CHAPTER I

Objectives and Methodology Objectives • To search the internet to get an overall idea about the present market

situation in order to create a business plan that informs MEDEP of how to compete in the sale of ginger, raw and processed in international markets.

• To find the international supply and demand for ginger predominately in India. • To calculate the market price for ginger in various international markets. • To find the main sources of ginger production. Analyse which current

suppliers are dominating the market and what their ginger products are and what strategies of competition they use.

• To gather information and opinion on how to package and price the product in the market and how to incorporate value-addition in production.

• To communicate with ginger producers and retail suppliers about where the growth potential is.

Methodology • Researched potential clients for Nepali ginger on the internet and put together

a resource directory of websites and addresses that may be valuable to entrepreneurs when production of village ginger increases.

• Put together a chart on the various ginger products available on the international market and where they are sold.

• Collect information on sale price of raw ginger via the Internet so as to calculate the international market price.

• Collected recipes and put together a booklet for the use of entrepreneurs so that they may be able to further the processing of ginger and create a local market for alternative ginger products.

Limitations • Wide market and not all industries and retail shops use websites or provide

email addresses. • Not able to visit all existing retailers and wholesalers. • May not get accurate information due to the fact that most stores do not

accurately document their trade.

CHAPTER II

Introduction

History of Ginger Ginger is a member of the Zingiberaceae family and it originated in South-East Asia. It grows best in tropical areas that have high rainfall and hot and humid conditions. Ginger was introduced to Europe by Dutch, Portuguese, Arab and Spanish explorers or traders from about the 13th to the 16th century. The name ‘ginger’ is derived from the sanskrit word ‘Srngaveram’ which means ‘horn root’. In South East Asia the most popular form of ginger is raw ginger. It is grated or finely chopped then added to the meal not long before serving. Ginger adds to the flavour of a meal creating a fresh, spicy pungent taste which is now becoming a valued commodity all over the world. It is revered as one of the most important and valued spices of the world. Ginger is now used in many different ways and is a complement to many different dishes and flavours. It complements coconut milk curries, lemon grass and gravy. It can be used raw, fried, dried, pickled or as a juice and is a favourite in tea and ale. Ginger is now grown as a cash crop in Africa and Latin America and has entered many local cuisines. Recently it has been introduced in a crystallized form creating a type of sweet appropriate for dessert or snack. This form of ginger is very popular in the western world and is a great way to value-add to the product. (Please refer to Annex 1 for various ginger products)

Medicinal Value For over 5000 years ginger has been recognised as the “universal medicine” by the ancient Orientals of China and India. Today ginger remains a component of more than 50% of the traditional herbal remedies and has been used to treat nausea, indigestion, fever and infection and to promote vitality and longevity.1 Ginger is also effective in the treatment of many other illnesses and discomforts as follows: Disorders that ginger can help remedy Flatulence Nausea Intestinal infection Food poisoning High blood pressure Chilblains Fever Clotting Motion sickness Morning sickness Cold and Flu Arthritis pain Skin cancer Weight Loss Thirst Depression Gastrointestinal disorders Bone fragility 1 Schllich, Paul. Ginger was praised by Confucius, Nostradamus and Pliny. Even the Koran speaks of a fountain of ginger flavoured water. Ginger’s anti toxic properties have an anti viral, anti fungal, anti histamine and anti bacterial effect, which is basically the effect of an anti biotic, cold and flu tablet or an aspirin. Ginger has played an important role in Asian medicine as a folk remedy to promote cleansing of the body through perspiration, to calm nausea and to stimulate the appetite. Ancient Indians used gingerroot to treat digestive problems. Chinese sailors chewed on gingerroot to combat seasickness. Chinese women drank ginger tea to alleviate menstrual pain. Ginger contains no fat or sugar so can be added to foods to heighten flavour without adding calories. Ginger tea brewed from the fresh root has not only a weight loss purpose but has been used for centuries in India and China as an after meal drink to aid digestion. Ginger’s enzymes catalyse protein digestion in the stomach quickly and leave little time for nausea.2 Ginger also contains moderate amounts of magnesium, calcium, protein, calcium, iron, sodium, potassium and phosphorus. Together they act as a remedy for muscle spasms, depression, hypertension, muscle weakness, convulsions, confusion, personality changes, nausea and gastrointestinal disorders. The high level of potassium in ginger protects the body from bone fragility, paralysis, sterility, muscle weakness, kidney damage and damage to the heart. Ginger also has a high content of antioxidants which means it also has anti-inflammatory properties.3

Value-Addition and Alternative Product Development Ginger can and has been used in many different products. Ginger tea has been used as a carminative and for the treatment of colds at their onset for centuries. It has been used in China as a tonic. The Greeks, after a large meal, wrapped bread around a piece of ginger and ate it to ease indigestion. This gave rise to ginger bread. In England, ginger was added to beer, forerunner to ginger ale, as a remedy for diarrhea, nausea and vomiting. The Chinese also considered ginger root to be an antidote to shellfish poisoning, explaining why it is found in so many seafood dishes. Ginger is popular because of its pungent flavour. It is a complement to many meals, drinks and desserts. Due to its popularity and diverse scope for product development it would be advantageous for the local communities of Nepal to value add their products. This would assist in gaining a higher profit margin for the local producers and product variety for consumers in local markets and in Kathmandu. It would lessen the gap between products produced in Nepal and those imported from overseas and be an import replacing, Nepal made product.

Forms of Ginger Powdered: The mainstay of baking, ground ginger is a rich, warm spice. Its aroma and flavour are fragile, so buy in small quantities if possible. Preserved: A delicious spicy sweet condiment made from fresh ginger that is mellowed in a sugar syrup. Chinese preserves are often flavoured with licorice and a touch of salt. Pickled: A familiar accompaniment to sushi, it is made from fresh ginger that is marinated until tender and pink in a rice vinegar solution and then sliced paper thin along the grain. Tea: You can make this soothing tonic by steeping fresh ginger in hot water, or you can buy a Chinese tea that is already mixed with dried fresh gingerroot. Dried: You can buy dried gingerroot in Indian or Chinese markets to keep on hand to grind as the need arises. The dried ginger provides a surprisingly true ginger taste. Crystallized: One of the world’s oldest candies, crystallized ginger is made by slow-cooking fresh ginger in sugar water, then rolling it in granulated sugar. Also called candied ginger, it has a gentle, warming bite. (Please see Annex 2 for various ginger products)

Recipes and information about international products

Ginger Beer Equipment: Ingredients: 4-5 large plastic bottles, sterilised 2 tablespoons of fresh ginger root, chopped (Do not use glass bottles they may explode) 2 lemons, washed and thickly sliced 1 large stainless steel or enamel pot 500g sugar with a lid or very clean towel to cover 4 ½ litres of water Funnel 1 teaspoon tartaric acid Wooden spoon 7g sachet dried yeast Perforated metal spoon Method: 1. Place the lemons, ginger, water, tartaric acid and sugar into a pan. Bring to the

boil then simmer for five minutes. Turn off the heat and leave until it is warm, not hot.

2. Sprinkle the yeast on top and put the lid on the pot. Leave for a few hours or even overnight.

3. Scoop out the lemon and ginger, then funnel into the clean bottles. (Note: don’t fill the bottles right up- there should be a space at the top of at least 5cm or 2

inches). Check twice a day to see if you need to release some of the gas in the bottles (gently unscrew the cap to release pressure).

4. You’ll know when the ginger beer is ready to drink, because as the pressure builds up bubbles will form and the bottles will feel tight to touch. This usually happens within 24 hours, but on a warm day it may be ready to drink within 12 hours.

5. When ready, put the bottles into the fridge, and drink the ginger beer as soon as it is cold.

Reminders: • Never keep homemade ginger beer for more than three days after making, and

throw it out if it looks or smells odd. • Always store homemade ginger beer in plastic bottles, never glass, in case the

bottles explode. • Everything that comes into contact with the brew- your hands, the bottles, the

funnel etc., must be scrupulously clean. • All homemade ginger beer is slightly alcoholic, so don’t allow the children to drink

too much.

Gingerbread Man The gingerbread man has been around for centuries. According to legend, Queen Elizabeth 1st of England invented the gingerbread man. These biscuits, shaped in the form of a little man, are enjoyed by children across the globe. Equipment: Ingredients:

Oven 1 cup of shortening Baking Sheet 1 cup of sugar Foil 1 egg Mixing bowl 1 cup of molasses Sift 2 Tbsp. Vinegar 5 cups of sifted flour 1 ½ tsp. Baking soda ½ tsp. Salt 2-3 tsp. Ground ginger 1 tsp. Ground cinnamon 1 tsp. Ground cloves Method: 1. Cream shortening and sugar. 2. Beat in egg, molasses and vinegar. 3. Sift together dry ingredients and blend into creamed mixture. 4. Chill for 3 hours. 5. Roll dough on lightly floured surface to 1/8 inch thick. 6. Cut into shapes of a little man. 7. Place 1 inch apart on cookie sheet. Bake at 375F for 5-6 minutes.

8. Cool slightly on cookie sheet and then remove to rack.4

Crystallized Ginger

Ingredients 1.5 lbs fresh, young ginger, peeled, cut into 1/4-inch circles to make 1 quarter water 3 cups sugar 1 lemon, seeded and sliced 1 cup light corn syrup granulated sugar or special large crystal sugar

Method 1. In a large, HEAVY stainless steel pot place the ginger and cover with plenty of

water. 2. Bring slowly to a boil, reduce heat, cover and simmer until tender when poked

with a knife(~20 minutes.) 3. Add 1 cup sugar, stir until it boils. 4. Remove from heat. Cover and let stand at room temperature overnight. 5. Second day, uncover, slowly bring to boil, simmer 15 minutes. 6. Add lemon and 1 cup light corn syrup. 7. Simmer 15 minutes more, stirring occasionally. 8. Remove from heat. Cover and let stand at room temperature overnight. 9. Third day, uncover and bring to boil, stirring more often. 10. Add 1cup sugar and simmer 30 minutes, stirring more often. 11. Add 1 cup sugar and bring to boil. 12. Remove from heat. Cover and let stand at room temperature overnight. 13. Fourth day, slowly bring to boil, reduce heat and simmer until ginger is

translucent and syrup drops heavily from side of spoon (instead of forming two drips, it forms one heavy drip from the side of the spoon.)

14. Let it cook quite slowly at this stage, at a medium-low heat, and stir it occasionally (just avoid scortching.) It takes about 45 minutes.

15. Drain the ginger, reserving the syrup for flavoring other things and remove the lemon slices.

16. Spread ginger on a rack over a tray and dry uncovered overnight. 17. When dried, roll slices in granulated sugar. 18. Use a mix of plain sugar and that special large crystal sugar. 19. Store in tightly covered glass jars.

International Market for Ginger

This study focuses on the ginger market in 3 various international markets, namely India, USA and Australia respectively. The information given is a result of research predominately of the internet and therefore is limited and not always referenced. Wherever possible website and email addresses have been added and can be found in the annexes. Ginger is a product of high demand throughout the world. As indicated above the products that use ginger are very diverse and generally culturally specific. As of yet ginger is generally produced only as a raw spice in Nepal but the following information displays that most international markets value-add there products and use ginger in many ways. Indian Market India is mainly an agricultural country. Agriculture accounts for approximately 33 percent of India's GDP and employs nearly 62 percent of the population. It accounts for 8.56 % of India’s exports. About 43 % of India's geographical area is used for agricultural activity. In the past, India had to import most of its food. But improved farming techniques and the using of irrigation and high-yield grains has greatly increased. In India, since most of the cropped area even now does not have any assured irrigation, the monsoon assumes a crucial role in influencing agricultural production. Important items of agricultural export are rice, cashew nuts, coffee, tea, horticulture and floriculture products. One of the main challenges facing India was producing enough food for the increasing population. As not more than the existing land is fit for cultivation, India has to strive to develop productivity on existing land. Over the past four decades, India more than tripled its food production. Although 30 percent of this production growth, known as the Green Revolution, came from expanding farmland area, most of the increase since the late 1970s, has come from increased average yields. In other words, farmers using the new varieties of grain were growing more food on the same amount of land. India has the world's largest cattle population (193 million), large numbers of sheep and goats, and more water buffalo and camels

than any other country. This has placed heavy demands on the grazing lands. Both grasslands and forest areas suffer as a result. Ginger is widely produced in India. Predominately in the states Andhra, Karnataka, Himachal, Pradesh, Tamil Nado, Orissa, Sikkim, Mizoram, Meghalaya, Arunachal, Keralam, Karnataka, Nadhya Pradesh and West Bengal. Though grown all over India, the finest quality ginger is known in the world market as ‘Cochin Ginger’ and ‘Calicut Ginger’ (NUGK). The most common forms of ginger production in India are raw, powder, bleached, oil, oleoresins, fresh in brine, pickled, candied, garbled and as a syrup. The principle buyers from India are the Middle East, USA, UK and the Netherlands. The estimated export of ginger of the year 2000 is given below and is based on DGCI&S Data and shipping bills from customs.5 ESTIMATED EXPORT: Ginger: (April– June 2000) 430 Tonnes US$ 0.64 million (Please find a list of Indian import contacts in Annex 4 on page 26)

Import and Export Regulations

Importer-Exporter Code No person is allowed to export or import goods without obtaining an Importer-Exporter Code Number from the regional licensing authority unless specifically exempted under any other provision of the Export and Import Policy. The following categories of importers or exporters are exempted from obtaining the Importer-Exporter Code (IEC) Number.

• Persons importing or exporting goods for their personal use not connected with trade or manufacture or agriculture;

• Persons importing or exporting goods from/to Nepal provided the CIF value of a single consignment does not exceed Indian Rs.25,000 (Rs. Twenty Five Thousands only).

Application and supporting documents- if sale is greater than Rs 25,000 An application for grant of an IEC Number should be made in duplicate, to the Regional Licensing Authority concerned by the Registered Office or Head Office or Branch Office of the company/firm in form given supported by following documents-

• Demand draft for payment of the fee of Rs.1000 or Bank Receipt evidencing deposit of payment of fees from the Central Bank of India:

• Any one of the following documents- • Sale Tax Registration Certificate; • A copy of the passport in the case of an individual;

• In case the application is signed by an authorized signatory, a copy of the legal authority letter issued by the firm/company.

• Certificate from the banker of the firm. The Regional Licensing Authority concerned will grant an IEC Number to the applicant on merits.

Packaging, Packing, Marking and Labeling In international trade it is very necessary to follow the instructions regarding packing, marking and labeling received from the overseas buyer. Every exporter should be very careful in packaging and packing which is of great importance in transportation as well as in the safety of the goods. Packaging is the inner wrapping or container which covers one or more units of the product. Export packing is the outer casing and materials used to transport the product or number of products in one case by road, sea or air. Each method of transportation may demand a different type of pack. The rougher handling and long storage of products dispatched by sea means that the outer case will have too substantial, a wooden case or crate. The comparatively lighter handling and shorter storage of products dispatched by air, may mean that a lighter type of wood crate or strong cardboard packing will be satisfactory. Consignments dispatched by road or rail will need the stronger or lighter form of packaging depending on the type of product, the distance it has to be transported and the storage time. The exporter must ensure that any packing instructions specified in the contract are complied with and also that any legislation governing acceptable packaging materials, in the overseas market is strictly observed. If no instructions are received, packing should be of the recognised customary standards for that particular country with certain specifications laid down by the Shipping Companies. The Bureau of Indian Standards has prescribed packing standards for certain items. In addition to the packing standards, the exporter should also keep in mind the following :

i. Packing should be of the type which may cost less freight charges. ii. The packing should be most durable as the goods have to go severe hazards

in transit and they are to be loaded and unloaded at various stages. Strong and durable container can enable the product to stand with the hazard of frequent handling and rough weather, excessive moisture, extreme heat, vermin and theft, etc. Exporter has to decide the types of containers to be used i.e. liquids are normally shipped in drums, consumer products are to be packed in wooden cases or in fibre cartons, capital equipment is protected by same kind of material and special forms of cushion may be used for delicate goods.

Weight Measurements Weight measurements used in the export packing are :

i. Net – weight of product without packing ;

ii. Net – weight of product without either internal wrapping, packing materials or packing case;

iii. Gross – weight of product plus weight of packing case iv. Tare – weight of packing only.

Labeling On the request of importer, the exporter has to attach particular types of labels, price tickets, etc. which may be considered favourable to his market. Marking Shipping marks are requested by the overseas buyer should be put on each packing case so that the consignment may be identified throughout transit and on reaching its destination. Ships carry a large number of consignments belonging to various exporters at one and the same time. In absence of adequate identification marks for goods, the identification of the consignment of each exporter, the inspection of goods by the Customs Authorities as also quick and effective delivery of the goods at the destination by the shipping authorities will prove difficult. Marking includes shipping marks of consignee like short name of the buyer, port of dispatch, port of destination, steamer’s name and bill of lading number, case number/total cases and/or other marks, as requested by the buyer. If the particular marking is not specified by the buyer, the exporter may choose his own marking. It is also important to ensure that the marks and numbers on packages conform in every respect to those written in the Bill of Lading, Insurance Certificate, Invoices and other documents, if any. The special instructions on the packing case should not be mentioned in English only but should also be in the language of the overseas buyer and the language of the countries through which the consignment may pass as it may be necessary to off-load the consignment en route. The Exporters may seek the assistance and guidance for better packaging and such other things from the office of the Development Commissioner (SSI), Ministry of Industry and Civil Supplies, 7th Floor, Nariman Bhavan, New Delhi.

Australian Market

Due to the fact that Australia is predominately an agricultural society it is rich in spices such as ginger. However, variety is extremely important to the Australian market and much of the home produced ginger is exported. In order to find an appropriate entrance for Nepali made ginger it is important to look at how Australian business functions. There are two fundamental department grocery stores in the country, namely Woolworths and Coles. There websites are respectively www.woolworths.com and www.coles.com.au. These two businesses should be the initial target into the Australian market.

Buderim Ginger Factory Since 1941 Buderim has earned a reputation of being the world leader in ginger processing and now supply over 40% of the world’s sugar processed ginger. They are located north of Brisbane, Australia where the comparatively high rainfall and humidity combine to produce conditions ideal from growing ginger. After World War 2 the Chinese supply of ginger was interrupted which gave scope for an increase of sales from Buderim. As a result of this The Buderim Ginger Grower’s Co-operative Association Limited was created and from 1989 the company was listed on the stock exchange. Buderim excersises a very strong hold on the market for ginger internationally and so has diversified its stock, a list of its products follows.

Singapore Market Singapore depends on imported goods to satisfy its residents. As the community mainly consists of Malay and Chinese settlers, ginger is an import spice used in cooking. The website www.dpa.org.sg offers a data base of all the supermarkets in Singapore. This would be a good starting point to establish contacts in the market6.

U.S Market From the research completed on the internet it became evident that there are ample producers of ginger in Northern America. There were a few various retailers of international imported ginger products but predominately the ginger sold in the US

market is produced in the US. Below are two starting points for ginger distribution in the US. www.federated-fds.com is the website displaying Federated Department Stores in the USA. www.globalsources.com displays a comprehensive database of global ginger manufacturers. (Please look to annex 3 on page 23 for alternative retailers and contacts in the United States)

Basic Import Information US Customs Import Process: All merchandise coming into the US must clear through US Customs Service and is subject to a customs duty unless specifically exempted from duty by law. Clearance of imported goods involves a number of steps: entry, valuation, appraisement and liquidation.

Step 1: Entry When the shipment arrives in the US the consignee will file entry documents for the goods with the district director at the point of entry. The consignee is the importer or the agent of the importer. Entry documents must be filed at the location specified by the district customs director within five (5) working days of the date of arrival of the shipment at a US port of entry. The US Customs Service does not notify you of the shipment. Notification is usually made by the carrier of the goods. Entry documents include: • Bill of Lading, Airway Bill or carrier’s certificate. These documents show the right

of the consignee to make entry. • Entry Manifest (Customs Form #7533) or Application and special Permit for

immediate Delivery (Customs Form #3461). • Commercial Invoice. This document shows the value and description of the

merchandise. • Packing List and other documents the merchandise admissibility. Evidence must accompany the entry to cover any potential duties, taxes, and penalties which may accure. After presentation of the entry, the shipment may be examined or examination may be waived. The shipment is then released, as long as there occurred no legal or regulatory violations. Entry summary documentation (Custom Form #7501) is filed and estimated duties are deposited within 10 working days of the release of merchandise at a designated customhouse.

Step 2: Inspection Prior to release of the goods, the district or port director will designate representative quantities for examination by US Customs Service officers under conditions properly safeguarding the goods. The inspection is necessary to determine: • Value of the goods for customs purposes and its dutiable status. • Whether the goods must be marked with the country of origin or with special

markings or labeling and whether this is done correctly. • Whether the goods have been correctly invoiced. • Whether any prohibited goods are in the shipment. • Whether the requirements of other agencies have been met. • Whether any excess or shortage of goods exist against the invoiced quantities. If necessary, the goods may be analyzed by a US Customs laboratory to determine the proper classification and appraisement.

Step 3: Valuation and Appraisement All imported goods to the US are subject to duty or duty-free status in accordance with their classification under the applicable items in the Harmonized Tariff Schedule of the US Rates of duty for imparted merchandise may vary depending upon the country of origin. Tariff schedules provide three basic rates of duty for an item: • Most favored nation (MFN) rate. • Communist-bloc countries. • Least developed developing countries. Duties are assessed in the following manner: • Ad valorem- this type of rate is most common. It is a percentage of the appraised

value of the merchandise. • Specific- it is a specified amount per unit of weight or other quantity. • Compound- combination of both. Step 4: Liquidation When all the information has been acquired, including the report of the US Customs Service import specialist as to the US Customs Service value of the goods, a final determination of duty is made. This is known as liquidation of the entry. Liquidation is the point at which the US Customs Service’s confirmation of the rate of duty and amount of duty becomes final for most purposes. Liquidation is accomplished by posting a notice on a public bulletin board at the customhouse. It may take up to one year for the goods to be liquidated. Other things to be aware of:

Markings: The US Customs Service laws require each imported good produced aboard to be marked in a conspicuous place legibly in English the name of the country of origin. Restrictions: Certain classes of merchandise may be prohibited or restricted to protect the economy and the security of the US. Prior to importing, call the Honolulu office of US Customs at Tel: (808) 861-8462 to determine whether your import product is subject to restriction.

Observations and Advice

From research conducted on the internet it is evident that Nepal provides a favourable climate for the production of raw ginger. This could be advantageous for the Nepali ginger market as long as the standard of the product is of a high standard and quality assured. This is an extremely crucial factor in the exportation and importation regulations imposed on food products and can take extended periods of time to become liquidated, particularly those products coming from less-developed nations (please look to US import regulations). Due to these stringent regulations imposed by much of the western world it is my recommendation that the intial target nations for export of MEDEP food products should be surrounding South Asian countries, namely India, Pakistan, China and Bhutan. In the annex there is a detailed importer profile of potential Indian clients, some of whom already have indicated interest. As for the list of alternative international clients in the annex on page 23, these should initially be used as a reference for ideas for value-addition and product development as there are opportunities for diversifying the use of ginger in the sub-continent that have not yet been explored. In the western world particularly, ginger is used in sweets and many refreshing drinks such as ginger beer. A section of this document is focussed on new product development and recipes are included due to the fact that some of these products have not previously been introduced to Nepal. If small local enterprises focus on product diversity that enables value-addition this will not only provide villagers with variety in their food products and higher profits for sale in Kathmandu but it will also act as an import replacing investment. I hope that the information acquired will give MEDEP ample scope for product development and provide the producers with various contacts overseas for additional ideas in value-addition. I also hope that the list of Indian contacts provides importation centres suitable for Nepali ginger and that it provides a head start to increased trade agreements and appropriate international distribution. Date: Thu, 4 Nov 1993 15:35:01 GMT Ingredients 1 cup shortening 1 cup sugar 1 egg 1 cup molasses 2 Tbsp. vinegar 5 cups sifted all-purpose flour 1 1/2 tsp. baking soda 1/2 tsp. salt 2 to 3 tsp. ground ginger 1 tsp. ground cinnamon 1 tsp. ground cloves Method Cream shortening and sugar. Beat in egg, molasses, and vinegar. Sift together dry ingredients and blend into creamed mixture. Chill 3 hours. Roll dough on lightly floured surface to 1/8 inch thick. Cut in shapes. Place 1 inch apart on cookie sheet. Bake at 375F for 5 to 6 minutes. Cool slightly on cookie sheet and then remove to rack. Makes about 5 dozen.

Blend all dry ingredients; stir into molasses mixture. Chill. Heat oven to 375 F. Roll dough in 1 1/4 inch balls. Dip tops in sugar. Place balls, sugared side up, 3 inches apart on greased baking sheet. Sprinkle Each with 2 or 3 drops of water. Bake 10 to 12 minutes, or just until set but not hard. Makes 4 dozen.

Gingerbread House 1. To make the dough put in:

• spices: ginger, cinnamon, cloves, nutmeg • sugar • butter • salt • molasses • flour • baking soda

Put it in the refrigerator for a few hours to cool. 2. Make the patterns. Make the front, side, and roof. 3. Roll the dough out. We used a rolling pin. Use flour to keep the dough from sticking. It shouldn't be too thick or too thin. 4. Put the pattern on and cut it out. 5. Put it on a pan and bake it. 6. Cut the windows and doors while it is hot. 7. Make sugar glue and stick the pieces together. 8. Decorate the house with candy. It should look similar to the picture below.

Gingerbread Cookie Building Slabs Sunset Recipe Annual - 1988 Edition (Lane Publishing) Ingredients 1-1/2 cups whipping cream 1 teaspoon vanilla 2-1/2 cups firmly packed brown sugar 2 tablespoons baking soda 1 tablespoon ground ginger 2 teaspoons ground cinnamon 1-1/3 cups light or dark molasses 9 cups all-purpose flour Icing cement (recipe below) Method Whip cream and vanilla until cream holds soft peaks. In a large bowl, mix sugar, baking soda, ginger, and cinnamon. Stir in molasses and cream. Gradually add flour, mixing well. On a lightly floured board, roll out a portion of dough until it's flat but still thick enough to pick up easily without tearing. Place it on a greased and floured 12- by 15-inch rimless baking sheet. Finish rolling dough on pan, supporting the rolling pin on equally thick wooden strips placed along opposite edges of pan. Use about 2 cups dough for each 1/8-inch-thick slab, about 4 cups for each 1/4-inch slab, and about 6 cups for each 3/8-inch slab. If cookies are not evenly thick, the thin areas bake darker in color and are more brittle. You can bake up to 2 pans of dough at a time in 1 oven. Bake dough until fairly firm when pressed in center - in a 300 degree F. oven, allow about 1 hour for 1/8-inch-thick slabs; in a 275 degree F. oven, allow about 1-3/4 hours for 1/4-inch slabs and about 2-1/4 hours for 3/8-inch slabs. After 30 minutes, remove pans from oven and place pattern pieces close together on the dough; with a sharp knife, cut around pattern edges; lift off pattern and scraps. (Later, bake the scraps to eat.) Return both pans to oven, switching their positions, and finish baking. Meanwhile, roll out remaining dough to make cookies and other special features. When done, carefully loosen cookies with a spatula; cool on pan until firm, about 5 minutes. Transfer to a rack to cool. Decorate and assemble structure with icing cement or wrap pieces airtight and store up to 1 month; cookies keep crisp longer, but do not taste as fresh. Makes about 9 cups dough, or 4-1/2 slabs 1/8 inch thick, 2-1/2 slabs 1/4 inch thick, or 1-1/2 slabs 3/8 inch thick. Each full slab is 10 by 15 inches. Note: This dough can also be used to make gingerbread people and/or cookies. Icing Cement With an electric mixer, beat 2 large egg whites, 1/8 teaspoon cream of tartar, and 2 teaspoons water until frothy. Mix in 3 cups sifted powdered sugar; beat on high speed until icing is stiff, 5 to 10 minutes. Use, or cover up to 8 hours. Makes about 1-1/2 cups.

Ginger Chicken From the kitchen of Nick, Santa Barbara, California Ingredients 1 1/2 tbsp. fresh ginger, finely minced 4 cloves garlic, finely minced 2 tsp. sesame oil 2 tbsp. vegetable oil 1/4 cup soy sauce 1 tsp. ground pepper 2 tbsp. rice vinegar 4 to 6 boneless chicken breasts Method Step 1 In a bowl, mix thoroughly ginger, garlic, sesame oil, vegetable oil, soy sauce, pepper, and vinegar. Step 2 Place chicken breasts in a large plastic ziploc bag and pour marinade over. Seal tightly and remove as much air as possible. Let marinade for at least 3 hours. Step 3 Best if seared on a very hot grill or grill pan and cooked slowly until done. Remaining marinade can be cooked to create a sauce.

Ginger Juice Ingredients 2 quarts water ½ cup of peeled, grated gingerroot 1/3 cup of fresh lemon juice 4 regular-size green tea bags Honey or sugar to taste (optional) Method In large pot combine water, ginger and lemon juice and bring to a boil. Reduce heat and simmer for 5 minutes stirring occasionally. Remove from heat Add tea bags and let stand for 5 minutes Remove tea bags and stir in honey or sugar if desired.

Honey-Ginger Sauce Makes 1 ¾ cups dairy-free Honey Ginger sauce is a good all-purpose sauce to use as a marinade for vegetables, tofu or tempeh, or as a flavour-rich sauce for stir-fries. Ingredients 2 Tablespoons of ginger juice ½ cup rice wine or sake ½ cup honey ½ cup tamari Method To extract juice from ginger: grate a 4-ounce piece of gingerroot. Tie grated ginger in a piece of cheesecloth and squeeze juice into a small bowl. Add wine, honey and tamari and mix until well blended. Store in the refrigerator.
