1 lb chicken breast2-3 potatoescorianderthai curry powder (2tbs)1 bay leafoptional: 1stick cinnamon, 2 shallotschilli/cayenne
1.Fry the curry powder, bay leaf, chinnamon and chilli for 1-2 min2.Add 2 Tbsp. oil, plus the shallots, gar-lic, and galangal or ginger3.Add the chicken and the potatoes, bring to boil.4.Simmer for 30 min5.Sprinkle over the fresh coriander, serve with plenty of Thai jasmine rice
