ANZAC BISCUITS (FAMILY RECIPE PAST DOWN)
The ANZAC Biscuit is a sweet chewy Australian and New Zealand biscuit, made with
rolled oats, coconut and golden syrup. Created during WW1 to be eaten and sold at fetes
and public events to raise money for the war effort. ANZAC biscuits are made without eggs
due to the scarcity of eggs during and after the war. The term ANZAC is protected under
Australian Law and cannot be used without permission from the Minister for Veterans
Affairs. However there is a general exception for ANZAC Biscuits provided they remain
true to the original recipe and are referred to and sold as ANZAC biscuits and never as
cookies.
INGREDIENTS
1 cup plain flour
cup sugar
1 cup rolled oats
1 cup desiccated coconut
1/4lb margarine/butter
2 tablespoons golden syrup
1 tablespoon boiling water
teaspoon baking soda
METHOD
Place margarine, golden syrup, baking soda and water in saucepan and melt.
Combine flour, sugar, rolled oats and coconut in a mixing bowl. Add liquid to this
and form into stiff dough (If too dry add extra tablespoon boiling water). Roll into
small balls and press out onto papered tray with fork. Bake in slow oven for 20
minutes or moderate oven for 10.
