ALL MUG CAKE RECIPES LISTED BELOW NOTE: My microwave is 1200 WATT. Since microwave powers are different, you may need to experiment. Happy micro-baking! CHOCOLATE BROWNIE MUG CAKE (gluten free, vegan) Makes 2 Cakes INGREDIENTS 1/2 cup gluten free flour (oat flour,nut flour, spelt flour etc) 1/2 cup sugar or raw sugar 4 Tbsp cocoa (natural, unsweetened) 1/2 cup coconut milk 4 Tbsp Coconut oil (or any flavorless oil, canola or vegetable) Coconut ice cream to serve METHOD 1. In a large mug or separate bowl, mix your dry ingredients: flour, sugar, cocoa, & salt 2. Then add your wet ingredients, coconut milk and oil, to your dry 3. Divide the batter between 2 microwave safe ceramic mugs. 4. Microwave for 1 minute until the mixture is cooked through. It should still be moist when cooked through, not dry. Careful not to overcook or cake becomes rubbery 5. Best eaten immediately. Serve with coconut ice cream. CHEESECAKE MUG CAKE

INGREDIENTS4 ounces (115g) low fat cream cheese,at room temperature1 cup (8oz/ 225g)sour cream1/2 teaspoon vanilla4 tablespoons sugar2 egg white, slightly beaten (egg whites in a carton work fine)1 teaspoon lemon juice1 tablespoon flour (prevents liquid from forming)1 tablespoon jam of choice.graham cracker crumbs

METHOD1. In a bowl, beat the cream cheese until light and fluffy with an electric beater or hand whisk. Mix in the sour cream, vanilla, sugar, egg, lemon juice. Swirl in jam at this time.CAUTION: Microwave until you see it start to bubble in the center, and then stop cooking. This will take seonds, maybe 20 or more. Take it out and check it. Microwave for short intervals until you see the edge of the cheesecake firm but make sure the center is jiggly. If it is allowed to bubble and cook further, the mixture will "break" and you'll need to start over. Make a note of the successful cooking time for your microwave.2. Take out of the microwave and let cool to room temperature and then refrigerate until fully chilled, about 2 hours. If any liquid has formed, carefully pour out. INGREDIENTS1 egg2 tablespoons milk1 tablespoon flavorless oil (coconut, veg, canola, sunflower etc) tsp instant coffee granules1 tsp of hot water4 tablespoons Plain flour1/4 tsp baking powder2 tablespoons brown sugar ( Im using brown because it will deepen the coffee flavor but you can use white)pinch of salt

METHOD1. In a microwaveable mug, mix together the egg, oil and milk2. Dissolve the coffee granules in the hot water and add into the wet ingredients3. Add in the Flour, baking powder, sugar and salt and mixo until combined. Use a fork to whisk and get out any lumps.4. Microwave for around 1 minute (timing is based on my 1200W microwave so your timing might vary)5. Enjoy immediately with fresh cream and cocoa on top like a cappuccino

Pineapple Upside Down Cake

INGREDIENTS1 egg1 tablespoon flavorless oil (coconut, veg, canola, sunflower etc)1/4 teaspoon vanilla3 tablespoons milk4 tablespoons flour2 tablespoons white sugar1/2 teaspoon baking powderpinch of salt

3 tablespoons chopped fresh pineapple1 maraschino cherry1 tablespoon brown sugar1 tablespoon butter

METHOD1. In a microwaveable mug, mix together the egg, oil, milk and vanilla2. Add in the Flour, sugar, baking powder and salt and mo until combined. Use a fork to whisk and get out any lumps.3. Melt the butter and sugar together for the top of the cake.4. Once melted mix in the pineapple and lay nicely on top of your cake.5. Stay might sink a little as it is a thin cake6. Microwave for 1 minute, then check and possible cook for another 20 seconds. This cake takes a little longer to cook (timing is based on my 1200W microwave so your timing might vary)7. Enjoy immediately!

Strawberry Cobbler

INGREDIENTS1 cup (6oz/180g) chopped Strawberries1 tsp sugar tsp vanilla extract

1 tablespoon butter, melted3 tablespoon plain flour1/2 tablespoon sugar1/8 tsp of baking powder (that's 1/2 of a 1/4 tsp :))1 tablespoon rolled oats (I chopped mine up small)pinch of ground cinnamon

METHOD1. In a microwaveable mug, mix together the strawberries, sugar and vanilla2. To make the cobbler, place all the ingredients in a small bowl.3. Pour in the melted butter and mix together with a fork to bring it together a bit like breadcrumbs. Lay the cobbler topping over the strawberries.4. Microwave for 1 minutes 10-20 seconds,. This cobbler takes a little longer to cook than others (timing is based on my 1200W microwave so your timing might vary)5. Enjoy immediately!

RED VELVET MUG CAKEMakes 1 cake4 tbsp flour4 1/2 tbsp sugar1/8 tsp baking powder1 1/2 tbsp unsweetened cocoa powderpinch of saltpinch of cinnamon3 tbsp oil3 tbsp buttermilk (substitute sour cream or yogurt if not available)1 egg1 tsp Vanilla extract1/2 tsp red food coloring

APPLE CRUMBLE MUG CAKE1 small mug cake

3 tablespoons flour1 heaping tablespoon brown sugar1/2 teaspoon ground cinnamon1/8 teaspoon baking powder1 tablespoon applesauce1/2 tablespoon vegetable oil1/2 tablespoon milk1/8 teaspoon vanilla extractcrumble topping1 tbsp butter2 tbsp flour1 tbsp brown sugar

1. In a small mug, mix together dry ingredients very well.2. Add applesauce and mix until just combined (it will be thick and sticky) and then add veg oil, milk and vanilla and stir until wet; do not over mix.3. For the crumble: In a separate bowl, combine 1 tbsp of butter, 2 tbsp of flour, 1 tbsp of brown sugar with a fork until combined.

4. Microwave on high for about 45 seconds. (every microwave is different so cooking may vary). Take care not to over cook the cake or it will dry out fast.5. Serve with ice cream and salted caramel sauce

RAINBOW MUG CAKEYields 4 mug cakes

cup (100g) white sugar1 sticks (100g) butter, softened at room temperature2 eggs at room temperature, lightly beaten1 teaspoons vanilla extract1 cups (110g/ 4oz) All purpose flour teaspoon baking powder teaspoon baking sodapinch saltred, orange, yellow, green, blue, food colouring

1. In a large bowl cream the sugar and butter together until light in colour and fluffy in texture - about 3 minutes. Use a hand whisk.Crack in an eggs, mix in well, and follow with the nxt egg. and pour in the vanilla extract. Beat for another minute until well combined.2. Add in the dry ingredients until just combined - don't over-mix!3. Divide the mixture as evenly as you can between 5 bowls.4. Add a couple of drops of food colouring to each bowl and mix very gently. - again, do not over-mix!5. Spoon the colors between the 4 mugs one spoonful at a time. Lay the different colored cake batter on top to create a marbled effect6. Microwave for 45 seconds (every microwave is different so cooking may vary)7. Take care not to over cook the cake or it will dry out fast.8. Decorate your cake with my cream cheese frosting. (see Red Velvet cake recipe above)
