Bacardi 8 Años Rum is skilfully blended with Yellow Chartreuse, a French herbal liqueur, spiced orange &

vanilla. A mix of fresh and caramelised pineapple is then balanced with fresh lime and a touch of aromatic

bitters. Finished with flamed cinnamon, allspice and nutmeg and served in a hollowed out pineapple. 24

Signature COCKTAILS

FOREIGN LEGION 22A tip of the hat to Please Don’t Tell in New York City. This is a straight-up boozy number, with a very difficult balance to master. Bacardi 8 Años Rum is delicately stirred down with Aperol, Dubonnet Rouge and Manzanilla sherry. Finished with a touch of dark crème de cacao, rhubarb and orange zest, there are ample amounts of complexity waiting to be admired

THE OLD FRENCHMAN 19 A cheeky riff on a forgotten classic, the “Old Cuban”. Traditionally served with rum, we have taken a lighter approach and based this libation on premium French vodka. Grey Goose La Poire is shaken with fresh mint, a hint of elderflower and citrus. A measure of Sancerre marries these flavours together, and is then served straight up in a coupette.

ANANAS’ WORLD FAMOUS PIÑA COLADA 21 With our name and décor, it would be simply outrageous not to pride ourselves on our take of the much loved classic, the Piña Colada. Bacardi Carta Blanca Rum is mixed with fresh pineapple, lime, coconut water and pimento. This is topped with our secret homemade coconut cream and finished with toasted coconut.

DEVIL DOLL 21 A truly special in-house creation that has stood the test of time in our bar. Homemade spiced rum is shaken with cherry brandy, strawberry and chilli, balanced with fresh lemon and chocolate bitters. Served straight up with a cocoa rim and freeze-dried plum. PORCELAIN HEART 20 An all-time favourite of Ananas. Lychee, elderflower and rose are spiked with a healthy measure of Grey Goose Le Citron vodka. Balanced with fresh lemon and shaken to bring the drink to fruition. Served straight up with a bouquet of edible flowers.

SAGE & VICE 18 For a tall and refreshing offering, look no further. Hayman’s Sloe Gin is carefully matched with homemade sage syrup. Fresh lemon is added to balance, served Collins style with homemade orange blossom soda. Simple yet delicious, you may not be able to stop at just one…

PAIN KILLER 22 While we pride ourselves on making world class piña coladas, the Painkiller is an underappreciated rum libation which also champions the pineapple. Pusser’s Rum is vigorously shaken with fresh pineapple, orange and coconut. Served over ice and topped with a generous amount of nutmeg. Guaranteed to make any pain disappear!

SUZE HAS SPRUNG 20Light, refreshing yet delectably bitter and boozy. Bombay Sapphire Gin is stirred down with Lillet Rose, Aperol and Suze, a gentian based bitter. Finished with a touch of rhubarb bitters, grapefruit zest and served over a large block of hand chipped ice, perfect for those who still prefer a sharp drink in the warmer seasons.

ANANAS BELLINI 19 Our take on the classic champagne cocktail, the Bellini. We have carefully balanced the flavours of fresh pineapple, honey and vanilla, matching these with NV Marc ‘Initial’ Brut Champagne. The ingredients are then delicately tossed to blend and infuse the cocktail, resulting in a light, refreshing way to begin your Ananas experience.

RICARD One of the most popular aperitifs in France since its creation, Ricard is a pastis, or anise-flavoured spirit, with a closely guarded secret recipe dating back to 1932.Ricard has carefully chosen ingredients from across the

world, including star anise from southern China and liquorice from the Middle East. $10 FOR 30ML SERVE.

JEAN BOYER LOU SOU PASTIS

Jean Boyer has carefully hand crafted this artisanal pastis, with macerations of Chinese star anise, liquorice, herbs and spices. Lou Sou is refined in copper pot stills, displaying a herbaceous bouquet and notes of sweet almond and sage.

HENRI BARDOUIN PASTIS

An unparalleled blend of sixty five different herbs and spices, including wild thyme, tonka bean and grains of paradise. Henri Bardouin has distinguished this pastis through its rich flavour, complexity and elegance, with notes of cardamom and exotic spices. Perfect before, after and during your meal.

LILLET

An aromatised wine from the small village of Podensac, south of Bordeaux. A blend of Bordeaux wines with macerated citrus and quinine liqueurs. This aperitif has three expressions; Blanc, Rosé & Rouge, all delicately aged in oak casks. A traditional palate cleanser. $10 FOR 60ML SERVE.

SUZE

A quintessential aperitif of France. Suze is a classic bitter based on wild gentian root from the mountains of Switzerland & France. The bitterness on the palate is balanced with soft citrus undertones, ideal as a pre-dinner drink in a cocktail or simply by itself. (We recommend Suze with our homemade orange blossom soda.)

CHARTREUSE

A French herbal liqueur produced by Carthusian monks since the 18th century, based on the ancient manuscript for the “Elixir of Long Life”. To this day, only two monks have the full secret recipe of 130 plants, carefully protecting its integrity in the Chartreuse Mountains in Grenoble. Yellow Chartreuse is the milder expression, with sweeter flavours of honey and saffron at 80 proof. Green Chartreuse, which is naturally coloured, is 110 proof and displays an overtly herbaceous aroma, including notes of mint and caraway. (We

recommend exploring these with our homemade basil water.)

GÉNÉPI DOLIN

One of the more powerful, complex aperitifs, Génépi Dolin is similar in makeup to absinthe, based on alpine wormwood flower heads. Particularly floral and fragrant, with soft notes of violet and chamomile, and extremely herbaceous on the palate. $12 FOR 30ML SERVE.

FLOC DE GASCOGNE

A blend of Armagnac & fresh grape juice from the Cótes de Gascogne and Armagnac regions of France, with recipes dating

back to the 16th century. Floc de Gascogne d’Esperance has two expressions; the Blanc displaying notes of almond, jasmine

& honey, and the Rouge with deeper notes of black fruit, jam & dark chocolate.

COMTE DE LAURISTON POMMEAU DE NORMANDIE

A blend of fresh cider apple juice and calvados, this works perfectly as both an aperitif and digestif. Comte de Lauriston Pommeau is aged from three to four years in oak barrels, well over the minimum required. Beautifully balanced, displaying fresh apple aromas, hints of oak and moderate sweetness.

“Serious-minded persons omit fruit salad from ‘Old Fashioneds,’ while the frivolous window-dress the brew with slices of orange, sticks of pineapple, and a couple of turnips.” CROSBY GAIGE

Some would say this is the original cocktail, dating back to the early 19th century; ‘a potent concoction of spirits, bitters, water and sugar’. A straight-forward boozy drink that is all about championing its base spirit. Although this cocktail is of simple nature, its balance is particularly delicate and demands the highest quality ingredients. A serious drink for the spirit connoisseur.

Due to our French tendencies, we favour the use of quality Armagnac in our old fashioned. A strong measure of the 1985 Delord Armagnac is matched with fresh coffee and dark crème de cacao. These flavours are delicately married with a touch of Pedro Ximénez sherry and pimento bitters. Served with smoked spices and drunken cranberries.

Undeniably one of the world’s most popular cocktails, the Margarita’s origins are quite unclear, with stories dating back to 1938 at the Rancho La Gloria between Tijuana and Rosarito, Mexico. This cocktail exhibits the perfect balance between sweet and sour, and truly leaves you wanting yet another sip each time…

As with any great drink, the base spirit must be of the highest quality. We favour the use of Jose Cuervo Reserva Platino, with delicious notes of cooked agave, pepper and a light floral bouquet. With the addition of fresh blood orange, lime and a touch of agave, our signature serve is shaken and finished with a piment d’Espelette salt rim.

A bartender’s favourite with origins dating back to 1919… The Negroni developed from an even older classic, the Americano, with equal parts Campari and sweet vermouth, finished with a splash of soda water. Count Camillo Negroni, in his infinite wisdom, requested that his soda water be replaced with gin to strengthen his

preferred cocktail… A truly brilliant man.

SIGNATURE SERVE 24 With equal parts gin, Campari and sweet vermouth, one would imagine this drink would be particularly easy to mix. However the simplest drinks require finesse, passion and the correct choice of ingredients to create the perfect balance. We carefully stir down Martin Miller’s Westbourne Gin, at 90 proof, with Campari, Antica Formula and Dolin Suedois Bitter liqueur. Served over a block of hand chipped ice with a side of orange bitters and homemade rhubarb oil.

The official cocktail of New Orleans, the Sazerac, is no ordinary cocktail… Very much reminiscent of the Old Fashioned formula, yet very unique in its character with a rich history. Dating back to the 1850s, Aaron Bird began creating this cocktail in his Sazerac Coffee House, with bitters from a local apothecary, Antoine Amedie Peychaud, and cognac imported by previous owner, Sewell T. Taylor. The recipe has evolved in many ways over the years, from cognac to rye whiskey, absinthe to Herbsaint…

SIGNATURE SERVE 28

Our signature serve Sazerac is a marriage of Rittenhouse 100 Proof Rye Whiskey and Gelas Folle Blanche 18 year old Bas Armagnac. This particular Armagnac uses 100% folle blanche, the ‘crazy white grape’, extremely difficult to cultivate and particularly complex, displaying notes of dried apricot, honey and liquorice. This is stirred down and served over a sphere of Peychaud’s and Aphrodite bitters, slowly unravelling the flavours of Arabica coffee, cocoa nibs, cherry and cloves. Finished with a spritz of Parisian absinthe to bring your Sazerac experience to fruition.

Arguably one of the most well-known cocktails to this day, with origins dating back to the late 19th century. Its exact origin is unclear; however the marriage of gin & vodka with vermouth has taken many shapes and forms over the years. MARTINEZ 20 Created in the Occidental Hotel in San Francisco. This drink is particularly heavy on sweet vermouth, flipping the martini ratios most of us are familiar with on their head. Old Tom Gin is stirred down with Antica Formula vermouth, maraschino liqueur and Boker’s Bitters. Served straight up with an orange twist.

Today, the classic martini recipe is much heavier on gin & vodka, with a relatively small amount, to none at all, of vermouth. These can be served dry, wet or dirty, with a citrus garnish or olives, shaken or stirred

SIGNATURE SERVE 30

Our signature martini is the marriage of the Star of Bombay London Dry Gin and a good measure of La Goya Manzanilla sherry and orange bitters. This is shaken and served tableside with garnishes of orange zest and Spanish anchovies.

Closely related to the Manhattan, this cocktail is one of five named after the boroughs of New York City. While never quite achieving the same popularity, falling into obscurity after Prohibition, the Brooklyn has seen a resurgence in the cocktail world, and for good reason.

SIGNATURE SERVE 28 Our Brooklyn is based on High West Double Rye Whiskey, distilled in Utah. This is a blend of a high rye 2-year old, bringing feisty notes of black pepper and clove, and a 16-year old with high corn content, mellowing out the bite with vanilla and dried banana. This is carefully stirred down with Amer Picon, dry vermouth and maraschino. Served straight up with in-house brandied cherries and orange zest.
