AMERICAN LEGION POST 113
AUGUST/SEPTEMBER 2019 A Message from the Commander Leroy “Buster” Furman
It is with great anticipation that our new year will be one of the best for Post 113. New flooring will have
been installed in the lounge early in August and new flooring will be installed and repairs made in the
dining room prior to November 1st. A new kegerator will be in place in the dining room. The prior one
was beyond repair. Additional information about these improvements will follow in this issue. The Post
will be closed July 29– Aug. 9 and reopen August 10th. Grand Reopen Party will be Sat. Aug. 17th with a
Pig Roast/Luau starting at 1pm. Hope to see you there!
We, the officers of the Post, want to thank everyone who has been involved in these projects inside and
outside the building. The grounds around the Post have seen substantial improvement. Billy Brown has
brought in many loads of fill, which also included the leveling and grading around the outside of the
dining hall. Thanks go to all of you for your assistance which has made it possible to make these
improvements. Charlotte County has some additions and improvements in the planning stages for their
area around the Post. We are on the move. We are going to need volunteers to assist in the
improvements in and around your Post.
By the time you receive this issue of the Soundoff, Fall will be just around the corner and planned
activities will be taking shape and many of our members and guests will have returned or are busy
making plans to do so.
Check the enclosed calendar for scheduled events and other activities. This year we plan to observe
Veterans Day and celebrate the American Legion’s 100th anniversary on November 11th. This should be
a rather momentous occasion. Plan to attend them. Details will be furnished in articles in this
publication.
God bless you, your families, our troops and first responders wherever they may be and
God Bless the USA.

Summer Peach-Basil Grilled Chicken
Summer Tortellini Salad
Ingredients
20 oz cheese tortellini fresh or frozen
1 cup halved grape tomatoes
1 red bell pepper seeds removed and chopped
1 ear sweet corn kernels removed (about 1 cup)
1 medium cucumber chopped
3 green onions sliced
Basil vinaigrette
Kosher salt and black pepper to taste
Shredded Parmesan cheese and chopped basil for garnish
Finish the salad with Parmesan cheese
and fresh basil. Serve cold or
at roomtemperature.
Mermaid Lemonade
2 c. ice
1/4 c. blue curacao
1 c. white rum
2 c. lemonade
4 lemon slices
8 maraschino cherries.
Put 1/4 cup ice in each glass, then add a splash of blue curacao, 1/4 cup rum, and another 1/4 cup ice. (The ice helps with the ombre.) Pour over 1/2 cup lemonade.
Skewer a lemon slice and 2 mar-aschino cherries on a paper umbrella or toothpick and garnish drinks before serv-ing.
FOR THE SANGRIA SWIRL
1 c. red wine
Juice of 1 orange
Juice of 1 lime
2 c. ice
Blend sangria mixture. Trans-fer mixture to the freezer while you blend margarita mixture.
Rinse blender and blend margarita mixture.
FOR THE MARGARITA SWIRL
1 can frozen limeade concentrate
2 shots tequila
2 c. ice On a small plate com-bine sugar and salt. Run a wedge of lime around the rim of a glass and dip in sugar and salt. Alternate layers of sangria and margarita.
Garnish with lime and serve.
Cook the tortellini according to pack-
age instructions. Rinse with cold water
and drain well.
Place the cooked tortellini in a big bowl. Add
the tomatoes, bell pepper, corn,
cucumber, and green onions. Drizzle with
basil vinaigrette and stir until the
ingredients are well coated. Season with salt
and pepper, to taste.
4 (approximately 6-ounce) chicken breasts, boneless, skinless
14 Saturn peaches, washed and dried (see notes)
2 cups loosely packed basil leaves, washed and dried
½ cup water
2 teaspoons brown sugar
1 large garlic clove
olive oil
2 teaspoons fresh lemon juice salt, freshly ground black pepper and brown sugar to taste
basil leaves and peach for gar-nish if desired
Trim any excess fat off of the chicken
breasts and then put them in a large,
heavy-duty zip-lock bag. Set aside.
Cut all of the peaches in half, remove
the pits, and add them to a powerful
blender or food processor. Add the basil
leaves, water, sugar and garlic and pu-
rée on high until you have a relatively
smooth consistency.
Pour about half of the peach mixture into
the bag with the chicken breasts. Move
the chicken around to be sure all sides
are well coated. Remove the air from the
bag, seal, and then refrigerate for at
least 6 hours and ideally overnight. (Save
the other half of the peach mixture in a
tightly sealed container in the refrigera-
tor for the sauce.)
Remove the now marinated chicken
breasts from the bag and place them on
a large plate. (Discard the bag with any
excess marinade).Once the grill is hot,
season both sides of each breast with
salt and pepper.
While the chicken is grilling, add the
remaining peach mixure to a small
sauce pan. Add the lemon juice, simmer
and let it thicken a bit, about 5 minutes
Season to taste with a bit more brown
sugar. Grill chicken through. Garnish
with fresh basil leaves and peach slices.
