The Viognier grapes come from the Minervois. The bunches are harvested very early in the morning in order to keep the aromas of the fruit. Alcoholic fermentation for Chardonnay starts in vats after a cold settling of the juice, and gently ends in barrels. Malolactic fermentation is not processed for all the barrels. As regards Viognier, the cold-settled juice is transfered into barrels where alcoholic fermentation takes place. Malolactic fermentation starts in barrels before it is stopped early in winter. Catherine Delaunay then selects the best wines which are carefully bottled. This wine has a nice golden colour with green tints. It offers praline and buttery notes, crystallized lemon and orange peel aromas in a very long and round palate. Serve at 12°C with white meat, seafood, fish with a creamy sauce, asparagus mousse, eggs with white truffle, foie gras and also with a praline cake, frangipane, an apricot tart or an ananas crumble. Vinified and partly barrel-aged for 6 to 7 months by the French winemaker of «Les Jamelles» Catherine Delaunay, this Sélection Spéciale comes from old Chardonnay and Viognier vines cultivated in the southern French Languedoc.
