Agriturismi in Lombardia: dove è naturale sentirsi a casa
Cosa sono gli agriturismi? Gli agriturismi sono aziende agricole che oltre all’attività tradizionale di coltivazione, di allevamento e di cura dei boschi, offrono servizi che non sono tipicamente agricoli ma che sono strettamente legati, quindi connessi, all’attività primaria. È infatti possibile svolgere attività agrituristica solo in “rapporto di connessione” con l’attività agricola che deve rimanere prevalente. Il rapporto di connessione è calcolato in base alla capacità agricola (superficie aziendale, tipo di coltivazioni effettuate, capi allevati…).
La Lombardia in tavola. Le aziende agrituristiche vivono in stretto rapporto con il loro territorio: nella preparazione dei loro piatti devono, per legge, utilizzare prodotti propri e privilegiare quelli locali. L’agriturismo propone, in connessione con l’attività agricola, un’ampia offerta di servizi esercitati dall’imprenditore agricolo e dalla sua famiglia utilizzando le strutture aziendali adeguatamente riadattate. L’offerta agrituristica in Lombardia è molto varia. Dalla pianura ai monti, dalla collina ai laghi, tutti possono trovare, tra le oltre 1600 aziende attualmente attive, quella che meglio incontra i propri desideri. In azienda è spesso possibile soggiornare e, molto spesso, pranzare o cenare; ma anche svolgere attività sportive e culturali o comprare prodotti genuini. Alcune aziende offrono anche l’opportunità di campeggiare in tenda o in camper. La ristorazione agrituristica varia molto da azienda ad azienda: si passa da semplici piatti a menù adatti ai palati più esigenti. Un elemento però è sempre costante: la tipicità, la genuinità e la freschezza dei prodotti. Per legge almeno il 30% di quanto viene servito in tavola deve essere prodotto dall’azienda stessa e, per una quota non inferiore al 40%, fornito da altre aziende agricole della zona o ottenuto trasformando materie prime di origine locale. In azienda è anche possibile trovare numerosi prodotti in vendita tra i quali vino, salumi, formaggi freschi e stagionati, frutta, verdura, uova, miele, conserve, fiori ed altro ancora.

Ma gli agriturismi lombardi offrono molto di più: sono tantissime le attività per escursionisti, sportivi, amanti dell’avventura e delle tradizioni. Inoltre nelle “Fattorie Didattiche” anche i più piccoli potranno avventurarsi in percorsi educativi a contatto con la natura, per conoscere la produzione agricola, il ciclo degli alimenti, la vita animale e gli antichi mestieri agricoli mentre nelle “Fattorie Sociali” le persone con forme di svantaggio psico-fisico o disagio sociale diventano protagonisti di attività e servizi a loro dedicati, tra cui anche percorsi di reinserimento socio-lavorativo.
Il marchio regionale che identifica le aziende agrituristiche (approvato dalla Giunta Regionale nel 1995) rappresenta un gallo stilizzato che racchiude la rosa camuna, simbolo della Regione
Lombardia, e le stelle dell’Unione Europea. Esso esprime in modo efficace e diretto il richiamo alla vita rurale e costituisce una garanzia della qualità dei servizi offerti dalle aziende. L’operatore agrituristico è tenuto ad esporre al pubblico il cartello aziendale nel quale è riportato il marchio regionale ed i simboli dei servizi offerti. L’uso di tale cartello è riservato alle sole aziende agricole riconosciute da Regione Lombardia.
Fattorie Didattiche Le aziende agrituristiche accreditate come Fattorie Didattiche possono fregiarsi del relativo logo. Così anche per le Fattorie Sociali.
Siamo in casa d’altri: non dimentichiamolo. L’azienda agrituristica non è un albergo, un ristorante, una pizzeria. Non dimentichiamoci che siamo in un’azienda agricola: oltre alla necessaria cortesia nei confronti dei padroni di casa, si dovrà prestare particolare attenzione agli animali e rispettare l’ambiente.

Classificazione nazionale
agriturismo ha oggi un unico marchio sull’intero territorio nazionale e un innovativo sistema di classificazione
destinato alle strutture che offrono alloggio. Il marchio e il sistema di classificazione, unici a livello nazionale, vogliono rappresentare armonicamente lo spirito e la peculiarità dell’agriturismo italiano nelle sue diverse forme e valorizzare la caratterizzazione agricola del contesto di accoglienza, che rappresenta una delle caratteristiche più significative per chi sceglie l’agriturismo per le proprie vacanze.
Per diventare un agriturismo... L’agriturismo è regolato da una legge nazionale quadro e dalla legge regionale n. 31 del 5 dicembre 2008, che ne hanno definito gli ambiti, le modalità, i limiti e le garanzie per il turista. Per diventare agriturismo è necessario essere in possesso di un “certificato di connessione” rilasciato dagli UTR (Uffici Tecnici Regionali) e, per il proprio territorio, dalla provincia di Sondrio. È inoltre necessario frequentare un corso di preparazione all’attività agrituristica di 40 ore e poi iscriversi all’elenco regionale degli operatori agrituristici. La presentazione della SCIA (Segnalazione Certificata di Inizio Attività) conclude l’iter amministrativo.

applicazione del sistema di classificazione in Lombardia è obbligatorio. La Legge di Regione Lombardia n. 5
dicembre 2008, n. 31, “Testo unico delle leggi regionali in materia di agricoltura, foreste, pesca e sviluppo rurale” prevede, all’art. 158, che le aziende agrituristiche adottino criteri di classificazione e qualificazione definiti a livello nazionale. La classificazione delle aziende agrituristiche, così come già avviene per gli alberghi, ha lo scopo di dare al pubblico un’idea complessiva del livello di comfort, della varietà di servizi e della qualità del contesto ambientale che ciascuna azienda è in grado di offrire. Ogni azienda che offre ospitalità, attraverso l’applicazione della griglia di valutazione, potrà attribuirsi una classe di merito, da 1 a 5, rappresentata dal “girasole camuno”, modulo grafico ottenuto integrando, così come previsto dal decreto ministeriale n.13/2013, il girasole nazionale con il quadrifoglio, simbolo della qualità dei servizi agrituristici lombardi fin dal lontano 1995. Stanti le recenti procedure, molti degli agriturismi che offrono alloggio non hanno ancora concluso l’iter per la classificazione delle proprie strutture. Per tale ragione la guida non contiene ancora l’indicazione relativa al numero di girasoli camuni.

Agritourism in Lombardy: where you feel ‘naturally’ at home
What is an agritourism, anyway? Agritourism enterprises are farms that, in addition to traditional activities of cultivation, livestock and woodland protection, offer services that are not typically agricultural but are closely connected to the primary activity. It is, in fact, possible to conduct agritourism activities only in “connection” with farming activities, which must remain the prevalent business activity. The ‘degree’ of connection is calculated based on agricultural scope (farm acreage, type of crops, livestock herds...).
The cuisine of Lombardy. Agritourism enterprises exist in a close relationship with their local area – in the preparation of their dishes they must, by law, use their own products and give preference to local products. Look for this information in the Product List that each agritourism farm offers its guests.
gritourism generally refers to activities that “promote the local area and its rural and forest heritage....” according
to the Lombardy law that regulates it. In conjunction with farming activity, agritourism includes a vast range of services offered by the farm hosts, making use of farm buildings that have been suitably converted. Lombardy offers quite a variety of agritourism opportunities. From the plains to the mountains and hills to lakes, and with more than 1600 currently active agritourism enterprises, everyone can find the one that best meets their needs. It is possible to stay overnight on the farms and quite often, have lunch or dinner there; but also take part in sports and cultural activities and purchase genuine, farm-produced products. Some agritourism farms also offer camping in tents or campers. Agritourism cuisine varies a lot from one farm to another – from simple meals to full menus designed to satisfy the most demanding palates. One element, though, remains constant – the food will be typical of the area, authentic and fresh. By law, at least 30% of the foods served at the table must be produced by the farm itself and, not less than 40% provided by other farms in the neighboring area or obtained from raw materials of local origin. On the farm it is also possible to find many products for sale including wine, cured meats, fresh and aged cheese, fruit, vegetables, eggs, honey, preserves, flowers and more. But agritourism in Lombardy offers much, much more – there are plenty of

options for those who love hiking, sports, adventure and traditional holiday-making. In addition, at the “Educational farms” even the children can venture into learning experiences in contact with nature to understand more about farming and produce, the food cycle, animal life and the old-time farm jobs while at the “Social Farms” psychologically, physically or socially vulnerable individuals become the center of focus of activities and/or services dedicated to them, including vocational rehabilitation.
The Regional brand that identifies agritourism enterprises (approved by the County Council in 1995) is a stylized rooster that surrounds the four-leaf clover, symbol of the Lombardy
Region, and the stars of the European Union. It is a powerful and straightforward reminder of rural life and is a guarantee of the quality of the services offered by the businesses. The farm stay host is required to display the company sign which carries the Regional brand logo and the symbols of the services offered. This sign can only be displayed by “connected” agritourism businesses.
Educational Farms Agritourism farms recognized as accredited Educational Farms can display the symbol. The same holds true for the Social Farms.
Let’s not forget that we are guests in someone else’s home. Farm stays are not hotels, or restaurants or pizza parlors. Let’s bear in mind that we are on a working farm – in addition to the normal and necessary courtesy shown to the hosts, it is especially important to be respectful of the animals and the environment.

National classification
gritourism is now recognized as a single brand across Italy, with an innovative classification system created
for the farms that offer lodging. The brand and classification system, unique in Italy, aim to uniformly represent the spirit and the uniqueness of Italian agritourism in its various forms and promote the agricultural features of the location in terms of hospitality -- one of the key expectations of those who choose agritourism for their vacations.
To become an agritourism enterprise... Agritourism is governed by a national framework law and by Regional Law 5 December 2008 No. 31, that define the sectors, the means, the limitations and the guarantees for the tourist. To become an agritourism enterprise, you must possess a “certificate of connection” issued by the UTR (Regional Technical Office) and, for its own area, by the Province of Sondrio. Another requirement is to attend a 40- hour agritourism preparation course and then be enrolled in the Regional list of agritourism operators. Presentation of SCIA (Certified Notification of Business Start-Up) certification concludes the bureaucratic process.
The Italy Agritourism logo that distinguishes the businesses officially recognized and operating under the Regional laws and regulations is a sunflower with the symbol of a farm at its center.

Classification in Lombardy
Application of the classification system in Lombardy is required. Lombardy Regional Law, dated 5 December 2008 No. 31, “Consolidated regional laws governing forests, fishing and rural development”, in Art. 158, states that agritourism businesses must adopt nationally-defined classification and qualification criteria. Classification of agritourism businesses, as is the case for hotels, has the purpose of providing the public with an overall idea of the level of comfort, variety of services and quality of the environment that each farm is able to provide. Each farm that offers hospitality, through application of the assessment grid, can assign itself a class from 1 to 5, represented by a “regional sunflower” symbol, a graphic symbol obtained by integrating (as called for in ministerial decree No.13/2013) the national sunflower with the regional four-leaf clover which has been a symbol of the quality of Lombardy agritouristic services ever since 1995. Despite recent developments, many of the agritourism farms that offer lodging have not yet completed the classification process for their facilities. This is why the guide does not yet contain the classification by number of regional sunflower symbols.

Was sind agrotouristische Betriebe? Agrotouristische Betriebe sind landwirtschaftliche Betriebe, die neben dem traditi0nellen Anbau, der Viehzucht und der Waldwirtschaft weitere Leistungen anbieten, bei denen es sich um keine typischen landwirtschaftlichen Tätigkeiten handelt, die aber eng mit diesen und damit mit der Haupttätigkeit verbunden sind Agrotouristische Leistungen dürfen daher nur in einem bestimmten “Verhältnis” zur landwirtschaftlichen Tätigkeit angeboten werden, die überwiegen muss. Das Verhältnis wird anhand der landwirtschaftlichen Leistung berechnet, die unter anderem die Fläche, die Art des Anbaus und Anzahl der Tiere in der Tierhaltung berücksichtigt.
Die kulinarische Lombardei Landwirtschaftliche Betriebe sind eng mit dem Gebiet verbunden. Es ist deshalb gesetzlich vorgeschrieben, dass sie bei der Zubereitung der Gerichte Produkte aus eigener Erzeugung verwenden und lokalen Produkten den Vorzug geben müssen. Diese Informationen müssen auf der Karte der Produkte stehen, die der Hof seinen Gästen anbietet.

Forstwirtschaft aufwerten”. Beim Agrotourismus bieten der Landwirt und seine Familie in Verbindung mit der landwirtschaftlichen Tätigkeit in den entsprechend angepassten Strukturen des Hofs ein umfassendes Angebot. Das Agrotourismus-Angebot in der Lombardei ist sehr vielseitig. Mehr als 1600 aktive landwirtschaftliche Betriebe in der Tiefebene, den Bergen, den Hügeln und an den Seen lassen keine Wünsche offen. Neben Urlaubs- und Ferienangeboten auf dem Bauernhof gibt es auch viele gastronomische Angebote mit der Möglichkeit, auf dem Hof zu Mittag oder zu Abend zu essen, sowie Sportmöglichkeiten, kulturelle Veranstaltungen oder Hofläden mit natürlichen Produkten aus der eigenen Landwirtschaft. Einige Bauerhöfe bieten auch die Möglichkeit, mit dem Zelt oder dem Wohnmobil zu campen. Das gastronomische Angebot im Agrotourismus unterscheidet sich stark von Hof zu Hof und reicht von einfachen Gerichten bis zu anspruchsvollen Menüs. Allen gemein aber sind die typischen, natürlichen und frischen Produkte, die verarbeitet werden. Das Gesetz schreibt vor, dass mindestens 30% der servierten Speisen aus der eigenen Landwirtschaft stammen müssen und mindestens 40% von anderen lokalen landwirtschaftlichen Betrieben oder aus der Verarbeitung von Zutaten lokaler Herkunft. Im Hofladen werden außerdem zahlreiche Produkte zum Verkauf angeboten, wie Wein, Wurstwaren, Frischkäse und gereifter

Käse, Obst, Gemüse, Eier, Honig, Eingemachtes, Blumen und vieles mehr. Aber der Agrotourismus in der Lombardei hat noch viel mehr zu bieten: Viele landwirtschaftliche Betriebe bieten ein Freizeitangebot für begeisterte Wanderer, Sportler, Abenteuerlustige und traditionsbewusste Gäste. Und auf den “Didaktischen Bauerhöfen” gibt es auch für die ganz Kleinen spannende Lernangebote in direktem Kontakt mit der Natur, bei denen sie viel Interessantes über die landwirtschaftliche Produktion, die Entstehung der Lebensmittel, das Leben der Tiere und die antiken landwirtschaftlichen Berufe erfahren. Menschen mit körperlichen oder geistigen Behinderungen oder gestörtem Sozialverhalten stehen dagegen auf den “Sozialen Bauernhöfen” im Mittelpunkt der Aktivitäten und Angebote, die speziell auf ihre Bedürfnisse zugeschnitten sind, darunter auch Programme für die Wiedereingliederung in die Gesellschaft und die Arbeitswelt.
Das von der Regionalregierung 1995 verabschiedete regionale Markenzeichen, das agrotouristischen Betriebe in der Lombardei kennzeichnet, ist ein stilisierter Hahn mit einer
Camunischen Rose, dem Symbol der Region Lombardei, und den Sternen der Europäischen Union. Das Symbol stellt eine direkte Verbindung zum ländlichen Leben her und ist eine Garantie für die Qualität der Angebote der landwirtschaftlichen Betriebe. Der Landwirt muss öffentlich ein Schild des Bauernhofs aushängen, auf dem das regionale Symbol und die Symbole der angebotenen Leistungen abgebildet sind. Nur “angeschlossene” landwirtschaftliche Betriebe sind dazu berechtigt, dieses Schild zu verwenden.
Didaktische Bauernhöfe Landwirtschaftliche Betriebe, die als “Didaktischer Bauernhof” anerkannt sind, dürfen das entsprechende Symbol verwenden. Das gleiche gilt für die “Sozialen Bauernhöfe”.
Nicht vergessen: Wir sind zu Gast im Haus unserer Gastgeber. Ein Agrotourismus ist weder ein Hotel, noch ein Restaurant oder eine Pizzeria. Wir sollten deshalb nicht vergessen, dass wir auf einem Bauernhof sind. Es versteht sich daher von selbst, dass wir den Hausherren mit Höflichkeit begegnen, die Tiere mit Freundlichkeit behandeln und die Umwelt schützen.

Italienische Klassifizierung
ür den Agrotourismus gibt es heute ein einheitliches Markenzeichen für ganz Italien und ein innovatives
Klassifizierungssystem für landwirtschaftliche Betriebe mit Übernachtungsmöglichkeit. Das für ganz Italien einheitliche Logo und Klassifizierungssystem stehen für den Geist und die Besonderheit des italienischen Agrotourismus in seinen verschiedenen Formen und werten den ländlichen Aspekt des Ferienangebots auf, um so die Erwartungen aller Feriengäste zu erfüllen, die sich für einen Urlaub auf dem Bauernhof entscheiden.
Wie wird ein Bauernhof zu einem Agrotourismus? Der Agrotourismus wird von einem italienischen Rahmengesetz und dem regionalen Gesetz Nr. 31 vom 5. Dezember 2008 geregelt. Diese Gesetze legen fest, in welchem Umfeld, auf welche Weise und innerhalb welcher Grenzen ein landwirtschaftlicher Betrieb als Agrotourismus tätig sein darf, und regeln die Garantien für die Feriengäste. Um als Agrotourismus anerkannt zu werden, ist ein “Verbindungszertifikat” erforderlich, das von den regionalen Behörden (UTR - Uffici Tecnici Regionali) und für das eigene Gebiet von der Provinz Sondrio ausgestellt wird. Außerdem muss ein 40-stündiger Vorbereitungskurs für die agrotouristischen Tätigkeiten absolviert werden und es ist eine Eintragung in die regionale Liste der agrotouristischen Betriebe erforderlich. Den Abschluss des Verfahrens bildet die “Zertifizierte Meldung über den Beginn der Tätigkeit” (SCIA - Segnalazione Certificata di Inizio Attività).

ie Umsetzung des Klassifizierungssystems ist in der Lombardei obligatorisch. Das Gesetz der Region
Lombardei Nr. 5 vom Dezember 2008, enthalten im Einheitstext Nr. 31 “für regionale Gesetze für die Landwirtschaft, die Forstwirtschaft, den Fischfang und die ländliche Entwicklung”, sieht in Art. 158 vor, dass die landwirtschaftlichen Betriebe die auf nationaler Ebene festgelegten Klassifizierungs- und Qualifizierungskriterien anwenden müssen. Die Klassifizierung der landwirtschaftlichen Betriebe hat wie bei den Hotels auch den Zweck, den Gästen eine Vorstellung von Komfort, Serviceangebot und Qualität der Umgebung zu geben, die der einzelne landwirtschaftliche Betrieb zu bieten hat. Alle Bauernhöfe, die Übernachtungsmöglichkeiten anbieten, können sich selbst anhand eines Bewertungsschemas in eine Klasse von 1 bis 5 einstufen, die von der “Camunischen Sonnenblume” repräsentiert wird. Nach Vorgabe des Ministerialerlasses Nr. 12/2013 ist dieses grafische Symbol durch die Verbindung der italienischen Sonnenblume mit dem vierblättrigen Kleeblatt (Rosa Camuna) entstanden, das seit 1995 das Symbol für die Qualität des Agrotourismus-Angebots in der Lombardei ist. Da diese Prozedur noch sehr neu ist, haben viele der Bauernhöfe mit Übernachtungsmöglichkeit das Verfahren für die Klassifizierung ihrer Strukturen noch nicht abgeschlossen. Aus diesen Gründen enthält der Führer noch keine Angabe zur Anzahl der Camunischen Sonnenblumen.

La provincia di Bergamo si estende a nord-est di Milano tra l’Adda e le Prealpi Orobiche ed offre al turista tutti i paesaggi tipici lombardi: la pianura, la collina, il lago e la montagna. Bergamo, l’antico capoluogo, è una città pregevolissima che ha saputo ben conservare, adagiato sui colli di Città Alta, il suo cuore medievale. L’agriturismo bergamasco offre un panorama di aziende tra le quali tutti possono trovare quella che meglio si adatta alle proprie esigenze. La cucina tradizionale e i prodotti tipici costituiscono un punto di forza dell’offerta agrituristica bergamasca.

La provincia di Lecco si estende attorno al ramo orientale del lago di Como ed è quasi interamente collinare e montuosa, come abbarbicata sulle sue ripide sponde. La Valsassina, che corre parallela al lago, accoglie molte delle aziende agrituristiche lecchesi; altre sono collocate attorno ai laghi di Annone e di Pusiano, fino alla sommità di Montevecchia, la prima altura che, venendo da Milano, segna la fine della pianura Padana.
The province of Lecco streches around the eastern branch Lake of Como and is almost entirely hilly and mountainous, as if clinging to its steep shores. The Sassina Valley (Valsassina), running parallel to the lake, is home to many of the agritourist farms in Lecco; others are situated around the lakes of Annone and Pusiano, up to the summit of Montevecchia, the first high point marking the end of the Po plain.
Die fast ausschließlich hügelige und gebirgige Provinz Lecco grenzt mit seinen steilen Küsten an den östlichen Teil des Comer Sees. In Valsassina, das parallel zum See verläuft, befinden sich viele Agrotourismusbetriebe von Lecco.
