EditorialCREATING SPECIALITY CHOCOLATES
It has been 30 years since we set up our chocolate craft workshop, right in the heart of the Ile de Ré, in Saint-Martin de Ré.
We remain as passionate as ever about artisan chocolate making. We have created local specialities made with quality local produce like Charentes Poitou PDO butter and Ile de Ré
sea salt flakes.
All our products, chocolates, toffees, caramel and chocolate spreads or sauces, bonbons… are all made with eco-friendly sustainable and ethically-sourced ingredients.
This is why we got involved in supporting the cocoa production sector and in protecting the know-how in the production areas.

CommittedThe quality of the cocoa beans we purchase is what makes our chocolate so special.
This is why we are very much involved in cocoa sustainable production and committed to the protection of this natural resource. As a member of the Coffee and Cocoa Interprofessional Council in Cameroon, we’ve been supporting the « New Generation » programme.
This council provides funds for a young people training scheme, by giving them the means to set up as smallholder cocoa producers, thus ensuring ethical and sustainable cocoa production in Cameroon.
Cocoa is a delicate and sensitive crop requiring natural and traditional farming. It is therefore essential that this type of farming should be perpetuated and maintained in the best conditions.

In the heart of the Ile de Ré
Established on the Ile de Ré for two generations, we have been crafting chocolates as well as salted butter caramels from the Ile de Ré. With one of our workshops situated right in Saint Martin de Ré’s town center and another production workshop in La Rochelle, our passion for chocolate and love of craft shines through in everything we do.
We pride ourselves in offering a wide range of chocolates and toffees that will give you the invaluable experience to relish in the meltingly delicious world of chocolate.

Ingredients for Quality
We have selected our local suppliers both for the high quality of their products and to sustain local economy. What makes our chocolate so special is also the quality of the complementary products we use.
ILE DE RE SALT FLOWERWith a more delicate yet deliciously salty flavour,
only a small quantity is required to enhance any food. Salt flower is a top notch
ingredient that gets quickly and thoroughly absorbed in food.
PDO BUTTER(PROTECTED DESIGNATION OF ORIGIN)
CHARENTES-POITOUWe use PDO butter that is entirely made from fresh cream from the Charente, Charente Maritime, Deux-Sèvres, Vienne and Vendée regions… Cream undergoes a slow process of
biological maturation. This is what gives our PDO butter Charentes-Poitou its typical texture and a taste of its own.
Did you know ? As this butter does not melt as easily as other types of butter, it can be easily creamed into our mixtures.
