CAREER PROGRAMS

Career programs are offered as intensive 1 or 2 years of study to enter specific fields and industries. Each year is composed of 2 quarter-based levels lasting 9, 10, or 11 weeks depending on the Academic Calendar. Two semester-based master programs are also offered for those with prior professional experience, see below*. Optional 15-hour seminars as well as internships may be added to regular 1 or 2-year career programs.

SPECIAL CAREER PROGRAMS

A 4-week special event management program that takes place in Florence in the Fall and concludes with a practicum week of special events in NYC including the James Beard Foundation.

GRADUATE EXPERIENTIAL LEARNING IN HOSPITALITY

A 9-week summer graduate program open to culinary and hospitality graduates as well as practicing professionals.

Quarter Programs• Three 3-week short sessions combined into a full quarter of

study. Depending on the 1-week intersession breaks of the academic calendar, a quarter may vary from 9 to 10 or 11 weeks.

Short Programs• 3-week sessions offered year-round. They can be taken as a

single session or two sessions can be combined for a total of 6 weeks.

• Summer sessions, in addition to regular 3-week sessions, offer 1, 4, and 6-week programs.

Internship Programs• Non-credit internships combine a mandatory 3-week Italian

language session with an internship experience. Students can select the number of weeks for the internship length.

• For-credit internships can be added to a study abroad or career program.

4-YEAR PROGRAM IN HOSPITALITY MANAGEMENT

The 4-year curriculum prepares students for a career in hospitality and tourism management. It offers a choice of two academic concentrations: Management for the Hotel and Tourism Industry, Culinary Arts and Food Service Management.

ENRICHMENT PROGRAMS AND SEMINARS

Apicius offers non-credit enrichment programs throughout the year. They can be taken as single tours/lessons or longer periods, and feature Italian gastronomy and wine culture. Seminars are 1-credit all-day workshops on specialized topics that are open to the public and offered during our Fall and Spring intersession weeks.

CUSTOMIZED AND FACULTY-LED PROGRAMS

Apicius provides full support and services for the creation and implementation of customized and faculty-led programs for educational organizations and academic institutions.

Apicius International School of Hospitality is the only institution of its kind in Italy for its academics and creative learning labs - Ganzo, the School Restaurant, and Fedora Pastry Shop - that are open to the public and an active part of the institution’s experiential learning approaches. Founded in 1997, Apicius represents the hospitality studies division of Florence University of the Arts. All courses are taught in English and faculty members represent dynamic academic and professional backgrounds ranging from Michelin-starred chefs to international marketing and advertising managers that are active in the field. Transcripts from FUA’s University of Record are granted for all completed for-credit coursework. Apicius is the first school of hospitality studies in Italy to obtain the WACS recognition of quality culinary education.

Please note:

• Select Apicius culinary and hospitality courses are approved for transfer to the B.S. Culinary Arts and Food Service Management degree from Johnson & Wales University.

• Diplomas of professional qualification are issued from the Region of Tuscany for the 1-year programs in Baking and Pastry, Wine Studies and Enology, and Hospitality Management. In order to obtain the diploma, students must enroll in all courses related to a specific Career Program.

GANZO SCHOOL RESTAURANT AND CREATIVE LEARNING LAB

Apicius School of Food and Wine Studies as well as Hospitality students and faculty oversee the daily operations of Ganzo as part of their academic coursework. Ganzo features lunch and dinner from Monday through Friday throughout the year and Saturday brunches during the fall and spring seasons. Principles and practical applications of front/back of the house management, restaurant preparation, beverage management, and customer relations are practiced through experiential learning during their academic program of study.

Apicius Community Engagement Member Institutions (CEMI) Ganzo School Restaurant and Fedora Pastry Shop have been created to foster integration within the local community and economy in Florence. They are open to the public and their operations are a part of academic studies at Apicius in order to provide meaningful professional development for students.

FEDORA PASTRY SHOP

Fedora is open to the public from Monday through Friday. The selection of products is decided and prepared by the students under the supervision of the Baking and Pastry department faculty. Students are involved in all operations in baking and pastry production – ingredient selection and orders, food cost, European HACCP standards of hygiene control, product packaging, customer service and communications, and front and back of the house operations.
