STUDENT ENGAGEMENT OPPORTUNITIES: REPRESENTATIVE SAMPLE

University of Kentucky Food Access Survey, 2017 -

In the Fall of 2017, an on-campus survey was conducted to evaluate the prevalence of food and housing insecurity

among UK students. Focus groups led by student leaders within SSTOP and CKUK during Spring, 2018 further

identified the contributing factors to food insecurity, coping strategies, and appropriate solutions. “By hearing directly

from students at UK, we can better understand their challenges and find ways to support them in being successful.

Even though the survey is anonymous, we want students to know they aren’t alone and we are here to help.”, I shared

in an interview last fall. The results of the 2017 UK Food Access Survey will inform future programs and initiatives to

address campus food and housing security at UK.

Experiential Learning in Food Systems and Hunger Studies, 2016 –

In a given year, approximately 120 dietetics and human nutrition students dedicate 500 hours outside the classroom in

experiential learning that integrated community service with structured training. Students build on knowledge gained

in the classroom to teach cooking classes, lead nutrition, gardening and physical activity programs, complete patient

interviews, and assist dentists, physician assistants and physical therapists.

Gathering at the Table, 2016 -

An innovative program created by the Department of Dietetics and Human Nutrition, The Food Connection and the

Campus Kitchen at The University of Kentucky that brings together passionate student leaders, community food

justice advocates, and eaters of all kinds to grow a sustainable, community food system. Through a combined strategy

of hands-on culinary training, grassroots cooking demonstrations, local food recovery, and facilitated community

dialogue, Gathering at the Table 'connects the dots' between sustainable food production, vibrant food economies,

health and social justice to foster community food security.

SSTOP Hunger: Sustainable Solutions to Overcome Poverty, 2015 –

Founded SSTOP Hunger in 2015 to engage faculty, staff, and students across disciplines in developing and

implementing a strategy to solve hunger and malnutrition through hunger awareness and consciousness-raising,

fundraising, advocacy, and academic initiatives. In December, 2014 UK President Capilouto signed the President’s

Commitment to Food and Nutrition Security at the United Nations, a declaration acknowledging UK’s commitment to

making food insecurity a priority by joining the Presidents United to Solve Hunger (PUSH) and Universities Fighting

World Hunger (UFWH) initiatives. In collaboration with colleges, departments, centers, and organizations across

campus, Kentucky, and the globe, SSTOP engages faculty, staff, and students from a wide-range of disciplines in

leading the grassroots efforts of UFWH and PUSH. More information: http://dhn-hes.ca.uky.edu/sstop-hunger.

The Campus Kitchen at the University of Kentucky, 2014 –

An on-campus, student-service organization that is an affiliate of the national Campus Kitchens Project, which

provides a sustainable approach to reducing food waste on college campuses while providing healthy meals to those

struggling with hunger. Since its inception in November, 2014, CKUK has rescued 17,339 pounds of food (10,403

pounds of prepared food and 6,936 pounds of fresh produce), served 11,130 meals, led 57 education programs and

engaged 3,775 students from across disciplines. In 2016, they were recognized for their innovative approaches to

solving food waste and hunger and were awarded Campus Kitchen of the Year, a selection made out of more than 60

programs across the nation. “Since their launch just two years ago, the Campus Kitchen at the University of Kentucky

has had a significant impact on the issues of food waste and hunger in their community,” said Laura Toscano, director

of the national organization. “Their innovative work includes not only providing meals, but also creating an

intergenerational mentoring program that decreases isolation for older adults, which is one of the underlying root

causes of hunger for the senior population.” CKUK is funded through multiple internal and external grants. As well,

and community members who attended the showing and panel discussion with Mary Berry and Leah Bayens.
