panera Bread in Hampton Bays will benefit local breast cancer awareness organizations.

On October 23 from 5 to 7 PM Calypso St. Barth in East Hampton will donate a percentage of sales to Lucia’s Angels. Free Makeovers for breast cancer survivors will be held at Macy’s in Hampton Bays on October 24 from 10 AM to 7 PM. Penny Marshall became one of America’s favorite comedians playing LaVerne on the hit TV show “Laverne and Shirley.”

Even before then, though, she was getting raves for her recurring guest spots on shows like “The Odd Couple,” “Mary Tyler Moore,” and “Happy Days.”

But her ditsy TV persona was by no means her defining feature. She achieved equal success as a movie director.

A look at her pedigree reveals deep show biz roots. Her mother, Marjorie Ward, was a professional dancer and ran a dance school. Her father, Tony Masciarelli, is an actor and director. Her brother, Garry Marshall, is a writer and director and worked on many of the shows his sister appeared on.

Carole Penny Marshall – she was named after Carole Lombard – left “Laverne and Shirley” in 1983. She was nominated for three Golden Globes during its seven year run.

Marshall wanted to direct and in 1988 her first major motion picture broke new ground. Big, starring Tom Hanks, became the first film directed by a woman

to gross over $100 million. She followed up that effort with Awakenings in 1990, earning an Academy Award nomination for Best Picture. Other hits include A League of Their Own and Bewitched, which she produced.

Marshall was married to Rob Reiner for 10 years, divorcing in 1981. Oddly, before their romance both tried out for roles in “All In The Family.” She lost out to Sally Struthers, who played Gloria, Archie Bunker’s daughter. Reiner got the job as Gloria’s husband, “Meathead.”

Marshall is no stranger to the Hamptons and is especially fond of East Hampton.

The script, faithfully culled from Gillian Flynn’s international bestseller, is diabolical and edgy, and the acting is superb. Rosamund Pike (Die Another Day) landed the plum role of Amy Dunne and nails it. Neil Patrick Harris makes the transition from small to big screen with aplomb.

There are those critics who flinch from Fincher’s perverted style (think Se7en) but this film is going to be a box office smash and a major player when the Oscar nominees are announced. One complaint: it does go on with its bad self, so hit the john before the show.

Ingredients1 c walnuts

1 1/4 c powdered sugar1 1/2 egg whites

4 1/2 tbs cocoa powder1/4 tsp cream of tartar

1/4 tsp salt3 pints raspberries (washed)

1/2 c granulated sugar2 egg yolks

1/4 c heavy cream1 1/2 tbs cornstarch

MethodBegin by making your raspberry

cream filling. Cook the raspberries

with the sugar in a small sauce pot over medium heat covered for about 15 minutes. Blend and strain mixture.

Return raspberry sauce to the pot. Over a double boiler, whisk the egg yolks until they are pale in color. Whisk together the cream and cornstarch then add the egg yolks and cream mixture to the raspberry sauce. Whisk vigorously over medium heat until thick. This will take about five minutes.

Cool in the refrigerator for about three hours.

Set your oven to 350. In a food processor pulse the walnuts, powdered

sugar, and cocoa powder until fine. Strain the mixture to remove any large pieces.

In a separate bowl, whisk the egg whites and cream of tartar to soft peaks. Fold the egg whites into the dry ingredients, gently, being careful not to

deflate the egg whites. Spoon the mixture into half dollar

sized balls on a baking sheet. Cook for eight minutes at 350.

Remove and allow to cool completely before spooning raspberry cream in the middle of two cookies. Enjoy!

trendy crock to make your own at home can be cost prohibitive . . . unless you know Nick Stevens.

An East Hampton High School graduate who grew up in Springs (and, yes, this writer’s nephew) Stevens

has been a health foodie all his life. With a career in finance, he’s also interested in figuring out how to get the biggest bang for the buck with any project.

His quest for a solution to the conundrum of DIY fermentation on a budget took close to three years, but this week he debuted a Kickstarter campaign for the Fermentium – an affordable, multipurpose crock that will appeal to gadget lovers, penny pinchers, and gourmets alike.

“I had a friend who made some sauerkraut and wanted to try it myself,” Stevens said from his South Williamsburg pied a terre. After researching tools available for home fermenting, he found some crocks on the market, but they all cost over $100 and were unattractive. “I figured there had to be a better way.”

Working for renown lamp designer Chris Spitzmiller (His creations can be found in the oval office and locally at Mecox Gardens.) Stevens developed an affinity for household items that are both beautiful and functional.

The search for a designer for the Fermentium led Stevens to Justin Crocker, a student at Pratt Institute for design. “I think he’s gonna go places,” Stevens said. The pair teamed up and Crocker turned Stevens’ “crude sketches” into an aesthetically pleasing design.

With the design phase articulated, Stevens next turned keen research skills to seeking small business assistance, and was surprised and gratified to discover how much help is available for start-ups. He’s entered in a business competition at Brooklyn Library and has found mentors through the Department of Labor. “It’s so great to see how much exists for people who want to start their

own companies,” he said. “People are doing really nice things that many don’t know even exist.”

As he relayed a path that led to this week’s milestone – the debut of a Kickstarter campaign – Stevens reported he was turning cabbage into sauerkraut as we spoke. “Everybody would make this stuff at home if they knew how easy it is,” he said.

All you do, he explained, is add the vegetables, salt, spices and water to the Fermentium. Sleek and sturdy, the Fermentium is crafted of stoneware, with grooves designed to help you lift it when it’s full and a square shape to make it easy to store when it’s not in use. But it could be used a lot, and not just for making pickles or kimchi or any array of fermented foods. It’s pretty enough to use as a vase, cookie jar or even punch bowl.

And did we mention economical? Make one or two batches of signature pickles and you’ve already recouped your cost. Future creations cost as much as you want to spend on quality fresh ingredients. And you’re not sending any dough to the electric company, either, since the Fermentium operates on the simple reaction between the vegetables and spices.

Pickles and kraut and kimchi offer a taste that’s . . . sauer, but Stevens has drawn inspiration and gotten assistance from an array of sweet and generous professionals who, he notes on his fermentium.com website, all “contributed to this project completely for free.”

Last but not least, he credits Coleen Curtin: “My Mom, she named me and also came up with the name the 'Fermentium.' Good one!”
