BACKGROUND Retailers might become a vital agent of change towards
sustainability due to their size, consolidation of the bargaining
power and strategic positioning at the intersection between food
producers and consumers.
2 Beatrice Kogg, IIIEE, Lund University EIPRO Study 2006, NAMEA Study 2006, WI 1998
Food is responsible for 20-30% of household
related environmental impacts. What can
retailers do to reduce this impact?
![Page 3: Annex 3 sustainable retail](https://reader034.fdocuments.in/reader034/viewer/2022051609/547c17f55906b55e798b46dd/html5/thumbnails/3.jpg)
THE AIM OF THE PROJECT
3 Beatrice Kogg, IIIEE, Lund University
To analyse how food retailers can
contribute to creating more sustainable
markets by:
Selecting which products
to put on the shelves of
their stores (choice
editing)
Stimulating suppliers to
adopt sustainable practice
and develop and provide
products that are better
from an environmental
and social perspective
Assisting customers in
choosing more
sustainable products and
reduce the impact
associated with food
consumption
